e eat for sustenance, we eat for comfort, we eat for entertainment. Some of us even laugh at ourselves and say, a little ruefully maybe, that we live to eat. “Foodies” say that too, but they say it joyfully, unapologetically. Foodies eat to savor. They eat for excitement and for the thrill of discovery. Foodies know food is more than fuel and diversion. And foodies have it mighty

good around here. From cucumber kimchi to rosemary fries, from wild-foraged edible flowers to spam musubi (what?), if you can dream it, you can probably find it in Charlottesville—at a bistro, at a white tablecloth restaurant now offering grab-and-go, at a pop-up food truck, or even a cake and bubbles bar. You can’t open your mouth in this town without it starting to water. Let’s meet a couple of the many creative chefs and restaurateurs who keep us hungry and happy.

Cake Bloom And let’s start with dessert first. A slice of Seasonal Citrus Lemon Cake, perhaps, baked with lemon curd and organic summer berries, topped with an edible floral crown, and paired with a glass of champagne? Sure you can get that here, thanks to Susan Sweeney and Cake Bloom, her brand new cake and bubbles bar on West Main. After seven years in the wedding industry, Sweeney is excited to be experimenting with the traditional cake and champagne wedding pairing. “My husband’s in the wine industry, so we’re kind of merging our two worlds with this new venture at the storefront,” she says. “The pressed floral cakes and botanical cakes are what set me apart the most and what I get most excited about. They’re a fun creative outlet to keep exploring different designs.” What Sweeney’s talking about is using botanical extracts to color buttercream, and decorating with wild foraged edible flowers, and freshly picked herbs, berries, and culinary greens. But let’s back up, because the extraordinary doesn’t come out of nowhere. The culinary arc of Sweeney’s career, one could say, can be traced from sugar and butter to luscious buttercream. “Sugar has been a theme in my life for as long as I can remember,” she says, recalling her 1980s Tennessee childhood. Butter too: “My sisters told me I used to eat sticks of butter as a little baby.” When those same big sisters went off to cities like New York and San Francisco, they introduced her to unheard of treats like artichoke and roasted garlic.


stations, Walmart—everywhere.” Hawaiians eat more Spam than any state in the country.” His “Mochiko sauce” is a concession to American tastes, however. Ask him about it and he’ll laugh. “When you go to Hawaii, there’s no sauce,” he says, “but when I started serving chicken here, people said ‘But you forgot my sauce.’ It got to the point that I just had to make up a sauce so I just grabbed this recipe for a yumyum sauce and said ‘OK, here’s a sauce.’” Asian quinoa patties with kale, scallions, and sesame oil are another of Tanabe’s tweaks of Hawai’in tradition. “People back in Hawaii don’t eat vegetarian at all,” he says. “Growing up there I never knew how to cook without meat.”

Otto’s Turkish Street Food Specially prepared meat is the highlight at another of Charlottesville’s most interesting dining establishments as well. Turkish natives and business partners Ali Sevindi and Haldun Turgay had planned to open a fine dining establishment serving food from their native Turkey last year—and then COVID hit. That restaurant is still a possibility, Sevindi says, but meanwhile, who’s complaining? Otto’s Turkish Street Food on Water Street, the casual place they’re operating now instead, is Charlottesville’s only authentic döner restaurant, using the same traditional recipes found on the streets of Turkey and throughout Europe. What is döner? In Turkish the word comes from dönmek, “to turn” or “to rotate.” Döner is a “rotating roast,” in other words, and of Central Asian origin, dating to the mid-nineteenth century in Turkey and hugely popular in Germany as well, where as many as two million are sold a day. On the street, döner comes wrapped; Otto’s offers theirs, either beef and chicken, as a wrap, bowl, or as a sandwich with thick pita from a bakery in New Jersey. “The reason we chose them is that they’ve been making the same bread since the 1930s,” Sevindi says. “They sell us unbaked bread; we bake it here. It’s so delicious, you can just eat the bread by itself.” Almost everything else is homemade, like the Arabesk hot sauce, a blend of Turkish and other roasted hot peppers. For vegans and vegetarians there is falafel. Optional add-ons (“like harmony”) include fried eggplant, sumac onion, and

Over at Mochiko in the Yard at 5th Street Station, chef and owner Riki Tanabe is serving the food he grew up eating on the beautiful Hawai’in island of O’ahu: poke and passionfruit dessert and, most of all, Hawai’in fried chicken. Tanabe Sweeneyd his restaurant after that chicken, marinated in garlic and soy sauce, then breaded in sweet rice flour. It was his favorite dish, one he remembers his grandmother making, one he calls the native potluck and picnic food. Cooking became a passion for Tanabe. After college he completed a culinary arts

Hawai’in food is a melting pot reflecting the traditions of the island’s Japanese, Chinese, Korean, Filipino, and Vietnamese immigrants. That’s why you’ll find dishes as various as cucumber kimchi, teriyaki beef, Asian kale quinoa patties, and that intriguingly Sweeneyd and highly popular Spam Musubi—crispy Spam glazed with teriyaki sauce on a rice bed seasoned with furikake (sesame seasoned Japanese seaweed), all wrapped up in nori. “Think of it as a Spam sushi, Tanabe says. “You’ll find it in stores, gas

program at what is now the Culinary Institute of the Pacific. Studies there led to an apprenticeship at West Virginia’s famed Greenbrier Hotel, where he discovered what he calls his culinary calling: pastry. That in turn led him to Charlottesville, and a long stint at Albemarle Baking Co. Nowadays Mochiko’s dessert menu is dominated by passionfruit (Liliko), another Hawai’in favorite: Liliko Meringue pie and Liliko bars, i.e. shortbread cookie with passionfruit curd.

“Farmer’s market culture hadn’t really hit my town, so we didn’t grow up with a lot of fresh produce,” she remembers now. “When my sisters came home, they opened up my eyes to a lot of new things I had never experienced.” Meanwhile Sweeney was dreaming and discovering on her own—whipping up new concoctions, baking for her friends’ birthdays in high school, doodling cakes in her college notebooks. Though she eventually trained at California Culinary Academy in San Francisco, she’s “more self-taught than school-taught,” she says. “I worked for an artisan olive oil company and worked closely with the farmers markets and got well versed in the seasons and the origins of food. I also studied in France.” Here in Charlottesville, she began offering cakes for order in April of 2020. Today along with cake and cake parfaits, curious customers at the storefront can enjoy 12 varieties of champagne and other types of bubbly at the sparkling wine bar. Coffee is coming. The first thing you’ll notice about the cakes, before you even try imagining their taste, is how beautiful they are. They can be ordered in three sizes, with a rotating selection of frostings using cream cheese, ganache, and Swiss meringue buttercream. Decorations come in two basic styles: floral crowns and floral posies. Floral crowns feature three to five botanical elements placed on the top of the cake. Floral posies are small vertical arrangements of one or two fresh stems and seasonal greenery tucked inside a small hydrating pick within the cake. This summer’s lovely add-ons—take a deep breath—include fresh mint, basil, and flowering thyme, fresh strawberries and blueberries, zinnia and dahlia petals, pansies, calendula, bachelor’s buttons, lavender, marigold, bee balm, feverfew, dianthus, chive blossom, rose geranium, chamomile, nasturtium, asparagus fronds, oregano, hops, amaranth, sunflowers, and other seasonal edible blooms. All this, shall we say, elegant epicurean innovation is ongoing—and the fun is not the customer’s alone. “I’m really excited about pairing the cakes with sparkling because I’m not into sweeter wines,” Sweeney says. “So I’m excited about opening up my world a little with pairings. We hope people will think of us as more than cake and more than a bar, and something that’s more about an experience. We’re not really a traditional bakery, but something that’s entirely fresh and new.”
