• Regeneration of pre-prepared food • Cold food preparation

Functional Skills is also an integral part of the course in Maths, English and ICT.

• Introduction to personal workplace skills • Introduction to the catering • Prepare and cook food and hospitality industry by boiling, poaching • Health and safety awareness and steaming for catering and hospitality

You will be assessed through course work, theory and practical exams.

• Introduction to healthier foods and special diets

• Prepare and cook food by stewing and braising

• Introduction to kitchen equipment

• Prepare and cook food by baking, roasting and grilling
