Nigeria “As an American it was always a little dicey cooking for my Nigerian in-laws. Jollof rice was one dish my mother-in-law could trust I could make with few mistakes and a dish I could safely modify without compromising taste. She was a wonderful cook where you could taste the love in her dishes. So for meals of thanksgiving (not just the holiday) celebration I include Jollof rice in honor of my mother-in-law, Annette Nwosu.� -Pauletta Nwosu
