Ketchums to celebrate 50th anniversary

Larry and Donna Ketchum of Bells will celebrate their 50th wedding anniversary with a reception given by their children, January 2, 2011, starting at 2 pm at the First Baptist Church in Alamo. All friends and relatives are invited. Only out of town invitations will be sent. The couple was married in the home of Mr. and Mrs. Herbert Ketchum, Sr., in Bells, grandparents of the groom, on

December 25, 1960. Rev. Earnest Olds, uncle of the groom, performed the ceremony while Mr. and Mrs. Eugene Miller served as attendants. The couple then honeymooned in Birmingham, Alabama. Mr. Ketchum is the son of the late Mr. and Mrs. William Herbert Ketchum, Jr., of Bells. Mrs. Ketchum is the daughter of the late Mr. Bob Kiffney of Syracuse, NY and the late the Mrs. Doris Kiffney Narrick of Alamo; and the stepdaughter of the late Mr. Joe Narrick also of Alamo. Mr. and Mrs. Ketchum were blessed with two daughters, Vickie L. Ketchum Beaver (Mrs. Chris) and Dana M. Ketchum Mayfield (Mrs. Richard), both of Alamo. They are the proud grandparents of one granddaughter, Ms. Bailee Joe Mayfield, also of Alamo. The couple requests no gifts, just the gift of your presence at the joyous occasion.

Pantry seems empty after the holidays? There’s probably enough left over for muffins Are you tired of brownies, cakes, and the usual desserts? Do you want something versatile enough to have for breakfast or take to work to share with your coworkers? Is that leftover bag of chocolate chips in the pantry calling your name? This recipe is just what you need to start the New Year off on a tasty note. Sometimes we all need a little pick-me-up during the day. Many people keep a cup of coffee nearby, but what if that coffee came in edible form for just a tiny jolt of caffeine? Cappuccino muffins are a wonderful, bite-sized way to get a shot of coffee and a taste of chocolate all in one delicious bite. They are easy to make ahead and refrigerate until you’re ready for them the next morning. They’re also great for breakfast or dessert, and a schmear of the cream cheese spread is all you need to take them from ordinary muffin to extraordinary treat. Most of the ingredients are found in the typical pantry, and if you don’t have cream cheese, it’s perfectly acceptable to skip the spread and save a few grams of fat. I like to make mini-muffins and full-sized muffins, which are deliciously similar to cupcakes.

Muffin cups make these snacks portable and clean up simple. Cappuccino Muffins Ingredients: 2 c. all-purpose flour 3/4 c. sugar 2 1/2 tsp. baking powder 1/2 tsp. salt 1 c. milk 2 Tbsp. instant coffee 1/2 c. butter, melted 1 tsp. cinnamon 1 egg, beaten 1 tsp. vanilla

3/4 c. miniature semisweet chocolate chips Directions: In a bowl, combine flour, sugar, baking powder, cinnamon, and salt In another bowl, stir milk and coffee granules together until coffee is dissolved. Add butter, eggs, and vanilla, and mix well. Stir into dry ingredients until just moist. Fold in chocolate chips. Fill greased muffin cups 2/3 full. Bake at 375 degrees for 17-20 minutes. Cool 5 minutes before removing from pan.
