Chincoteague Oyster Fritters 1 pint oysters dash of salt and pepper Crisco
1 egg, beaten 1/2 cup flour
Combine oysters, egg, salt, pepper and flour. Mix well. If batter is too thin, add a little more flour. If too thick, add a little milk to thin. Drop batter by spoonfuls into melted 1/4 to 1/2 inches of Crisco in hot skillet or electric pan. Cook until center of fritter is solid, that is, not runny when center is punctured.

Meet Laura Davis of http://tideandthyme.com Living on this joyous little island on the wonderful Eastern Shore you’re sure to eat your fair share of clam chowder. For me, there’s nothing more fun than strapping on a pair of old canvas sneakers, finding a muddy sandbar at low tide, and digging your toes around in the mud until you run into you fill up your bucket with fresh quahogs. Or as we like to call them, “chowders”. The big guys aren’t good for much besides soups and clam strips. So, I’ll usually make a batch of chowder when we come across some. About 2 dozen will be more than enough to make a large pot of chowder. There are a couple ways you can go when it comes to clam chowder. The most well-known is your New England variety, which is cream based. That’s the husband’s favorite, and I plan on sharing that recipe with you soon. But today I’m sharing my recipe for Manhattan, which is tomato based, and my personal favorite… Bacon, potatoes, celery, onions, tomatoes, and clams. Basic, but oh so delicious. Now, I realize some of you may not be able to come across fresh clams as easily as I am. In that case, a couple cans of clams and a some bottled clam juice works just fine. But, if you have if you happen to be visiting our wonderful little island, I’d highly encourage you to visit one of the many local seafood shack and get some that are fresh. They’re cheap as far as it goes on the seafood spectrum, and the flavor is unparalleled. A perfect dinner for these warm evenings. Make sure to make some homemade oyster crackers to go along with it (you can find the recipe on my blog), they’re the perfect topping and only take a few minutes to throw together. I hope you enjoy your stay here on our special little island of Chincoteague!
Manhattan Clam Chowder 24 large chowder clams* 4 slices bacon, chopped 1 Tbsp olive oil 4 carrots, peeled and chopped 4 stalks celery, chopped 2 small onions, chopped 1/4 cup tomato paste 4 cups chicken or vegetable broth 1 (28 oz) can diced tomatoes 2 lbs red potatoes, peeled and cut into 1-inch chunks 1 tsp dried thyme 2 bay leaves kosher salt black pepper
Scrub the clams clean using a clean scrub brush. Place clams into a large pot and add 2 cups of water. Bring to a boil over medium-high heat and cover. Steam the clams until they have all popped open, about 15 minutes. Remove the clams from the pot and set aside to cool. Strain the clam steaming liquid through cheesecloth or a fine-mesh strainer to remove any grit and reserve the liquid. Remove the clams from the shells and chop well. Set aside. Heat olive oil in a large dutch oven or stockpot (I use the same one that I use to steam the clams), add the bacon and cook over mediumhigh until the bacon is crispy â€“ about 5 minutes. Remove the bacon from the pot to a paper towel-lined plate and set aside to drain. Add the carrots, celery, and onion and cook until soft, about 5 minutes. Add in the tomato paste and cook until starting to brown, about 3 minutes longer. Add the broth, diced tomatoes, potatoes, thyme, bay leaves, bacon, chopped clams, and reserved clam juice. Stir to combine, cover and bring to a boil. Reduce heat to medium-low and simmer for about 45 minutes, until potatoes are tender. Remove bay leaves. Season to taste with salt and pepper before serving. *If fresh clams are not available, substitute 2 (10 oz) cans of chopped clams and 2 (14 oz) bottles of clam juice or broth. 11

Keeping Local Tradition Alive Chincoteague, most popular for its annual pony swim, picturesque small town appeal, and beautiful neighboring refuge, harbors many artists featuring a variety of talents. One of those talents is rooted deep in the heritage of the Island. Decoy carving has many collectors worldwide. Folks often see the birds and their beauty without knowing the time, struggle, and history behind the art. Long before the days of plastic, decoys were originally made using mud, which eventually was perfected by replacing the mud with wood. Chincoteague Island has always been a prime location for hunting, but to hunt (especially legally), decoys are a must. Over the years, the art of carving has been passed along through the generations. Zach Jester, a native of Chincoteague, has been carving for about four years. Though he is only 25 years old, his work has been noticed by people near and far. While growing up on Chincoteague, Zach was neighbors with Roe Terry. He recalled watching Roe through his shop windows while playing in the yard. “I ended up going in there one evening,” Zach explained. “(He) put a knife in my hand, put an apron on me, and to work I went. From then on, it was just game on. I had an attachment to it.” For the past two years, Zach’s primary means of income has been made from carving. Photo credits: JoAnne Moore/Chincoteague Chamber of Commerce When asked about his most difficult decoy, Zach points to an unfinished Canadian goose on his workbench. “Once I band sawed him out and started chopping, that’s when I noticed I didn’t want to make a goose anymore,” joked Zach. The goose is about twenty-four inches in length and includes quite a few intricate details.
At 25 years old, Zach is currently the youngest carver on the island. He says, “I mean, as the youngest one it does feel good, but I wish there were more coming up…I really do.” To see the full interview with Zach Jester, visit www.chincoteaguewaves.com. 19

Waves: What made you choose Chincoteague Island?
Rosie: Pico comes from the fresh mexican salsa “pico de gallo” which translates to “beak of the rooster.” It got its name because people use to eat it by pinching it between their thumb and forefinger. Pico also means “peak.” We want to use things that are fresh and focus on ingreidents at their peak.
Rosie: We wanted a small town with character. We felt we knew a little bit of the island and we had friends to guide us. Mainly we were looking for seasonal too. Our 2nd passion (maybe 1st passion) is travel. We want to set up our lives to be able to take a few months off and disappear somewhere.
Waves: Why tacos? Rosie: We wanted to do something different. not bbq not seafood not sandwiches. tacos are familiar but we can put our own twist on it.

Winter Quarter’s Golf Course Nestled on the banks of the Pocomoke
River, this 9 hole course is open all year long. It’s name comes from the days when the Pocomoke Indians found winter shelter in this protected riverside location. The course is open daily and features bent grass greens, a putting green, numerous sand traps and water hazards. The course is 2629 yards long for men and 2539 yards for women with a rated par of 35. Daily greens fees are reasonable, and annual passes are available. The course may be closed occasionally for a tournament, so please call in advance. Chincoteague Christmas One of Chincoteague Island’s best kept secrets includes annual winter traditions. Three people, Steve Potts, Kevin Krome, and Lynn Neilson, were the driving force and masterminds behind what many know as Christmas by the Sea. Steve Potts, Managing Partner and Catering Coordinator at Bill’s Restaurant, explains it best. “It all started when the Town of Chincoteague asked us to help to raise money for the town Christmas lights. Kevin and I went to businesses, civic groups, and individuals who generously gave to help light up the town for the holidays. Since we were getting new lighting, we thought why not promote the season along with events that were already happening at the holidays and hopefully extend the shoulder season and attract visitors to dine shop, stay, and play? We felt that by marketing all of the holiday events under the name Christmas by the Sea and the tag line....Even a COOL day at the beach....beats a day at work! would be beneficial to all. Within 5 years, Christmas by the Sea and the familiar Santa Hat logo have become icons for the holidays on Chincoteague.”
