GET A HANDLE ON IT Did you know that replacing a kitchen faucet is one of the easiest fixes you can do yourself? Updating an old leaky faucet is as simple as: 1. Disconnect water. Disconnect water lines from faucet, and gently pry out old faucet. 2. Place the rubber or plastic trim ring over the faucet holes in the sink and set the deck plate with a small amount of putty. 3. Feed the faucet lines down through the holes and reconnect water supply. 4. Turn the water on slowly, check for leaks and tighten connections if necessary.

A 2019 survey conducted by Garnier SkinActive revealed that 63% of respondents feel tired and 48% feel sluggish after losing an hour of sleep when the clocks spring forward. Survey respondents reported looking tired with dark circles, loss of luminosity, dryness and puffy eyes. Dr. Holly Phillips, RX Saver Medical Expert has a few tips to help you cope. According to the Recycling Council of Ontario, the average Canadian discards 81 pounds of textiles annually. That’s waste not just in terms of the landfill but also because textiles are incredibly resource intensive and one of the country’s largest polluters. Consider biodegradable, and renewable natural fibres that require minimal chemical fertilizers like organic cotton, linen, hemp, sheepskin and wool. In fact, wool may be a standout option. According to 2020 study published in Sustainability by Australian Wool Innovation-funded scientists, wool requires less washing compared to clothes made from synthetics, cotton and cellulose fibres. Think it’s scratchy and irritating? Cashmere, made from goat fibre, is soft and breathable. Hand washing or machine washing in cold water on delicate cycle will help preserve wool. CRAB SALAD Viognier Lingering sunshine means lighter fare. Indulge in chilled wine, the perfect accompaniment to crab salad and toast slathered with compound butter.

cup (250 ml) dressed Crab tablespoons (45 ml) mayonnaise teaspoon (5 ml) Old Bay seasoning teaspoon (5 ml) whole grain mustard teaspoon (5 ml) preserved lemon, finely chopped 1 tablespoon (15 ml) red pepper, finely chopped 1 teaspoon (5 ml) shallot, finely chopped 1 teaspoon (5 ml) dill, finely chopped 5 dashes of hot sauce Season with salt and pepper to taste Edible flowers and herbs, optional Mix all ingredients together. Serve in crab shell alongside bread slathered with paprika butter. Brown Bread Makes 1 loaf 3½ teaspoons (17.5 ml) dry yeast 1⅔ cup (170 ml) water

teaspoon (5 ml) black strap molasses cups (560 ml) whole wheat flour cup (250 ml) rye flour teaspoons (10 ml) salt
Grease an 8 ½ X 4 ½-inch (20 X 10 cm) standard bread loaf pan. In a medium size bowl stir together half the water and all of the yeast and molasses. Let stand for 5-10 minutes. Add the remaining water and mix well. In the bowl of an electric mixer, combine the rye and whole wheat flour and salt. On low speed, slowly pour in the water mixture to form a thick batter. Continue to mix at low speed for approximately 1 minute or until batters begins to come away cleanly from the sides of the bowl and forms a soft, pliable dough. Place the dough in the prepared loaf pan and cover with a damp dish towel. Proof the dough for about 25-30 minutes or until it has doubled in size.
Bake in oven set to 425° F (225° C) for 30 minutes, then lower the temperature to 400° F (200° C) and bake for an additional 25 minutes. Bread is ready when golden brown and sounds hollow when bottom side is tapped. Remove from pan and let cool on wire rack. Alternatively, for a lighter bread double proof the dough: once the dough is mixed, place in a bowl and cover with a damp dish towel until doubled in size. Knead the dough once again to knock out the air and then place in the prepared loaf pan. Follow directions for baking. Paprika Butter 1 3 1

The highly perfumed nature of viognier with its delicate acidity, allows the mild sweetness of the crab to shine. This unfussy wine can be drunk young and its crispness cuts through the richness of the compound butter and mayonnaise.
Born in the French Rhône, where it is the primary white grape of the region, viognier is fruit forward, with an intense floral aroma.

Keeping with the seafood theme, viognier pairs excellently with fish pie, if you are not a fan of seafood opt for a baked Brie, Carbonara or bechamel sauce-based recipes.

VEGETABLE SCROLL TARTS Carménère Get your creative juice going by making a pattern that appeals to the eye and use a variety of vegetables to get a range of colour (plus kids love joining in)! Cheddar Shortcrust Tart Shell 4 cups (1000 ml) unbleached all-purpose flour plus extra for rolling pinch of salt 1¼ cups (300 ml) chilled butter, cut into cubes ¼ cup cheddar cheese, grated 1 teaspoon fresh (or dried) thyme 8-10 teaspoons (120-150 ml) ice water Combine the flour, and salt. Rub in the butter until the texture resembles fine breadcrumbs. Add cheese and thyme. Make a well in the bowl and pour in about two-thirds of the cold water, mixing until you have a firm rough dough adding extra water if needed. Mix just until the dough comes together. Do not overwork the dough. Wrap in beeswax paper (or plastic) and allow to rest in the fridge for 15 – 20 minutes. Roll the dough to desired thickness. Drape over the pie tin and cut away excess pastry. To blind bake, line pastry with wax paper and fill with rice, flour or ceramic baking beans. Bake at 350° F (150 ° C) for 10-15 minutes. Remove wax paper and baking beans. Bake again in the oven for 10 minutes or until golden brown. Béchamel Sauce 2 cups (500 ml) milk 1 bay leaf ¼ teaspoon ground nutmeg 1 teaspoon (5 ml) mustard 1½ tablespoon (23 ml) salted butter ⅛ cup (30 ml) all-purpose flour

In a saucepan, bring milk to a simmer with bay leaf. Remove from heat and set aside. Make the roux: in another saucepan melt butter then add flour. Stir continuously until mixture forms a paste. Continue cooking out the flour for 2-3 minutes. Strain the milk. Slowly add the milk to the roux, stirring continuously after every addition. Continue to cook for 5-10 minutes. Sauce should have the consistency of thick cream and coat the back of a wooden spoon so that a line drawn with finger will remain. Add the mustard and nutmeg. Vegetables 1 medium sized zucchini 1 medium sized carrot Salt to taste Pepper to taste Paprika to taste Using a vegetable peeler, make long strips of zucchini and carrot. Softened with a light sprinkling of salt, pepper and paprika to make rolling the strips easier and tastier. Roll each strip lengthwise to form a tight circle. Repeat with all strips. Set aside. Ground Lamb Filling 1 cup (250 ml) ground lamb 1 tablespoon (15 ml) vegetable oil 1 small onion diced ¼ cup (60 ml) tomato sauce 1 teaspoon (5 ml) cumin 1 teaspoon (5 ml) ground fennel 1 teaspoon (5 ml) smoked paprika 1 sprig parsley, finely chopped. Salt and Pepper to taste
In a skillet over high heat, place onions and sautee until lightly golden. Add lamb and sautee until browned, about 2-3 minutes. Add tomato sauce, spices and seasonings. Cook for a further 5-7 minutes or until lamb has absorbed liquid. Remove from heat and add parsley. Set aside. Basil Pesto ½ cup (125 ml) fresh basil leaves ½ cup (125 ml) pine nuts 2 tablespoon (30 ml) freshly grated Parmesan cheese 2 garlic cloves ½ cup (125 ml) extra virgin olive oil Salt to taste In a small skillet, toast the pine nuts over moderate heat, stirring until golden, about 5 minutes. Let cool. Place nuts, basil, cheese and garlic in a food processor. Blend to coarse puree. With machine running, add oil in a light stream. Blend until nearly smooth. To Assemble 1 large round of burrata Roasted tomatoes Garlic toast Fresh basil leaves

Assemble Fill cooked tart bases with basil pesto, then a layer of béchamel sauce followed by a layer of ground lamb. Place multiple rolled vegetable circles snugly on top to form a pattern. Top with pieces of burrata and fresh basil leaves. Serve with oven roasted tomatoes, garlic toast and burrata.

Carménère marries well with food, especially these tarts. Charred vegetables (for vegetarians) or ground lamb accentuate the smoky notes and compliments the spices.
A grape originally from Bordeaux, that made its way to South America after the phylloxera epidemic in Europe in the 1800s, it is now predominantly associated with Chile.
While largely known for its Chilean production today, the grape is also grown France, Italy, Argentina, California and Washington.
This intensely dark and rich wine redolent of dark berries, cherry and also spice and peppercorn with a luscious mouth-feel, has soft tannins.
Carménère loves grilled food, so it is perfect for barbecue season. It is also among a handful of red wines that work beautifully with spicy food.

SHRIMP AND GRITS Roussanne, Marsanne This Low Country comfort food is surprisingly light as it is made with shrimp rather than heavier stewing meat like ox cheek, and relies on a multitude of vegetables.
Shrimp ½ cup (125 ml) chopped onion ¼ cup (60 ml) chopped celery ¼ cup (60 ml) chopped carrot ½ cup (125 ml) chopped sweet pepper ¼ cup (60 ml) corn ½ a jalapeno, chopped 2 cloves garlic, minced 3 tablespoons (45 ml) vegetable oil 1 can (450 ml) tomato sauce 1½ teaspoons (7 ml) salt 1 teaspoon (5 ml) chili powder 1 teaspoon (5 ml) thyme 1 teaspoon (5 ml) Old Bay seasoning 1 tablespoon (15 ml) Worcestershire sauce Hot pepper sauce to taste 2 teaspoons (10 ml) cornstarch 12 ounces (350 ml) cleaned raw shrimp

¼ cup (60 ml) flat leafed parsley, chopped 3 tablespoons (45 ml) cream (optional) 1 bunch asparagus (optional) Grits 3½ cups (875 ml) water 1 cup (250 ml) milk 1 cup (250 ml) stoneground grits 1 teaspoon (5 ml) salt ¾ cup (190 ml) grated cheddar cheese ½ teaspoon (2 ml) freshly ground pepper ½ teaspoon (2 ml) cayenne For the shrimp: In a skillet over high heat cook onion, celery, carrot, sweet pepper, corn, jalapeno and garlic in oil until slightly brown. Add tomatoes and next 6 ingredients. Low heat to a simmer and cook for 30-40 minutes. Make a slurry by combining cornstarch with 1 tablespoon water until dissolved; add to sauce. Cook
until sauce thickens. Add shrimp and cover until done about 5 minutes. Add asparagus. Remove from heat and add parsley and cream, if desired. Serve over grits and garnish with lemon wedge. For the grits: Bring half the water to a boil in a large saucepan over high heat. Whisk in the grits, stirring constantly. Once grits have absorbed liquid, add additional water a little at a time. Continue whisking after each addition until all water has been absorbed. Add salt, and milk and reduce heat to low, and cook at a simmer for 35 to 40 minutes or until the grits are thick, stirring continually. Remove the pan from the heat, add the cheese, pepper, and cayenne, and stir until smooth. Taste and adjust the seasoning.
Just one small serving makes a great appetizer. Lighten the grits recipe even more by omitting the cheese and using only water instead of milk.

This is an easy-going, light pairing. The Roussanne gives structure and body which can stand up to the well-developed flavours of the shrimp sauce. The Marsanne rounds out the pairing with sweet and sharp fruit including melon, quince and citrus.
Both are lesser-known white wines. Marsanne is usually blended with its relative Roussanne which is more elegant, redolent and robust, but hard to grow.
Roussanne and Marsanne are from northern Rhône, France. Also grown in Languedoc-Roussillon region of France, California, Chile, Australia, Spain, Switzerland and Italy.
This blend is full of stone fruit like peach, soft fruit like pear and citrus like lime. Notes of herbs, toasted nuts and spice round it out.
As a white wine blend, it works well with seafood dishes and cheese. It is also a wonderful accompaniment to North African, Asian and Mexican dishes.

Pasta 2½ cups (625 ml) unbleached all-purpose flour 4 eggs Filling 1½ cups (375 ml) ricotta cheese ¼ cup grated fresh Parmigiano-Reggiano or Pecorino Romano cheese, plus a few pieces shaved 2 tablespoons (30 ml) finely chopped fresh mint ¾ teaspoons (5 ml) freshly grated lemon zest Ground black pepper to taste Salt to taste Garnish 1 cup (250 ml) fresh green peas, shelled 1½ tbsp (20 ml) fresh mint, torn 1 tsp (5 ml) butter

Ground black pepper to taste Salt to taste Make pasta: Place the flour in a large mixing bowl. Make a well in the middle and add eggs. Use a fork to lightly beat the eggs, and begin to gradually incorporate the flour starting from the inner rim of the well. Keep adding flour until the dough just comes together. Some flour may be left over. Turn out dough on a lightly floured surface. Knead dough until soft for a few minutes. Form into a ball. Rest pasta dough for 30 minutes at room temperature. If rolling the dough by hand, use a rolling pin and roll it very thin. Alternatively, follow the manufacturer’s instructions and use a pasta machine to roll dough. Cut dough into 4 inch (10 cm) squares. Cook pasta in boiling, salted water for about 1-2 minutes.
Make Filling: In a medium bowl, blend the ricotta with the chopped mint, lemon zest, and grated cheese. Season with salt and pepper. Make Garnish: In a skillet over medium heat, melt butter. Add peas, and sauté until evenly coated in butter. Season with salt and pepper. Remove from heat and add mint. Assemble: Lay a square of pasta on a plate. Spread with a heaping tablespoon of filling. Garnish with peas. Repeat with a second layer.

The fresh crispness of chilled pinot gris underscores the herbs and vegetables of the dish. A slight pepperiness cuts through the cheese and pasta. The lemonacidity of this wine is the perfect compliment to flavours such as ricotta, green peas and mint.
Distinct from pinot grigio which tends to be of a lower standard, this white wine is vibrant when made in the French style. The best examples tend to come from Canada’s Oakanagan.

When made well from ripe fruit, it is luscious, slightly bracing and fresh, just the sort of wine for simple dishes.
Any light appetizer works well, as do fish and chicken dishes. While the wine will stand up to spices it may be overwhelmed by dishes that are too rich and heavy.

British Columbia ■ WHY ITS A GEM:
From Alberta the comforting continuity of the cathedral of nature, the Rockies, envelops me securely despite dizzying hairpin turns, precarious bridges and rock curtains. With rivers as a constant companion, the provincial border is made indiscernibly irrelevant. Round every bend in the highway, a waterfall. Butterflies as big as hummingbirds flit beside the window and a family of black bears parade through the forest. Slowly, lush, temperate rainforest greenery, redolent pines, and minute differences in topography begin to show. Then eventually misty rain and water everywhere – cascading down mountains, coursing through rivers, nearly placid in lakes. Yet, it is not until it appears in the form of the ocean that the city truly comes into being. A little before there had been an indication that city life would end the mountains I’d been caught in the embrace of for so long, but it is an illusion. I am not so much driving in the mountains as before them, from the Rockies to the Pacific Ranges. New mountains to get to know. Clouds descend upon them and with trees covering them rather haphazardly, they look like bald spots in otherwise fabulous hair. Into Vancouver via Chinatown – vibrant, busy and lively with loads of old buildings. From Grouse Mountain, to the Lions Gate Bridge, to the waterfront and Granville Island, towering skyscrapers and Capilano bridge, totem poles and Dr Sun Yat-Sen Classical Chinese Garden the thing I associate most with Vancouver are the trees. These ancient pines, deciduous canopies have tales to tell. No matter where I go, I am never far from them and it creates a sense of being in the forest always.
