Recipe of the Month

Mediterranean Fish Bake Serves 4, Ready in 50 minutes

This is a great one-pan dish full of fresh flavour. Monkfish is quite pricey but the meaty flesh is delicious and bakes really well, however you can replace it with cod loin, salmon steaks or thick pieces of haddock fillet if you prefer. Serve with a green salad and warmed ciabatta bread to mop up all the lovely herb and lemon flavoured pan juices. Ingredients:

• 2 tbsp olive oil (choose a good quality fruity one) • 350g small new potatoes, halved • 1 red pepper, deseeded and cut into chunks • 1 yellow pepper, deseeded and cut into chunks • 1 green pepper, deseeded and cut into chunks • 225g small plum tomatoes, halved • 4 monkfish fillets (each weighing about 150g) • 50g butter, softened • Pared rind and juice from 1 small lemon, plus extra wedges to serve • 1 tbsp fresh chopped oregano • Salt and freshly ground black pepper

1. Preheat the oven to 200C/400F/Gas Mark 6. Place the oil in a large non-stick roasting tin and heat in the oven for 5 minutes. Add the potatoes to the tin and toss to coat in the hot oil. Roast for 20 minutes, turning once.

Tip: Replace the peppers with sliced courgettes, chunks of celery and baby button mushrooms, if liked. 8

2. Add the peppers and tomatoes to the roasting tin and toss to coat in the hot oil. Make a space in the tin and add the monkfish fillets. Return the roasting tin to the oven for 10 minutes. 3. Dot the butter over the fish fillets and sprinkle over the lemon rind, juice and oregano. Season with salt and freshly ground black pepper and roast for a further 5-10 minutes until the fish is just cooked through and the potatoes and peppers are tender. 4. Slice each monkfish fillet and arrange with the potatoes, peppers and tomatoes on four warmed serving plates. Spoon over the pan juices and serve immediately with lemon wedges.

Bells & Whistles - Yellow Dog

For most dog owners, a walk in the countryside on a beautiful summers day is one of the joys of owning a dog, but there are many owners for whom walking their dog is a stressful experience.

of two things; ‘he ran up to another dog and it attacked him’ or ‘another dog ran up to us and scared him’. So what can we do? Yellow Dog UK are running a brilliant campaign to help us all out, whether we own a dog or not. Quite simply; some dogs need space!

Whether your dog has come from rescue or been raised in your home from a tiny pup, many dogs would prefer not to greet every dog they meet.

And how can we tell which ones? They’ll be wearing yellow.

‘‘He used to be friendly, but...’ In the course of my work as a behaviour counsellor I come across this phrase time and again when helping people with scared or aggressive dogs, usually followed by one

Need some help? Stopping your dog from running up to others or off after enticing scents can be a difficult problem to crack, but whether your dog is over-friendly or would prefer not to meet others; your local, friendly behaviour and training service Bells and Whistles is just a phone call or email away.

We’ve Changed! Our logo and website have changed, and we have some new classes for you and your dogs to enjoy, but our friendly, reliable service is just as great as always. Whether you want the best start for your new puppy, someone to walk your dog or if you and your pet are suffering with a behavioural issue (not just dogs!) Call us or visit our new improved website.

Kop Hill Climb 2013

Kop Hill ale will be back this year, after a runaway success at its launch in 2012.

On 21st and 22nd September Kop Hill Climb will be restored to its illustrious past. The revival of the historic hill climb in Princes Risborough is gearing up for its fifth event. The event returns this year with over 400 historic cars and motorcycles taking on the famous hill, and many more displaying in the Paddock. Vehicles range in age from the early 1900’s to modern day exotics. A fabulous weekend for enthusiasts, but Kop Hill Climb is also about families, so there will be plenty for all to see and do. The breathtaking Battle of Britain Memorial Flight will grace the skies above Kop Hill on Sunday 22nd. Enter if you dare the Wall of Death. Climb aboard the cockpit of an Avro Shackleton. And surely on everyones ‘must see’ list this year will be the Napier Railton. The 24 litre aeroengined World Land Speed Record Holder from 1939 to 1947 cannot be ignored. It is almost five meters long, and the sound of the engine has been likened to ‘the sound of a thousand storms’.

And budding designers and racers have been told to get their thinking caps on (or should that be racing helmets!) and take part in the Soapbox Challenge. The Challenge is open to competitors aged 10 to 17 to design, construct and compete in their own gravity-powered soapbox cart. Entrants will compete as teams of up to 6 members, and the soapboxes will be evaluated on their engineering and design just as much as their performance. Last year saw the first Soapbox Challenge, where 16 teams ranging from Green Onions and The Snails, through The Lightening Longwicks to The Lean Mean Green Machine competed for the coveted trophies and a host of prizes. If you would like to be part of the Soapbox Challenge this year go to the website for full details and registration. The objective of the Kop Hill Climb revival is to raise money for local charities. All the organising team and helpers are volunteers. Last year over £37,000 was distributed, and over £128,000 has been raised since the revival started in 2009. A very good reason to be a part of this special event.

Back by popular demand are Haurel and Lardy, recreating the legendary double act. A children’s area, trade village and food and drink court all ensure there is something for everyone to see. Advanced tickets are available now at a discounted price. Go to the website for full ticket details and further details of the event. Advance ticket adult £8 one day/£15 weekend, Children 12 and under go free, Parking is free, One complimentary programme per group. 24

Spring Bulbs

The Autumn is the time to plant Spring flowering bulbs. Daffodils, Tulips, Crocus and Hyacinths are just some of the bulbs that will burst into colour in the Spring and should be planted now. The sight of the first bulbs of the season gladden the heart of all gardeners, and really do tell us that the long cold Winter is coming to an end, and the gardening season will soon be with us. To ensure you get the best from your newly purchased bulbs, there are a few simple tips to follow. Always plant in a sunny position. Your bulbs will tolerate partial shade, but like all plants, they will reward you with more colour if they are in full sun. Do make sure you plant in well-drained soil . If your chosen planting area does tend to hold water, add some sharp grit to the hole, this will encourage any water to drain away and prevent your bulbs rotting away during the Winter. Choose a mild, dry day to plant your bulbs. Don’t try to plant if frozen soil or if your ground is very wet. Make sure the soil is as dry as possible so your bulbs can settle. Once you have planted, keep an eye on the weather forecast. If a very cold spell is predicted it is well worth mulching your bulbs. A mulch will insulate your bulbs, stopping the cold from penetrating the soil, and conserve moisture. And finally, plant your bulbs as naturally as possible. Don’t plant in a row nature doesn’t work like that! Plant in drifts - odd numbers look most natural. One way to make sure your bulbs 30

are planted is to simply drop your bulbs onto the ground from a couple of feet . Where they fall is where you should plant them. We have a superb range of top quality bulbs ready now - so do drop in for any more advise. By the way, you may know our new café and farm shop, The Potting Shed is now open, so you can have a nice cup of tea and a slice of home baked cake once you have chosen your bulbs. And we now have our new pet section up and running - treat your furry friends to a little something! Happy gardening, see you soon,

Simon, Alison, Edith the Jack Russell and all at Askett Nurseries.

Wendover Woods Wendover Woods is an attractive mixed woodland located just outside Wendover on the Chilterns escarpment. This 325 hectare wood has a long, beautiful tree lined forest drive winding its way up to the highest point in the Chiltern Hills. There are many things to see and do, and there is also food and drink available from our Café in the Woods. There are miles of tracks and trails to explore, and stunning viewpoints over the Vale and the woods themselves. The Firecrest and Easy Access Trails are way marked starting from the main car park and take you through different habitats in the woods. For those looking for something more energetic we have a family cycle trail, an orienteering course, a forest fitness trail, and a horse trail.

~ Eating and Drinking ~ The Café in the Woods was purpose built by the community, for the community, in 2006 to enhance the visitor experience at Wendover Woods. The Café in the Woods is open 364 days a year from 9am to 6pm, closed Christmas Day.

~ Go Ape High Wire Adventure ~ Set high up on the Northern crest of the Chiltern escarpment, at Go Ape Wendover Woods you can enjoy the spectacular and idyllic views and wild landscape across Aylesbury Vale from high up in the trees. The classic and original Go Ape experience at Wendover is our 2 – 3 hour Tree Top Adventure. We’ll brief you for safety before you fly down our zip-wires, leap off our Tarzan Swing and tackle our crossings whilst enjoying some of Britain’s most breathtaking scenery. With a smattering of tree-top high wires, high ropes crossings and a wind-in-your-face zip wire, you’ll want to swing by this outdoor adventure in Buckinghamshire. And if you’re looking for activities and things to do near Oxford, Go Ape really is just a stones throw away.

~ How to get here ~ Wendover Woods is located off the B4009 between Wendover and Tring. For more information about the woods and its facilities please visit

Princes Risborough Country Market

Princes Risborough Country Market is under the Market House, Market Square, Princes Risborough every Thursday morning (come rain, sun, snow or gales!) from 9 a.m. -12.30p.m. (except January) It was set up and has been in the same location for the past 36 years, and some of the original members are still working there today! The Country Markets organisation has roots going back to 1919, when the Agricultural Organisation Society (now DEFRA) sponsored the setting up of co-operative Markets through the WI to sell surplus produce. This was because, after the 1st World War, men were returning home to find that there was no work. The idea was that they could bring in a small income by selling their surplus garden produce, etc. From this beginning Markets have grown.

They also, over time, blossomed into selling home made food, preserves and craft. The Market was originally known as the WI Market. When The Charities Act was introduced, because they were the “commercial” wing of the WI the two parted company, and ever since have been known as Country Markets. Princes Risborough’s co-operative offers local home baking, preserves, garden produce, plants, flowers, eggs, honey, and crafts. The food is freshly prepared and can be frozen. Cooks hold a current Hygiene Certificate. Orders can be taken. For further information (or if you would like to join) please look at their website at or ring Lorraine on 01844 347230 who will be pleased to hear from you.

“Thank you, thank you, thank you; it’s changed my life!” Drivers of the Risborough Area Community Bus happily put up with winter mornings and otherwise monotonous stop start driving when they hear such oft repeated praise. Now in its third year and extending its footprint further, the bus has opened new horizons for both its drivers and their passengers. Whether it is doctor’s appointments, shopping, local meetings or simply having coffee with friends, those who use the bus, and there are now over 20,000 passenger journeys each year, insist it has made them come alive whatever their age. “It’s such a rewarding experience” says RACB’s oldest driver Pat Voss. “It makes all the difference knowing you make a difference.” Pat is one of our 30 “MiDAS” trained drivers who get as much out of the bus as their passengers. And they are well thought of; “these drivers are the most helpful I have been served by for 44 years” said a passenger recently. It’s not just passengers who benefit from RACB. One of our passengers has said that “the service has resulted in my spending over £700 in Princes Risborough shops this year” And by linking with both Arriva buses and Chiltern Rail services, “our little green bus” allows journeys near and far. Operated by a charity whose trustees, like the drivers, are all unpaid volunteers, RACB 44

operates a scheduled daily service around Princes Risborough and the outlying villages of Longwick, Bledlow, Bledlow Ridge, Speen, Askett and Great Kimble. RACB also runs outings to places of interest and the bus is available for groups when not in scheduled service. “We had quite a few difficulties getting the Bus on the road but we had tremendous help in overcoming them from regional organisations and local authorities”, said Malcolm Maultby, Chairman of the Trustees. Not least among them has been Buckinghamshire County Council and Buckinghamshire Community Foundation who have helped with expertise, experience and funding alongside the enthusiasm and knowledge of local volunteers and passengers. What makes it tick? In a word: involvement. It is now difficult to imagine life without the Community Bus and already plans are being laid for the future development of this very worthwhile project.

Drop-off for passengers is in the High Street. Most journeys cost only £1.50 or 50p for children and most concessionary passes are accepted. Anyone can use our bus, young and old, and a recent passenger survey gave us a 100% satisfaction rating.

Over 20,000 passengers a year now use our “little green bus” that runs daily scheduled “Hail & Ride” services around Princes Risborough and to outlying villages.

Our trained volunteer drivers are well thought of: “these drivers are the most helpful I have been served by for 44 years” said a passenger recently. We make the bus available for use by non-profit making organisations and groups when not on scheduled service and we run outings each month to places of interest.
