I’ve always been drawn to archaeology and so I was watching a television program about the Neolithic people of Britain. Between 3000 BC and 1900 BC they left an undulating landscape pockmarked with hills – a bit like a piece of verdant bubble wrap – in eastern England at the site of Grimes Graves. These Stone Age people were mining for flint. It was the modern equivalent of gold to them. The deep underground tunnels are still intact and the television host descended to see exactly how these ancient people had dug several meters using only antler implements. Beyond the technical prowess of these people and their ingenuity, the question of greatest perplexity was: why? Why had they dug so deep underground when there was ample flint above ground that was easily sourced? One theory was that it was part of a religious ritual – to dig underground until that most precious material of the time was found. To me, it seemed like the ancient counterpart to a fairy tale, but to the television host it seemed very puzzling indeed. There was absolutely no economic reason for it and so he could not rationalize their actions. To think, archaeology is one of the fields in which economic anachronism taints our interpretation of the past. By this I mean that because today our world is ordered by economic concerns we assume that the world was always thus, that economics has always been the prime if not the sole motivation for people. When we are presented

with evidence to the contrary we disbelieve. Ancient people knew the true values of life so why have we forgotten? We are so used to the economic imperative and economically motivated action that it is alien to think in any other terms. We cannot imagine a world ruled by anything other than money and profit. In fact, for most of human history, the economic consequence of action was secondary to the spiritual. People’s actions and lives were not governed absolutely by money the way ours are. True, the conditions of life have changed but the essentials have not. This modern obsession with economics robs us of opportunities to see value (other than monetary value) in actions, things and people. What I mean, quite simply, is that we’re so busy thinking: can I afford to do this? will it pay me well? can I support my lifestyle by this? and any other number of questions that have to do with money that we sometimes miss the true motivation for action – love, compassion, and not working for rewards. csl — KAILASH AND SHIVANA

A Spring comes early to north Texas and the dogwood trees are already blooming, even if it's still officially winter. I love the pink blooming trees and keep a few spidery branches in a vase to remind me that spring is only a few weeks away. On neighborhood walks I love seeing the green lawns covered with robins. I like the contrast of the red breast against the grass.

SAMSUNG GALAXY EXPEREINCE It was easy
to pack this camera on two recent trips to the Caribbean. I received many compliments about the camera (and offers to buy it) from people from all over the world. Some liked the beautiful white exterior, others were perplexed whether it was a phone or a camera (it does not make calls). A great 21x Super Long Zoom lens, wonderful picture clarity, and video allows it to take beautiful photos. With a ton of apps (like Instagram), the ability to share photos instantly and wi-fi connectivity it also acts as a powerful Android device. FAVOuRITE FEATuRE Panorama (included among several modes to enhance pictures) which usually calls for expensive software and hours to stitch together photos. This camera does it in a matter of seconds. CAVEAT I missed a few shots because of how long it takes to for the camera to start up. I expect to flick it on and begin shooting immediately. While the large screen makes it easy to review pictures, in bright daylight, the screen is hard to see. OVERALL A dynamite camera that can do just about anything an Android does.

A Fish Tale
In a rush? Seafood is one of the quickest cooking proteins, and meals can be made in minutes. We tried Dom Organics, offering a growing variety of organically certified seafood products such as: Atlantic salmon, smoked salmon, and frozen salmon portions. The organic seafood is raised using all-natural, sustainable practices, in harmony with the environment. SMOKED SALMON FLATBREAD PIZZA Whip up this meal in minutes. Take premade pizza dough and roll flat. brush with olive oil and place in a hot oven. Remove and top with smoked salmon, fresh chives, and capers and drizzle with balsamic vinegar. We loved the taste of the, silky and mildly smoked salmon against the soft dough and sharp capers.

Choose a heavy or cast iron skillet, and place on burner to heat. Add 1 teaspoon of oil and wait until oil is smoking. Add 1 teaspoon of butter.
QUINOA AND SPINACH SALAD WITH SHRIMP boil the quinoa and set aside. Season shrimp with salt and pepper and sautee in a pan. Add shrimp and quinoa to a salad of lettuce leaves, strawberry, feta, carrots and candied pecans. Serve with a tangy raspberry vinaigrette. We like the contrast of the sweet shrimp and zingy dressing.

Add fillet to the pan, skin side down. Sear for 2-3 minutes. use a fish spatula, and flip the fillets. Cook for another minute. To check if your fish is done, gently prod with your finger. your salmon should feel somewhat firm, with a little give (approximately 125 F or 51 C).
ASIAN STYLE TEMPURA SHRIMP Coat the peeled and deveined shrimp in a batter of 1 cup (250 ml) flour, 1 tablespoon (15 ml) cornstarch and 1 ½ cups (375 ml) soda water. Deep fry in a pan of hot oil. In another saucepan heat a premade sweet and sour sauce and place the deep fried shrimp in the sauce to coat evenly. www.dominternational.com
SCALLOP AND BUERRE BLANC
Combine 1-2 shallots chopped fine, 1 cup (250 ml) white wine, and ¼ cup (60 ml) lemon juice in a saucepan over high heat until reduced to 2 tablespoons (30 ml). Add 1 tablespoon (15 ml) cream bringing mixture to the boil. Reduce heat and add 12 tablespoons (180 ml) of butter in cubes one at a time whisking continuously. When reduction is emulsified season with salt and pepper to taste. Serve with pan seared scallop topped with white sturgeon caviar and mashed potatoes.

SMOKED SALMON MOUSSE ON TOAST
In a blender or food processor place 1/2 pound (230 g) smoked salmon, ¼ cup heavy cream, ¼ cup sour cream, ½ cup (125 g) cream cheese, juice of a lemon, 1 tablespoon (15 ml) chopped dill, 1 tablespoon (15 ml) chopped chives and blend until smooth. Season with salt and pepper to taste and blend to incorporate. Serve spread over buttered toast and topped with Ikura Salmon Caviar.

OYSTER WITH MIGNONETTE AND CAVIAR
Combine ¼ cup (60 ml) red wine vinegar, 1 tablespoon (15 ml) minced shallot, and ½ teaspoon (2 ml) black pepper in a small bowl. Drizzle over oysters and top with white sturgeon caviar.

A bright orange colour is a reminder of blooming spring flowers. Serves 1. Combine 1 part sugar to equal part water over medium heat, stirring to dissolve sugar. Remove from heat. Steep 23 sprigs of rosemary in syrup. Let cool and strain. To ½ ounce (15 ml) of this rosemary simple syrup add 1 ounce (30 ml) gin, ½ ounce (15 ml) triple sec, ½ ounce (15 ml) freshly squeezed Clementine juice, ½ ounce (15 ml) cranberry juice and ½ ounce (15 ml) Campari. Garnish with rosemary sprig and fresh cranberries.

An adult take on a childhood favourite. Serves 4-6. In a blender combine 1 cup (250 ml) frozen bing cherries (pitted), ½ ounce (15 ml) freshly squeezed lime juice, 4 ounces (120 ml) white rum and 2 ounce (60 ml) agave nectar. Pulse until mixture is smooth and thick, adding more lime juice or agave to taste. Add 5 dashes bitters. Garnish with fresh cherry.

WHICH TYPE OF OATS SHOULD I CHOOSE?
keep in mind that after oats are harvested, they are separated from their hulls and stalks. The resulting grain kernel is called an oat groat. Choosing the right kind of oat for you depends on flavour, cooking time and availability. We’ve highlighted the three most widely available types.
Steel cut oats/Irish Oats are made from sliced oat groats. They have a chewy texture and cook in 20-40 minutes. Great for a hearty breakfast, risotto or stew.
For the Oatmeal crumble Preheat oven to 350ºF (180ºC). Line a rimmed baking sheet with parchment paper. In a large bowl, combine oats, almonds, coconut, and brown sugar. In a saucepan over low heat, combine the agave and oil stirring, until hot. Pour the mixture over the oat mixture and stir to coat evenly. Spread the mixture on the prepared sheet. bake, stirring occasionally, until the granola is golden brown, about 30 minutes. Assemble Place ¼ cup (60ml) yogurt in the bottom of each glass. Add 2 tablespoons (30 ml) of the berry compote over the yogurt and then repeat with another layer of yogurt, about 1 tablespoon (15 ml) sprinkle with granola crumble to taste. Garnish with berries and serve.
Rolled/old fashioned Oats are made from steamed, flattened and dried oats groats. They cook in 10-15 minutes and have a nutty flavor. Great in baking.
quick Oats are made similar to rolled oats but the flakes are thinner and they are steamed longer. They cook in about 5 minutes and have less texture. Great for a quick breakfast.

Get your kids involved in this step as it is easy and mess free.
A useful way to form the dough into a log is to first place it on a sheet of waxed paper. Use the wax paper to secure the dough, then roll it back and forth to form a log.
Use a sharp knife to cut the cheese coins. For extra flourish use a serrated knife that will give the coins a scalloped edge.
Grate 4 cups (1000 ml) grated cheddar cheese or any hard, sharp flavoured cheese. Add 4 tablespoons (60 ml) butter, and 1 teaspoon (5 ml) mustard. Mash until smooth paste forms. Add 1 tablespoon (15 ml) thyme (or other herbs to your taste), 1 teaspoon (5 ml) smoked paprika, 2 cloves garlic grated, working ingredients into mixture. Add 1 tablespoon (15 ml) hot sauce (or your choice of chili paste). Gradually add 1 cup (250 ml) flour a spoonful at a time and blend in after each addition.
Work mixture into a dough and then form a log. Refrigerate for 20-30 minutes. (The dough can be kept in the freezer for one month and taken out just before use. Store a batch in the freezer by wrapping it tightly in plastic wrap or wax paper and then in a resealable plastic bag. Make sure that all the air is removed from the bag. When ready to use thaw the dough in the refrigerator.)

GET A DIFFERENT FLAVOuR vary the cheese
Gruyère This hard cheese grates easily and tastes sweet, mild and earthy in flavour.
Once solid, cut into even sized coins. Place a cutting of thyme on each coin to decorate and bake on a rimmed baking sheet at 350F (180 C) for 10-15 minutes or until golden brown. Let cool and serve. The cheese coins can be kept in a sealed air tight container for up to one week.
Smoked Gouda Amp up the smoky taste in this recipe with this smoked cow’s milk cheese from Holland.
Emmental This Swiss cow’s milk cheese is known for its sizeable holes and melts well. Expect a nutty, fruity taste with a long finish.

Carrot Cake Cupcake
This recipe also makes a wonderful cake. Use the frosting for filling layers. For the Cupcake ½ cup (125 ml) oil 1 cup (250 ml) granulated sugar ½ teaspoon (2 ml) cinnamon ¼ teaspoon (1 ml) nutmeg 1 cup (250 ml) grated carrot ½ cup (125 ml) pineapple chunks (optional) ½ cup (125 ml) chopped nuts (pecans, walnuts) 2 eggs ½ teaspoon (2 ml) vanilla extract 1 cup (250 ml) flour 1 teaspoon (5 ml) baking powder ¾ teaspoon (3 ml) baking soda ¼ cup (60 ml) raisins (optional) Frosting ½ cup (125 ml) cream cheese ¼ cup (60 ml) lemon juice cup (80 ml) marzipan 1 tablespoon (15 ml) icing sugar 1 tablespoon (15 ml) flaked almonds, toasted 1 Pre-heat oven to 350F. Place all dry ingredients in a bowl. Mean while in a mixing bowl add oil and sugar. Beat for 2-3 minutes. Add vanilla. 2 Add eggs one at a time to sugar mixture. Add half of the dry ingredients one spoonful at a time, beating after each additional. Scrape down the side of the bowl occasionally. 3 Alternate adding grated carrots and dry ingredients a spoon ful at a time. Add raisins, pineapple and nuts. 4 Pour mixture into greased and lined cupcake tins. Bake for 15-20 minutes. 5 For frosting beat cream cheese, marzipan, icing sugar and lemon juice until fluffy. 6 Cool cupcakes. Frost and sprinkle with flaked almonds.

CLASSIC MOJITO
Makes 4 6
tablespoons (3 ounces) freshly squeezed lime juice 12 teaspoons (2 ounces) granulated sugar 8-10 fresh sprigs of mint, plus more for garn i sh ¾ cup (6 ounces) white rum 3 cups (750 ml) ice 6 tablespoons (3 ounce) club soda 1 Place the lime juice, sprigs of mint and sugar into a highball glass. Muddle or mash the mint using a muddler or the handle of a wooden spoon to release the flavour. 2 Add rum and stir well. Pour into glass filled with ice and top with club soda. 3 Garnish with sprigs of mint.
MINT PANNA COTTA WITH ORANGE MARMALADE
Serves 6
Panna Cotta cup milk 2½ cups (750 ml) heavy cream ½ cup (125 ml) granulated sugar ½ tablespoon (8 ml) powdered gelatin 2 tablespoon fresh mint leaves, chopped Marmalade 6-8 medium oranges 2 lemons juiced 7 cups (1.75 L) granulated sugar 6 cups (1.5 L) water For the Panna Cotta 1 In a small bowl dissolve the gelatin powder in milk and set aside. 2 In a saucepan over medium heat bring the cream to a simmer then add the sugar. Stir to dissolve the sugar. Pour the gelatin and milk mixture into the cream, stirring continuously about one minute. Remove from heat. Add the mint to infuse for 3 minutes. Strain through a sieve. Pour into individual ramekin dishes. Let cool.

3 Once cool, cover ramekins and refrigerate overnight before serving. For the Marmalade 1 Cut the oranges in half. Scrape out the pulp, leaving the pith behind. Reserve the skin. 3 In a food processor blend the pulp until smooth. 4 Press the pulp purée through a metal sieve with a wooden spoon into a large saucepan. 5 Using a knife remove the pith from the orange rind. Julienne the rind and add to saucepan. 6 Pour the lemon juice and water into the saucepan. 7 Bring to a boil over high heat. Reduce the heat and simmer for 1 to 2 hours until the mixture has reduced by half. 8 Reduce the heat to low, add the sugar and stir until dissolved about 10 minutes. Skim off scum from the surface using a metal spoon. 9 To test if the marmalade is ready spoon a little onto a plate and place in fridge. If it sets to a jelly consistency the marmalade is cooked. If necessary, cook for a further 5-10 minutes and test again. Serve spooned over panna cotta. Garnish with mint.
Chili oil 2 cups (500 ml) vegetable or olive oil 3-5 whole dried red chilies Steamed asparagus Mint Pesto 2 cloves garlic ¼ cup (60 ml) pine nuts 2½ cups (500 ml) fresh mint leaves ½ cup (125 ml) fresh basil leaves ½ cup (125 ml) grated Parmesan ½ teaspoon (2 ml) salt ¼ cup (60 ml)extra-virgin olive oil For the Crabcake 1 In a bowl combine the egg, mayonnaise, mustard, lemon juice, hot sauce, red pepper flakes, green onion, salt and pepper. 2 Sprinkle the breadcrumbs over the mixture, a little at a time incorporating until a loose, moist mixture forms. Cover and refrigerate for 2 hours. 3 Remove from refrigerator and shape crab mixture into cakes about 1 inch (3 cm) thick. Heat oil in a skillet over medium heat. Cook cakes until golden brown about 4 minutes per side. For the Chili Oil 1 In a saucepan over low heat combine the chili and oil. Cook stirring occasionally until oil is warmed but not hot, about 5 minutes. 2 Remove from heat and let cool. 3 Store in an air tighter glass container.

Serves 6-8
Crabcake 1 pound (450 g) crabmeat, fresh or pasteurized 1 large egg ¼ cup (60 ml) mayonnaise 2 teaspoons (10 ml) Dijon mustard 1 teaspoon (5 ml) fresh lemon juice 1-3 dashes hot sauce 1 cup (250 ml) fine breadcrumbs ½ teaspoon (2 ml) red pepper flakes 1 tablespoon (15 ml) green onions chopped 2 tablespoon (30 ml) canola oil Salt and pepper to taste
For the Mint Pesto 1 Place basil, mint, pine nuts, garlic, parmesan and salt in a food processor. While machine is running, slowly add the oil in a steady stream. Process to desired consistency. To Assemble Place one crab cake on a plate. Top with steamed asparagus. Place another crab cake on asparagus forming a sandwich. Drizzle with mint pesto and chili oil around the perimeter of crab cake. csl

CSL takes this cool little beauty out on the windy roads of Northern Puerto Rico for an unforgettable road trip THE CAR The German engineered new Mini Cooper S has gotten a makeover and I couldn’t be happier. The first thing that strikes me about the new Mini is the sporty look - hexagonal radiator grill, LED headlamps, rear light clusters with wide chrome surround, and the eye catching paint finish (available in five finishes). Although the car is perceived as small, there is a tremendous amount of leg room, it feels roomier with a with an extra 1.1 inches added to the wheelbase, plus 4.5 inches and 1.7 inches in overall length and width (great for the over six foot tall crowd). Though it took a while to get used to, the futuristic key insertion is located in the middle of the centre console and activated by a toggle start/stop button. This lifestyle vehicle would be spacious and comfortable enough for a road trip with two passengers, even allowing for space for small luggage in the back. THE ROAD I took the Mini Cooper S through the windy and pothole ridden mountainous roads of Puerto Rico’s North Coast from Dorado to Gasolina Beach (hey, why not test the car’s mettle in rugged terrain?). With oncoming vehicles rushing at me, I was relieved by the superb handling of the Mini Cooper S care of the revised suspension technology. This also came in handy when trying to avoid the numerous stray dogs roaming the streets. The struts on the Mini Cooper S have been altered too, for less impact on the body – small pebbles hitting the sides of the car – and outside noise was kept to a minimum. Though the highways in Puerto Rico weren’t particularly busy, the 6-speed automatic transmission allowed for seamless acceleration after passing numerous school zones. The MINI Cooper S’ four-cylinder TwinPower turbo technology is enhanced by three distinct driving modes – mid, sport and green – allow-
ing drivers to alter their driving style according to preference. Case in point? Green mode allows for improved driving performance and reduced fuel consumption. WOW FACTOR Sometimes it’s the small things that really make an impact. I loved the jukebox like 4-line TFT screen (8.8 inches) for navigation, entertainment, telephone and vehicle functions and the large MINI controller in the centre console was fun to toy with. Some of the highend options are a must for cold climes (heated windscreen, seat heating, anyone?). There are also some cool functions including: emergency call and MINI teleservices with use of a SIM card; MINI connected XL journey mate with real time traffic information, and social networking; parking assistant, rear-view camera and road sign detection. BOTTOM LINE Overall, I was thoroughly impressed by the premium small car’s agility driving the roads of Puerto Rico, a testament to the ‘go-kart’ feeling the company proudly touts. It seemed like I had driven the car all my life because it was extremely comfortable, had intuitive handling, and innovative tweaks to the interior and exterior of the vehicle and clever engineering made it a pleasure to drive. www.miniusa.com; www.mini.ca

The model-actress chats with CSL about her new AbC show killer Women, her charitable side and her global travel faves WHAT DREW YOU TO KILLER WOMEN? I
loved the character right away. She was multilayered - strong, smart, quirky and vulnerable. I thought she'd be a lot of fun to play. I was also intrigued by the female killer angle on what is essentially a cop procedural. I thought it would be interesting to get a look into the differences of why women kill. Statistically there are way fewer female killers than male killers, so I was interested in exploring that smaller percentage.
TELL US ABOUT YOUR CHARITABLE ENDEAVORS AND WHY IT IS IMPORTANT TO GIVE BACK? My charitable endeavors come
from two different areas. Personally, I donate to animal charities via my website. I also try and help out with PSA's and events to raise awareness of animal causes. Together with my friend and former costar, katee Sackhoff, we founded Acting Outlaws– a company that we started that mixes our passion for motorbike riding and giving back. We filmed a documentary about the continued clean up of the bP oil spill, put out calendars, and do rides, with proceeds going to charities (AmFAR, Gulf Restoration Project, Red Cross and Humane Society). We are planning a few rides this year and are looking at donating to the Wounded Warriors and for a clothing drive. I think it's important to give back. We are all one big community. Sometimes it's you doing the helping out and other times it's you that is getting the help.

I went for a French magazine job to Indonesia and stayed a week at the Amandari and a week at the Amankilo. both were phenomenal. One place I love to go to in Canada is the Wickaninnish Inn in Tofino on Vancouver Island. It's a pretty special place.

MOST MEMORABLE TRAVEL MOMENT?
When I was seven and visiting the Grand Canyon with my family. At one lookout spot over the Colorado River where it was essentially massively tall, straight down embankment walls to the raging river. We pulled in and I went running down to the fence. I slipped and fell down, sliding through a hole under the fence and caught myself with my arms on the fence as my feet were nearing the edge of the cliff. I remember that travel moment quite well.
WHEN I AM NOT WORKING I AM…. At home

My favourites are The Rock's Markets (held in The Rocks every Saturday and Sunday from 10am-5pm), The EQ Village Markets (held on Wednesdays and Saturdays at the Entertainment Quarter, Moore Park - be sure to also stop and check out Centennial Park which is right across the road) and The Eveleigh Farmer's Market (held every Saturday from 8am at Wilson Street, Eveleigh).

Here you'll find a variety of different plants and wildlife, showcasing Sydney's diversity, including a Rainforest Walk, Native Rockery, Traditional Rose Garden and even a Succulent Garden. Be sure to check the web to see if there are any special events or tours on when you're visiting (as there is always plenty of free entertainment).
