Mohamed Mamdouh

A Family Man with Secrets in Gunshot By Zainab AbdulAziz & Marwa Magdi Imam

Unlike his menacing onscreen persona as Servees in Diamond Dust, Mohamed Mamdouh has a kind and quiet demeanor and likes to keep a low profile. The steady and dependable actor has amassed over 40 titles since he exploded onto the Egyptian cinema scene in 2009, and counts many of Egypt’s leading actors as his friends. Cairo East Magazine caught up with Mamdouh for a chat about his most recent role in the thriller Gunshot. CEM: Tell us a bit about your role as Khaled in Gunshot MM: I believe he is the most complex character in the film, and the person with the biggest burden. Khaled is a simple but tough man; he works as a laborer in a gypsum quarry which is a backbreaking job. Initially, in the first script, the film didn’t go into the details of his job but I changed that with

director Karim El Shenawy to add more dimension to his character. We wanted to choose a job that reflects his personality, a tough man who wasn’t born yesterday. How is this movie different from the other roles you’ve played? I haven’t given much thought to specific differences, but each character I’ve played has differed greatly in what motivates them and how a personal perspective comes into play. What I liked the most about Khaled is the level of sacrifice he is willing to make for his family, and his brother specifically. He gave up everything and was willing to even be labeled as a criminal to protect his brother’s reputation. He married a woman he doesn’t love to protect her honor.

I found him to be a very rich and honorable person. What was it like working with Karim el Shenawy on his first feature film? Karim is an actor’s director, meaning he loves actors and knows how to work well with them in terms of preparation and work on set. For a first feature film, this is a bold choice. You often play hard characters that are tough to handle, would you like to play a different kind or more sensitive role? As long as the character feels new and authentic to me, I’ll be pulled towards that role. I also have to feel that I can contribute something exciting to the portrayal. When I’m reading a script, I have to feel like I believe this person on the page, and feel like I have a connection. If I can inhibit a character and bring it to life in a way that the audience will feel that same connection, then I have created something truly authentic. CAIROEASTMAG.COM

What were the hardest scenes to film in this movie? Most of the hardest scenes I filmed were actually removed in the final cut! These were scenes I filmed where I was actually working in the gypsum quarry alongside other real laborers. There is all this residue flying in the air which is very harmful to their health and makes it hard to breathe. However, it was great for my own personal experience, to live life as these hardworking Egyptians do – I got to see how they eat, sleep, work. The final scene was also challenging to shoot both in terms of the technical side and the personal side. It’s a long one-shot sequence and there’s so much going on, so in terms of technique, it was challenging to get it right. Also, emotionally speaking, there are fights going on between Ahmed el Fishawy’s character and Ruby’s character, in addition to flashbacks of tension between myself and my family members, so it was a lot to take on.

You’ve worked with some of the biggest names in show business, what are some of the more memorable moments in your career? My most memorable moment on set is actually a funny story. The first time I ever met the late Mahmoud AbdelAziz on the set of Ibrahim el Abyad, I didn’t even recognize him. He was extraordinary in this role, he transformed into this terrifying character and was so forceful on set with anyone who came near him. I arrived on set, so excited to be playing a role as one of his sons, and so star struck that is this my first movie and I’m acting with such legends like Mahmoud AbdelAziz, Ahmed el Sakka, Hend Sabri and Amr Waked … I remember sitting next to him, not noticing at all who he was, and the director Marwan Hamed walks up and says, “Mr. Mahmoud, how are you?” and I extended my hand, but he was actually addressing the other Mr. Mahmoud sitting next to me, and that’s when it clicked. Needless to say, I was in shock to have been

sitting next to one of my acting heroes without knowing it! Anyone in particular you would like to work with next? I’d love to work with all of Egypt’s directors and work alongside everyone and anyone, but I suppose it would be wonderful to act alongside Yehia el Fakharany or Mahmoud Hemeda, two actors I admire very much. What projects do you have coming up? My next project is the sequel to Welad Rizk coming out in 2019, which will reunite me with the original cast and director. You are famous for being one of the toughest stars on screen, but what scares you the most? Creatively, there is always fear present. Every acting job is a test, and if you look at it this way, you’ll either succeed or fail. If you fail, you’ll be dissatisfied with yourself. There is also the risk of losing your audience’s belief in your work and that is the scariest thing.

QUICKFIRE ROUND Your favorite part of the day? If I’ve slept well, I love mornings but if not, I’m a night owl. Favorite app? I’m not really into social media and apps, I don’t hate them, but I think they take more importance than necessary. Best movie you’ve seen recently? The Legend of 1900 with Tim Roth. It’s a fantastic movie from 1998. Favorite actor or actress? Jack Nicholson, Nicole Kidman and Michelle Pfeiffer.

Favorite restaurant? Sequoia… before it closed. Best piece of advice you ever received? It’s more of a prayer my dad always says and I picked it up from him, “I ask God to make me a better person and decrease my bad habits or traits.” Basically, to calm me down and not drive people crazy!

El Gouna Film Festival 2018: A Bigger, Better, Grand Success! Sometimes a groundbreaking event can be a hard act to follow. But this year’s edition of El Gouna Film Festival has shown what can be done with the right team and ingredients. We caught up with organizer Amr El Mansy to see how it all came together.

Amr El Mansy CEM: The second edition of El Gouna Film Festival has been acclaimed as a resounding success. How were you able to build on the experience gained in GFF 2017? AM: Thank you so much! I give credit to every single person in the team who worked tirelessly day and night to ensure the second edition raised the bar of success. When we started working on our first edition we had a team of young people,

most of who had never worked on a festival before, let alone a largescale international event such as GFF. We had started working on the preparations only six months before the festival. There were definitely a lot of key learning curves that were captured from the first edition, which helped us manage the second edition better. The team is now more experienced and we started working much earlier this year to ensure we could deliver a more robust festival.

What new elements did GFF 2018 have? Our special program included 16 exciting events this year. Among them were three tributes planned, including film screenings, exhibitions, panels and master classes. We celebrated Youssef Chahine’s iconic career to mark the 10th anniversary of his death with a memorable orchestral concert of all the music from his films. We also celebrated the 100th anniversary of Ingmar Bergman’s birth and the CAIROEASTMAG.COM

Sylvester Stallone, Naguib Sawiris and Bushra that attended and we’re very much looking forward to their participation in our third edition in 2019. Is GFF gaining momentum? What is in store for the 2019 edition?

25th anniversary of the passing of legendary director Federico Fellini. Other than that, the festival was one day longer than the first edition and the Official Selection competition for Feature Narrative, Feature Documentary and Short Film Competitions had several screenings sold out a day or two in advance. Our CineGouna platform also grew substantially. There were 12 projects in development and 6 films in post-production that were competing for the CineGouna SpringBoard awards that totalled $175,000. The filmmakers had a fantastic opportunity to network with potential co-producers, funding agencies, distributors and festival programmers. Last but not least, CineGouna Bridge had a stellar line-

up of workshops, master classes and roundtables that included speakers such as Owen Wilson, Daoud Abdel Sayed and Tarek Ben Ammar. What do you consider to have been the standout moments of GFF 2018? I think that varies from one person to the other, given that every day there were incredible moments that you could only experience at GFF. For me personally, I was honoured to meet Sylvester Stallone, as I grew up watching his films. What feedback have you had from participants, attendees and followers of GFF? Overall we’ve received very positive feedback from everyone

Of course it is gaining momentum and we can see this through the level of participation and interest from participants, which was much higher than last year. During the first edition, people were excited to attend because everyone has a love for Gouna knowing it’s a fun location with a great atmosphere and they also trust that anything the Sawiris Family invests in has to be of an international standard. However, some must have had doubts in our ability to pull it off given it was our first time to manage a film festival. But thankfully, we succeeded because we made sure to put together an experienced management team who had a dedicated group of young people full of passion to support them. Also, thanks to the support of the media who covered our festival in its first edition, the exposure we got helped us gain stronger momentum this year and hopefully next year too. The media was a great tool for us to relay to the world that GFF is one of the leading film festivals in the region and that Egypt is not only safe for all people of the world but also that it will regain its role as the hub for arts and culture.

What a Real Man is! By Steve Gooch

Tough men suck it up! Did you ever watch Fast & Furious? Of course, you did. What guy didn’t? A classic celebration of hypermasculinity played out behind the wheels of testosterone- fuelled supercars, tearing across the globe in a hail of bullets and fire. A confirmation that across the world, real men are tough, and real men take action. They make things happen, they solve problems and they do it with muscle. Lots of muscle. They do not feel. They do not reflect or empathize. And they definitely don’t cry.

Sucking it up This extreme fantasy of the ultra-macho hard man, as entertaining as it might be as a movie, reinforces the concept, on a conscious and a subconscious level that to be a real man means to be tough, and when life is hard, real men suck it up and carry on. Society of course, dominated as it is by men, happily buys into this craziness, thus reinforcing and perpetuating a fantasy of what it means to be a real man. Both boys and men are encouraged to conform to this stereotype, and in so doing, as many reports show, they suffer from significant mental health problems. Joel Wong, who led a research team at Indiana University looking into masculine ideals and mental health, said: “In general, individuals who conformed strongly to masculine norms tended to have poorer mental health and less favorable attitudes toward seeking psychological help.” Three times as many men as women kill themselves.

The cult of machismo is a sickness at the heart of global culture. Boys, instead of being hugged and loved when they need it, have their hands shaken in an effort to assert manliness rather than the nurturing and character-building emotions of love and caring. In perpetuating this sort of idiocy, the whole of society suffers. Machismo is an expression of mental weakness and lack of confidence and often cowardice. In reality, tough guys have respect, know how to cry, care for others and are motivated by kindness. And there are plenty of guys out there who possess these qualities. But it’s often difficult for a sensitive man to understand what it is he is feeling. There are no signposts. Society doesn’t care. He’s left on his own to figure it all out. So, when asked, he will respond that he is fine and that there is nothing wrong, when this is not the case at all. This can create emotional distance from those he cares about and who care about him, leaving him isolated and alone in his suffering. It can become impossible for him to receive the love and support that he needs. increasingly important ability to have. Use that highly creative and sensitive brain of yours

to construct a template for a new model. Make sure that in your ‘new man’ project, tenderness, kindness and love are signs of strength and achievement. Because they are. Being a sensitive man means that you are more creative, empathetic and able to appreciate the sensory pleasures of life, like music and art, color and fragrance. You have a powerful ability to help others and, in a world, so dominated by the cult of ‘me, me, me’ this is an

MYTH #1: Train to Look Good A majority of people train to look good, and it is certainly a fantastic bonus but shouldn’t be your primary goal. Men want the six packs and the strong arms, but if people approach training mentally then the looks come easier. If you set temporary goals like getting washboard abs or rock hard biceps, the fire dies out once you achieve that. Health benefits are for life. Training as a lifestyle pays off forever – your immune system is stronger, sex drive is boosted, stamina is higher, and your energy levels will last into your 60s.

MYTH #2: Women Can’t Lift Don’t fall for the trap that lifting weights bulks you up! You need to lift weights to change your BMI (Body Mass Index) – the more you have muscle mass, the less you have body fat. Lifting weights makes you stronger, but also shapes your muscles to give your body healthy curves.

MYTH #3: Cardio Burns the Most Calories You’re wasting your time jumping on the treadmill or elliptical machine for an hour. This raises your cortisone hormones and makes your body store more fat, while breaking down your muscle tissues, which leaves you skinny, but without shape. It is more beneficial to do high intensity bursts of cardio, mixed with lifting weights and eating right.

MYTH #4: Men and Women Lose Fat Differently Yes, genetics play a factor, but both men and women lose fat all over the body when they train properly. The cells in our body store fat for use later, and everyone has a different fat percentage depending on their lifestyle. Women tend to store fat in their tummy, hips and back of the arm. Men tend to store fat on their chest, arms, hips and waist.

MYTH #5: You Need Supplements Supplements are a billion-dollar industry. You don’t really need supplements to achieve what you’re setting out to do. Most of the fitness models and trainers you see just train really hard and eat super clean. What is whey protein? It comes from milk and is heated down to powder, which incidentally kills off the nutrients. What’s a ‘Fat Burner’ or a ‘Pre Workout’? It’s caffeine to boost your heart rate – just drink an espresso! Amino acids come from food – eat chicken, beef, or salmon. Eat clean, train hard.

MYTH #6: Increasing Meal Frequency Boosts Metabolism There is no proven science that says eating 5 meals a day will boost or regulate your metabolism, in fact, you aren’t giving your digestive system any rest – you’re making it work all day! Intermittent fasting is proven to be healthier, so fasting up to eight hours a day isn’t a bad idea if your meals are clean and not full of junk.

Men’s Hair Loss

Getting to the Root of it!

With men’s hair gaining more of a role in an increasingly metrosexual world, men’s styles, products and boutique barbers are in high demand. Which makes men’s hair loss more of a big deal than it was in the past. Luckily, modern medicine has come up with new and advanced ways to address this issue head-on! Two consultants, Dr. Mohamed Mongy and Dr. Mahmoud Abdallah get into the details of this hairy situation and share with Cairo East Magazine their expertise in treating men’s hair loss.

Why do some men experience hair loss? Dr. Mahmoud Abdallah: The reasons for hair loss are plenty, however they can be classified into two main categories: Increased hair shedding and hair thinning. Increased shedding may occur due to low iron stores, malnutrition (very common now with obesityrelated surgery) severe stress, some medications, and thyroid dysfunction, among others. Increased thinning is a purely genetic process and occurs due to the male hormone, testosterone. What are some indications a young man can look for to know if he will experience hair loss? Dr. Mohamed Mongy: The best way to look out for early signs of hairfall is monitoring and observation. Checking the scalp health, hair line recession monitoring, comparing pictures, and then going for a

consultation and having a report written up by a specialized dermatologist will save you lots of time and effort in the future. Does this mean that men with thinning hair have more, or less testosterone? Dr. MA: Actually the vast majority of men who experience hair thinning have normal testosterone levels, however, they have increased activation of the hormone in the scalp and this is determined by genetics. This occurs in certain areas of their scalp not all. The process can start from puberty when testosterone starts to increase, but becomes stable by the end of the twenties. The process is more intense and more rapid in men who take anabolic steroids for muscle building purposes Can the condition be addressed before it happens in those most prone to it?

Dr. MM: There is not much in terms of preventative measures that could be done before the hair-fall or baldness starts. And that is due to two points: No man cares about his hair until it starts to go! Compliance and frequent clinic visits can seem non-rewarding because improvement cannot be measured. How is men’s hair loss treated? Dr. MM: Hair loss in men is treated according to the causative factor. Simply, we fix the problem that caused the hair fall in the first place. Fix the anemia if there is iron deficiency, add proteins to diets of low protein consuming men, increase scalp blood flow and nutrition through topical medications and treatments, treat dandruff, scalp psoriasis, and recurrent infections, improve grooming habits if necessary, use

topical foams, oral supplements are prescribed in certain cases. Some may even require scalp injections, platelet rich plasma shots (PRP) and of course there is always the final step of hair transplant if the follicles are proven dead and can never regenerate a hair bulb. Types of treatments [Always consult an expert before administering as cases vary depending on several factors that only a doctor can determine]: Dr. MA: 1. Topical Minoxydil spray or foam remains the gold standard treatment for hair loss; results start to appear after at least 4 to 5 months. 2. Finasteride tablets are the most effective tool to treat hair thinning in men. Almost 70 to 80% get very nice recovery of their hair. 3. Laser Comb is another option and should be used three times a week for life.

Can all types of hair loss be treated? Dr. MM: That is an excellent question! And I will give you the accurate answer! All cases can be MANAGED, and not all can be TREATED. What that means is, that there is a solution to every problem. Some solutions eliminate the problem entirely, other remedies keep conditions under control and delay the problem, and in some other cases, some solutions are just a camouflage that help people live their lives easier and with more confidence.  Is stress an important factor for increased hair shedding? Dr. MA: Stress can play an important role, however acute stressful

Dr. MA: Married men of course! Due to the age and due to the stress they are facing.

Doctor’s Orders! Dr. MM: A healthy lifestyle is always recommended in our medical field. Not just for hair problems, but for everything. If one must drink, smoke, stay up at night, and eat junk food, then he has to compensate by detoxifying, exercising, sleeping better and so on. There is definitely a price to pay when adopting a more careless lifestyle and the hair will suffer as much as other organs like skin, liver, muscles, and God forbid, even brain.

Dr. Mohamed Mongy’s Advice! Avoid hair products and hair treatments e.g. collagen, protein, keratin, hair Botox, serums, etc., and ask your dermatologist for a hair protocol to follow. Dr. Mahmoud Abdallah’s Advice Many people go to the pharmacy and buy hair vitamins. Vitamins if not needed, are not harmless. Some vitamins can even lead to hair loss if taken in an excess amount.

Stroke, sometimes called a “brain attack”, is the fifth leading cause of death in men & a leading cause of long-term disability. It is indeed more likely in men over the age of 65, but can happen at any age. Strokes are also more likely to be fatal and strike earlier in men than in women. The good news is that up to 80% of strokes can be prevented. This means it is important to know your risk of having a stroke and taking action to improve your odds. What puts you at Risk of Stroke? Controllable risk factors • High blood pressure is a main risk factor for stroke • Smoking damages blood vessels, which can cause a stroke. • Being overweight or obese • Diabetes • Drinking too much alcohol • Being inactive Uncontrollable risk factors • Age is the principal nonmodifiable

risk factor for this disease. • Gender (Men have more strokes) • Family history Your doctor can assess your risk for stroke and help you control your risk factors, therefore regular check-ups are important in catching problems before they become serious. Most strokes can be prevented by keeping medical conditions under control and making lifestyle changes. Know your ABCs of heart health: Activity: Stay active. Living a sedentary or inactive lifestyle has consistently been one of the top five risk factors for heart disease. Blood Pressure: Control your blood pressure. Cholesterol: Manage your cholesterol. Smoking: Quit smoking or don’t start. Make lifestyle changes: • Eat healthy and stay active. Choose healthy foods most of the time, including foods with less salt to lower your blood pressure.

• Get regular exercise. Being overweight or obese raises your risk of stroke. • Get other health conditions under control, such as diabetes or heart disease. Strokes come on suddenly and should be treated as medical emergencies. The American Heart Association uses the memory tool known as F.A.S.T. to recognize signs of stroke. If you think you or someone else may be having a stroke, act F.A.S.T.:

F—Face: Ask the person to smile. Does one side of the face droop? A—Arms: Ask the person to raise both arms. Does one arm drift downward?

S—Speech: Ask the person to

repeat a simple phrase. Is the speech slurred or strange?

Cairo’s Hip-Hop Scene The local Hip-Hop clubbing scene has been exponentially increasing over the years, sustaining a Hip-Hop community in Egypt is a bit of a challenge, as the country has only a select number of record labels operating and a limited number of venues dedicated to the genre. Still, artists, DJs, and promoters make do, posting their music online and hosting small to medium scale events to provide safe and affordable spaces for showcasing their music and free expression. Here are some of the most prominent Hip-Hop DJs that have amassed a loyal following of fans and solid busy signature nights: DJ Feedo: You likely know him from “Friday Night Flavas” radio show, Feedo’s fan base grew tremendously and eventually gained the attention of international DJs – as well as R&B and hip-hop fans outside of the region – earning him gigs alongside some of the biggest names in the business, including DJ Qbert, Trevor Nelson and Akon. Feedo has rocked nightclubs & special events across The Middle East, Europe, South America, and Asia, spinning R&B and Hip-Hop tracks. Most recently, he has been shaking up The Tap West every Friday night DJunkie: One of the few Egyptian musicians to go international, making it to Europe and the Gulf region. He’s been known to perform in big festivals such as Fusion Festival in Germany, as well as the Roskilde Festival in Denmark. Besides spinning Hip-Hop and R&B, Djunkie’s is well known for his electronic tunes. #Djunkie’s nights gained a huge following over the years, especially his signature night #AllDatDjunk at The Tap. Indeed, there are even more amazing HipHop DJs in the scene such as DJ Mobbz, DJ AK with his signature night “Back to the Future”, as rising names like DJ Fedde, DJ Doggy Dog. There’s no denying that there’s something powerful coming out of Egypt’s Hip-Hop clubbing scene.

Hyundai Motor Wins “Red Dot: Brand of the Year 2018” Hyundai Motor has triumphed again at the Red Dot Awards with the honorary title “Red Dot: Brand of the Year 2018”, adding to its five previously received Communication Design accolades for 2018 for its creative and innovative design. The Red Dot Award is one of the most highly-respected international design competitions in the world, and the “Red Dot: Brand of the Year” is awarded to the brand that has come up with innovative and creative design on a particularly high level. This year it took into consideration Hyundai’s innovative design solutions, quality of design and brand management expertise. The official ceremony honoring the award will take in Berlin, Germany on October 26. In August, Hyundai Motor set the all-time record for Red Dot Awards in the company’s history, winning four Red Dots and three “Red Dot: Best of the Best”.

Omar Samra Launches Season 2 of “Make Space Yours” Project with Inertia Adventurer and founder of Wild Guanabana, Omar Samra, announced the launch of Season 2 of Make Space Yours, the first of its kind in Egypt and the Middle East. It is a platform to inspire young people and school students to adventure, motivate them to discover the mysteries of space and raise their interest in the sciences through exciting projects, competitions and experiments. Witnessing a major expansion in its current session, with the support and encouragement of Inertia Development, which is sponsoring the second consecutive season of the project. Omar Samra explained that participation in the competition will be available to all students of Egypt between the age group

(8-17 years). In the first season, the competition team managed to visit 77 schools and 44 universities in 9 governorates of Egypt. Visits to 5 private and international schools will be organized, all visits will be held in October and November. The project will include two levels of competitions, and prizes vary by age group: “With the results announced in December, 10 to 15 students whose ages vary between 8 to 12 years, will have the opportunity to experience Zero Gravity in AERODIUM Egypt, as well as win a spot in Muricata camp,” said Samra. While one winner of the age group from 13 to 17 years will be awarded a grand prize to join Omar Samra to experience a Zero Gravity flying experience in a non-gravity Boeing 737.

Saki Sushi Lounge in Heliopolis Towers Hotel Set in the spacious lobby foyer of the chic Heliopolis Towers Hotel, this sushi lounge is a perfect spot for a quiet early dinner, no fuss, no frills. We caught wind of a new and improved menu, so we had to make a visit to check out what is on offer. Type of cuisine: A concise and perfectly balanced menu of Japanese staples and favorites comprising of soups, salads, rolls, and sashimi. New on the menu: The Sushi Pizza is an open roll that is shaped like a slice, piled with slices of salmon and tuna sashimi and capers. There are also two types of Sushi Sandwich - a large burrito shaped roll, cut in half. One is stuffed with crab, rice, red caviar, avocado, cabbage, and topped with spicy mayo, and the other features Katsu Chicken, cabbage, rice, and topped with wasabi mayo. Dishes sampled: Eager to get started on a sushi extravaganza, in addition to the new signature items, we ordered the Salmon Avocado Roll, Black Salmon Roll, Dragon Roll, Crispy California Roll, Spicy Tuna Temakai, and the Rainbow Roll.

Sushi spots in Cairo can be hit and miss, and often diners can be disappointed by a lack of quality or by the quality of sourcing key ingredients such as ripe avocado, however, everything we sampled at Saki was delicious and made with care. The fish is extremely fresh and tasty, and the sushi rice is cooked perfectly. Each roll was either topped or stuffed with avocado and crispy tempura prawns, some rolls were lightly fried in crispy panko crumb coating, and the sauces were not overdone. The Rainbow Roll is a standout item, topped plentifully with salmon, pickled radish, sea bass, tuna, and squid. The Spicy Tuna Temaki order comes with two nicely

sized hand rolls, stuffed with tuna, rice, spicy mayo and cucumber. We were excited to sample the Black Salmon Roll as it promised salmon skin in the description, but unfortunately arrived with none – this type of ingredient is often overlooked in sushi spots we have visited, so it would be advantageous for Saki to include in their offerings. Other menu options that appealed: On a return visit, we would definitely sample the soups and salads, in addition to Saki’s Crispy Panko Crusted Rolls. Beverage options: Soft drinks, juices, herbal teas, and coffee. Décor and ambience: Simple and contemporary, dimly lit with a soothing ambience. The lounge offers outdoor seating in the hotel foyer; the bubbling water fountain that serves as a centerpiece for the venue will provide a soothing sound backdrop. Clientele mix: Out of town hotel guests, locals in search of an upscale quiet dinner. Price range: Moderate considering the quality and hotel quality service. 2 pm - 11 pm. Mondays off. Gourmet Italian in Intercontinental Heliopolis

Type of cuisine: Traditional Italian cuisine with a twist. A timeless restaurant serving home-style Italian cooking with a gourmet spin. Dishes and drinks sampled: After being seated at Maestro the end-of-summer heat was getting to us so we thought we would start with some homemade iced teas. A lemon tea and a mint tea went down easy and were a great way to cleanse our palates before starting our meals. For starters we had the Mushroom Soup, rich and creamy, it gets full marks in our books. The addition of the truffle oil and ricotta cheese added new flavor notes and depth to the hearty soup. We then had the Caprese Salad, Fried Seafood Bites, and Beef Carpaccio, all of which were absolutely perfect in their taste and presentation. The simple dishes were crafted and presented like a work of art. Pleasantly surprised at how flavorful our starters were, we were excited for our main courses. We chose the Risotto made with candied pears, Gorgonzola cheese, and walnuts, it was melt-in-your-mouth delicious, and the Seafood Fettuccine made with homemade noodles and a tomato sauce adorned with lobster meat, and finally the Beef Tenderloin smothered in porcini mushroom sauce. The Beef Tenderloin was medium rare, exactly how we ordered it, and surpassed our expectation in the juicy and flavorful department. The mains outdid the appetizers and to end the evening we had two coffees and every dessert on the menu including the Tiramisu, Ricotta Cheese Mousse, and Pannacotta Two Ways. The Tiramisu was the showstopper and a great way to end a perfect meal. Other menu options that appealed: The menu is concise but each dish is crafted with intention, and includes a hearty pizza

section. Next visit to Maestro will include a Romana Pizza topped with anchovies, capers, and olives, as well as a Quatro Formaggi Pizza with four types of cheese and truffle oil.

Beverage options: A very wide variety of both soft and hard drinks. Décor: The decor is retro-chic with formal dining tables and salmon colored walls creating a very rustic and authentic vibe. Walking through the doors into the intimate restaurant was like teleporting to a small family-owned restaurant in northern Italy. Ambience: The ambience was relaxed and refined with an air of sophistication. Clientele mix: Hotel guests primarily but also regulars that keep going back again and again for the unique dishes at Maestro. Price range: Above average but won’t break the bank. Hot tip: Maestro is located in the beautiful Intercontinental Hotel in Heliopolis, so after dinner, drinks, and dessert at Maestro why not stay for a relaxing shisha by the pool. Potato Gnocchi with Porcini Mushroom Sauce Ingredients: 1 kg potatoes 300 g flour 3 large eggs 1 g nutmeg 10 g salt 2 g white pepper 30 g freshly grated Parmesan cheese Preparation: Boil the potatoes (unpeeled) in salted water until tender and soft. Drain, cool, peel, and mash them with a fork or potato masher in a large bowl. Add flour, eggs, nutmeg, salt and white pepper. Mix all with the Parmesan cheese in a large bowl. Combine all ingredients to a dough. Knead until dough forms a ball. Shape small portions of the dough into long “snakes”. On a floured surface, cut the snakes into half-inch pieces. Bring a large pot of lightly salted water to a boil. Drop in the gnocchi and cook for 3 to 5 minutes or until the gnocchi have risen to the top; drain and serve with the porcini mushroom sauce and grated Parmesan.

Porcini Mushroom Sauce Ingredients: 50 g porcini mushrooms, (very finely chopped) 1 small shallot onion, (finely chopped) 1 clove garlic (minced) Large knob of butter 2 cups double cooking cream Salt and pepper to taste

Preparation: Melt the butter in a small saucepan and gently sauté the garlic and shallot until translucent. Add finely chopped mushroom and sauté for a few minutes more on a low heat. Add cream, season to taste and reduce to the desired consistency.

A Swingin’ Food Adventure in Heliopolis

Mood Swing restaurant will swing you into the right mood! Located in a huge vintage style villa beside two other restaurants, Mood Swing’s music and eccentric food will switch up your day with the daily live music schedule. Dishes have innovative combinations of ingredients if you like experimenting with new flavors. We went there on a Tuesday Classics Night, and tried out some of their unique signature dishes and drinks. Signatures dishes: The international cuisine and sushi menu has many unique signature items that are not available elsewhere, for example, Chicken Lollypops, Festival Salad, Cajun Pineapple Pasta, New York Chicken, Phosphorus Bomb, and for dessert, Swing Cake. Dishes sampled: We were welcomed with a shot of lemon, pineapple and strawberry juice. Then, we started off with the famous Mood Swing appetizer platter that included tender but crispy chicken crispers, round buttery twister potato patties, salted fried Kiri balls that explode in your mouth with surprise pieces of smoked turkey, and finally the golden calamari rings that weren’t chewy to the bite. The platter came with three dips of marinara, honeymustard and tartar sauce. Then came the Prune Chocolate Pasta, fettuccine pasta with creamy chocolate sauce, topped with walnuts, prunes and pieces of red chili. The sweetness of the chocolate was balanced out with the chili and seasoned with cinnamon and ginger for extra spiciness. This is not a dish for people with a low tolerance for bizarre mixtures!

Next up we tried the Oreo & Walnut Chicken. We were surprised to find that the Oreo sauce wasn’t actually sweet at all, we could distinctly taste the Oreo flavor minus the sweetness and it all balanced out with the perfectly grilled chicken breasts. It came with a side of mashed potato and sweet corn on the cob. If you’re an adventurous foodie, then we highly recommend this dish. After that came the Mango Konafa Burger, our favorite dish so far, the meat was well seasoned and grilled to perfection, the konafa added a crispy, slightly sweet touch to the burger and we could faintly taste the mango sauce in the konafa, make sure to ask for the curly fries. To wash it all down we tasted the icy cold sweet popcorn and vanilla, and gum frappés, a must try. We were too full for dessert but it came anyway, so we tried the Summer Fruit Cake, which tasted as fresh as summer with a thin layer of sponge cake and raspberry mousse and sauce. We also gave the Hazelnut Cake a try, crunchy hazelnut pieces and chocolate cake drizzled with chocolate sauce, perfect note to end an adventurous meal.

There are all kinds of hot and cold beverages on the menu, including soft drinks and fresh juices. Décor and ambience The décor is very elegantly golden classic and modern at the same time. A huge bubble chandelier hangs on top of the pit where live music is played and there are different musical instruments that emit soft light on the walls. There’s also a sushi bar and a VIP lounge as well as a quiet outdoor seating area and valet parking. Clientele mix: Not too busy on the weekdays. Perfect for families, a group of friends or date-night, just pick the right day where the music is soft. The live music schedule is posted on the Facebook page. Chicken Lasagna Ingredients: • 3 skinless, boneless chicken breasts, boiled and minced • 8 uncooked lasagna pasta • 1 cube chicken broth • ¼ cup water • 1 pack of creamy cheese • 2 cups of mozzarella cheese • 1 packet ready pasta sauce Method: Bring a large pot of lightly salted water to a boil. Cook lasagna pasta for 8 to 10 minutes, or until al dente. Drain, rinse with cold water, and set aside Preheat oven to 175 degrees Dissolve the chicken broth cube in hot water in a saucepan Add creamy cheese and mozzarella cheese and mix Spread 1/3 of spaghetti sauce in the bottom of a baking dish. Cover with the chicken and the cheese mixture, and top with 3 lasagna pasta; repeat. Top with remaining sauce, and sprinkle with remaining mozzarella cheese. Bake for 45 minutes in the preheated oven until the cheese melts.

• 2 medium hot chilies, finely sliced (optional) • 2 garlic cloves, chopped • Handful basil leaves • 600 g canned chopped tomato • Salt, to taste • 400g penne pasta • Parmesan shavings (or similar vegetarian hard cheese), to serve.

Remove the garlic, basil and chili from the pan and set aside. Add the chopped tomatoes to the frying pan and cook for two minutes on a low heat . Put the garlic, basil and chili back in the pan with the tomatoes. Simmer for at least 10 minutes, until the sauce has thickened a little. Add salt to taste. Meanwhile, cook the pasta as per the package instructions in large saucepan of boiling, salted water with a dash of olive oil. Drain the pasta and add the tomato sauce to it. Serve with shavings of Parmesan.

Open Faced Omelette INGREDIENTS

METHOD

6 eggs

1. Preheat broiler to high.

2 tablespoons milk

4 cherry tomatoes roasted 1/2 teaspoons kosher salt

1/4 teaspoons freshly grated black pepper 1 tablespoon olive oil 8 ounces sausage,

2 green onions, thinly sliced (about 1/4 cup)

1 bunch Mozzarella cubes

1/2 Cups fontina cheese, grated 4-5 basil leaves

2. In a medium bowl, lightly whisk eggs, milk, salt and pepper and set aside. 3. At medium high, heat oil and add sausage and cook, breaking into smaller pieces with the back of a wooden spoon until cooked through. Add green onions, stir 20 seconds. Transfer to a plate and set aside. Add Mozzarella cubes and cook, stirring until beginning to wilt. Add sausage mixture to pan and stir. Add eggs to sausage mixture and tilt pan to cover bottom with egg mixture and distribute ingredients evenly. Sprinkle basil over egg mixture and cover top of omelete with cheese. Cook for 3 to 5 minutes, until eggs are just set on the bottom. Transfer skillet to middle rack of the oven and broil until top is set, about 4-3 minutes. CAIROEASTMAG.COM
