The other day we caught a glimpse of the many covers we’ve produced over the years each conjuring a memory. This year is the fifth anniversary of City Style and Living Magazine. Five years is not quite enough to have built an illustrious history or even an enviable history but it is enough to have an interesting one. Other numbers are easier to rejoice as anniversaries – 10 years means a sort of stability, 20 years a lasting presence, at 30 years people begin to regard you with awe, 40 years is considered respectable, at 50 years you are part of the vanguard, 60 years you are traditional, 100 years you are an institution. Celebrating five years gives you permission to throw a mini-party perhaps but not a full blown soirée. Five is a number we’ve loved for a long time. We all gravitate toward certain numbers unconsciously, yet upon further investigation, their symbolism can be revealing. Though there are five senses, fingers and toes (all immediate and human), it is not a number easily connected with days of the week or months of the year or number of apostles, or well-known cycles so the search for its symbolism is murkier, more arcane. The fifth month, May, comes before the sweltering heat of summer and speaks of buds, Maypoles and freshness. The fifth hour of the evening is neither teatime nor suppertime but an in between time. So what does this fine number five mean? The symbolism of five is about breaking bounds, of freedom and change according to many numerologists - mostly because of its mer-

curial associations. It is the number of transcending the animal nature of man. It is one of the first numbers that speak of being elevated, of going past the bounds of earthly life. In Christianity it is the number of grace and of wounds of Christ on the cross. Five is also a number of protection. Hamsa or Miriam’s hand, beloved in the Middle East for warding off the evil eye, literally means five. This in-between quality of five, of being intercessor, protector, of gradually allowing one thing to flow into the other is vital to transformation. Our favourite symbol of five is that of the hierosgamos – the sacred marriage and the uniting of heaven and earth. Two, the female number is the number of duality while three a masculine number is the father, the divine. It harmonizes the opposites of these two numbers. And then there is something we never knew until now – five is perhaps the most powerful number of all, for it is the symbol of the universe. CSL

Part of a campaign launched in 2009, Meat Free Monday Cookbook is an easy to follow compendium of vegetarian recipes for breakfast, lunch, dinner, snacks and desserts. Divided by seasons and weeks, and drawing from many world cuisines there is ample variation in the recipes to make vegetarianism one day a week an easy and accessible lifestyle – with no guesswork. With a foreword by Paul, Stella and Mary McCartney, gorgeous photography and a smattering of recipes by celebrities the book convincingly transforms the prevailing discussion about meat free food from really good vegetarian food into really good food.

HOW TO COOK BOUILLABAISSE IN 37 EASY STEPS DIANE SHASKIN AND MARK CRAFT (VOCONCES CULINARY, $19.95; WWW.AMAZON.CA) Part travelogue, part recipe book, part memoir, How to Cook Bouillabaisse in 37 Easy Steps is an immersion into the world of Parisian and Provencal food. This is a personal story and the recipes relate to the couple’s experiences travelling through France visiting Champagne houses, meeting local bakers, cheese mongers, artisans and bon vivants. If you have been to Paris or Provence much of the narrative anecdotes will be familiar and relatable - a frank tidbit about the lifespan of a baguette (hint: it is shorter than you expect) for example or the true pronunciation of Reims or the amount time spent scouring restaurants in Paris. All of which make the book a nice personal snapshot of Parisian and Provencal cuisine.

THE NEW NEW SOUTHERN BASICS MARTHA STAMPS (CUMBERLAND HOUSE, $29.95; WWW.AMAZON.CA)

This book feels like you were invited to eat at someone’s home in the American south. Typical southern ingredients like catfish, hominy, oysters, fried chicken and grits find their place amongst more well-known and not uniquely southern fare like shepherd’s pie. The recipes have spunk – mainly through Staples’ explanatory introductions. Most of the recipes are quite simple with ingredients readily at hand or that you can source easily. Through the recipes you get a sense of the influences on Southern cuisine – Native, British, French, Spanish, and of its similarities to parts of Caribbean cuisine. Most importantly, you get a sense that southern cuisine is perhaps the true heir of Native American cooking.

CLASSIC TURKISH COOKING GHILLIE BASAN (I.B. TAURIS/PALGRAVE MACMILLAN, $29; WWW.AMAZON.CA)

An unbelievably beautiful foreword begins this examination of one of the world’s overlooked cuisines. Much of what is now considered Mediterranean cuisine was actually created in Turkey – baklava, dolma, kebab. Its ongoing trade and empire building along with a history of nomadic tribes are at the root of Turkish cuisine. One of the most interesting if unusual recipes is burnt milk pudding with chicken breasts – as a dessert. The recipes evoke hunger pangs and everything looks good to make and to eat. Inventive and amusing names for recipes such as “something nice for the husband,” “ladies thighs,” and “young girls’ breasts” recall the lavish days of the Ottoman Empire. If this book does not make you salivate for a taste of Turkey then only a trip will.

HERE HAVE ALL the retailers gone? It’s been a long time since I’ve seen one. Who I’m referring to is the career retail employee. The very first article I wrote for CSL was actually an interview where they asked me, “What is the single most important thing to look for in a grocery store?” My answer, “Attitude, (the good kind) is what sets a store apart from the rest. Look for a store that honestly wants your business. I realized I was in for a treat (I do know how sad that sounds, but work 32 years in retail and you might understand). I watched as my groceries were rung up with a sense of urgency. This cashier did not have to search for the PLU

code on the produce, she knew it. This individual held a conversation while ringing in my order but not with another employee about the party last weekend but with me about the weather! As she finished up my order she asked if that was everything. I said yes and she

Easier than the “Kids today have no understanding of the work ethic.” I believe it is as simple as this: The day the grocery industry became more accountable to their share holders rather than their customer, the environment changed in the stores. It became more important to reduce expenses, than to satisfy the customer. If we can increase profits it’s not important that we are doing it while our customer count is decreasing. Blame that on increased competition. Company policies put in place to protect the company’s assets have replaced common sense that would protect customers’ loyalties. It’s a trend that has been going on for years but you never see the full impact of it until much later. Well I believe it is much later now! How to change this downward spiral? As customers you have the power. The power of where you choose to spend your hard earned money. Speak up to your store manager and voice your opinion. Just maybe it will be loud enough that the shareholders hear and they suggest the best way to look after them is to look after the customer! A SLICE OF SUMMER Lemon lightens up the richness of chocolate in this tart

GREEN & BLACK’S ORGANIC CHOCOLATECRUSTED LEMON TART SERVES 6

Pastry Ingredients 1½ cup all purpose flour cup plus 1 tbsp. cocoa (Green &  Black’s Organic cocoa preferred) Pinch salt ¼ cup plus 1 tsp. icing sugar ½ cup plus 1 tsp. unsalted butter, chilled and diced 1 large egg yolk 2 tbsp. cold water Filling Ingredients 3–4 squares Green & Black’s Organic 70% Dark Chocolate, grated 3 juicy unwaxed lemons 150g (5oz) superfine or berry sugar 4 large eggs  cup whipping cream icing sugar to sprinkle Pastry Directions

► Sift together flour, cocoa, salt and icing

sugar. Rub in cold butter using a food processor or your fingertips until the mixture resembles fine breadcrumbs. ► Mix the egg yolk with the water, and add to the flour mixture to make a dough. You may need a little more water. ► Gather the pastry into a ball, wrap it in grease-proof paper and chill in the fridge for 1 hour. ► Roll out the pastry from the centre and away from you, then back to the centre and down towards you, using your weight to push down on it to avoid stretching it. Line the tart tin. ► Prick the pastry base with a fork in several places and chill for at least 2 hours or overnight. ► Preheat oven to 200°C/400°F. ► To prepare for baking, line the pastry base with foil and fill with rice, dried beans or pie weights. ► Bake in preheated oven for 15 minutes. ► Take out of the oven and remove foil and weights.

► Bake for an additional 5 minutes. Remove

from oven and reduce temperature to 160°C/325°F. Baking Tip: be careful not to over bake as the chocolate pastry can quickly develop a bitter taste. ► While the pastry is still hot, scatter the grated chocolate evenly over top and leave to cool. Filling Directions ► Finely grate lemon zests and squeeze and strain lemon juice into a mixing bowl. Add sugar and whisk until the sugar has dis solved. Whisk in eggs and whipping cream until the mixture is smooth. ► Pour the filling into the cooled pastry base and carefully return it to the oven. Bake for 30-35 minute until just set. ► Remove from oven and cool on a wire rack before removing from tart tin. ► Dust with icing sugar before serving.

Fast casual takes and Asian twist (using French techniques and American ingredients) at this Los Angeles based restaurant. Ta ke a ba o’s menu is succinct but with enough latitude to offer an array of quick Asian street style bites and substantial entrees that do not feel heavy. The service here is friendly and relaxed. It’s a busy Friday night and though the line extends to the front door, the staff is swift and courteous. The wine, beer and cocktail menu is a nice touch and I order the house special- basil lemonade. To begin, we opt for the duck confit bao, tom yum soup and shisito peppers. On a cool Cali evening, the warmth of the spicy and earthy soup hits the spot while the tender sweet-savoury bao has a back note of five-spice. Next, the yellow curry and tofu bowl with creamy coconut milk broth, tiger prawns wonton noodles and chili oil is mild, but exudes all of the comforting flavours of Asia that North Americans have grown to embrace. The chicken basil stir fry packs a heat induced punch with finger chilies, xiao xing glaze and sprouts on long glistening udon noodles. MAkE A pINEAppLE GLASS Take one whole pineapple and place it on its side on top of a cutting board. With a sharp knife, carefully cut off the top of the pineapple. Take your pineapple corer, which you can buy at any kitchen store, and twist it down into the open top of the pineapple. Once you reach the bottom, carefully pull out the corer from the pineapple. As you remove it, there will be some suction, as the pineapple juices move around inside. And, you’ll see that as you remove the corer, the pineapple will come out in convenient slices, which you can use for garnishing your cocktail, or just to eat. Once you have removed the interior pineapple fruit, cut off the centre portion that the corer left behind with a knife. SERVE Fill the empty pineapple with ice, and pour your Malibu pina Colada mix right on top. If you wish, you can crush the ice in a blender first and then add the Malibu pina Colada mix. ► Stir in ketchup and corn syrup, return to stove, and simmer over low heat for 30 minutes. Remove from heat and add IQUE Dry Rub. Let cool and store in refrigerator, preferably in squeeze bottles, for up to 1 month.

► To make Pork Marinade Sauce: In a small saucepan over medium heat, bring all ingredients to a simmer. Use immediately or let cool and refrigerate. ► To make the pulled pork: Trim the pork.

► Using a marinade injector, slowly inject the Savory Pork Marinade Injection into each pork butt in nine evenly spaced spots. There should be about 1 ounce (28 ml) of marinade in each spot. ► Generously sprinkle IQUE Dry Rub all over each butt and wrap each one tightly in plastic wrap. Refrigerate 4 to 8 hours.

► To make the IQUE Dry Rub: Place all ingredients in a spice blender and pulse until it becomes a fine powder. Refrigerate in an airtight container. This rub will keep indefinitely, but try to use within 1 month to ensure freshest flavor.

► To make the IQUE BBQ Sauce: In a medium saucepan over medium-high heat, make the gastrique by bringing the brown sugar, cider vinegar, and Worcestershire sauce to a gentle boil. ►Remove from heat and add the thyme, mustard,

► Prepare smoker for a long smoking session (see chapter 1). We recommend a mild-flavored wood, such as apple. Place butts on the smoker, fat-side up. Smoke at 250°F (120°C) for 5 hours, or until internal temperature is 165°F (74°C), keeping the lid closed. Use a probe thermometer to monitor it. Turn the meat over, baste with 1 cup (235 ml) IQUE BBQ Sauce, and smoke for 2 hours, until a ruby-red crust has formed on the exterior.

► Remove meat from smoker, wrap each butt tightly in aluminum foil, and smoke until internal temperature is 198°F (92°C). At this stage, you can open the lid, so you can switch to a super-fast Thermapen.

► Transfer each pork butt to a baking pan, fatside up. Remove foil, and pour 1 cup (235 ml) Pork Marinade Sauce over each butt. Tent each baking pan with a new piece of foil, and let rest for 1 hour. ► Transfer the butts to a cutting board. Pour off the liquid from the pan and reserve. With a very sharp knife, slice the entire money muscle off each butt and place, cut-side down, on a cutting board.

► Return the butts to the baking pans and, wearing food-handling gloves, pull the meat into thumb-sized chunks. Don’t process the meat too finely. You want big, bold pieces of pork. Pour back the reserved liquid and stir into the meat. Sprinkle with 1 tablespoon (6 g) IQUE Dry Rub. Taste, and add a bit more hot IQUE BBQ Sauce if you think it needs it. Cover and hold in a warm (225°F, or 110°C) oven or on your smoker.

► Using a very sharp carving knife, or an electric knife, slice the money muscles into 3/4-inchthick (1.7-cm) slices. ► To make the sandw iches: Place the pulled meat in the center of a platter and fan the sliced money muscle around it. Let your guests assemble their own sandwiches with some pulled and sliced pork, Spicy Lexington Red Slaw, a drizzle of the North Carolina Creamy Vinegar Dressing, and Bacon Bit Buns.

1 tablespoon IQUE Dry Rub IQUE Hollandaise Sau ce 2 cups (475 ml) water 3 egg yolks 1 tablespoon (15 ml) fresh lemon juice 3/4 cup (1 1/2 sticks, 167 g) unsalted butter, cut into small cubes 2 teaspoons (10 ml) Tabasco sauce 1 tablespoon (7.5 g) IQUE Dry Rub To ma ke the bri ne:

► In a large saucepan over high heat, bring the water, salt, sugar, bay leaves, and peppercorns to a rolling boil. Remove from heat and cool until it reaches a temperature lower than 41°F (5°C). ► Remove the shells of the shrimp, leaving the tail on, and devein them from the belly side (see sidebar, page 113). Place the shrimp in the brine with 2 cups (475 ml) ice and keep cold. Brine for 25 minutes. Drain and pat dry. To ma ke the crab cak e stuffing:

► In a sauté pan over medium-low heat, cook carrots, celery, onion, and garlic in the butter until tender, 5 to 10 minutes. Remove from heat and let cool. Transfer to a bowl and stir in mayonnaise, lemon zest, thyme, parsley, Old Bay Seasoning, and panko. Gently fold in the crabmeat, trying to keep the chunks intact (we like to really see the crab). Season with salt and pepper. To ma ke the IQUE hollandaise sauce:

► In a medium saucepan over medium heat, bring the water to a boil. Lower heat and reduce to a simmer. In a metal mixing bowl large enough to sit over the saucepan, whisk yolks and lemon juice until yolks lighten in color, 2 to 3 minutes. Place the bowl over the saucepan, and whisk constantly until mixture thickens, 3 to 5 minutes (it should coat the back of a spoon). Remove from heat and, whisking constantly, add butter, 1 cube at a time, making sure each one is blended in before adding another. When all the butter is incorporated, whisk in Tabasco sauce and IQUE Dry Rub. Reserve until shrimp are ready. To Assemble:

► Prepare smoker and bring temperature to 300°F (150°C).

► While the smoker is heating, stuff the shrimp. Place about 1/2 cup (120 ml) of stuffing in your hands and shape into an oval. Position inside a shrimp, wrapping the tail up and over it (B). Repeat with remaining shrimp.

► Place the shrimp in a buttered 9 × 12-inch (23 × 30-cm) baking dish or sheet pan, or directly on the smoker grate, and smoke for 8 to 10 minutes, until the shrimp are pink and no longer translucent, or until an instant-read thermometer inserted in the meat of the shrimp registers 145°F (62.7°C). Remove from the smoker. ► To serve, arrange shrimp on a serving platter, drizzle with IQUE Hollandaise Sauce, and sprinkle with IQUE Dry Rub.

This allows for easy organization when it comes to seating charts, catering, and final head counts. Save-the-date for a destination wedding is typically six months. Weeks: book your wedding photographer and dj. Make sure to discuss with your fiancée the style of photography that you both want (formal portraits, photojournalism etc.). Always do your research and ask for references and a current portfolio of the photographers’ work. ►THE VIBE From lounging in seaside hammocks, to visiting the Makahiki kuilima festival, to beachcombing, petting horses at the stables, and watching surfers catching impossibly large waves, I was always entertained. For relaxation and soothing I headed to Spa Luana for a Lomi Lomi massage one day and a Pōhaku stone massage another. One of the most intriguing experiences was a segway tour through the back trails together with my guide Brad Gilger from the Hele Huli adventure centre at the resort. Part mini-history lesson, part nature tour, part balancing stunt it was a thrilling adventure past WWII bunkers, a golf course, a Hawaiian princess’s favourite bathing spot, movie locations and an old airport.

►DINING I head to SHOR American Seafood Grill, one of three dining facilities on property. I start with the crab cake, made with blue crab and served with a zesty citrus mayonnaise. My monchong fish is grilled nicely, while the whole lobster prepared with Hamakua Ali`i Mushroom, together with my crunchy kimchi fried rice is a study in umami. For dessert, the lemon cheesecake has a pleasant citrus zip.

►THE SCENE I enter the bright tuberose scented spa, Na Ho'ola and meet my masseuse Ellen for a Pohaku massage. Her flawless technique works areas of my upper back that need attending, easing each knot with varying degrees of pressure. E Makani Eha is Hyatt Regency’s cultural centre, where I speak with Aka, a native of Niihau, who guides me on an unforgettable lesson in creating a traditional headpiece. GREEN IS THE EMBLEM AT THE VICEROY. Even the outdoor lighting glows with the signature colour. Inside, kelly green is accented with touches of royal blue, yellow, grey, black and white. The art deco meets modern- quirky-polish at the hotel is unmistakable (think all pure white poinsettias at Christmas). The canary yellow library with silver candelabras, a floor to ceiling bookcase filled with design books is both cozy and charming. Upstairs in my ocean view Viceroy room overlooking the Pacific, the plush carpeting is punctuated by pin cushion chairs and a shiny white ceramic Pekinese dog that rests on the writing desk. Inside my oversized marble bathroom and Neil George amenities are luxurious touches. Outside, the pool area feels like a minimalist designer’s dream in shades of grey, black and white. The chic cabanas and cozy seating are accented with large black chess pieces and checkerboard tables. Scores of crisp white plates hang on slate walls. At Whist, The Viceroy’s signature restaurant, I meet Chef de Cuisine and Top

Chef season 9 alum Chris Crary, an affable host who chats with us about his culinary career before dinner. Growing up in Bucyrus Ohio, surrounded by a diet rich in meat and potatoes, it was trips to a family cabin in Canada that inspired his culinary path. “I got inspired about fresh food and cooking and the joy food could bring to a group of people.” After training in Virginia, the young chef worked in Key West, and Providence, eventually moving to San Diego to work with former Jean George sous chef Tony DiSalvo before settling in Los Angeles, where the pair have worked together for almost seven years. Designed by Kelly Wearstler the restaurant and adjacent Cameo bar is buzzing with a crowd tonight. Executive Chef Tony DiSalvo has created a menu with global influences, sourcing ingredients from the local Santa Monica market. Crary “likes to play” with molecular gastronomy, counting Jose Andres and Ferran Adria as culinary influences. Highlights of my meal tonight include the beet salad, with hazelnuts and truffle pecorino panna cotta. The Jerusalem artichoke soup with duck confit and black truffle is rich and elegant. “I do a lot of sweet components on savoury dishes,” confesses Crary. Tonight this sweet-savoury combination is evident in the grated amaretti cookies on top of foie gras terrine. The Dining Room just off the lobby looks like a gentleman’s club from the 1920s with bespoke details. It offers scrumptious breakfast options including a stellar breakfast wrap, lunch and dinner. The menu features fare from the nearby Santa Monica farmer’s market and enlivens comfort food with Italian and Latino influences. For dinner, I enjoyed the wild mushroom flatbread and smoked chicken empanada redolent with chilies and served with an amazing avocado salsa. A fine wine by the glass and cocktail list and prompt service make it a destination unto itself.

SHANGRI-LA SANTA MONICA ART DECO STRUCTURES ARE EVERYWHERE IN L.A. but perhaps nowhere captures the cool vibe of that time better than the Santa Monica showstopper ShangriLa Hotel. Opened in 1939, its sleek white exterior, pool with cabanas, courtyard with fire pit and mix of modern with vintage pieces positively scream effortless elegance. Since its $30 million revamp in 2009, the 71-room property has cultivated an ecofriendly culture with biodegradable bottles, efficient fluorescent lighting and a filtration system for water runoff. My spacious suite 500 featured two bedrooms, two baths, a stainless steel kitchen, and three flat screen televisions. But of course nothing says luxury like the bathtub with a view of the Pacific Ocean. Touches like an antique looking telephone, Frette bathrobes, and old style windows give the hotel its glam appeal. Meeting space, a fitness centre, courtyard, restaurant and location near the Santa Monica Pier make the Shangri-La ideal as a base for exploring the city. Executive Sous Chef Umit Kaygusuz’s deftly executes a menu of California regional cuisine, at jerne restaurant + bar punctuated by rich dark wood and deep red decor. I had an exceptional California farmers market experience menu and began with a glass of Moet and Chandon nectar imperial. From a rich celeriac and apple brandy soup influenced by the flavours of Normandy to a grilled heirloom carrot and marcona almond salad hinting at Spain my meal was worldly but rooted in the cuisine unique to California. My sommelier Mitch, was affable and informative and made the dining experience a pleasure.

THIS IS THE SOUTHERN CALIFORNIA YOU IMAGINE – yachts, water, and city views. Situated on a recreational marina, close enough to the Los Angeles International Airport that I could see planes taking off and landing from my room, the 304 room Ritz Carlton Marina Del Rey sits on quiet Admiralty Way. Though I visited during a major holiday, business travellers were plenty as were families using the hotel as a hub for visiting the surrounding area. A pool and fitness centre ensures both demographics have lots to do. At the time of my visit the hotel was in the midst of a facelift – updating the common areas to more modern decor. Each room features its own private balcony, and my Club level room provided sun drenched views of the marina and beyond. One day I take a stroll (bikes are also available to rent) to nearby Venice Beach walking along the meandering paths near the sandy beach observing surfers in the water and hundreds of water birds. Most days, though I spend relaxing in my room and at the Club Lounge.

On Sunset, headed by Executive Chef Olivier Rouselle, features a menu of seasonal California cuisine with a French inflection. With my glass of wine, I order the Maryland crab cake paired with pineapple Asian slaw and mint aioli followed by the lobster 'open ravioli'. The sheets of house made ravioli are woven between asparagus, mushrooms and a rich thermidor sauce. The roasted rack of lamb with Moroccan spices, Israeli couscous and eggplant caponata is a Mediterranean twist on California produce. On Sunset also features a Sunday brunch, with jazz trio accompaniment.

SOME MAY BE DERISIVE about theme parks but they are part of the quintessential L.A. experience (as the loads of foreign tourists would attest). Adjacent to the Universal City Walk, shops, restaurants and hotels, Universal Studios Hollywood is divided into two levels by the massive escalator, Starway. Views from the top are incredible with lots of picture taking possibility. I opted to begin with a studio tour narrated by Jimmy Fallon on video. We passed television sets like Wisteria Lane, encountered special effects from the Fast and the Furious and King Kong 360 3-D created by Peter Jackson. While attractions like Jurassic Park and Terminator 3D are rooted in the 1990’s, they still pack an adrenaline punch. MY VIP STUDIO TOUR IS led by Tom, an exuberant host with an encyclopedic knowledge of the studio. At every turn he points out where famous movie and television scenes were filmed, how parking lots doubled as helipads, and why movie houses are made of fiberglass resembling stonework (for quick changes and easy dismantling). We walk through sets, onto lots, and step behind the scenes of a Foley sound studio. At one point, we spot Brendan Robinson (Lucas on Pretty Little Liars) taking a break from filming his scenes and swarmed by a group of young fans. At lunch in the commissary kitchen our celebrity sightings include director Christopher Nolan. “This is where a lot of ideas are pitched, and business deals go down,” Tom whispers. The history of the lot is undeniably rich, but what is perhaps most surprising (and often taken for granted) is that film and tele-

vision have so many facets and employ so many people. Highlights: Witnessing the amount of detail that the average viewer can’t see (file folders on the set of The Mentalist filled with faux police reports). The multi-million dollar Tiffany lamps and crystal chandeliers in the prop department. The WB museum with replicas from the matrix, costumes worn by Elizabeth Taylor and George Clooney. Taking a photo on set of the one of the last scenes shot for Casablanca.
