Should I confess everything in this column? Who I had dinner with last night? Where I’ve planned my next holiday? Are some personal trivia sacred, or are you expecting a reveal-a-thon of my personal life? I reckon your take on this depends on how old you are, and whether you grew up, as I did, in an era where the concept of privacy has since changed dramatically. I belong to a generation that over shares: we tweet about celeb-sightings, tag ourselves in Facebook photos of nights out, we turn our love lives into status updates, and a photo documentation of our lives is shared on Instagram. Real freedom isn’t about hiding, it’s about honesty and the illumination of subjects, which humanizes us. If being tagged on social media sites, analyzed by ecommerce and targeted to buy products I might even want is the price for living openly, I’ll take it. Which brings me to the subject of presents, and the festive season about to knock on our doors this month. When it comes to presents, it’s not just about what’s inside. We love the mystery of an elegantly wrapped gift and the anticipation of a long-awaited package and in this issue the Cairo West team have done just that. We have the essential festive guide, from what gift you should buy, recipes you can make, and cultural events to attend. Elsewhere in this issue, we hope you enjoy our interview with the actress Rania Youssef, and the glorious imagery from renowned photographer Mohamed Gabr. There is more - much more - to discover in the December issue, but as with the best Christmas stockings, we hope you’ll find lots of little surprises. Meanwhile, if you like this issue of Cairo West Magazine then feel free to share it with friends and family, after all we are now a generation of over-sharers. See you in 2014.

CAIRO WEST MAGAZINE INTERVIEW

PORTRAIT OF AN

Acting Through Experience, Rania Youssef's many Roles and Trades By Brian Wright

ACTRESS 8

9

Acting for many involves years of classes, training, and theory. For veteran Egyptian actress Rania Youssef, however, it is a diverse range of experiences that really makes an actor who they are. Since her breakthrough role in Al Hagg Metwally alongside Nour El Sherif, Youssef has offered viewers some of the most interesting and substantial female roles in television series such as Ahl Cairo, Moga Harra, and Nairan Sidiqa. Cairo West Magazine recently sat with her to find out more about her life, career, and acting philosophy. CWM: How did you set off on an acting career? RY: I was completing a degree in English Literature from Ain Shams University and started to get into the modeling business. I realized immediately that I needed to depend on myself, and decided to get a job as a flight attendant. This would allow me to get my own money and see the world, establishing myself as a real person. While I was modeling, I got introduced to the acting scene and started with small roles, eventually working my way up to a full career a few years later. I really started acting officially in 1995.

within three years was a ma jor achievement for me personally, and made me feel that I was doing something.

How do you break between roles? Do you use a psychological technique to get out of a particular character?

The second point of change was when I acted in the television series Al Hagg Metwally. It was a groundbreaking series at the time and it really impacted society and the field as a whole. Working with Nour El Sherif was a ma jor honor for me, because I got to see how one of the ma jor actors in the country works with the directors, the people there, and the whole set. He really took me under his guidance and I learned a lot from him.

Not at all, and whatever you do stays with you for the rest of your life. Acting is really interesting for me because when you step into a scene, there is an interaction that happens between your real life and the role. You reference moments of your life when you were angry, happy, sad, or confused, and use that in your acting. It is a shared experience that you can never break out of. When I feel that there is a real problem or that I am truly impacted by a role I try to change the mood by going out with friends, or taking a vacation, but no matter what happens it is stuck with me.

When did you feel that there was a major shift in your career? There were two points. The first was when my picture was on a magazine cover. I was on a flight and one of the passengers was holding the magazine and noticed that I was working as a flight attendant. He asked me ‘What are you doing here?’ That question really shocked me and made me think. I was able to make money modeling and acting, so seriously why am I still working this job? I went back to the galley and started to think deeply about this question, and as soon as I got back home I went and submitted my resignation and set out to work in acting and modeling full time. As a girl who was just 18/19 years old, my main goal was independence. I remember that as soon as I got my first paycheck from being a flight attendant I went and got a loan to buy my first car. This was a huge step and paying it off

Recently, you acted in two roles: once in Moga Harra and the other in Nayran Sidiqa. Which one was closest to your heart? Honestly it had to have been Moga Harra, even though both of them were great parts. The series dealt with a seriously complicated relationship between two people who had been together for ten years, dealing with all of the complexities of fighting, making up again, and the tension that exists between a couple from two very different social backgrounds. something. Choose what you want to do and then do it.

What are you working on now?

How do you balance family life and acting?

What advice do you have for young actresses?

You have to be the “Bionic Woman.” As a mother, you have to be fully aware of your children, what they are doing and how they are growing up. As a wife, you have to be keen to the needs of your husband and the home. As an actress, you have to step onto the set and be prepared to act without worrying about what is going on in your life. It is an impossible task and there are always things that fall through the cracks; however you have to keep going and do your best.

Get out there and work. Don’t be afraid to take a silent role, an extra part, or a leading role in a movie or series. Diversity is what will teach you how to act in a number of different situations and there is never a role where you don’t learn something new. I feel that when you take acting classes you develop a certain understanding, but many people who have degrees in acting get in front of the camera and they don’t know what to do. There is no replacement for experience. Also, I would highly encourage actresses to be independent. Don’t rely on somebody to get you roles or push you into doing

There are two or three projects that I am currently looking at. I have a particular way of choosing roles. At first I read through the script, and find out where things are going to go. Then I sit with the director and writer and give comments, to see how much they are willing to adapt the role and change scenes. If I feel that there is solid teamwork and that it will all come together, I go ahead. Sometimes, however, you find that the writer is not willing to adapt, and this is where the problems usually lie. Therefore, I try my best to seek this out from the beginning. For Moga Harra we had a unique experience that for me was a great experiment. We stepped onto the set with only a seven page general story about what was supposed to happen, and each scene we chose to step in front of the camera, live the scene and put the film together through just feeling it out and improvising. During some scenes, neither I nor the other actors knew what was going to be the ultimate outcome, which made the feelings in the scene seem that much more real.

December is by far the greatest month of the year for one main reason; it signals the end-of-year party season! With so many parties, soirees and eventful festivities on the way, shopping has to be the first thing on your to-do list to find the perfect party outfit.

Brunch Glam The best feeling in the world is when you open your window on a Friday morning, smell the fresh air and see the beautiful sunshine. With Mother Nature being so refreshing in the winter months, it is the perfect time to take some close friends and head off to brunch. Why not treat yourself to a cocktail dress for brunch? An understated one can turn your midday brunch to an exciting midday cocktail affair!

There are so many different styles and silhouettes to choose from but I must say American-German actress Diane Kruger truly illustrated appropriate and elegant cocktail attire with this white floral short-sleeve Chanel dress paired with silver accessories.

You could try something similar for a fraction of the price with a white lace short sleeve cocktail dress paired with silver heels, earrings, bangle and clutch. A perfect cocktail dress equals a perfect brunch experience.

Cocktail Soiree When I imagine a cocktail party, I see a string quartet in the background, every single room filled with an endless amount of flowers and most importantly, everyone dressed and while enjoying good company and tasty dishes. Cocktail parties don’t have a rigid dress code, so you can opt for an outfit that’s not so dramatic but simple and understated. On the other hand if you want to stand out with something glamorous, that could work too. Cocktail parties could take place during the day or in the evening. It really doesn’t matter what you wear as long as you’re comfortable. I myself really enjoyed what Lily Collins wore to the 2010 Teen Vogue Party, which was a short sleeve pink cocktail dress paired with nude coloured accessories. To go minimal yet elegant, a great choice would be a simple short-sleeved pink cocktail dress paired with gold and nude colour accessories. You could even add some goldtrimmed sunglasses during the day.

;OL6MÄJL7HY[` Office parties are a great way to end the year with your colleagues side by side. Catching up on the latest news, enjoying some good music and bidding farewell to work and getting ready to embrace the holidays. Although at an office party its best to stay appropriate with your choice of clothing, that doesn’t mean you can’t be fashionable at the same time. I was particularly very fond of what Emmy Rossum wore to the premiere of Lucky Guy in LA. She opted for a baby blue dress by Temperley London paired with silver accessories; simple yet stunning. You could opt for a similar concept with a light blue party dress accompanied with a contrast of white and silver accessories. Subdued attire can still look amazing; remember it’s all about accessorising.

New Year’s Eve If there were a time to dance all night long and get completely glammed up from head to toe it would definitely be for a New Year’s Eve party. I find that one of the best things in life is when we’re given the opportunity to celebrate. To celebrate friendship, to celebrate love and most importantly to celebrate life, so what better way to celebrate than to put on some six-inch heels and wear a dress shinier than a disco ball. If I had to choose I would say that Halle Berry truly knew how to rock a party look when she attended the Cloud Atlas Premiere in 2012. She opted for a strapless silver dress with matching silver pumps and minimal silver accessories. If you would like to rock a similar look then you can do so with a silver spaghetti strap dress paired with matching silver sandals and other silver accessories such as; a clutch and jewellery consisting of something minimal like a bangle, earrings and a ring. If you really want to party all night long, you can never go wrong with silver.

What is the trait you dislike the most in yourself? Insecurity

Ever get tired of taking pictures? Sometimes when I’m not feeling creative I block my mind. Also abstract photography is a lot harder, yet much more exciting as the layers create a lot more depth, shadows and highlights. For example, sometimes I go on holidays without a camera.

Ansel Adams and Henri Cartier-Bresson. I admire their courage, both photographers are pioneers in what they do. Cartier-Bresson coined the term ‘The Decisive Moment’ - which is the moment that creates a story out of nothing.

Investing for a

Healthy Future

CellSafe stores cord blood to treat future blood diseases By Brian Wright

Red bloodcells

Preparing to welcome a new member of the family is a ma jor task. From planning the design of the nursery to thinking about the right hospital and doctor to helping in the birthing process, there seems to always be more to think about. Increasingly, there are also a number of other future plans to consider sometimes as early as birth including what kind of educational and healthcare options do you want to prepare for your child. In the healthcare field, advancements in technology mean that new possibilities always emerge, and leading these developments in the healthcare field is stem cell research. Although stem cell research has gotten a lot of bad press from movies and television reports talking

60

61

about harvesting cells from unborn fetuses, this is not the true picture. In actuality, there are a number of important diseases that can be cured with stem cells, provided that the cells given are a perfect match for the patient. Typically, these cells are collected after birth from the umbilical cord of the newborn baby and stored in a secure facility until they are needed. This is where CellSafe comes in, Egypt and the Arab World’s first and so far only officially registered stem cell storage facility. With already more than 1,000 clients from around Egypt, CellSafe has gotten off to a strong start and has already cured its first patients, proving that storing stem cells can help save a life. To find out more, Cairo West Magazine sat with Dr. Sherif Amin, CEO of CellSafe.

Stemcells within the transplant process

CWM: How did the idea for CellSafe come about? SA: The initial idea came from a personal experience. A group of friends and I had a mutual friend who was diagnosed with leukemia, and the only thing that could save him was a bone marrow transplant. We all helped and tried as much as we could but there was no match for him anywhere and he eventually died of the disease. It was such a tragic event for us that we were all encouraged to establish a place where other people could be saved, and this is where the idea for CellSafe came from. It was a long process and involved a lot of hard work, but we officially began working in 2009 and have grown to do very well in our first phases.

What exactly does CellSafe do? We are a professional, registered cord blood cell storage facility. Clients come to us when they are pregnant and purchase storage with our company. When the baby is born we take the blood from the umbilical cord, which in any other delivery is usually thrown away, and process the cells and place them in storage until they are needed. We do not sell the cells of our clients; we don’t even own them legally and are only providing storage. They are only for client use. We are also fully registered and licensed with the Egyptian Ministry of Health so everything that we do here is monitored, regulated, and fully understood by the authorities.

Stemcell experimentation

What diseases can these cells cure? Basically anything related to blood such as leukemia. The stem cells from the umbilical cord are “blank,” meaning that they haven’t been assigned a task yet. Once they are introduced into the body, they are assigned the task of acting as blood marrow and then get to work taking the place of diseased cells. For example, one of our first successful cases was with a small boy. The parents had lost previous children because of a blood disease and had one healthy child whose cord blood was stored with CellSafe. When another child was diagnosed with the same blood disease, the cord blood that we had stored was used to treat the sick child and save his life.

CAIROWESTMAG.COM

CAIRO WEST MAGAZINE HEALTH

Stemcell experimentation

Who can use the cells for treatment? Anyone who is a match and the process works just like blood marrow. For example, you are physically made up of 50% of your mother and 50% of your father. Therefore, your parents could not use the cells because at the most they would only be a 50% match. Your siblings however, would have good chances for a match because they come from the same source.

How does the process work? Most of our clients approach us during the first phases of the pregnancy. We start by holding an initial meeting, and providing our clients with a copy of the contract as well as answering all of their questions. We want to make sure that parents understand that this is not some miracle cure from the movies but something that has a real benefit and a potential to be even more in the future. Once the couple has agreed we provide them with a collection kit to take with them to the hospital about 2-3 months before the delivery. At the hospital, we have a doctor on staff who is there to assist with the collection. The blood is collected on site and then taken back to our facility for processing and storage and it is there until you need it.

Do I have to work with the hospital to make sure the collection is done properly? Not at all. The only permission we require is to have our doctor available in the delivery room and take the collection. It is also important to speak with the OB/GYN to make sure that he or she is aware of what we are doing, but we will not work directly with them. You have to understand that the blood that we are collecting is usually thrown away after delivery, so when hospitals find that we are simply

going to take it off their hands they don’t have any problem with us being involved.

How much does this cost and how long can the cells be stored? Our basic package costs 11,500 EGP for initial processing and storage for the first year, and then an additional 1,000 EGP for each year. However, we understand that this is can be a large amount for some couples so we have provided payment packages that allow couples to pay 18,000 EGP and receive 20 years of storage, a ma jor savings off of the base price. In terms of length, as long as the storage conditions are maintained the cells can be stored indefinitely.

)[IĂ…VITY]M[\QWV_PI\IZMaW]ZXTIV[NWZ the future? A big part of what we do at CellSafe is spread awareness, so we are currently focusing on getting the information out to the public so that they understand the real potential of this medical field and what it can do. We have developed a periodic magazine that talks about the latest news regarding stem cells, and we are working on a campaign to speak with doctors and inform them about this field and what it can mean for the future of medicine. We want people to really understand that when you work with CellSafe you are not buying a cure. New advancements are being made all of the time and these simple cells that you are paying to store today could have entirely different applications in the coming years, in addition to the diseases that we can already cure with cord blood. I see this as an investment in the future, as a form of insurance that helps you be prepared for whatever hardships might come. www.cellsafebank.com

CAIRO WEST MAGAZINE DELIVERY REVIEW

lab mba Y o u r P i z z a O u ts i d e t h e B ox

By Tatiana Hafez

One of a kind, Labomba is an online pizzeria, delivery-only concept, the spin-off of Pastawessy chain who manages and operates it while an Egyptian chef who has lived in Milan for over 30 years runs the kitchen. Labomba caters to the residents of Mohandessin and surrounding neighborhoods: Zamalek, Dokki, Giza and Garden City. Being a delivery-only concept, a lot of effort has been given to the brand, starting from the catchy name Labomba, their black pizza boxes, the photo-shoot of the exotic bites on their Facebook page, to their bike fleet to cover all the calls. With a straightforward menu, Labomba pizzas are simpler and lighter than the average pizza you might have been eating. Skimming through their menu we were curious to try the Burger pizza along with the more traditional Margherita, Salami and Anchovy. And an irresistible attempt to try their Nutella Pizza sandwich. It’s all down to the taste. Our experience on a Friday afternoon was fast delivery of warm pizzas, which immediately spread their aroma around the room. The pizzas are thin-crust and crispy, preserving the Italian style and allowing you to eat with your hands, without having the ingredients falling out. After all, the secret of any pizza is in the dough which gives texture and holds the flavors, while the toppings are a result of imagination. The Burger pizza – the best of the lot – consists of mozzarella, minced meat (that tasted exactly like burger meat), sliced tomatoes, shredded lettuce and spicy sauce (like a spicy rose sauce). This option certainly lived up to the expectation and we give credit to the creativity and unique combination of burger and pizza. This is also their only white pizza, which means it doesn’t come with tomato sauce, and yet you are not missing any of the flavors. The Nutella Pizza sandwich comes in a smaller version of a calzone which is a folded pizza; the Nutella inside oozes out like warm lava with the first bite. The top of the calzone is sprinkled with icing sugar. We advise you to think twice before sharing it… With serious market-testing before considering opening a shop Labomba takes its clients feedback seriously and value their customers opinion, by following up on every single delivery, a feature not commonly seen with other eateries.

Method: You will need 3 baking sheets, lined with parchment. 1. Preheat the oven to 180ºC/gas mark 4/350ºF. 2. Whisk the egg whites with the salt until they’re holding firm peaks but are not stiff. Gently add in the sugar, spoonful after spoonful, still beating, until you’ve got a bowl full of gleaming, satiny,

snowy meringue. Sprinkle the cornflour, a few drops of vanilla and the vinegar on top and fold in to combine. 3. Draw 6 circles of approximately 10cm / 4 inch circles (using a pint glass as a guide, if this helps) on each of the parchment-lined sheets. 4. Spoon the meringue onto the baking parchment into the delineated circles, and spread and smooth to fill. You want to make the meringue slightly higher at the rims, or just use the back of the spoon to make an indentation in the centre to hold the cream and fruit later. 5. Put into the oven, turn it down to 150ÂşC/gas mark 2/300ÂşF, and bake for 30 minutes. Turn the oven off and leave them in for another 30 minutes, then take out of the oven to cool. I just transfer them, on their baking parchment, to wire racks. 6. When you want to assemble them, dollop cream into the indentation, and smooth it with the back of a spoon, leaving the odd peak. Place, one by one, a few blackberries and a few raspberries so that they look well filled but not crammed. Dust with icing sugar.

Method: 1. Preheat the oven to 350°. In a food processor, pulse the graham cracker crumbs with the melted butter and light brown sugar until the crumbs are moistened. Press the crumbs evenly into a 9-inch glass or metal pie plate. Bake for about 10 minutes, just until lightly browned. Let cool. Increase the oven temperature to 425°.

74

75

2. Scrape the condensed milk into a 9-by-13-inch glass baking dish and sprinkle with a scant 1/2 teaspoon of fleur de sel. Cover the dish with foil and place it in a roasting pan. Add enough hot water to the pan to reach one-third of the way up the side of the baking dish. Bake, lifting the foil to stir 2 or 3 times, until the condensed milk is golden and thickened, about 2 hours; add more water to the roasting pan as necessary. The consistency of the caramel should be like dulce de leche. Don’t worry if it is lumpy; it will smooth out as it chills. 3. Scrape the caramel filling into the pie crust, smoothing the top. Spray a sheet of plastic wrap with vegetable oil spray and cover the pie. Refrigerate until the filling is chilled and set, at least 4 hours. 4. In a bowl, using an electric mixer, beat the cream with the confectioners’ sugar until firm. Remove the plastic. Mound the whipped cream on top of the pie and sprinkle with fleur de sel. Cut into wedges and serve. MAKE AHEAD The recipe can be prepared through Step 2 up to 5 days ahead. Refrigerate the crust and filling separately.

Even the simplest dishes are treated with the utmost respect, using the freshest ingredients with innovative presentation, pleasing the eye as well as the palate. Now, taking things a step further, in addition to being involved in the management of their three busy eateries, Cairo Kitchen partner and foodie par excellence, Suzanne Zeidy, has painstakingly compiled what has to be the best ever book of Egyptian recipes. With a wealth of information along with each recipe, Zeidy delves into the roots of local culture, supporting each page with stunning photographs that bring the dishes to life in a mouth-watering way.

El Alsson’s Annual Student Art Exhibition On Saturday 2nd November the opening of the El Alsson student exhibition at the Cairo Opera House proved a great success. This was a celebration of work from the secondary British, American and primary Art & Design departments. The retrospect of work from the young artists was well received by the general public, students, parents, artists and staff who visited. On display was a wide variety of work from our early years artists to our senior A2 students. Primary school displays dazzled the public with texture, colour and creative projects such as Keith Haring inspired sgraffito, British tie dye T-shirts, Inca masks and African drums. The American senior school showcased some outstanding computer based graphics inspired by contemporary film characters, some beautiful digital photography as well as an array of portraiture pieces, ceramics, glass and batik works. The British section senior students work evidenced a broad range of personal outcomes and developed pieces by our 2011-13 GCSE & A Level students. Equally there was hugely exciting and challenging work from Key Stage 3. Fear inspired portraiture, Cairo skylines and stencils, three dimensional paper sculptures , digital photography are all examples. The breadth and range of work by all senior students reflected

huge technical competence, personal and thought provoking outcomes. Our sincere thanks goes to all students, staff and support teams for their hard work, efforts, and help with the work and display of the exhibition. If it was not for all involved we would not have had such a dynamic and professional exhibition. We feel very proud of all the hard efforts and endeavours of all involved and our thanks extends to the visitors for their kind support and positive comments about the show. We hope you enjoyed the work and look forward to seeing you again in 2014.

Marwa Fayed’s Toy Run Bringing a Smile to the Face of Orphans Around the World When Marwa Fayed passed away in June 2013, her husband Omar Samra, family and close friends revived Cairo’s Toy Run for Orphanages, a project created by her in 2010. Now Marwa Fayed’s Toy Run collects and donates toys to children in underprivileged communities, orphanages, hospitals, and remote areas. In a short period of time, Marwa Fayed’s Toy Run has managed to collect toys from all around the world and has donated over 1700 toys in Egypt. Marwa Fayed’s Toy Run has also spread abroad and has distributed over 4000 toys in 5 other countries. With the holiday season upon us, what better way to share the joy and spread the love than by bringing an orphaned or disadvantaged child a toy? We believe that this is not only a beautiful experience for those who receive these gifts, but it’s also an enriching one for the donors and volunteers, especially the youth. Now Marwa Fayed’s Toy Run needs you ! Help us collect toys for Christmas. Marwa Fayed’s Toy Run also needs volunteers to sort and wrap the toys, as well as to distribute the toys and spend time with the children.
