HOME COOKING
There’s no place like home and nothing like home cooking.
NE OF THE most interesting and thought provoking incidents that I’ve seen on television occurred during an episode of an Australian cooking show. Contestants had gathered in a large industrial kitchen to scale up their home recipes (two tablespoons became several cups). Once they had accomplished this, they would present their dish, tweaked for commercial proportions, to the judges who would evaluate its viability as a grocery store product. A judge who had worked in several fine dining restaurants in Europe was surveying the kitchen full of home cooks. Noting that one contestant was simply tearing pieces of dough from a large batch and rolling them by hand, he approached her. “Aren’t you going to weight that?” he asked out of concern for her accuracy. For commercial products, having dough that is exactly the same size for each serving is crucial. “Well, I’ve made them with my hands to fit in my palm, so I know they’re all the same,” she retorted with supreme confidence. The chef insisted and the contestant relented taking the formed dough from her hand and placing it on the scale. “48,” she said. Then she took another ball of dough and put it on the scale. “48.”The tempo now increased as she began transferring the dough more quickly from her hand to the scale and each time the number was the same, “48.” The judge was stunned and turned away. A skilled home cook had, through experience and repetition alone, made a product to exact measurements without the use of a machine.

The scene revealed a slew of dichotomies: the skill of the chef which relies on gadgets contrasted the stern knowledge of the home cook, the exigency of the commercial kitchens contrasted the slower pace of home cooking, and the technical details the judges expected stood against years of experience. Most striking however, was the idea that machines, by their nature unfailingly accurate, can supplant years of experience. The machine can do what a home cook cannot. There is sometimes a reluctance on these television shows where professional chefs judge home cooks, to accept and learn from homespun experience. Home cooking is predicated on commonsense, often occurring without complicated implements and machines. Instead, ingredients are added by eye, adjusted by taste. Home cooks with years of experience pay attention to all 5 senses. Do I hear the spices popping? They will ask themselves. How brown is the meat? And, by this they will know when to flip it. It is an intuitive process guided by subjective taste and flavour. Often, tweaks are made over the years to please all or at least most members of the family. Just because the cooking is informal, however, does not mean it is not precise. Even without equipment, a home cook can replicate, in some instances, the precision of the professional kitchen. Cooking is an art not a science, intuition and experience are integral. CSL

Stir cornmeal and milk into a paste, then use to gently scrub skin. Rinse, pat dry. Mix honey and egg white until blended. Apply mask to face. Let dry then rinse. Mash banana and avocado together apply to skin and leave on for 10 minutes. Rinse one last time and finish with a layer of your regular moisturizer.

WATERMELON STRAIGHT UP
Watermelon juice is not only refreshingly sweet and delicious but also extremely nutritious. While the juicy red flesh of watermelon is loaded with vitamin C and the carotenoid lycopene, the white part of the rind (which we typically don’t eat) contains an incredible amount of phenolic antioxidants, flavonoids and more vitamin C. Juicing both the flesh and the white rind helps us get all those nutrients we normally might toss onto the compost pile. Makes about 3 cups (750 ml) 1 watermelon, prepared for juicing (see Juice Guru’s Tip, below) 1. using a sharp knife, cut watermelon into pieces and remove outer skin, leaving the white rind intact (see Tip, below). 2. using a juicer, process watermelon. Whisk well and serve immediately. Juice Guru’s Tip To prepare a whole watermelon for juicing, cut off one of the ends, creating a flat surface so you can stand the melon upright. Carefully slice it in half lengthwise through the center, then cut each half in half again. Insert the knife between the skin and the rind and cut away the green skin, leaving the inner white rind intact. There is no need to discard the seeds. To make a simple syrup, in a pan over high heat, stir water and sugar until mixture boils and sugar is dissolved, about 5 minutes. Add the sprig of thyme and let cool. Cover and chill, at least 2 hours. Once chilled, discard the thyme. Pour a half portion of simple syrup and a quarter portion of lemon juice into each glass, then fill to rim with club soda. Garnish with lemon slices and thyme.

TASTE
This light-bodied wine is characterized by sweetness and acidity and has a multitude of expressions depending on where it is grown. In its homeland of France, although chenin blanc is made as a dry wine, noble rot (botrytis) leads to a highly prized sweet wine underscored by acidity. Well-known appellations include Vouvray and quarts de Chaume. In South Africa, the wine is made dry. Oaked chenin blanc from South Africa is gaining in popularity. Expect creamy, nutty flavours.

Heat the oil in a pot over medium-high flame. Sauté the onions, garlic, and chile until
the onions are translucent. Add the can of tomatoes. Let simmer for 10 minutes. Add the bay leaf, thyme, salt and pepper and simmer for an additional 10 minutes or until sauce thickens. Lower the heat and add the cilantro. Taste the sauce and adjust salt and pepper. Meanwhile, heat a pot with oil for frying. Place the corn tortillas in the oil in batches turning them occasionally. Fry until golden about two minutes. Remove from oil and place on kitchen towel to drain oil. Sprinkle with salt to taste. To the tomato salsa over medium heat, add the eggs, stirring into the mixture until it thickens. Once incorporated, add the fried tortillas being careful not to break them. Serve into portions and top with queso fresco.
QUICK BREAKFAST
Easy to whip up, these eggs are a flavourful way to start the morning. Substitute smoked salmon for smoked trout and top with caviar and crème fraîche for a simple appetizer or special brunch dish.
Scrambled Eggs, Cherry Tomatoes, and Smoked trout on Toast Serves 2-4 3 tablespoons chives, chopped 6 large eggs 3 tablespoons cream 1 teaspoon vegetable oil salt and freshly ground black pepper to taste 4 large or 8 small slices sourdough, or whole wheat bread, toasted 4 oz. thinly sliced smoked trout ¼ cup cherry tomatoes ¼ avocado, sliced
Whisk chives, cream, and eggs in a large bowl. Heat oil in a skillet over medium heat. Add egg mixture and season with salt and pepper. Cook, stirring occasionally with a wooden spoon to form soft gently set curds, about 3-5 minutes. Stir in the trout. Meanwhile, season tomatoes with salt and pepper. Place toast on each place. Top with sliced avocado. Spoon over egg mixture and top with tomatoes.

Master the basic recipe for quiche and you're all set to experiment with different fillings like ham and cheese (for the classic quiche Lorraine), leeks and bacon or roasted vegetables. If you're hosting a party make mini-quiches, by lining muffin tins with pastry, then adding the egg mixture.
Shrimp quiche Serves 4-6 1
prebaked 9-inch (23 cm) deep-dish pie shell 5 eggs ⅓ cup cream ⅓ cup milk ¼ teaspoon thyme ¼ teaspoon (1 ml) ground nutmeg Salt to taste Pepper to taste 1 red pepper, chopped 2 green onions, chopped 1 cup gruyere cheese, grated ⅓ cup cooked shrimp Whisk eggs, cream, milk and spices together until blended. Add shrimp, cheese,

onions and pepper to mixture and combine. Pour ingredients into pie shell. Place on a baking sheet. bake in preheated 350°F (180°C) oven until a knife inserted in centre comes out clean, and the quiche is golden brown about 35 to 40 minutes. Let stand for 10 minutes before serving.
PREBAKE THEPIE SHELL To prebake pie shell, line the unbaked shell with parchment paper. Fill with raw rice or dried beans to minimize shrinkage. bake in preheated 450°F (230°C) oven until lightly browned at edges, about 10 minutes. Lift out parchment paper and rice or beans. Cool on wire rack.

The key to the look? Texture. To create that effortless, ‘lived in’ hair, use a salt spray on dry hair, and curl random 1 ½ inch (4 cm) strands for a few seconds. Use a wide tooth comb to brush out sections. From there, you can amp up locks with a loose braid affixed with a black velvet ribbon (seen on the Oscar de la Renta runway), use an elastic band (a la Christopher Kane), or a pretty embellished barrette, seen at Rodarte. 22

STROBING A New Name for an Old Trick
I am not a fan of contouring unless you are being filmed, photographed or work on the stage. Contouring is never an appropriate technique for daily makeup. Seriously stop! (My alternative look, strobing, is below)

OST PEOPLE USE CONTOURING TO create highlights and lowlights, give the illusion of shape and to define the natural angles on the face. What usually happens is a mask-like effect which, up close, looks like clown makeup. There is a better way to create glow, definition and shape – and it is the more appropriate technique for daily wear, street ready makeup. Strobing is really strategic highlighting. Think of it as the reverse contour. Highlighting creates lots of glow while accenting certain areas of the face. Strobing is a lot easier to achieve and requires fewer products. In fact it’s so easy to do it is almost foolproof.

1 Prep the skin with moisturizer – make sure the skin is well hydrated before attempting to strobe. I like to apply moisturizer at least 10 minutes before I begin the strobe application. Ensuring the skin is well hydrated will prevent the effect from looking irregular and flat. This is the most important step in strobing!
3 Overlay a dusting of a matching setting powder, blending any hard lines of highlighter as the powder is distributed across the face. Don’t use the powder like a foundation - it’s not about creating coverage it’s about creating a contrast of matte against the light, an effect of dimension to make the strobe stand out. 24

2 Catch the light – apply the highlighter on the cheekbones, at the temples, down the bridge of the nose, under the arch of the brow, inside the inner corner of the eyes and in the cupid’s bow of the lip. These are the places the face naturally reflects light and applying highlighter here will enhance the face’s natural features. Concentrate the highlighter in these areas only – do not spread out, up or away from these areas. Strobing works only if the areas are highlighted – blending across the entire face just makes it look shiny and greasy.

Count on the best beach location in St. Lucia, delicious local and international cuisine and a friendly atmosphere LOCATION “We’re on the only white sand beach in St. Lucia,” says general manager Richard Michelin of the resort's location on Reduit Beach, undoubtedly the best on the island. On the northern end of St Lucia, overlooking Pigeon Island National Park and a short walk from the shops, restaurants and night life of Rodney Bay, the resort provides easy access to Rodney Bay Marina where boats depart for deep sea fishing, and Gros Islet known for its fish fry, a seafood street party. “Per square mile, this area of St. Lucia has the most tourists,” says Michelin, “this is where everyone wants to be.”

From the airy reception to spa facilities, the beach pavilion and pool lounging chairs, “we keep bringing the standard up,” intones guest relations manager, Marie-Anne Johnny. DINING Although this is not an all-inclusive resort (a bed and breakfast option exists), expect some of the best local dining in the area. Chic serves finedining international cuisine and hosts a monthly supper club (a highlight the evening we dined was mahi mahi gently steamed in a saffron peppercorn crème with mango ash pasta, leek and watermelon caviar) while L'Epicure includes regional specialties like Jerk chicken, fish and Johnny cakes. German-Canadian chef Eike Lauff who has lived on the island for 5 years, makes everything from breakfast pastries to desserts in-house. “There are fresh, new ingredients that I had never seen before,” he says adding that integrating local ingredients with a North American spin like breadfruit tater tots, has been exciting. “People come here happy, they are on vacation and it affects you [positively].”

Begin with the Cacao Tortellini stuffed with goats cheese, and spinach and order the chocolate genesis for dessert, a delicious and ingenious story of chocolate from bean to bar on a plate. ”I love working with chocolate. I love getting up and coming to work. I sleep work, I dream about work – it’s a blessing,” exclaims Mathurin. With a slew of international business clients (we heard French, German and British during our stay), and located near the Moscone Convention Center, the 202-room hotel is a great hub for exploring the city (Powell Street, BART and Union Square are nearby). With a bar-centric menu from Chef David Bazirgan and Bar Manager Brian Means, we tasted a selection of tapas style bites like melt in the mouth lamb belly bao buns, vadouvan roasted carrots and labneh, and mushroom tart with fromage blanc. The restaurant has a stellar cocktail list with even cooler names (try the Iron First In A Velvet Glove) or choose from a variety of local craft beer (we recommend Westfalia red ale).

Built in 1907 and located on Nob Hill, there are impeccable views of the city and bay from nearly every corner of this historic luxury hotel. Statesmen, royalty, and movie stars have all stayed at this 591 room, 62 suite hotel. Our deluxe room featured views of the San Francisco skyline and a large business desk complete with tablet for browsing daily newspapers and surfing the web. Rooms have been recently refurbished with a neutral, modern colour scheme and bathrooms feature marble tubs. With a history that includes hosting the draft meeting of the Charter for the United Nations, it’s no wonder that guests range from international travellers to businessmen and families. The lobby is a mix of animal prints, gold leaf and old world details. The rooftop garden with its fountains, bar and beehives (the honey is featured in the several of the hotel’s menu items and the house brand Honey Saison Beer) is spectacular. We dined at Laurel Court Restaurant and Bar for dinner. The San Francisco cioppino came loaded with seafood in a mild tomato broth. The amazing spicy steamed manila clams with all the flavours of Asia was a standout. Other dining options include the European-style Caffé Cento featuring Ghirardelli chocolate and the renowned tiki bar Tonga Room & Hurricane Bar, which serves what is widely considered the best mai tai in the city. Submerged in the countryside, Farmhouse Inn does nothing to dispel its surroundings. Here the abundance of farm life is celebrated. From the historic farmhouse, painted a soothing shade of butter yellow, and surrounded by rose bushes to the 25 rooms accessed via a cobblestone walkway past the heated pool, enclosed chicken house, lemon trees and stone walls this is a dream of country living. Our room, a large and airy king luxury barn room, one of 25 rooms on site, affords lovely views of the property and is decorated in chic white with a telescope, weather vane and books providing antique touches. Rooms are loaded with goodies – a wooden crate filled with apples, quinoa chips, chocolate and other local treats provide something to munch on while touring the nearby vineyards. At turndown service, we nibble on the best gluten-free chocolate chip cookies we’ve ever tried. The indoor-outdoor fireplace, marble bath and giant four poster bed with European linens speaks to the inn's recent multi-million dollar renovation. Michelin chef Steve Litke offers a varied menu including a delicious and well executed lobster sausage, and 'Rabbit Rabbit Rabbit' a roasted rack of rabbit, confit of leg, yukon potato, and whole grain mustard cream sauce. Pastry chef Phil Ogiela's dessert creation, Comme l’Air, a cheesecake tart soufflé with lime gelée, huckleberry infused wild blueberries, chèvre cracker, and garden mint is a dessert we will not soon forget. We were told that breakfast was ‘an event’, and it did not disappoint. Each morning, we were presented with a 3 course meal, with the presentation, precision, creativity and care normally reserved for dinnertime. Whether you want to indulge in the plethora of on-site activities (like the pools, tennis courts, farmto-table dining, gardens, spa and championship golf courses) or explore the surrounding Napa Valley Wine Country, there’s no place better than this 1 200acre resort. Separated into four distinct neighborhoods, including Mansion Estates, Cottage Drive, The Grove and Oak Creek East, the resort feels like a residential community. Our premium cottage one bedroom suite included a wood burning fireplace, kitchen and dining room. We met golfers, wine tourists and families at this consistently busy resort. A private road and plenty of green space however, give it a quiet, low-key vibe. Check out the bocce courts or go for a hike on the property’s trails. With more time, bike the famed Silverado Trail through wine country. Expect sweeping views at the Grove with its gnarled oak trees and creek, or take in the massive Civil War era Silverado mansion set before the surrounding mountains. 48

While the entire neighbourhood with its art galleries, shops and cafes draws reference from Europe, this Relais & Châteaux property on Ocean Avenue in Carmel-by-the-Sea is a standout with its green shutters, plastered walls and cozy atmosphere. The property, built in the 1920s as an artist retreat is elegant and quiet despite the high-profile crowd it attracts. Our room (one of 20) with two queen beds, overlooks the charming courtyard, with trickling water fountain and wrought iron chairs reminiscent of a French country home. With a lavish inset tub and heated flooring inside our bathroom, rooms have the feel of self-contained cottages. Each night, turndown service consists of warm chocolate cookies and milk (we even got the recipe). Award winning Aubergine restaurant serves fare from esteemed Chef Justin Cogley and pastry chef Ron Mendoza. The highlight of the complimentary breakfast is the wonderful flaky pain au chocolat and croissants. The hotel is a sweet treat just like the handmade caramels (a cute and delicious pun) left tableside in guestrooms.
SUNSTONE WINERY Paired with our lunch (courtesy The Lucky Hen Larder) are the 2014 Rapsodie, a blend of Grenache, Syrah and Mourvedre (GSM) and the Blanc de Noir sparkling wine. On our visit, this 22 acre resort owned by Ty Warner delivered the perfect stay. At Coral Casino Beach and Cabana Club across the street, normally a members' only club (guests have access to this property) the quirky aquarium bar at Tydes Restaurant is a showstopper. It is the details though like handcrafted Italian ceramic tables, impeccable service and privacy that makes this one of the great California hotels. Like much of the area, Spanish colonial style dominates at this resort. Our grand premier room features a private terrace, green and white colour scheme, wooden furniture and a bathroom that while it stays true to the theme offers modern conveniences. Executive Chef Alessandro Cartumini offers Italian-inspired California coastal cuisine at Bella Vista. Breakfast on the patio overlooking the ocean is a must. For dinner carrot Caprese features buffalo mozzarella flown in from Europe, while the pizzas and pasta are a delicious delight. The staff is well versed in the menu details and offer helpful advice and insight. Fountains and foliage decorate the path toward the spa where we enjoyed an excellent massage. Take time to relax in the second storey spa lounging area with some of the most impressive views on property. Our room, with views of the majestic San Gabriel mountains and 23-acre grounds is classically decorated. We especially love the abundance of Chuan spa amenities in our full Italian marble bathroom. The Langham Club level on the 8th floor offers guests concierge services, a selection of newspapers and magazines, as well as all-day refreshments. One of the highlights of our stay was indulging in afternoon tea by Wedgewood (including sparkling wine) where the quiet sound of piano wafted in the background, as we sipped earl grey tea and nibbled on intricate pastries and savory bites. Dinner at The Terrace (one of three restaurants at the hotel which includes a gorgeous steakhouse and bistro), is a veritable feast. We were delighted with the crispy Brussels sprouts, and smoked tomato soup. "We want to showcase the wonderful products of California," says executive chef Denis Depoitre. Award winning Chuan Spa offers a selection of signature treatments inspired by Traditional Chinese Medicine. One of the most intriguing rituals is figuring out your element through a questionnaire and using the corresponding oil in your massage. Casa del Mar feels transported from the Mediterranean - a world away in breezy, Santa Monica. The hotel, once a private beach club during the 1920s features grand views of the Pacific ocean, a stunning pool, immaculate tile flooring and grand lobby with soaring ceilings and a soft blue colour scheme. Every day, from inside our large 400 square foot premier ocean view room, we are greeted by ombre pink, orange and blue sunrises and sunsets bathing the Santa Monica pier and endless sandy beach. Complete with a dark wood four poster king size bed, and calming white Italian marble bathroom with hydrothermal massage tub, this room epitomized laid back California luxury. Superstars, models and movie stars regularly stay at this hotel (on our visit, we spotted a large retinue in several SUVs) so expect discreet service. For dining, Catch restaurant offers a gleaming array of freshly caught seafood elegantly displayed on ice and in glass cases. Italian Executive Chef Alberico Nunziata and his culinary team boast some of the freshest seafood in Los Angeles, simply prepared. We recommend the beautiful crispy King Crab Roll from the full sushi station. While, a hearty breakfast at Terrazza (order the eggs florentine and peanut butter smoothie), sets us up for a day of sightseeing. 54
