THE RETURN

HAVE YOU EVER RETURNED TO A PLACE THAT once meant a great deal to you? I did recently and it revealed things about the place and myself that I hadn’t expected.
H
My first visit had taken place in the enthralling years when the world was new and I was just beginning to decide for myself what I believed, where I wanted to go and how I defined a successful and happy life. In those days, every decision was a fateful decision. So, my trip to a quiet island seemed to reflect what I was seeking – the tranquility needed to clarify my wishes. With few direct flights and recovering from a devastating hurricane only a few years before, the island prided itself on a relative lack of commercial culture. I would spend days going from beach to beach searching for the perfect swim. I would visit churches and monasteries participating in ancient rituals meant to remove obstacles. Past crowing roosters, sugarcane fields and amazing waterfalls there was enough peace and tranquility to listen to myself. The locals were kind and friendly – a mother and son opening the door to a stranger and giving me the fruit I requested. That island, that time, became instrumental in my life. One day, in my rented room, surrounded by coconut trees, I sat down and deliberately codified my wishes and got serious about what I wanted. In a

few short months, I would embark on one of the defining adventures of my life. I felt something there on that island – a belonging, a spirit, a magic, call it what you will – that began from the time I arrived at the airport perfumed by local flowers. It seems now with that long backward view that time provides, that nearly everything that followed in my life emanated from that island, or at least the focus that had overtaken me while there. On my latest trip, mass tourism altered the island to such a degree as to render it unrecognizable. Gone was the flower scented airport, gone was the quiet, and gone was the tranquility. There were shopping malls where there was once agriculture, traffic where there were once few cars, litter where there was once not even footsteps. Though never quite wistful, I could not help but notice the changes. Of course, I too had changed for better and worse. After a while I no longer searched for the magic I had once known on the island, I accepted that it was gone. Then, a funny thing happened on my last day, just as I was about to leave. I felt a tug at my heart beckoning me to stay – the same thing I had felt all those years ago. CSL — KAILASH AND SHIVANA

Tasting Rome By Katie Parla and Kristina Gill (Clarkson Potter, $39; crownpublishing.com) Sometimes it takes an outsider to see most clearly. As American expats, Parla and Gill present the best of Rome in this new cookbook, while not shying away from its contradictions. The arrival of Rome's local artichoke, carciofo romanseco is celebrated in a recipe for shaved artichoke salad though a later anecdote laments the declining daily markets (mercado rionali). A gorgeous recipe for summer amatricana popular at trattoria is given alongside a subsequent note that workers from South Asia and North Africa have largely replaced the nonna in restaurant kitchens. A dish of spicy fish with couscous is lauded while noting the sad history of Jewish ghettos. Far from being confusing, or offputting, the books puts food precisely at the forefront of social change while revealing its historical cultural importance. This compilation of Roman recipes, reflections on city life and photographs, is a modern, refreshing, and candid exploration of cucina romana (Roman cuisine).

CURE BACK PAIN Here is a basic exercise familiar to anyone who practices yoga or pilates. It helps to improve the back’s ability to bend and stretch and is safe if performed correctly. The basic idea is not to strain as well as to use your breathing to mobilize your back. Alternate from one position to the next in a smooth fashion, without a lot of effort, keeping your neck extended in a line from your back.

ISLAND CRABCAKES WITH VANILLA–GRAPEFRUIT REMOULADE

VANILLA–GRApEFRUIT REMOULADE large (225-275g) red grapefruit (for remoulade, crabcakes and garnish) (30g) shallot, peeled and chopped garlic clove, peeled and chopped cup (120ml) mayonnaise tsp vanilla paste tsp runny honey tbsp (15g) Dijon mustard tsp pimentón smoked paprika tsp parsley, finely chopped/minced
CRAbCAKES 2 cups (250 g) crabmeat, picked and free of shell, squeezed dry 2 Tbsp (30 ml) grapefruit juice 1 tsp grapefruit zest 3 eggs, large, beaten ½ cup (120 ml) mayonnaise 1 tsp vanilla paste 1 tsp Dijon mustard 1 tsp pimentón smoked paprika 1 Tbsp (15 ml) Worcestershire sauce 1 tsp hot sauce ⅓ cup (80g) red onion, finely chopped ¼ cup (40 g) red bell pepper/capsicum, finely chopped ¼ cup (40 g) parsley, finely chopped 1½ cups (175 g) panko dry breadcrumbs oil for frying
Vanilla–grapefruit remoul ade Zest grapefruit and set aside. Using a small knife, cut top and bottom off grapefruit and slice the peel away from sides in a downward motion until all the pith has been removed. Hold the fruit over a bowl to catch the juice and using a small knife separate the segments from the membrane, allowing the segments to fall into the bowl. Squeeze the remaining juice from the membrane into the bowl. you should have enough juice for both recipes. In a small bowl, mix chopped shallot and garlic into mayonnaise. Mix in remaining ingredients plus 2 tsp of grapefruit juice and 1 tsp of zest from the grapefruit, combining well. Cover and chill until ready to serve. Reserve remaining zest and grapefruit segments in juice for crabcakes and garnish. Crabcakes In a small bowl, combine crabmeat, 2 tbsp of grapefruit juice and 1 tsp zest. Mix well. In a medium bowl blend remaining ingredients (except breadcrumbs). Gently fold crab into egg mixture, then sprinkle in breadcrumbs and a few grinds of salt and pepper, and mix to combine. Shape into small 60-g/2-oz patties and place on a clingfilm-/plastic wrap-covered plate. Chill for 1 hour. Warm frying pan/skillet to medium heat and flick in a little water from your fingers – if it sizzles the pan is ready. Coat pan with a thin film of oil, then add the crabcakes a few at a time, being careful not to overcrowd the pan. Cook 3– 5 minutes on each side until golden brown. Drain on paper towels.
To Serve Chop about 6 grapefruit segments into small pieces and gently stir into chilled remoulade sauce. Serve with the crabcakes.
TIPS AND IDEAS
SEAFOOD For this dish, I used delicate paddle crab (also known as swimmer crab), found in the waters around New Zealand, Australia and the pacific Islands. For best flavour and sustainability, use locally caught crustaceans, or substitute other local fish such as ling, cod, halibut or locally caught scallops. These dairy-free small-bite crabcakes are perfect for parties and easy to make. pAIRING Serve with vanilla–grapefruit remoulade and your favourite rosé or Champagne. GRApEFRUIT If grapefruit is not for you, substitute a large thin-skinned juice orange. Follow the same method but add a few drops of lime juice for tartness. pIMENTON pimentón is a Spanish smoked paprika that adds a bit of smoky, spicy heat to dishes. It can be found in most large supermarkets and gourmet shops. pANKO Instead of panko, you can also use gluten-free rice crumbs.
RUM AND VANILLA CURED SALMON DOUGLAS RODRIGUEZ Makes 3 lb (1½ kg) cured salmon 1 re1 or 1 3 1 3 3 4 2
side of salmon, skin on, all scales & bones moved, keep belly bottle dark rum, such as Meyer’s, Gosling’s Stolen Rum cup (250 ml) kosher or sea salt Tbsp (45 ml) brown sugar Tbsp (15 ml) cracked black pepper Tbsp (45 ml) anise seeds Tbsp (45 ml) coriander seeds, toasted and ground cumin seeds, lightly toasted Tbsp (30 ml) vanilla pods
In a large shallow container, marinate the side of salmon in dark rum at room temperature for 24

WHERE IT ALLSTARTED 1½ to 2 hours. Massage the salmon every 20 minutes in the rum as it cures, which kills any microorganisms living on the flesh. Mix together the salt, sugar, pepper, anise, coriander and cumin seeds in a small bowl. Split and scrape the vanilla pods and rub the vanilla seeds into the salt–sugar mixture until well combined. Add the pods and vanilla extract to the mixture, combining well. Remove salmon from rum and pat dry. In a large shallow dish, sprinkle about onethird of the vanilla salt mixture on the bottom. place salmon on top of this, then cover the salmon evenly with the remaining salt mixture and press down with your hands. place in refrigerator for about 2 days, then remove all salt and rinse under cold water. pat dry. To serve, slice thinly onto serving platter and serve with crème fraîche, capers and microgreens.
My first vanilla story comes from an old lady name Rosario, who used to live in the same building as me in New york when I was 9 years old. She had vanilla perfume and I used to follow her round just to smell her. I was fascinated with the perfume...until she told me it was vanilla and I immediately thought, vanilla? That’s what my mama adds to desserts, no wonder I like the scent. Vanilla ice cream is one of my most guilty pleasures of all time, and I made sure I was the first one to give vanilla ice cream to my kids. I can never forget their faces. I remember exactly the date I gave Dario, my youngest, vanilla ice cream. He was 9 months old and, well, I wanted him to taste the most delicious flavour in the world. He loved it so much, that he ended up crying and having a temper tantrum because he wanted more. I realised then that we were going to share the same passion – vanilla ice cream! –D.R.

cup (180 ml) honey tsp orange flower water (30 ml) egg white cup (50 g) white sugar cup kosher salt or sea salt flakes
panna cotta place water in a small bowl and sprinkle with the gelatin. Leave the gelatin to soften for 5 minutes. Meanwhile, in a saucepan over medium– high heat, warm the cream with sugar and vanilla and pulp, stirring until sugar is dissolved. Turn off heat and add softened gelatin. Stir until it dissolves. Strain mixture through a fine sieve/strainer into a measuring cup with a spout, then pour it into four 240-ml/8-fl oz ramekins. Chill until firm, about 3 hours. Compote In a large heavy-duty frying pan/skillet, stir together the water and sugar, add the scrapings and the vanilla pod. Over medium–high heat, bring the mixture to the boil without stirring. Using a pasty brush dipped in water, brush down the sides of the pan and remove any undissolved sugar granules. When the sugar begins to colour, after about 3–4 minutes, tilt and swirl the pan to cook evenly. When the sugar reaches an even medium caramel colour, remove from the heat. Add the fruit, tossing in the pan to coat. be careful as mixture may spatter and the caramel may seize and harden. Add brandy, and return pan to low heat, carefully cooking the fruit until
the sugar melts, about a minute. place a large sieve/strainer over a bowl and pour in fruit compote, straining the liquid into the bowl. Remove vanilla pod and transfer the fruit to a serving dish. Reserve the liquid. Whisk cornflour/cornstarch into the reserved liquid. Return the liquid to the frying pan/skillet and over medium heat bring the liquid to the boil, whisking constantly. Remove from the heat and pour the thickened juice over the cooked berries. Set aside to cool. belli e brutti Adjust the oven racks to the middle–lower positions and preheat the oven to 180°C/350°F/gas mark 4. Add all the ingredients to a medium metal bowl and gently mix together with your hands, being careful not to break the almond pieces. Drop teaspoonful-mounds of mixture onto lightly sprayed, lined baking trays/cookie sheets. bake for about 15–20 minutes, until nicely browned and chewy, rotating baking trays/cookie sheets halfway through to ensure even baking. To serve quickly dip each panna cotta mould in hot water to loosen sides, or alternatively run a small knife around the edges to loosen. Unmould on serving plates and spoon the compote mixture over the top. Serve immediately with pieces of belli e brutti. CSL

Chambord Manhattan
The peak of summer is marked by picking fresh berries. Get a flavour burst with this refreshing cocktail. ½ oz Chambord Liqueur 1½ oz Bourbon Dash of bitters fresh blackberry for garnish Take a cocktail shaker filled with ice. Pour in Chambord, bourbon and a dash of bitters. Strain into a martini glass. Top with a fresh blackberry and sprig of mint.

Thyme Orange Negroni
The pronounced orange flavour in this cocktail makes for a refreshing summertime drink. 2 ounces freshly squeezed orange juice 1 ½ ounces gin 1 ounce sweet vermouth ½ ounce Campari ½ ounce thyme simple syrup (recipe in directions) ¼ ounce lemon juice Ice To make the thyme simple syrup: In a saucepan over medium heat combine 2 cups (500 ml) water and 1 cup (250 ml) sugar. Stir occasionally until sugar is dissolved. Remove from heat and add thyme, covering pot to steep. Let cool and remove thyme. Combine the orange juice, gin, vermouth, Campari, simple syrup, and lemon juice in a shaker filled with ice. Strain into a rocks glass. Add a slice of orange and place three Luxardo cherries on a skewer to garnish.

YOUR LOOK Whether you are in to dewy skin or matte, a good foundation (pun intended) is key. We are stepping out of the 1990s inspired look of full face makeup and entering the zone of ‘real’ skin. The era of contouring has taken a backseat to gentler makeup. To create this look, begin with a creamy sunscreen. Next, hide flaws (under eye circles, blemishes) with a colour correcting palatte. Then, with a foundation brush, apply a liquid foundation all over your face. To add a warm glow, use a gel or liquid bronzer to key areas (cheekbones, chin, bridge of the nose). YOUR LOOK On lids, graphic liner is given an update by being a little bit chaotic, instead of a neat line. The pretty shade looks super cool when applied with a bit of disconnection. Start with an eye liner brush, and dip into a bright shade. Apply from the inner corner and sweep toward the middle of the eye along the crease. Leave a gap and end with a cat eye flick on the corner of your eye. More into a pastel shade of blue? To recreate this sweet look, sweep powder over your entire lid, and finish with spiky mascara to create a mod-inspired look.

1 Enhance the Foundation Mix your regular liquid foundation with a mineral based liquid sunscreen (be careful here because this only works with pure mineral sunscreens and not chemical based ones) – equal portions work best, but for a more radiant finish mix 1 part foundation with two parts sunscreen. Apply mixture evenly across the skin – and yes it will look a little white but only for a moment – massage into the skin until there is no trace of the white finish (created from the sunscreen) – allow to set for about 10 minutes – longer if you can. Lightly dust with a transparent powder using a big open brush – this will create a flawless finish that does not look heavy. 2 Change the Eye Shadow Formula Talc-free eye shadows wear better in humidity and are not as easily broken down by the skin. This can be either a cream formula or a mineral formula. Also the colour payoff is better. Don’t try to contour with cream eye shadow rather create washes of colour. 3 Lipstick Trick Fill the entire lip with your favourite lip liner shaping the edge of the mouth as you go. Dab a very small amount of clear lip gloss in the centre of the bottom lip and rub the lips together to distribute the shine. 34

een on the majority of spring runways, braids are anything but boring. At Louis Vuitton, hair was loosely braided for a French cool-girl edge, while the crowned headband seen at Vanessa Seward was an update on the traditional ‘Heidi braid’. For a subtle look, take a 3 inch section of hair from the front of your head and braid, securing with an elastic and tuck into the back of your ear. Or, try a fishtail braid with ends brought to the side of the shoulder. For a side braid begin with a side part, then braid the thickest section only and secure with an elastic. Then take the remaining section of hair and the end of the braid and twist into a bun. Secure with bobby pins. Finally, to easily create the ultimate crown, start by parting hair into two. Tightly braid each section and secure with a translucent elastic band. Next, take the end of one braid and bring to the opposite side of head, securing the end with a bobby pin. HIS SEASON’S LOVE OF everything lace follows the previous season's showing of Victorian themes. It's a natural progression that showed up all over the runways as designers showed a plethora of lace textures from sheer and delicate to structured and bold. We loved the touches of subtle architectural digitized lace at Jonathan Simkhai, while Riccardo Tisci at Givenchy opted for delicate Gothic glamour with boudoir elements, and at sister-duo Kate and Laura Mulleavy's Rodarte, velvet and embroidery combined to create an embellished silhouette.
STYLIST If you're super daring, go for the overt silk negligee styles, accentuated with lace seen at Céline, Givenchy and Calvin Klein. Instead of a rehashing of the grunge trend from the 1990s (ie. lace slipdress with combat boots), this season offers a softer shoe, the leather pointed-toe booties, seen at the Chloé show. Tell us a little about your career path as an actress.
I grew up in Phoenix, Arizona and was a competitive (and pretty stressed out) gymnast. After breaking my hand during one of the best competitions of my life, I realized how truly unhappy I was. Though it was ridiculously hard, and seemed almost impossible at the time to quit, I eventually did find the strength. Around that same time I went to see the movie Center Stage by Nicholas Hytner. This film was so powerful for me…I knew that performing was what I was born to do. Throughout high school I was busy dancing and acting [but]… I didn’t get into my dream college. I saw an opportunity to audition for an intense performing arts scholarship program in LA. As soon as I finished the program I got signed to a dance agency and tried to get in with an acting agency, but got turned down and was very discouraged. A couple weeks later, I saw a sign on the wall for auditions for the lead in Center Stage: Turn It Up – the sequel to the very film that changed me as a little girl. [Eventually] I got a call from one of the agents that turned me down saying that Sony Pictures wanted to book me to play Kate Parker in Center Stage Turn It Up. This crazy, beautiful, overwhelming, and miraculous experience was what has shaped my entire brand and company.
Tell us about Unbreakable.
My brand, Unbreakable was inspired greatly from my Center Stage story and centers on what I have learned along my journey of both going after and achieving big dreams. One of my very favorite things in life is when I get letters and video messages from fans or those that have attended one of my workshops who say things like, "because of your workshop I finally have the confidence to go after my dream.”
What are some of your favourite projects that you have worked on as an actress?

I am a big believer that the arts and athletics are what make me able to do all that I do. My Freeyo Workouts are a combination of yoga flow, hip hop dance cardio, and HIIT training all in one – a combination of all of the things that are fun, and effective.

Owner Elvrine Chow leads the haku lei making class with clear direction and experience. Using a selection of brilliant Kaui grown flowers and foliage like plumeria, orchids, and ti leaves, Chow notes that the blooms can last for up to a month. We easily pick up the wilistyle technique and the relaxing craft is a fun way to connect to Hawaiian culture. In under half hour, we end up with a regal haku (crown).

Koa Kea Hotel and Resort recently became part of the Meritage Collection, and is one of the most romantic hotels on the island of Kauai. The sophisticated lobby is set off by sparkling crystal chandeliers and a black and white palette. The boutique resort offers luxury amenities, like valet service to a mostly adult clientele. The pool and jacuzzi are the focal point at the u-shaped 121 room hotel while beach chairs are neatly aligned on the oceanfront lawn - everything at this resort is centered on sky and water. Fit with a large marble tile bathroom, Nespresso coffee maker and a small balcony overlooking poipu beach, our ocean view room is modern and chic, with dark wood accented with pink and blue reflecting the colours of sunrise and sunset.

On a late afternoon, we enjoyed a relaxing and rejuvenating lomi lomi massage in an outdoor beach side cabana. The sound of children playing on the sand was subdued by crashing ocean waves enhancing the relaxing massage. Kipi, our therapist had an incredible technique and was able to ease our sore muscles.

Dinner at Red Salt featured picture worthy presentation (like the chess board style plating of the signature ahi and ono poke) and delicate flavours (the lobster ravioli was sweet, topped with a Michelin worthy tomato brunoise). Creativity at the restaurant is paramount, and our eyes lit up when we were presented with a towering mound of lilikoi (passion fruit) cotton candy at the end of our meal. Red Salt excels at creating a luxurious and intimate dining experience, and is one of the best restaurants on Kaua'i.
KO LOA R UM CO M PANY Mount Wai’ale’ale is one of the wettest places on earth and it feeds many of Kauai’s springs. It is also integral to the success of Koloa Rum Company, which produces award winning, premium, single-batch Hawaiian Rum. The process of distilling sugar cane into the 52

delicious amber tipple began here in 2009. Daily tastings introduce several of Koloa Rum’s seven offerings (including the new spectacular Kaua'i Coffee). Our guide Kale also demonstrated how to create a mai tai so that the dark rum, sits atop Koloa Rum's mai tai mix. To top it off – a bite of moist and delicious rum cake.

Kauai is known for its cinematic landscape that has had a starring role in film and television. This helicopter ride offers firsthand, close-up views of Nāwiliwili Harbor, Hanapepe Valley, Manawaiopuna Falls, and Olokele Canyon among other iconic Kauai sites. Spot rainbows, towering cliffs, lush vegetation, white sand beach and miles of ocean.

Asian artwork, sculptures, beautiful gardens and pools teeming with golden, black and orange koi imbue the resort with a sense of tropical tranquillity. His farm is a treasure trove of ingredients and he introduced us to some familiar and many exotic beans, plants, fruits and herbs, like calamansi lemons, curry leaves, macadamia nut tree, a variety of fig, fiddle stick, watercress, arugula, and purple string bean. After picking some fresh ingredients he then brought them back to Kaua‘i Marriott Resort and transformed them into a delicious dinner. Dishes included a play on a panzanella, salade niçoise, and chicken wellington with sautéed mushroom. This sprawling resort has an authentic core.

We see Ni’ihau, polihale and the ridges of Koke’e, numerous waterfalls and lava tubes. Our captain Tony shares the history and legends of the ancient civilizations that once inhabited these ver-
dant valleys. After a relaxing and beautiful sail, we pull into a remote snorkel area and anchor to reveal colourful fish of yellows, blues and greens. We are fortunate to encounter a pod of spinner dolphins, and green turtles. The most spectacular sight however is the most unusual - the tail of a humpback

whale rising out of the water for almost a half hour. We are awe struck (as is the captain) who explains that this female is actually nursing her baby - a true wonder of the natural world! It is also a real surprise, as whale season on Kauai usually starts in December and ends in April.
Set amidst the beautiful pa'u a Laka (Moir Gardens), this former plantation manor features delicious Hawaiian classics and pacific Rim cuisine. Chef Ken Morikawa excels at delicious, comforting flavours from the well seasoned poke to the traditional lau lau (seafood cooked in ti leaves), served with rice and stir fried vegetables. Koi ponds, saltwater lagoons, and an 18 hole golf course are just the beginning at this 52 acre property. There are scenes straight out of the movies on Hyatt’s dreamy grounds, like a pair of black swans gliding in a pond, surfers catching the perfect wave at Shipwreck beach or the spectacular views when hiking the Maha'ulepu heritage trail. Our deluxe room overlooks the resort pool, and offers a peak at the ocean, complete with a private lanai. One day, we tour the resort's own lettuce garden (a pilot project in a converted tennis court). Later, we meet head landscaper/gardener Gary Lopez, who has been working at the hotel for twenty six years. He speaks about leading the reconstruction of the gardens after hurricane Iniki. "We sometimes worked ten-hour days, but they were worth it," he explains.

KAYAK KAUAI
The Wailua River has been seminal to Kauai for centuries. It is also the focus of this fun outdoor experience. Guide Kelly Corbett helped me with my kayaking technique as we glided on the river. We then hiked for about a mile within the rainforest, at times passing through groves of water apple with their brilliant purple powder puff flowers. Eventually, we came to the beautiful Uluwehi waterfall for a quiet, heavenly swim. Kelly even made a bracelet from sea hibiscus bark during the hike, presenting it as a gift at the end of this fantastic experience.

Owners Howard Warner and Jeff Sacchini purchased Living Foods Market two years ago. “The ‘aha’ moment was meeting with local vendors and being able to support them,” says Sacchini. The market concept is split between a store side (with an array of local produce and handpicked imports) and the kitchen (which includes a juice bar, freshly prepared food, and grab-and-go items). While the market is undergoing an expansion which will enlarge its kitchen offerings, its current standouts include pizza, poke bowls and sandwiches from Chef Justin Kai.

As we enter Tidepools, we spot a cavalcade of chefs working the line, from the partially enclosed kitchen. Using Hawaiian ingredients, techniques and flavours, the restaurant excels at introducing diners to unusual ingredients in a familiar way like the crisp taro root croquettes. Our other appetizers including tempura stuffed ahi, mahi and prawn satay were on point. The delicate butter poached lobster and local snapper served with stir-fried vegetables and buckwheat soba noodles in a chili garlic sauce were both outstanding. A highlight of our dinner was watching the fireworks (thanks to a conference being held at the hotel), just overhead - a true spectacle in the sky.
