Not to be Taken for Granted Going away reinforces all that’s good about home-sweet-home.

J

ust went away on vacation — yes, vacation! – that ever-elusive time away for some good ol’ R&R. But what do I do? I visit the local chamber of commerce and talk to their president about how they do things, and then I reflect on what we are doing here. It is great to get new ideas and, also, be reassured when we are doing something well, so we can, as my current Board of Directors says, “Do more of it!” I am amazed at how much we have accomplished in my five-and-a-half years as executive director. We added a second Business EXPO. The 28th, sponsored by Maryville University and Chesterfield Mall, featured 70+ booths on March 1, and we are gearing up for our second EXPO this fall. We also added a second golf tournament. Our 28th Annual Spring Golf Classic, sponsored by Lindell Bank, is coming up on April 30 at Persimmon Woods Golf Club, and we will host our 2nd Annual Fall Golf Tournament on September 24 at WingHaven Country Club. Our 1st Annual Blossom Bolt, a 5K/10K run and Sprout Sprint fun run for kids, sponsored by Orangetheory Fitness, is making its debut on Saturday, April 21. (Register on our website or Big River Running, and get out and enjoy the spring weather!) On October 20, we host our 17th Annual Pumpkin Run, sponsored by St. Luke’s Hospital and Maryville University. We are excited to build on last year’s record participation! Always a community favorite, our 31st Annual Summer Concert Series at Faust Park kicks off soon. We have been busy at the Chamber booking all the bands, food trucks, restaurants

for the concession stand — and the ever-popular Kona Ice truck and Bubble Bus for all concerts this summer! I hope to see you all at our concerts on Tuesday evenings, starting June 5 and continuing through August 14. Check out the dates and bands in our ad on page 23. All Chamber programs are brought to the community through our membership dues Nora Amato and business sponsorships. This is an entirely nonprofit endeavor sponsored by your local businesses. I cannot stress enough that where you do your shopping, services and entertainment spending makes a difference. I have spent my lifetime in Chesterfield and have seen it grow and change, but I can still do business the way my father did: with a handshake and your word. It truly is a great place to raise a family, retire, work and play — and I think sometimes we forget that. Travel outside of Chesterfield and take a look around. Do you see as many parks, athletic fields, gathering places, programs for all ages, and community gardens? A community with as much to offer as Chesterfield doesn’t “just happen.” I have a small, but great, team at the Chamber who works tirelessly planning the programs and events that set us apart. We are supported by a dedicated Board of Directors and members, who volunteer their time, energy and resources, to help make us the best Chamber in St. Louis County. I know I couldn’t do it without their vision and energy, and I do not take them for granted. As a Chamber, we understand what’s at stake here, and we take seriously our mission of

“helping our community connect, learn, and grow.” Nora Macalady Amato is the executive director at the Chesterfield Chamber of Commerce. Reach her at 636-532-3399 or email nora@ chesterfieldmochamber.com. 10

Rockwood Teachers Get EXTRA CREDIT By Alex Fees

Several Rockwood teachers were selected to perform with the St. Louis Symphony Orchestra (SLSO) in a program known as “EXTRA CREDIT On Stage at Powell.”

S

LSO officials describe the program as “a very special professional development opportunity with musicians of the St. Louis Symphony Orchestra.” Rockwood educators were provided with the opportunity to rehearse and perform a concert under the direction of SLSO Resident Conductor Gemma New, Feb. 2. The Rockwood teachers who participated in the program include Mary White, Laura Holzen, Lindsey Jones, Joe Gutowski, Mike Blackwood, Steve Patton, Denise Elam Dauw, Laurie Underwood, John Mazar, Jennifer Husky, Jeremy Knudtson and Jason Long. Rockwood traveling orchestra teacher Laura Holzen works with students at Wild Horse Elementary, Crestview Middle and Lafayette High schools. Holzen began playing violin in fourth grade at Ballwin Elementary and continued her musical education at Selvidge and Lafayette. Holzen said sitting on the stage and having the perspective of looking out at the audience was thrilling. “The audience cheered so loudly and enthusiastically for us,” said Holzen. “I really felt appreciated. My music stand partner was Janet Carpenter, a fairly new member of the symphony. I enjoyed talking with her about her own music education and the path that led her to be a symphony musician.” Wildwood Middle Band Director Denise Elam Dauw played the flute, her primary instrument, during the performance. Elam Dauw also has history in Rockwood. “I was incredibly honored to represent Rockwood for this performance,” said Elam Dauw, “having grown up in Rockwood with Superintendent Dr. Eric Knost as my band director! I wouldn’t be here without him as my mentor, so this experience was my honor and a childhood dream come true.” chesterfieldmochamber.com

Holzen said she believes Rockwood students will benefit from their teachers’ symphony experience. “As I prepared for this concert, I shared my practice journey with my students,” she said. “It is so important for students to learn how to practice. I had five pieces to learn. I explained how I would work on only one or two at a time, find the places that needed extra practice and work on them first. Sometimes I would work only on those places I was struggling with, and listen to recordings. I hardly ever just played through the piece from beginning to end. It is so good for students to hear that their teachers face the same challenges when learning music.” Knost is a musician and former music teacher. “The primary goal of our performing arts teachers is to help kids thrive through their passion for music,” said Knost. “This was a great opportunity for some of our very talented staff to demonstrate their own passion for the arts in a memorable performance with the St. Louis Symphony Orchestra. We are blessed with some of the best performing arts teachers.”

Bootleggers & Gangsters in Gumbo How Chesterfield’s Harry Schneider built a lucrative business serving illegal brew during Prohibition. By Ann Chrissos, Chesterfield Historic & Landmark Preservation Committee

C

hesterfield was an idyllic, pastoral community in the 1920s when Harry Schneider purchased the Twenty Five Mile House in Gumbo (Chesterfield Valley), Missouri. This general store and roadhouse-saloon had been established by Henry Wetzel in 1886 on the southeast corner of Olive Street Road (Chesterfield Airport Road) and Long Road. In 1906, it was given the name Twenty Five Mile House because it was 25 miles from downtown St. Louis. The building was then expanded to include a hotel.

When Harry Schneider purchased the business in 1923, he changed the name to the Gumbo Inn. At this time, Prohibition had been in effect for three years. The Eighteenth Amendment to the United States Constitution, ratified in 1920 and repealed in 1933, prohibited the manufacture and sale of alcoholic beverages. However, when Schneider learned that his neighbor George Ruppel had a still on Johnson Island and was willing to sell the finished product, he decided to serve the

illegal brew in his restaurant. (Johnson Island is located in the Missouri River east of the Daniel Boone Bridge and north of the Chesterfield Athletic Complex.) Ruppel transported the beverage in a false-bottomed truck to the Gumbo Inn, which made the inn a popular destination for Sunday excursions by the Metro St. Louis gangsters, the Sheltons and the Eggns* and their girlfriends. The Shelton Gang, founded by Carl, Bernie and Earl Shelton, ran a major

*Eggns probably refers to the Egan’s Rats. They were a St. Louis crime gang which operated from 1890-1924. They were founded by Thomas “Snake” Kinney and Thomas Egan. Their criminal activity included bootlegging, voter intimidation, armed robbery and murder.

bootlegging operation from East St. Louis to Cairo, Illinois. (Bootlegging was the making, transporting and selling of illegal alcoholic beverages during Prohibition.) Harry Schneider was born in St. Louis on August 8, 1881, and was educated in the city’s public school system. After graduating from eighth grade, he joined his father, George A. Schneider, in his bakery until the age of 23. He then worked as a representative and later as an inspector for the Prudential Life Insurance Company in East St. Louis until 1914. For the next six years, he owned and operated Allen’s Park, an amusement resort near East St. Louis. He sold out in 1920 and purchased Bellairs’ Grove, a restaurant known for its delicious chicken dinners. This experience served him well, when he became the proprietor of the Gumbo Inn in 1923. The roadhouse thrived on automobile parties and local clientele who liked the food, service and prices. The building was damaged in the 1993 flood and was razed in 1998. A McDonald’s restaurant now occupies the site. Schneider married Aurelia A. Bonneville on November 11, 1904. She was also a native of St. Louis who was born on June 25, 1883, the daughter of Charles Bonneville, a veteran railroad engineer. Harry and Aurelia had two sons: Charles A., born May 31, 1906, and Harry G. (Hap), born September 5, 1913. They also had one daughter, Bernice, born July 22, 1909. Bernice married Francis B. (Frank) Gerst in 1930 and they had six children: Jean, Robert, Carol, Ann, James and Joann. Aurelia died on March 4, 1955, and Harry died on January 15, 1964. They are buried in the Old Saints Peter & Paul Catholic Cemetery at 7030 Gravois Avenue in St. Louis. Sources: Ancestry.com, Vital Records. Making the Most of Every Moment By Jamie Irish Cast a line at Innsbrook — and reel in the memories of life at the lake, closer to home.

H

ow many times a day do you look at your kids and wonder how time flies by so fast? A getaway at Innsbrook may be just what your family needs – now more than ever. There, families start the day together with a splash, sail or stroll. It’s a place where time seems to stop, and kids — and adults! — can be kids. “Spending time together and getting to watch our grandchildren grow up is a priceless gift that we are able to enjoy at Innsbrook, and I truly don’t believe that we could do this anyplace else so often and conveniently,” says Innsbrook property owner Mary Ann Rea. “We are blessed that we get to actually see them learn to swim, learn to kayak, chesterfieldmochamber.com

learn to build a fire, make a fort in the woods, enjoy the outdoor concerts, enjoy a Fourth of July fireworks show like no other, and snuggle up for a back rub in front of the fireplace.” Just 30 minutes west of Chesterfield, Innsbrook is a 7,500-acre community with sand beaches, golf, dining, hiking and equestrian trails — and more than 100 lakes. In addition to its natural amenities, Innsbrook offers a full lineup of community events, including concerts, kids’ camps and workshops, sports tournaments, and more. Most of all, Innsbrook is a place where families can unplug. April-June 2018 | Out & About

“Innsbrook is a place where you don’t take your phone with you everywhere you go, and kids run outside to play instead of running to the TV,” says Warren (Chip) Wobbe, president of Innsbrook Properties. “It’s a place where reality is entertainment enough, so there’s no need for virtual reality. Where children don’t text their parents about their day, but discuss it face to face around the dinner table. Time at Innsbrook is an investment in family, relaxation and incredible experiences.” With its convenient location, and familyand nature-centric events and activities, Innsbrook makes it easy for families to reconnect. “The quiet times at the lake are beautiful and we enjoy it very much, but having family and friends enjoy Innsbrook with us are memory-making moments,” says Rea. “The shed full of life vests, water shoes, fishing poles and ice skates, along with the kayaks and paddleboards lining the shoreline, are beautiful sights in themselves. But when it’s all in motion and being used, every second is an adventure.” “Kids who grow up at Innsbrook have memories that, for many of us, harken back to what people generally refer to as ‘the good old days’: catching tadpoles in the creek, climbing trees, family barbecues and sitting down together for meals and stories,” adds Wobbe. “Instead of fretting over a cracked screen, our owners’ kids and grandkids are settling in by a crackling fire. It really is a place where family traditions and memories are made.” Many of the families who own property at 18

Innsbrook return generation after generation. Kids who grew up at Innsbrook are now coming back with kids of their own. “I grew up with a family clubhouse on the Gasconade River, and we wanted to recapture that experience for our children and grandkids,” says Rea. “Innsbrook provided that for our family beyond anything we could have hoped for.” The Innsbrook experience can be as active or as relaxing as families desire. Adventure seekers can sail, ride, swim, paddle and hike to their heart’s content, while those in search of a more tranquil refuge can lounge by the lake and take in the abundant serenity. Innsbrook offers different types of properties with different types of lifestyles in mind: recreational A-frame chalets, year-round or secondary homes, low-maintenance lakefront condos, woodland cottages and golf course villas. “The beauty of Innsbrook is that it provides that respite from the day-to-day grind that everyone is looking for — whether it’s a young family looking to reconnect with their children, or a retired couple wanting to reconnect with each other,” says Wobbe. Those interested in dipping their toe into the Innsbrook lifestyle can visit for a vacation or attend one of the open houses held every weekend. Visitors are also welcome to explore Innsbrook anytime from 10 a.m.-4 p.m., seven days a week. eSports Epicenter in our Midst By Jessica Meszaros

Maryville University’s eSports club takes competitive gaming to a new level.

I

t was American engineer Nolan Bushnell who spoke the words, “Video games foster the mindset that allows creativity to grow.” Bushnell, often regarded as the father of video games, would later go on to establish Atari Inc. and create of one of the most famous multiplayer games of all time: Pong. Competitive games have been around since arcades in the 70s and 80s, but one local team is literally taking competitive gaming to a new level. The competitive eSports team at Maryville University, located in Town & Country, is especially taking the words to heart and to electronic battlefields as they continue to hold the title of one of the best eSports teams in the entire county. Since its creation in 2015, the club has claimed three national titles. In 2016, the club took the lead at the League of Legends championship at DreamHack in Texas and went to the NACE National Invitational Title

20

with a 2-0 victory over Miami University in April 2017. The team also became the first American university to capture the Collegiate League of Legends title with a victory against the University of Toronto during the finals in Los Angeles in May 2017. The team then moved onto compete against other countries in the worldwide tournament in July 2017, where the team lost to

China. “I’d say our goal for 2018 is to set our title in North America, and then go back to China and do what we couldn’t do before,” club founder Daniel Clerke said. Clerke founded the university’s eSports club. The former Call of Duty pro player served as the CEO of his own company, Enemy Esports. Currently, Clerke is general manager of Esports Entertainment, LLC in Los Angeles. According to Clerke, who played hockey in his youth, eSports were attractive due to the emphasis on skill and practice rather than pure physical ability. “It’s a cerebral game,” Clerke said. “It’s not like other sports where if you have the stronger team, you might win the game. You really have to mentally be able to outperform the opposition.” eSports is defined as a competition between professional video game players. While online multiplayer games are often the genre most

associated with eSports, other popular genres include fighting games, real-time strategy games, first-person shooters [FPS] and multiplayer online battle arenas [MOBA.] In addition to MOBA games like League of Legends [LoL], other popular ones seen in competition include the strategy games Hearthstone and multiplayer FPS games like Counter-Strike and Overwatch. Maryville’s club currently has over 30 members and, according to Clerke, each member trains and plays for specific games and positions. “Being an eSports athlete is similar to being a sports athlete,” Clerke said. “If you’re a sports athlete, that doesn’t necessarily mean you play hockey, basketball, football and soccer. You specialize in one thing. We have a League of Legends team here, but also a Hearthstone team and a Counter-Strike team.” Depending on the game and the number of players, some eSports matches can last hours. During that time, players have to chesterfieldmochamber.com

consistently talk to teammates and formulate plays while accomplishing a main objective or goal, which varies by game. According to Clerke, players can make up to 100 to 200 calculated actions and button presses each minute during an average game. “At any given minute of the game, a player has to be

thinking of where his teammates are on the map, where the opposing five players are on the map, how far away they are from a certain point, ‘How much damage can I do to that player before they damage me?’ and more,” Clerke said. “You’re basically making six to eight mathematical equations every couple seconds, all while speaking with your teammates. Every one of those equations results in a button press.” For many professional players, the endurance, strategy and teamwork dynamics found in eSports are very similar to more traditional sports like basketball and baseball. “The biggest thing people overlook with eSports is the natural ability to work within a team environment,” eSports player Derek Micheau said. Micheau is part of the club’s League of Legends team. “Everyone wants to be the best mechanical player or the best summoner, but everyone forgets it’s a team game.” It’s also not uncommon for many eSports players to have also

played other traditional sports before investing in video games.

“I’ve played both traditional sports and eSports, and there’s nothing more mentally draining than a 45minute to an hourlong game without any breaks of League of Legends, where in baseball you’re up at the plate for 30 seconds, swinging and missing and walking back to the dugout,” Micheau said. Maryville also has the distinction as being one of the first schools in the U.S. to offer eSports scholarships, which has allowed students like Micheau to return to school for degrees while still participating in eSports. “There’s absolutely no way I would have ever continued to my Master’s of Business Administration [MBA] without the scholarship,” Micheau said. According to Clerke, support from universities is one element that has contributed to the development of eSports across the country. Specific to Missouri and the Midwest is the benefit of a centralized location that makes it easy to bring players together. In addition to Maryville, schools like Missouri Baptist University in St. Louis, Robert Morris University in Illinois and more have emerged as universities with notable eSports programs. “I think the reason it’s grown so much here is because, if you’re going to put an event here, people from New York to LA can come here to play video games,” Clerke said. “There’s a lot of kids here that play video games, and it’s really easy to bring others here.” While eSports is accessible for many — thanks to advances in internet technology and gaming networks like Steam — the skills are hard to perfect. Players in Maryville’s club can put in up to 14 hours a day to practice for competitions, not including additional practice sessions. “There’s a difference between being good and being professional,” Clerke said. “If you want to become an NBA player, you can’t just go on the 22

Out & About | April-June 2018

court and shoot free throws every day and expect to become a pro.” Maryville club members spend weekdays in the school lab practicing, and then use weekends to review practice footage to examine and improve play styles. “It’s really like something you’d see in the NFL,” Micheau said. As of 2017, eSports does not have an Olympic category, but events like the Intel Extreme Masters [IEM] PyeongChang tournament hosted prior to the 2018 Winter Games have sparked discussion for possible recognition by the Summer 2020 Olympic Games. In addition, events like the 2017 LoL World Championship semifinals brought in about 80 million unique viewers, according to the event’s official website. By comparison, Super Bowl LII brought in about 103.4 million viewers, according to CBS. “I’d say the future of eSports is now,” Clerke said. “It doesn’t matter where you’re from or who you are. Anyone can get to that level, but you just have to work incredibly hard.”

Preserving the Past for By Mary Shapiro

Faust Park hosts visitors from all over the United States, as many activities – public and private – with new ones added

aust Park, at 15185 Olive Blvd., was created in 1968 through the generosity of Leicester and Mary Plant Faust who donated the property. Their intent was to forever preserve the original estate known as Thornhill, built between 1815 and 1819 by Frederick Bates, the second governor of Missouri, said Lori Ritchey, the park’s curator. The site was also used to create a historic village which preserves buildings that

represent the development of St. Louis County. Both the village and Thornhill host a variety of historic programs throughout the year, Ritchey said. And, over time, other attractions have been added to the park, such as the St. Louis Carousel, the Butterfly House and the Webster University School of Music, which are on the park grounds but separate from the historical areas. The park also features a large playground,

tes, as well as many foreign countries, and they take part in added frequently to highlight park facilities. restroom facility, two picnic sites, a trail, an amphitheater and a reservable covered picnic shelter. “The new fall hayrides, ‘Missouri Harvest Hayrides,’ are replacing our Heritage Festival,” Ritchey said. “We are returning to our roots with this program to focus more on demonstrating what our ancestors would have been experiencing during the harvest of each year. We are still ironing out the details for this event but there will be many staff chesterfieldmochamber.com

and volunteers throughout the historic village demonstrating these harvest time activities.” She said activities also will include blacksmithing and woodworking demonstrations as well as a pit firing demonstration. “While we love all of our vendors that have been with us over the 20 to 30 years we have been holding the heritage festival, we felt that now, with the state’s 200th anniversary quickly approaching, we need to return April-June 2018 | Out & About

to the reason Faust Park was preserved in 1968 by Leicester and Mary Faust,” Ritchey said. She said the park staff have come up with a “personal” motto posted on the wall in the visitor center — “preserving your past for your children’s future” — and “we are striving forward to live by that motto.” “So, in the coming years, you’ll see many new family-oriented programs coming to Faust, not just history based,” Ritchey said. For instance, Faust will hold a family campout in May behind the governor’s house near the Missouri River, where families can camp out on a site that has been lived in by Native Americans since well before Europeans came to the area. “While experiencing some aspects of history, it will also help reconnect families with nature,” Ritchey said. “We are also doing a movie night in June at which we will be airing the 1960s version of Dr. Doolittle under the stars in our amphitheater, so, hopefully, parents and grandparents can share this classic movie with their children.” Hearthside dinners allow guests to take part in an entertaining evening with costumed interpreters. Hosted in Thornhill, the 1819-vintage home of Frederick Bates, guests lend a hand with the final preparations of the meal before sitting at the actual Bates table to enjoy a historic meal. Visitors might churn butter, grind coffee, prepare the vegetables, or perform other tasks. Through work, conversation, and play, visitors will learn about 19th century food and cooking techniques. Then, after receiving instructions in proper etiquette, guests will enjoy their dinner by candlelight, followed by 19th century parlor games and dessert. The next Hearthside dinner is 3-7 p.m. on June 9. The event is limited to 12 people, advanced reservations are required, and the cost is $65 per person. For more information or to make reservations, call (314) 615-8328 or visit stlouisco. com/parksandrecreation/parkpages/faust. The carousel makes up another way the park is preserving the past. “The early 1900s carousel comes from the (former) Forest Park Highlands amusement park and has been host to many birthday parties and weddings over the past 30 years that it’s been at Faust,” Ritchey said. “You can create an 28

Out & About | April-June 2018

unforgettable birthday party for your child.” The party package includes a private room with tables and chairs and unlimited carousel rides for a maximum of 50 guests, she said.

Weddings and receptions can take place in the newly-remodeled gallery room at the St. Louis Carousel building — the Carousel can accommodate up to 200 guests in the gallery room and 350 guests on the patio. The rental fee is $1,200 plus a $500 security deposit. That fee includes unlimited carousel rides for all guests and use of the patio. Visitors also can host their wedding ceremony on the grounds of Thornhill and then stay within the park to host the reception at the St. Louis Carousel. While the Carousel is a popular spot to take wedding photos, Ritchey said that couples who do not rent the venue for their wedding must make an appointment and pay a fee to take photos there. “I love that Faust has a connection between the past and present, and you can experience both while here,” Ritchey said.

ver wonder why you can get delicious tomatoes during the winter at high-end restaurants but can’t find them at the grocery store? The answer probably has something to do with Tony White. Tony, who also serves on the Chesterfield Chamber Board, owns Tony’s Family Farms. Backyard gardeners and local grocery stores are blessed with an abundance of juicy, ripe tomatoes in the summer. What sets Tony apart is that he is supplying restaurant-worthy tomatoes to area chefs year-round. Chef Lou Rook of Annie Gunn’s is a fan. On a recent trip to Florida, he couldn’t find a tomato that rivaled Tony’s.

How Tony’s Family Farms earned a reputation among local chefs for producing the best winter tomatoes, bar none.

“It always kills me when you’re in Southern Florida and the average temperature is about 62 degrees, and they don’t have a tomato you can shake a stick at,” he says. “There’s all these great restaurants, and here’s this tomato that’s super hard, no color, no flavor — and I fly home and here’s Tony’s tomatoes.” Rook uses several local farms, including Tony’s, to source a steady stream of summer tomatoes. But Tony has the market on the winter variety. “I haven’t been able to find another tomato that has the flavor that his has right now. That little cherry tomato is almost year-round. It’s just impeccable. It’s a really good winter tomato,

and it’s definitely worthy of being on our menu at Annie Gunn’s,” says Rook. Farming is in His Blood Tony didn’t grow up on a farm, but farming runs deep in his family. His father and his grandfather both worked in the agriculture business in Tulare County, Calif., which ranks among the nation’s top agricultural counties. Tony’s personal farming experience started on a much smaller scale. About four years ago, he started a garden in the Missouri bottoms to get some exercise and “relieve some stress.” Tony calls his first year “a failure.” “I just had two plates of peppers to show for all of my work.” So, he fenced off five acres with two neighboring farmers, and “that is the year things really took off.” Those five acres yielded so much produce that Tony didn’t know what to do with it all. As chance would have it, Tony lived across the street from Mia Sorella, a restaurant in Ballwin. One night, Tony crossed the street. “He walked into the restaurant, introduced himself, and said, ‘Chef, I’m going to sell you tomatoes,’” recalls Chris Proffer, Mia Sorella’s head chef at the time. Proffer says Tony and his son showed up a few weeks later “caked in mud” and with “a truckload of the ugliest tomatoes you’ve ever seen in your life, but they were all heirloom. Delicious, but they weren’t ready for primetime.” As Tony and his son were unloading their produce in the parking lot, the owners of Napoli 2, another local restaurant, stopped to see what was going on. “There was a bidding war that took place over the tomatoes with Steve (Komorek, owner of Mia Sorella) and the folks from Napoli 2,” Tony says. Komorek won that evening. “He was my first paying customer,” says Tony. That’s when Tony realized he had a local market for his tomatoes. In addition to Mia Sorella and Napoli 2 (where Tony’s tomatoes remain a weekly feature), today, Tony sells to more than 100 customers, including YaYa’s, Edgewild, Russell’s Café, The Wolf, Pure Plates, Balaban’s and Scarecrow. A Tomato for All Seasons Once Tony’s seasonal tomatoes took off, he wanted to find a way to sell to local chefs all year long. So, Tony found a grower in Illinois who had chesterfieldmochamber.com

invested in a state-of-the-art greenhouse to grow flavorful winter tomatoes. Today, he sources his winter tomatoes from two Illinois growers. What makes Tony’s winter tomatoes so good? “It’s all about flavor,” Tony says. “I have 700 pounds of tomatoes right now in my van — and every one of them, when you cut them open, they’re red, they’re tasty. With the exception of heirloom tomatoes, these tomatoes that we’re bringing to market right now will run hand in hand with anything that I produce in the summer.” Proffer agrees. “It’s the most delicious tomato I’ve ever had. Summer, winter, it doesn’t matter. It is the perfect tomato.” The former chef credits Tony’s success with his passion for learning everything he can about the tomato business and catering to the needs of local chefs. “He’s obviously a quick study,” Proffer says, “because he’s gone from nothing into the tomato guy in town in a very short time.”

Truffles, Mushrooms and Microgreens

Perigord truffles — before and after they make it onto a Twisted Tree Steakhouse steak.

In addition to tomatoes, Tony delivers microgreens to local chefs who use them to add delicate flavor and color to their dishes. Tony also imports truffles from the Perigord region of France, as well as wild mushrooms, wild onions, and sustainably foraged ramps from Oregon. “I always try to challenge my chefs, with consistently good, but different, ingredients,” Tony says. Tony’s Tomato Growing Tips

We asked Tony to provide some growing tips for the home gardener. Here’s what he said. Think about growing cherry tomatoes. You will April-June 2018 | Out & About

find an abundance of large heirloom and slicing tomatoes all summer at reasonable prices compared to what is charged for cherry tomatoes. Tips • Find a place that will give your plants lots of sunshine. The intense Missouri heat, along with 8-10 hours of sunlight daily, is what gives our tomatoes that incredible flavor. • Use large pots to allow the tomatoes’ root systems to flourish. • Always start with fresh soil (organic preferred). Unfortunately, plain old dirt might contain pest eggs or contaminants that could harm your plants. • I use a spoonful of Epsom salt for each plant

32

to give my tomatoes an extra boost of minerals. Also, after two months, I add plant food to give them an extra boost. Support your plants • Use one 4-foot tall wooden stake per plant. As the plant grows, tie it to the stake several times. • Don’t over water your plants. Twice a week is more than enough. • Remove those sucker vines. They will compete with your fruit for nutrition. Start searching for recipes and canning tips, because you are going to have a lot of tasty tomatoes for your family and friends!

Employee vs. Independent Contractor Classification: The employee vs. independent contractor classification decision requires careful consideration of a number of factors to avoid legal liability. Improper classification can lead to increased tax liability, fines, penalties and civil damages. Are you confident in your classifications? Protecting Your Business 1. Hiring and Promotion Decisions: Have you reviewed your hiring and promotion practices to ensure they are legally compliant and do not expose you to claims of discrimination? 2. And the Winners Are... … By Bryan Voyles

I

t’s always difficult to select the winners of our annual Chamber awards. Everyone in the Chamber whom I’ve met is truly deserving of an award — be it for their willingness to connect with each other, their partnership with us, their professional and personal stories, or simply for showing up smiling at our events. These are the awardees for 2017: Chesterfield Business Person – Jeri Schultz Jeri has her own business, Jeri Schultz and Associates. She is an accomplished speaker and most recently launched a new venture called “Women Who Inspire.” Jeri has facilitated our past two years of Leadership Chesterfield and has been a true woman of inspiration to those in the class. She mentors others and gives of her time to anyone who wants to take their skills to the next level. Business of the Year – Jay Wolfe Toyota (receiving the award – Amanda Bickel) After joining the Chamber, Jay Wolfe Toyota wasted no time partnering with us on literally every Chamber event. The dealership was top sponsor of our Casino Night for two years running, provided cars at our EXPO and lead cars at our Pumpkin Run, sponsored our Summer Concert Series, was represented in our Leadership Chesterfield Class, and attended our Winter Festival.

Spirit of Chesterfield Award – Dr. Ed Ernstrom This award recognizes an individual who has had a positive cultural and economic impact on the Chesterfield community. Dr. Ed moved here years ago to pursue his education at Logan University. After graduating, he opened his practice in Chesterfield, lives in Chesterfield, and now runs a very successful chiropractic and sports medicine practice.

Task Master Award – Krysta Struthers Our Task Master Award recognizes an individual who exhibits tireless efforts, energy and leadership among Chamber members. Krysta has worked for the Chamber, attended Leadership Chesterfield, and continues to support the Chamber with her creativity and marketing expertise. Service Award – Ed Balmes Ed is involved with our Business Education, CUCO and Government Affairs Committees. He is supportive of our programming and events, and you will regularly see him at our golf outings— as long as it’s not tax season! Volunteer of the Year (x2!) – Bill Carp and Mike Plunkett Choosing only one volunteer of the year is nearly impossible — so, this year,

we recognized two! Bill Carp tirelessly tackles getting donations for our Winter Festival silent auction. For the past five years, he has single handedly brought in $5,000 worth of items! Mike Plunkett has lent a helping hand at nearly every event since he joined the Chamber. Mike is one of those people who, if you call him with a crisis — like moving a rock climbing wall through the mall at 9 o’clock in the evening because no one else showed up — he is there, smiling and ready to help! Chesterfield Young Professional Award – Mycah Faulkner Mycah had an eventful 2017 (she got married in September!), but that did not slow her down from furthering the mission of the Chesterfield Young Professionals (CYP). For two years, she worked closely with a small group to bring in all the auction items for the Casino Night raffle and coordinated the volunteers from Maryville. Mycah also coordinated other initiatives with the CYPs, including a quintessentially St. Louis washer tournament. Congratulations and thank you to all the winners! You exemplify the spirit of service and generosity that make our Chamber relevant and vital to this community we call Chesterfield.

Brian Voyles is general manager of Chesterfield Mall and the 2018 chairman of the Chesterfield Chamber of Commerce.
