ave you heard the story of shrooms? Functional mushrooms are gaining major traction in the health and Alexandra Dusenberry LEAD REGISTERED DIETITIAN wellness industry. In 2023, functional mushrooms are set to hold a $8 billion dollar subsect of the supplement market. Their popularity makes complete sense, given the compelling research that touts their benefits for everything from gut health to memory protection. Functional mushrooms are non-toxic, fully legal, and it is important to note that they are not “that” kind of ‘shroom- they are not hallucinogenic or psychoactive. They do, however, provide long-term benefits when taken as a consistent part of a wellness routine. Looking to find out which mushrooms are right for you and your wellness goals? Keep reading to explore the compelling benefits of the forest floor. Reishi mushroom is known for its longevity-supporting properties. It can help to manage stress, improve sleep quality, and boost the immune system. Reishi interacts with the HPA axis to help regulate the body’s response to stress, and it can help to reduce the time it takes to fall asleep and increase the amount of deep sleep. Reishi is not a sedative, but it can be taken in the evening to promote relaxation and sleep. Lion’s mane mushroom has a culinary profile that allows it to be cooked and eaten. It contains beneficial compounds that can cross the blood-brain barrier and promote neurogenesis, the creation of new neurons. Studies have shown that lion’s mane mushroom may help to protect memory and improve cognitive function in people with mild cognitive impairment. Lion’s mane mushroom is best taken in the morning to boost productivity, focus, and creativity. Chaga mushroom is one of the richest sources of antioxidants on the planet, with an ORAC score of 3,655,700(in comparison - acai berries are 8000). These antioxidants protect cells from damage caused by free radicals, and may help to slow or prevent aging. Chaga mushroom also contains an enzyme called Superoxide Dismutase, which helps the body to break down free radicals. The antioxidants in chaga mushroom can also protect the skin from damage caused by UV radiation, pollutants, and toxins. Cordyceps mushroom is a powerful energy-boosting fungi that increases the production of ATP, our body’s energy currency. It contains compounds that support energy production, reduce inflammation, and protect the liver. Research has shown that cordyceps can improve VO2 max and athletic performance. It is a great way to increase energy levels without the crash associated with caffeine and sugary snacks. Cordyceps can be taken in the morning or afternoon to support energy levels throughout the day. 7

Sold on shrooms? Consider these tips to ensure that you get the highest quality, effective mushroom supplements. First, a double extraction process (a hot water extraction and an alcohol extraction- the alcohol later evaporates out of the products) will unlock the nutrients from the mushroom so that they can be absorbed. With most functional mushrooms, we cannot eat them directly- they have a dense exterior structure called chitin that our digestive system cannot break down. The extraction process is critical to unlock the beneficial compounds. This makes the mushroom bioavailable to us. Second, it is essential that the product contains the fruiting body (the mushroom stem and cap) for it to be effective. Many companies do not realize this important aspect, which unfortunately results in a mushroom supplement market that is largely ineffective- As an example, a study conducted by Science Journal found that over 70% of the reishi mushroom products on the market today do not, in fact, contain any reishi mushroom! How do we mitigate this massive oversight? Be a savvy consumer! When reading supplement labels of mushroom products, look for “fruiting body” or “100% mushroom fruit bodies”, or a similar claim on the label stating they use the fruiting body rather than “mycelium on grain”, which would indicate a low-quality product. ild, sweet flavor of Sea Bream, a versatile and often underrated fish, complimented by the nutty flavor of parsnips prepared two ways to top off the flavors of this antioxidant packed healthy fare. One being kaempferol, which fights oxidative stress to slow down aging, and diseases like cancer and diabetes. Our Executive Chef, Felipe Gonzalez Varon, has prepared a recipe to capture the flavors and benefits of these tasteful ingredients. Nutrition Per Serving

DIRECTIONS: SEA BREAM: 1 tablespoon avocado oil | 4 each Sea Bream fillet scored skin (4 oz each) - Pre-heat an oven to 350 degrees. In a 10 inch non-stick pan over medium high heat, add the avocado oil. Add the Sea Bream fillets and sear for 1 minute skin side down. Without flipping, place pan into the oven for 3-5 minutes, depending on the thickness of the Sea Bream fillet. Remove from oven and allow to rest for 2 minutes. 10
SPINACH: 6 Cups spinach | 1 tablespoon avocado oil | 1 teaspoon Salt - In a sauté pan add avocado oil, when oil is hot add spinach and salt. Move Spinach around until wilted. Taste and adjust seasoning if needed. PA R S N I P M A S H : 1 pound parsnips (about 4 medium), peeled, ends trimmed, and cut into large, even-sized pieces 1 herb sachet (5 sprigs thyme and 1 bay leaf wrapped in cheesecloth and tied with butcher’s twine) 1¼ teaspoons kosher or sea salt, plus more to taste, divided use 8 cups water (reserving ½ cup after draining), 1½ tablespoons extra-virgin olive oil - In a medium saucepan over high heat, bring the water, parsnips, herb sachet and 1 teaspoon of salt to a boil. Make sure the water covers the parsnips by 2 inches. Boil for 5-7 minutes or until the parsnips are tender enough so you can easily insert a knife. Drain the parsnips, reserving some of the cooking liquid (about ½ cup). Discard the herb sachet. Return the cooked parsnips to the saucepan and heat over medium-low heat until the excess water has evaporated. Add parsnips to the bowl of a food processor (you’ll want to use this instead of a blender to avoid over processing). Add ¼ teaspoon salt and olive oil. With food processor running, add in starchy cooking water, 1 tablespoon at a time, until a fluffy, smooth consistency is achieved (about 5 tablespoons total). Taste and season with more salt as needed. Set aside and keep warm. C AV I A R B E C H A M E L : 2 Cups Oat milk (to make it dairy free) | 2 Tablespoons Gluten free flour | 2 Tablespoons of Avocado Oil 1 teaspoon Salt | 1 Tablespoon of Osetra Caviar - In a sauce pan add avocado oil and flour, stir until combined and keep cooking until flour taste has been cook out of the flour and the roux has become a golden color. Add oat milk and cook until the oat milk thickens. Adjust flavor with salt. If sauce becomes too thick, add a splash of oat milk to loosen the sauce. Allow the sauce to cool and set aside. Once sauce is cooler add the Caviar and stir to mix the caviar throughout the sauce. C R I S P Y PA R S N I P : 2 each Parsnips (peeled) | 1 tablespoon Avocado Oil | ½ teaspoon salt - Using a peeler after peeling the Parsnips. Keep doing the peeling motion on the parsnips for thin ribbons of parsnip. Keep peeling the parsnips until you have reached the core of the parsnip. In a bowl toss parsnip ribbons with avocado oil and salt. Place them in a sheet pan and insert the sheet pan in a pre-heated oven 320 degrees. Move Parsnip ribbons around every 3 minutes to keep from burning. Once Parsnips are golden brown, take them out of the oven and allow to cool. Once cooled the ribbons should be crispy. To complete - prepare 4 plates placing by Parsnip Mash in the middle of each plate. Top with equal amounts of sautéed spinach, then the Sea Bream. Garnish with Caviar Bechamel and Crispy Parsnip. Enjoy!
