HyGGE

A perfect hygge picnic.

N AN ATTEMPT TO EMBRACE WINTER, THAT OFT CITED scourge of Canadian living, I decided to take my cue from the Danish and their beloved concept of hygge. Hygge means coziness. The concept involves an ambience - the coming together of people, place and atmosphere in such a way as to create a sense of well-being. Unknown a decade ago, hygge has practically become mainstream showing up everywhere from Instagram photos, to home dĂŠcor and bestselling books. Even in the depths of winter, with a cold wind blowing at my front door, toes freezing and endless flurries falling, I made a cup of tea, put on my knitted socks, snuggled under a duvet and felt glad that this was the only season all year in which I could have such an experience. It was comforting to know that, taken as a vignette, this was absolutely prime hygge. Hygge and winter had become inextricably linked in my mind. In fact, for Danes as well, hygge culminates at Christmas. Associating winter with hygge was helpful and it certainly broadened my appreci-

ation for a season that had been otherwise a frequent topic of disgruntled conversation. As spring approached, however, I cast hygge aside; its usefulness seemed out of place. Coziness in my mind was a feeling reserved for winter. No warm fireplaces to brace against the cold, no sequestering in a dank house against the elements, no more multiple layers of clothing and so, no more need for hygge. No, hygge had been replaced with the blossoming of flowers, longer days and warmer weather. Then, one day, I came upon a photo of a picnic enjoyed by a group of friends and family who were all beaming. The food, the wine, the imagined chit-chat, the scenery, all, in their totality, gave a sense of well-being. It was then that I realized that hygge is an ideal for all seasons. It may be at its apogee in winter, but at its core it is about celebrating life even in its smallest and seemingly insignificant details. CSL

Grapfruit Gin Fizz Cucumber Mint Collins

If Rizzo’s mood in Grease were a drink, this would be it—sweet peach with a sassy juniper punch from the Hendrick’s. Great for drinking at the drive-in. ABV 10.45% Glass Floral Bowl Garnish gold luster-dusted peach slice 4 ounces water 11 ½ ounces Simple Syrup (recipe below) 3 ounces lemon juice 11 ¾ ounces Ceres peach juice 9 ½ ounces Hendrick’s Gin ¼ ounce Fee Brothers Peach Bitters Combine – Place the ingredients in a mediumsize metal bowl and stir.

Watermelon Jalapeno Margarita

Freeze – Pour the liquid into a large freezer bag and place it in the freezer until frozen, approximately 4 hours. Alternatively, pour the liquid into an ice cream maker and proceed per the manufacturer’s instructions.

Simple Syrup

Yield: 2 ¼ cups simple syrup 1 ½ cups pure cane sugar 1 ½ cups boiling water Place water and pure can sugar in a saucepan over medium heat and bring to a boil. Reduce heat to a simmer and stir the mixture, letting the sugar dissolve until the liquid looks uniform, without any visible granules from the sugar, about 3 minutes. Remove from the heat and let the syrup cool. Use immediately or store in an airtight container in your refrigerator for up to 2 weeks. Combine ½ cup grapefruit juice, 2 oz. elderflower simple syrup, 3 oz. gin, top with a splash of cava. Garnish with grapefruit peel or slice.

Cucumber Mint Collins

Combine 2 oz. gin, ¼ cup chopped cucumber, 1 oz. mint simple syrup, ¾ oz. fresh lime juice, and splash of club soda (optional). Garnish with fresh mint and cucumber slices.

3/ Watermelon Jalapeno Margarita

Serves 4. In a blender, puree 1 cup cubed watermelon. Strain and transfer to a pitcher. Add 8 oz. tequila, ¼ cup (4 oz.) Triple sec, 1 oz. lime juice, 1 tbsp agave syrup and thinly sliced jalapeno. Garnish with watermelon wedges.

Serve – When you’re ready to drink, massage the freezer bag by hand until it’s a wet, slushy consistency. If it’s not breaking up, run the bag quickly under hot water and massage some more.

Saffron Quinoa Bowl saffron quinoa + Moroccan-spiced root vegetables + spiced roasted chickpeas + poached egg + preserved lemon gremolata + harissa + dates  ORDER OF OpERATIONS  1. Roast the chickpeas  2. Cook the quinoa  3. Cook the vegetables  4. Make the gremolata  5. poach the eggs (if using)  6. Assemble the bowls  Spiced roasted chickpeas  One  14 ½-oz [415-g] can chickpeas,  drained and rinsed, or 13⁄4 cups [420 g] drained home-cooked chickpeas  1  tsp olive oil  ¼ tsp salt  ⅛  tsp ground coriander (optional)  ⅛   tsp ground cumin (optional)  ⅛  tsp ground turmeric (optional)  ⅛   tsp cayenne pepper (optional)  Saffron quinoa  2  cups [480 ml] chicken or vegetable  broth  ¼  tsp saffron threads  1  Tbsp butter  1  shallot, minced  1  cup [180 g] quinoa, rinsed  Moroccan-spiced root vegetables  1  carrot  1  parsnip  1  small-to-medium turnip  1  yellow beet or rutabaga  1  small celery root  2  Tbsp canola or vegetable oil  1  onion, chopped  Salt  2  garlic cloves, minced  1  Tbsp ras el hanout (North African  spice mix)  1  fresh red hot chile, chopped, or 2  small dried hot chiles, such as árbol  (optional)  3  cups [720 ml] chicken or vegetable  broth  preserved lemon gremolata  Leaves from 8 fresh mint sprigs  Leaves from 10 large fresh flat-leaf parsley sprigs  Rind from 1⁄2 preserved lemon, rinsed and finely chopped  1  garlic clove, minced  ¼   tsp freshly ground black pepper  2  Tbsp extra-virgin olive oil  Salt  4  eggs, poached (page 26), optional  4  Medjool dates, pitted and chopped  Harissa or other hot sauce for serving FOR THE CHICKpEAS: preheat the oven to 375°F [190°C]. Line a baking sheet with parchment paper.  pat the chickpeas dry on several layers of paper towels. put the chickpeas in a bowl,

drizzle with the olive oil, and toss to coat evenly. Sprinkle on the salt and the coriander, cumin, turmeric, and cayenne, if using. Toss to coat the chickpeas evenly. Spread the chick¬peas in a single layer on the prepared baking sheet. Roast the chickpeas until browned and a bit crispy, about 45 minutes. While the chickpeas are roasting, cook the quinoa and the vegetables.  FOR THE qUINOA: In a medium saucepan over medium heat, bring the broth to a sim¬mer, sprinkle in the saffron, and remove from the heat. In a medium saucepan over medium-high heat, melt the butter. Add the shallot and cook, stirring, until it starts to brown, about 5 minutes. Add the quinoa and stir to coat evenly with the butter. pour in the warm saffron broth, bring to a simmer, cover, turn the heat to low, and cook, undisturbed, until the quinoa is tender and fluffy and the broth is absorbed, about 20 minutes. Uncover, fluff with a fork, and re-cover to keep warm until ready to serve.  FOR THE ROOT VEGETAbLES: peel the carrot, parsnip, turnip, beet, and celery root and cut into small bite-size pieces, though keeping them all about the same size is more import¬ant than the actual size. In a large sauté pan or frying pan over medium-high heat, warm the vegetable oil. Add the onion and 1⁄2 tsp salt and cook, stirring, until the onion is soft, about 3 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the ras el hanout and chile (if using) and cook, stirring, until fragrant, about 1 minute. pour in the broth, add the chopped vege¬tables, and bring to boil. Lower the heat to a simmer and cook until the vegetables are tender, about 15 minutes.  FOR THE GREMOLATA: On a cutting board, finely chop the mint and parsley. Add the pre¬served lemon and garlic and continue chop¬ping until all of the ingredients are minced and blended together. Transfer to a small bowl, add the pepper and olive oil, and stir to combine. Season with salt.  TO ASSEMbLE: Divide the quinoa among four bowls. Top the quinoa with the root vegetables (transfer them with a slotted spoon or add some of the flavorful broth to the bowl). Add the chickpeas to one side and a poached egg, if desired, to the other. put a hefty dollop of gremolata on top. pass the harissa and dates at the table, for everyone to add to taste. 

MAKE ITEASY

Skip the gremolata. It’s deli¬cious, but this bowl has lots of flavor without it. you can also use other root vegetable combinations (4 to 5 small-to-medium spec¬imens) that you may have on hand (or appeal to you more), including mixes with potatoes and/or sweet potatoes.

Spray a baking sheet with olive oil cooking spray.  FOR THE SAUCE: Separate the head of garlic into cloves and peel the cloves. If you want to tame the sharp garlic flavor of this sauce, bring a small saucepan filled with water to a boil over high heat, add the garlic cloves, blanch for 1 minute, drain, and proceed with the recipe. If you prefer to keep the flavor intense, skip this step and use raw garlic (I do!). In a blender, combine the garlic, lemon juice, and salt and whirl until more or less smooth. With the blender running on medium speed, add the canola oil in a very slow, steady stream. The oil will blend with the garlic mixture, resulting in an almost-fluffy and brilliantly white sauce. Cover and set aside. Garlic lovers will want to dollop this sauce on at will, but they need to make sure that anyone they kiss later has eaten it, too.  TO bAKE THE EGGpLANT: Drain the eggplant slices and pat them thoroughly dry. Set the eggplant slices on the prepared pan in a single layer and spray the tops with cooking spray. bake the slices, turning them once after 15 minutes, until browned on both sides and tender, about 30 minutes total. If the slices fail to brown but are tender, turn on the broiler, position the oven rack about 3 in [7.5 cm] from the heating element, and broil the slices on both sides until browned. Remove from the oven, let cool, and cut into narrow strips. Set aside.  FOR THE FREEKEH: Heat a medium, heavy saucepan over medium-high heat. When the pan is hot, add the freekeh and cook, stirring or shaking the pan often, until the freekeh is toasted and fragrant, about 3 minutes. Add the broth and bring to a boil. Cover, turn the heat to low, and cook, undisturbed, until the liquid is absorbed and the freekeh is tender, 20 to 25 minutes. Remove from the heat, uncover, fluff with a fork, and stir in the lemon juice and zest. Re-cover and let sit until serving, then fluff again just before serving. TO pREp THE MEATbALLS: In a large bowl, break up the ground meat into small pieces. Using the large holes of a box grater, grate the onion onto the meat. Sprinkle the garlic, mint, paprika, cumin, salt, and cayenne (if using) over the meat and onion, then, using your fingers, gently mix everything together.  Divide the mixture into twelve equal portions. Roll each portion into a ball between your palms and place on a platter or baking sheet. (Dampening your hands with water will help keep the meat from sticking to them.) Set aside while you make the salad.  FOR THE SALAD: In a medium bowl, combine the cucumber, mint, vinegar, and olive oil and toss to mix well. Season with salt and mix again.  TO COOK THE MEATbALLS: Heat a large frying pan over medium-high heat. Add 1 Tbsp of the oil to the pan and swirl the pan to coat the bottom evenly. Add the meatballs and

cook, turning them as needed and adding a little more oil if necessary to prevent sticking, until browned all over and cooked through, about 8 minutes total.  TO ASSEMbLE: Divide the freekeh among four bowls. Arrange three meatballs on the center of the freekeh in each bowl. put the cucumber salad and the eggplant on either side of the meatballs. Sprinkle the sumac over everything, finish with the tomatoes, and serve. pass the garlic sauce at the table.

A Halloumi of a Time herbed lentils + lemony grilled halloumi + burst tomatoes + shaved zucchini salad  ORDER OF OpERATIONS  1.  Marinate the halloumi  2. Cook the lentils  3. Cook the tomatoes  4. Make the salad  5. Grill the halloumi  6. Assemble the bowls  Lemony grilled  halloumi  1  Tbsp olive oil  1  Tbsp fresh lemon juice  8  oz [230 g] halloumi cheese (brined  semihard Cypriot cheese, aka grilling  cheese) 

FOR THE LENTILS: While the cheese mari¬nates, put the lentils in a saucepan and add water to cover. place over high heat, bring to a boil, lower the heat to maintain a steady simmer, and cook until the lentils are al dente (just barely tender to the bite with a bit of resistance in the center); start testing after 15 minutes. Remove from the heat, add enough salt to the water until it tastes salty, and let sit until the lentils are fully tender, about 10 minutes. While the lentils are sitting, in a medium bowl, combine the onion and herbs. Drain the lentils, add them, still hot, to the bowl, and toss to combine. Drizzle with the olive oil, toss to coat, and season with black pepper. Cover and set aside to keep warm, or let cool off and serve at room temperature. FOR THE TOMATOES: In a large frying pan over medium heat, warm the olive oil. Add the tomatoes and cook, shaking the pan now and again, until the tomatoes “burst” and release their juices into the oil, about 10 minutes. Remove from the heat and season with salt. Set aside.  FOR THE SALAD: Trim off the ends of the zucchini, then cut in half lengthwise. Cut each half lengthwise into paper-thin, even slices (a mandoline is handy here, but a sharp knife and a steady hand work just as well). put the slices in a medium bowl. Using a fine-rasp Microplane grater or a zester and holding the lemon over the zucchini, zest half of the lemon. Cut the lemon in half and squeeze the juice from half of the lemon over the zucchini. Drizzle the zucchini with the olive oil, sprinkle with salt, and toss to coat the zucchini evenly. Taste a piece of zucchini and add more lemon juice or salt if you like. Sprinkle with the mint, if desired.

Herbed lenti ls  1  cup [200 g] brown lentils, rinsed  Salt  1  small red onion, diced  cup [20 g] lightly packed fresh herb  1  leaves, chopped (flat-leaf parsley,  cilantro or dill, and a bit of mint and  thyme is a nice mix)  1  Tbsp extra-virgin olive oil  Freshly ground black pepper 

TO GRILL THE HALLOUMI: Oil the cooking grate. Lift the cheese out of the marinade, set it on the grate directly over the fire, and cook until browned on the first side, 3 to 4 minutes. Flip the halloumi and brown on the second side, 3 to 4 minutes longer. Transfer the halloumi to a cutting board and cut into 8 or 12 even slices.

Shaved zucchini salad  zucchini  1  1  lemon  2  Tbsp extra-virgin olive oil  Salt  Leaves from 2 to 3 fresh mint sprigs, chopped (optional)  FOR THE HALLOUMI: In a bowl large enough to hold the halloumi, whisk together the olive oil and lemon juice. Add the halloumi and let sit for about 30 minutes.  prepare a fire in a charcoal or gas grill for direct-heat cooking over medium heat. (you should be able to hold your hand about 1 in [2.5 cm] above the cooking grate for 4 to 5 seconds before you must pull it away.) 

TO ASSEMbLE: Divide the lentils among four bowls. Arrange the halloumi, tomatoes, and zucchini salad in three separate and equal sections on top of the lentils and serve. 

Instead of cooking cherry tomatoes in a frying pan on the stove top, put 4 medium tomatoes on the cooking grate alongside the halloumi and leave them until they soften, about 8 minutes. Or skip firing up the grill and use a frying pan over medium-high on the stove top for grilling the cheese.

3/FLAT LEAF PARSLEY

As a salad leaf (think tabbouleh), as a seasoning (as in the French persillade, finely chopped with garlic), or as a condiment (think chimichurri) this herb has multiple uses in the kitchen. The mildly lemon flavour makes it ideal for meat and fish dishes.

4/ROSEMARY

This pungent herb works well with roasted meat, pasta, marinades and dressings. It is especially good with barbecue – using the sprigs as skewers. For something different, add a small amount to orange-based desserts and cocktails.

5/ CHIVES

Part of the allium family which includes onions and garlic, chives marry well with cream sauces. Although often used as a garnish, it takes a starring role in compound butter, cream cheese spread and sour cream dips.

6/MINT

A versatile, soothing herb commonly used in both savoury and sweet dishes. Classic savoury pairings include mint and peas, mint and lamb and mint and new potatoes, while mint and chocolate have a sweet affinity.

HOW TO: GOAT CHEESE FLOWER ROUNDS Place the goat cheese in plastic wrap. Roll into a cylinder shape and refrigerate for at least 20 minutes. Cut into rounds. Decorate with edible flowers and herbs. For a party: Pair with a fresh salad, and a slice of grilled toast, as a first course. For a picnic: Goat cheese rounds make a great addition to a large, sharing, cheese platter. For Dessert: Make smaller rounds and serve alongside baked figs, drizzled with honey and sprinkled with nuts.


HANDMADE pASTA LAyERED WITH FRESH RICOTTA, MINT AND pEAS Serves 4 pasta 2½ cups  (625 ml) unbleached all-pur pose flour 4  eggs Filling 1½ cups  (375 ml) ricotta cheese ¼ cup  grated fresh parmigiano-Reg giano or pecorino Romano cheese, plus a few  pieces shaved 2  tablespoons (30 ml) finely  chopped fresh mint ¾ tsp (4 ml) freshly grated lemon  zest Ground black pepper to taste Salt to taste Garnish 1 cup 

(250 ml) fresh green peas,  shelled 1½ tbsp  (20 ml) fresh mint, torn 1 tsp (5 ml) butter Ground black pepper to taste Salt to taste MAKE pASTA place the flour in a large mixing bowl. Make a well in the middle and add eggs. Use a fork to lightly beat the eggs, and begin to gradually incorporate the flour starting from the inner rim of the well. Keep adding flour until the dough just comes together. Some flour may be left over. Turn out dough on a lightly floured surface. Knead dough until soft for a few minutes. Form into a ball. Rest pasta dough for 30 minutes at room temperature. If rolling the dough by hand, use a rolling pin and roll it very thin. Alternatively, follow the manufacturer’s instructions and use a pasta machine to roll dough. Cut dough into 4 inch (10 cm) squares. Cook pasta in boiling, salted water for about 1-2 minutes. MAKE FILLING In a medium bowl, blend the ricotta with the chopped mint, lemon zest, and grated cheese. Season with salt and pepper. MAKE GARNISH In a skillet over medium heat, melt butter. Add peas, and sauté until evenly coated in butter. Season with salt and pepper. Remove from heat and add mint. ASSEMbLE Lay a square of pasta on a plate. Spread with a heaping tablespoon of filling. Garnish with peas. Repeat with a second layer.  K&S MEDIA

Orzo Pasta, Spicy Tomato Sauce & Feta

Shaved Fennel, Fava Beans, Peas, Dill & Ricotta Salata

The Italians use orzo in soups and stews, as it’s a good way to bulk out a dish without filling yourself up too much. Feta gives this dish an added saltiness, but not in the same way that Parmesan would— it’s more gentle. This dish reminds of how good a well-made feta can be. We love this dish as a summer weeknight supper.

An easy summer salad packed full of vibrant summery flavors. It’s ideal as a supper for two or doubled up and arranged on a large platter for a sharing feast. The anise from the fennel is set off by the sweet peas and fava beans, and the ricotta salata gives the salad a natural seasoning, so all you need to dress it with are olive oil and lemon.

Serves 2 1

lb [500 g] large tomatoes (we love Pink Oxheart tomatoes) 3 tbsp extra-virgin olive oil, plus extra for drizzling 1 tsp cumin seeds 1 tsp nigella seeds 1 small onion, diced 1 garlic clove, crushed 1 tsp dried chile flakes 1 bay leaf 1 tsp paprika 4 oz [120 g] orzo pasta 3½ oz [100 g] feta Few leaves of fresh oregano First skin the tomatoes. Bring a large pan of water to a boil. Using a sharp knife, score a little cross at the base of the tomatoes and cut out the “eye” of the tomato at the other end. Have a large bowl of ice water ready, and once your water is boiling submerge the tomatoes for 15 seconds, then immediately plunge them into the ice water. You’ll be able to peel off their skins immediately. Set to one side. In a large frying pan, temper the cumin and nigella seeds in the olive oil over low heat for 1 minute, then add the onion and cook until soft. Add the garlic, chile flakes, bay leaf, and paprika and cook for 2 minutes. Coarsely chop the tomatoes, add to the onions, and simmer for 10 minutes. You’re looking for a soupy consistency, so if you need to add a little water, then do so. Season with salt and pepper. While your sauce is cooking, bring a large pan of salted water to a boil and cook your orzo pasta for 10 minutes, or according to the package instructions. Drain and add to the tomato sauce. Let everything cook together for a couple of minutes. To serve, divide between two bowls, crumble the feta over, and sprinkle with the fresh oregano and a drizzle of olive oil.

Serves 2 1 fennel bulb ⅔ cup [100 g] cooked fava beans ⅔ cup [100 g] cooked peas Handful of watercress Juice of ½ lemon Extra-virgin olive oil 6 oz [180 g] ricotta salata, thinly sliced Small handful of dill fronds, torn Salt and freshly ground black pepper Cut the fennel in half lengthwise and then thinly slice the halves using a mandoline or sharp knife. Put the fennel slices in a bowl with the fava beans, peas, and watercress. Dress with the lemon juice, olive oil, a little salt, and some pepper and toss together. Drop the salad onto a serving dish, top with the slices of ricotta salata, and scatter the dill over the top. Add a final splash of olive oil and tuck in.

Peaches, Raspberries & Crème Fraîche

Ripe peaches, strawberries, raspberries, apricots, and a wealth of other summer fruits are just ideal for tearing apart, throwing into a bowl, adding a little sugar, and letting them macerate in their own juices. Add a dollop of crème fraîche or ice cream. Divine. We think there is something extra special about the pairing of peaches and raspberries. Serves 4 4 ripe peaches 2 pints of raspberries, about 9 oz [250 g] in total 1 tbsp turbinado or other coarse sugar 3⁄4 cup [200 g] crème fraîche Dessert wine (optional) Cut the peaches in half, cutting around the pit, and then twist each half in opposite directions to expose the pit. Remove the pits (do this over a bowl so you collect the juices), then gently tear each half in half again and drop into the bowl. Add the raspberries and sugar and give everything a good toss to combine. Leave to macerate in the sugar and juices for 5 minutes. Lay the fruit out on a serving platter and top with generous dollops of crème fraîche. Enjoy with a cheeky glass of dessert wine, such as Sauternes, or even pour one over the top of the fruits. CSL

ON THE RUNWAY For Brock, the look was inspired by the 1950s and a road trip through Joshua Tree National Park. The result? A half updo, unfussy victory roll with height and volume. Just the sort of simple style with few flourishes at which the design duo excel. GET THE LOOK Prep hair with a thickening spray and blow-dry smooth. Wave the hair in alternating directions. Divide front of the hair into five sections – three sections at the front and two on either side of each ear. Begin with top section and secure with elastic several inches from the root. Twist the hair, push it forward to create a slight pouf securing with bobby pins through the elastic. Repeat on each of the side sections ensuring each appears separate. 38

Currently seen as DC Comics superhero character Jesse quick, in The CW series The Flash, the  actress recently directed, edited, and starred in the music video, Landscape, for the band Eyelid Kid. She talks to CSL about her travel faves.

Q A

Tell us a little about your career path.

HER TRAVEL FAVES

I loved theatre as a kid and was in class at school all throughout middle and high school, reading scenes and putting on plays. In the beginning of my senior year, when all of friends began applying colleges, I realized that I wanted a career in the film industry, and that I didn't necessarily have to go to traditional college for that. I found a local agent back in Texas and started auditioning, and about a year later I met my manager. I started booking some bigger projects and about six months ago made the move to LA!

MOST MEMORAbLE TRAVEL MOMENT. Sitting under the Eiffel Tower at night when all of the lights began to flicker, I could sit there for hours!

What are some of your favourite projects that you have worked on? Why?

The project I hold closest to my heart is actually the first on-camera project I'd ever worked on. Tower is a reenactment documentary about the first mass school shooting in America at the University of Texas in 1966. I play Claire Wilson who was eight months pregnant and was the first person shot, who not only lost her boyfriend, but also her unborn baby. The most humbling part of working on this film was hearing and "living" Claire's story and not feeling any hatred for the shooter. She is one of the most courageous people I've ever had the chance of meeting, and to this day she spends so much of her time fighting for gun control and an end to gun violence.

Tell us about your charitable endeavors and why it is important to give back.

I've recently gotten involved with Art of Elysium's art programs at the CHLA. It is such an amazing 54

program that gives children who are dealing with short and long-term illnesses a creative release and hopefully some laughs! They offer all kinds of creative workshops for the kids, from room-to-room improv to art classes and musical performances. Seeing the smiles on the kid's faces gives me and the other volunteers real joy and hope that the kid’s might feel a little less alone in this world.

Favourite city to travel to, why?

Well, I've been to Paris a couple of times now, and I've found new ways to love it each time I go back! The food is so fresh and isn't filled with all of the hormones we pump in our food in the States.

I've now visited bali 3 years in a row. I think it's safe to say it's my favourite place to travel to. There is something to be said about the people, balinese culture and the food! The balinese culture focuses a lot on gratitude which is so refreshing to see – everyone is happy. WHERE TO STAY Some of my favourite areas include Canggu which offers great surf vibes with amazing cafés. you won't find many taxis – that's because everyone gets around by motorbike with surfboard in tow. If you expect bali to be everything from lush greenery to endless yoga and cooking classes (think: Eat, pray, Love), then head to Ubud. The Gili islands are made up of 3 islands (Trawangan, Meno and Air) each more secluded and relaxing than the next. No cars are allowed on the islands – only horse and buggy and bicycles. And Uluwatu has that WHERE TO EAT There magical cliffside, I love to sit and watch the surfers ride the waves! W are so many amazing places to eat in bali, but Canggu is the mecca of great food spots you need to hit up! places not to miss would be Nalu bowls, Crate Cafe, potato Head, WHAT TO DO I constantly get asked for adbossman, bikini, Cafe Organic and Sea Circus! W vice on going to bali and my first question is always "What do you hope to get out of your vacation?" Everyone wants different things and bali can deliver on all levels: adventure, relaxation, culture, spiritual, you name it. Hiking Mount batur has to be one of the coolest things I've done in bali. Mount batur is an active volcano, you start hiking at about 3 a.m. and you arrive at the summit just in time to watch the sunrise.  It's epic! Then your guide makes you breakfast – steamed bananas and hardboiled eggs which MOST INSTAGRAM he cooks from the steam of the volcano! It's incredible to witness. M WORTHY SPOT The Uluwatu cliffside view is still something that takes my breath away. And the best spot to take it all in is from the pools of La Joya biu biu. Another magical spot (best seen in the early morning) are the Tegalalang Rice Terraces in Ubud.


After seeing beautiful photos online of the rock formations in El Nido, I put palawan at the top of my travel bucket list. When I was living in China last summer, a crazy flight deal popped up from beijing to the philippines, and I knew this was my chance to finally see El Nido in person. It took two flights and a six hour van ride to get there, but it was completely WHERE TO STAY If worth it! W you're on a budget like I was, I THE TRAVELLER would highly recommend Spin KELSEy DENNISON Hostel in El Nido. It describes itself @kvdenn as a "designer hostel" and it didn't disappoint– Spin was definitely the THE DESTINATION nicest hostel I have ever stayed at. Extremely clean, stylish interiors, pALAWAN, pHILIppINES made-to-order omelettes at breakfast, and a great spot to meet fellow WHERE TO EAT Definitely travelers! W check out The beach Shack for incredible views of the ocean, a laid-back vibe, and delicious drinks. It is further out of town, so you'll really feel like you're living the secluded island life here. WHAT TO DO you can't leave palawan without taking at least one boat tour in El Nido, and ideally more than one! The tours are lettered A, b, C, and so on to identify the routes they take. I took MOST INSTAA and C and would absolutely recommend both. M GRAM WORTHY SPOT Definitely the big Lagoon and Small Lagoon in El Nido. The karst rock formations around these lagoons are some of the most stunning natural scenery I have ever witnessed – it's impossible not to take a jaw-dropping photo here!

THE DESTINATION bULGARIA

I've covered a large majority of Western Europe so I really wanted to go more off-the-beaten path this time around. Flights to bulgaria were cheap, so I figured: why not? I went not knowing what to expect, but it has completely blown me away. In 2 weeks, I explored stunning churches, swam in waterfalls, explored abandoned buildings, and hiked mountains that I never even knew existed. There's a certain excitement to travelling where most people don't, and bulgaria really exceeded WHERE TO STAY & WHAT TO DO my expectations. W bulgaria is a pretty big country with loads to offer, but in terms of places you must stay and visit, I

recommend the capital of Sofia (where there are tons of amazing free tours, including a food one that is really good), plovdiv, the second largest city (where there are loads of cool Roman ruins alongside pretty baroque architecture), Veliko Tarnovo (my personal favourite – a quiet, but gorgeous city built into the hills with an epic fortress and awesome bars) and of course, Varna by the black Sea (where there are WHERE TO EAT Good food is plentiful and affordable all tons of beach clubs and a beautiful Sea Garden). W over the country. you can dine like a queen (drinks included) for the equivalent of $5. Try some local cuisine for sure – tarator is a cold cucumber/yogurt soup that is incredible. Rahat Tepe in plovdiv definitely wins in terms of value and views (it's on top of a big hill) but I suggest simply getting a locals' recommendation wherever you go. My favourite meal was in a tiny little bulgarian restaurant that a local brought me to in Veliko Tarnovo. It was so hidden, I can't even find it on Google Maps now!  When in doubt, ask the locals. M MOST INSTAGRAM WORTHY SPOT There are far too many! The most iconic would be the Alexander Nevsky Cathedral in Sofia, but if you want something ridiculously cool, you have to visit buzludzha, where you'll find an abandoned UFO-shaped monument left behind from the Communist Era. It's not easy to get into (you have to climb through some holes and passages) but the inside is filled with eerie-looking mosaics, graffiti and more. by far one of the coolest places I've ever visited. citystyleandliving.com | SUMMER 2017 | 57
