IN LOVE WITH COLOUR
A colourful spectacle in India.
“Colour is essential for life,” writes Frank H. Mahnke, the environmental designer who has studied colour since 1973. We at City Style and Living (CSL) try to celebrate colour in every issue - from the exuberance of travel and the quiet simplicity of monochromatic fashion to the tantalizing brilliance of food. We strive to celebrate the kaleidoscope that is life. Colour is emotional and there is a hue that fits every mood. “The romance of colour exists for everyone…colour is first a sensory event. Colours are true sensations not abstractions or ideas,” Linda Holtzschue in Understanding Color.
In essence, colour is about light (direct and reflected) and perception – we are able to differentiate objects by their colour. “The beginning of every color experience is a physiological response to a stimulus of light…Color is light alone, but it is experienced so directly and powerfully that we think of it as a physical entity,” adds Holtzschue. Colours stand out from the relatively mundane black, white and grey. It is often said that there is nothing more important in a woman’s closet than her little black dress. Yet the dresses that make an impression on our psyche and in popular culture seem to be those of colour. Consider Nicole Kidman’s mustard cheongsam inspired sheath at the 1997 Oscars, or Scarlett O’Hara’s emerald curtain dress or Marilyn Monroe’s shocking pink robe as she sang diamonds are a girl's best friend. We do like black and white for that matter, but to become embedded in the public consciousness it takes colour. Black and white are dramatic, evocative even, but colour is bold and in and of itself communicates non-verbally a plethora of signal and emotions.
At this time of year with gardens flourishing we are able to detect the daring of nature through colour. A backdrop of verdant leaves and foliage offsets a rainbow of flowers, insects and butterflies. Colour gives interest and excitement to a garden – a sense of easily detectable beauty. This is perhaps ever more perceptible while travelling abroad as our senses are heightened and the unfamiliar makes us more observant. Then too we see adobo buildings, fresco walls, or simply recognize a red front door amidst an otherwise unremarkable house. Even in the kitchen colour becomes vital. Chefs cap off dishes with micro herbs and flowers less for flavour than intriguing colour. Modern plating has become the equivalent of an artists’ palette and achieving a balance of colour is as important as flavour in today’s top restaurants. Why do we love colour so? French designer Jean Paul Gaultier perhaps said it best, “colour is life.” CSL

100 ml coconut butter 100 ml shea butter 200 ml almond oil 200 ml walnut oil 200 ml ﬂax oil 200 ml olive oil 3 capsules (400 IU) vitamin E 1 -2 leaves aloe vera 4 bags of chamomile tea Melt coconut butter and shea butter in a pot over low heat. Add the bags of chamomile tea and ﬁnely chopped aloe vera leaves. Simmer over low heat for 10 minutes (be careful not to overheat to smoking point). Strain and let cool then add mixture to olive oil. Combine with walnut, almond and ﬂax oils. Open vitamin E capsules and add. bottle the mixture and shake well before using.

Makes 4 ¼ cup (60 ml) dark chocolate, chopped ¼ cup (60 ml) milk chocolate, chopped 1 tablespoon (15 ml) butter 2 eggs 2 tablespoons (30 ml) granulated sugar 1 tablespoon (15 ml) almond ﬂour Preheat oven to 350 F (178 C). grease 4 small ramekins and set aside. Melt the chocolate and butter over a double boiler until thick and glossy. Meanwhile stir together eggs and sugar. add egg mixture to chocolate and stir until incorporated. add almond ﬂour until incorporated. Pour into each of the 4 ramekins. Bake for 8 minutes or until top is cooked but centre is gooey. Peanut Butter Chocolate Chip Cookies
Makes 24 1 cup (250 ml) brown sugar 1 cup (250 ml) crunchy peanut butter ½ cup (125 ml) butter, softened 1 egg ¾ cup (190 ml) millet ﬂour ¼ cup (60 ml) arrowroot powder 1 teaspoon (5 ml) vanilla extract ½ teaspoon (2.5 ml) baking powder ½ teaspoon (2.5 ml) baking soda ½ cup (125 ml) chocolate chips ¼ teaspoon salt Peanuts for decoration Preheat oven to 350 F (178 C). Cream together the sugar, and butter until light and ﬂuﬀy. add the egg and beat until incorporated. add the peanut butter and vanilla until incorporated. Meanwhile in a separate bowl, whisk together the ﬂour, arrowroot powder, baking soda, baking

powder and salt. add the dry ingredients to the wet ingredients and blend until combined. stir in chocolate chips. Place dough with an ice cream scoop on a greased cookie sheet. Decorate with peanuts. Bake for 12 minutes, or until golden brown.

Make the batter ahead of time and allow to rest before coating the fish. Ensure you purchase fresh fish, and leave at room temperature before cooking.
Experiment with different styles of beer, from light lagers to hoppy IPA your batter will differ slightly in taste. No beer on hand? Use sparkling water or club soda instead.
bATTER AND FISH In a mixing bowl, combine 1 ½ cups (375 ml) all purpose ﬂour, 1 teaspoon (5 ml) baking powder, 1 teaspoon (5 ml) salt, 1 teaspoon (5 ml) ground pepper, 1 cup (250 ml) beer, ½ teaspoon (2.5 ml) paprika. Stir until the mixture is smooth. Let mixture stand for 15-20 minutes.
FRIES Slice 4-5 washed and cleaned potatoes into strips approximately 3-5 inches (7-12 cm) long. place sliced potatoes in a bowl of cold water. preheat 3 cups (750 ml) vegetable oil in a large pot to 248 degrees F (120 degrees C). Fry the sliced potatoes in the hot oil until golden brown. Drain on paper towels to soak up excess oil. Fry the potatoes again for 1 to 2 minutes at 350 F (175 C).
Cut ﬁsh ﬁlets into long strips. Dip the ﬁsh in the batter, one piece at a time. Meanwhile, heat 3 cups (750 ml) of vegetable oil in a large pot over high heat. place battered ﬁsh in oil and fry until the ﬁsh is golden brown. If necessary, increase the heat to maintain the 350 F (175 C) temperature. Drain on paper towels.

HADDOCK A white fish, similar to cod, with a firm flesh and delicate flavour. Commonly sold fresh, or frozen.
3 The crunch of the cabbage with a tart, creamy dressing of the coleslaw counters the richness of the fish and chips. Alternatively, go English and serve with mushy peas. COLESLAW Thinly slice ½ head of cabbage, ½ red onion thinly sliced (optional) and grate 2 medium carrots. Meanwhile whisk together ½ cup (125 ml) vegetable oil, ½ teaspoon (2.5 ml) black pepper, ½ teaspoon (2.5 ml) salt, 1 teaspoon (5 ml) Dijon mustard, cup (60 ml) freshly squeezed lemon juice, cup (60 ml) apple cider vinegar, ¼ teaspoon (1 ml) smoked paprika. Gently combine coleslaw dressing with cabbage, carrot and onion 10-15 minutes before serving.

ORIGINAL HUMMUS Ingredients 2 cups (500 ml) chickpeas 3 cups (750 ml) water ½ teaspoon (2.5 ml) ground cumin 3 tablespoons (45 ml) tahini (sesame) paste 4 garlic cloves ½ cup (125 ml) olive oil 3 tablespoons (45 ml) freshly squeezed lemon juice teaspoon (2.5 ml) salt ½ Water as needed
3 Handy Spices SUMAC Just sprinkle your hummus with this tart, fruity, citrusy flavoured spice to give a zing and for added colour. CUMIN The earthiness of cumin also makes a great topper for hummus – just use sparingly.
1. Cover chickpeas in cold water and soak overnight. 2. Strain water from chickpeas. Fill with fresh water, careful to cover chickpeas. Boil until soft, about 1hour to 1 hour and a half (see alternative methods below).

3. Place the chickpeas, garlic, olive oil, tahini paste, cumin, salt and lemon juice in a food processor and blend until combined. If too thick, add a tablespoon at a time of warm water to loosen the mixture and until desired consistency is achieved.
The Easiest Way to Cook Chickpeas At Home Think boiling or using canned chickpeas are the only way to go. CSL shows you an even quicker method, that with a little preparation will cook up in no time.
1. Soak 2 cups (500 ml) of chickpeas in 4 cups (1000 ml) of water or until it covers chickpeas. Soak for at least 8 hours preferably overnight. Chickpeas will double in size. 2. Drain water. Place in a pressure cooker and cover with 8 cups (2 litres) of water. Place lid on pressure cooker according to instruction manual over high heat. When the pressure cooker begins to release steam reduce heat to medium. Allow the pressure cooker to cool down and release pressure. Open once all the pressure is released consult instruction manual for details. (this method can be used for any beans and reduces the cooking time generally by one quarter). 3. The chickpeas are ready to be pulsed into hummus or can be ﬂavoured to make other dishes.
TWEAKS A few easy variations on the classic hummus
SQUASH AND CINNAMON HUMMUS Place a sliced and peeled butternut squash on a sheet tray and sprinkle with cinnamon and salt. Place in the oven for 15-20 minutes, until the flesh is tender. Pulse squash with original hummus recipe. PESTO HUMMUS WITH ROASTED CARROTS Combine 2 cups (500 ml) fresh basil, ¼ cup (60ml) pine nuts, ¼ cup (60ml) olive oil, ¼ cup (60ml) freshly grated parmesan cheese or pecorino, 1 teaspoon (5 ml) salt in a blender or food processor, and blend with original hummus. Meanwhile bake 2-3 carrots cut lengthwise and drizzled with olive oil and ½ tsp. (2.5ml) of dried ginger on a sheet pan until soft and golden brown. Serve as garnish. CILANTRO LIME AND COCONUT CREAM HUMMUS Instead of warm water, pour ¼ can of coconut milk when blending the chickpeas in the original hummus recipe. Add 1 teaspoon (5 ml) curry powder. Combine with ½ cup (125 ml) cilantro, ½ of a freshly squeezed lime and pulse for a zingy variation. (not pictured)

FISHTAIL BRAID BUN How To
1 Start oﬀ by using one of your smaller wefts of hair (clip-in extension) and ﬁshtail braid it. Be sure to pull the braid to give it a very "messy" appearance. Secure the braid with a clear elastic band.
2 Put your hair up into a bun. I prefer a messier bun, but a classic ballerina bun works just as well. Secure your bun in place using hairpins or bobby pins. 3 Taking your braided clip-in, clip the extension in the back of the bun being careful to hide the base of the extension as much as possible. wrap the braid around the base of the bun and cover the clips. Secure in place with bobby pins.

Make Up Wedding season is upon us. Many articles will be dispensing advice on the type of makeup brides should wear but there is never any practical advice for guests. Like so many things, a wedding guest needs to prepare a makeup look that is appropriate and considerate. Here are the top tips for a wedding guest by yours truly by DANIEL THOMpSON
Respect the bride’s colour palette. If possible, match makeup looks to suit the bride’s wedding colours – this shows respect, but also allows for some fun with makeup. It doesn’t matter if you don’t like pink. If the bride does, 5 find a way to incorporate some pink into your makeup. Inquire of the bride’s maid of honour as to what the colour scheme is and ensure your makeup matches the bride’s perfect day. When in doubt go neutral. By using soft neutral makeup, you will never run the risk of having inappropriate makeup at a wedding. Neutrals work with every colour palette and do not draw attention away from the bride. see & do GO FOR A WINE AND CHEESE SUNSET CRUISE I set sail late one afternoon against a backdrop of brilliant pink ombré sky, sipping crisp sauvignon blanc and munching cheese as I watch humpback whales spouting in the distant ocean. The sun melts away behind the Sierra de la Giganta as the journey ends. HIkE THE SIERRA DE LA GIGANTA With my enthusiastic and knowledgeable guide Carlos Velasco, who spouts handy survival advice and points out various plant and animal species, our brisk morning hike reveals spectacular views. CORONADO ISLAND, DEL CARMEN ISLAND AND DANZANTE ISLAND I hop onboard with Daniel who points out grey, blue and humpback whales. The wildlife does not stop there we spot blue footed boobies, a colony of barking sea lions and giant manta rays jumping out of the water. Another day, Frank takes me to Danzante island, describing what is found in the Loreto Bay National Marine park including the varying rock formations – nature’s modernist sculptures.
pADDLE A GLASS bOTTOM OCEAN kAyAk One morning, I take a glass bottom kayak from Villa Del Palmar Loreto to an offshore island. Paddling with gusto in the water, I reach the island in less time than I’d imagined, welcomed by a beach laden with starfish, bright red rock crab and seashells.

dine & sip CASA MIA After a dip in the ocean, I chat with Luis at the bar of Casa Mia while I nibble the addictive local Loreto chocolate clams, baked with Monterrey cheese, chipotle, garlic and butter before ordering a crisp wood fired seafood pizza, and fish tacos with creamy guacamole and pico de gallo. DANZANTE RESTAURANT For dinner, I am welcomed by two trees entwined with twinkling white lights dazzling in the night sky on the terrace overlooking Danzante Bay. Executive Chef Alfonso Peregrina has prepared a scintillating taste of Mexico for dinner that begins with poached shrimp and jalapeno, followed by a luscious and silky poblano cream soup with hints of mint, and then a perfectly seared fish fillet served over delicate risotto. He finishes with cherries jubilee prepared tableside. DONâ€™T MISS Mixologist David Ortiz creates deliciously smooth cocktails during my stay here (the tamarind margarita and cucumber and chili margarita become my faves), while sommelier (and tequila expert) Cesar Sanchez treats me to an impromptu tequila tasting where I learn the ropes of Mexicoâ€™s signature drink. villadelpalmarloreto.com
THE ISLANDS AND WILDLIFE Go whale watching (winter months), bird watching or look out for dolphins, sea lions and stingrays within a United Nations protected Marine Park comprising five islands (Coronado, Del Carmen, Danzante, Monserrat and Santa Catalina islands). GREAT OUTDOORS 155 miles of coastline on the eastern Baja Peninsula makes for great diving, fishing, kayaking, sailing, snorkeling paddle boarding and sunset or day cruises. While inland the Sierra de la La Giganta house indigenous cave paintings.
