Cleaning Up the Medicine Cabinet Springs around the corner, so why not start your “spring cleaning” in your medicine cabinet? Here are some quick tips for keeping your cabinet clutter free and safe.

• Check all your medications and throw away any that have expired. • If your over-the-counter medicines have expired, make a list for your next trip to the pharmacy.

• Reduce clutter by throwing out near empty bottles which do not contain enough medicine for a full dose. You may also want to check the label for any refills left on the medication. • Check to be sure you have all medications stored properly and dispose of those that are not since they can lose their effectiveness and sometimes become dangerous. • If you have any questions about storing or replacing medicines, check with your pharmacist. They will be happy to answer any questions you may have. • Sunscreen expires too! Check the expiration date and add it to your list for the pharmacy if it needs replaced. Cleaning you medicine cabinet each year will enable you to find medicines quickly, have the medicines you need when you need them, and will prevent having ineffective, expired medications in your cabinet.

White Chili No cold winter season is complete without a warm bowl of chili. This chili recipe is designed to be GERD-friendly and makes eight cups, but can be multiplied by two if you have a large pot available. INGREDIENTS: • 2 15-ounce cans of white northern beans (look for lowsodium) • 1 tablespoon canola oil • 1 1/2 cups diced white onion • 1 clove minced garlic • 1 pound peeled and cubed russet potatoes • 2 cups non-fat chicken stock • 1 1/2 cups white wine • 2 1/2 cups water • 1 pound cubed boneless chicken breasts • 2 teaspoons ground cumin • 1/2 cup 1% milk • 4 ounces grated reduced-fat white cheddar cheese • 2 teaspoons per serving non-fat sour cream • 2 teaspoons per serving fresh cilantro leaves

PREPARATION: 1. Rinse the beans well with cool water. 2. Place the oil in a large stock pot over medium heat. Add the onion and garlic and cook slowly. Stir frequently and don’t let the onions brown. 3. Add the potatoes, chicken stock, white wine, and water. Cook over medium-low heat, and then let it simmer for 30 minutes until the potatoes are soft. 4. Add the cubed chicken, beans and cumin. Stir well and cook for five minutes. 5. Add the milk and grated cheese, stir and heat thoroughly. Do not allow the chili to boil. 6. Many of the works are based on her childhood experiences and family remembrances. Her efforts focus on the creation of a unique style of art expression and a “visual history” of her life and family living in East Tennessee in the years prior to integration.

“The Encounter” - Two women who meet on the steps - one a white aristorcrat and maid to a family after Emancipation Proclamation. “Memories of Dad” - Picture represents my father who passed in 1977 and my son (William) who was around 8 when my father died. A boy missing his grandfather and the times they shared together. “My signature style of art is represented by “faceless characters” you see in many of my pen and ink drawings. Because my drawings are so detailed, each drawing is created to tell a story of a special memory or lifestyle so my characters do not need a face for you to understand my drawing’s story.”
