Making your own white wine - step by step Our own wine specialist Toon Balis recently made a white wine using Trebbiano grapes (SG 1.070 - acidity 8.7) and especially for you, he noted down the steps he took at the various stages while making the wine, right through to the finished product. This will definitely give you a better idea of exactly how the wine making process goes. Now there's nothing to hold you back!

7.5 g sulphite (= 0.5 g/10 l) over 12 hours at T° <10°C (always check!) This releases 15 mg SO2/l. <10°C over 3 days (= Macération pellacullaire).

How do we proceed? 1) Fill the measuring glass up to the zero line. 2) Add the indicating solution until the colour turns from dark green to blue. Colour change at 8.7. Perfect - we don't have to make any corrections.

Fining with Bentonite and must gelatine (24 hours). Sequence for fining 1) 210 g Bentonite solution in 2.10 litres of water + prepare 24 h beforehand, then add it and allow to stand for 4 h. 2) 105 ml Gelamost Vinoferm or Erbslöh Mostogel to be added 4 hours later + allow to stand overnight. The Gelamost binds with the Bentonite and drops to the bottom by gravity. Then siphon it over.

Add sugar

SG 1.070 = 9% vol. Alc. 12% vol. Alc. is the target. Therefore add: 13 (12 + 1 (loss)) - 9 = 4 x 18 g x 105 = 7.5 kg sugar.

50 g Nutrivit or Vitaferm Ultra (dissolve in water and distribute evenly). 30 g Bioferm Aromatic dissolved in 300 ml water at 25°C, allow to hydrate for 15 mins then add.

Alcoholic fermentation at 17°C.

Regularly check and measure (mainly Oë) with a hydrometer.

Add sulphite

10 g/100 l wine.

Please remember this. 1) 1 g/10 l wine produces 50 mg free SO2/l of which ¹⁄³ immediately binds. Therefore 35 mg free SO2/l is left over. In this case there is also 35 mg free SO2/l over. 2) The free SO2 reduces with each treatment. 3) The initial sulphite toxins after fermentation are the most important! (therefore min 1 g/10 l). 4) Any sulphite added before fermentation binds.

e.g. 15 ml Trenolin Frio DF 1 to 2 hours (works from 5°C). This is for better juice yields and for breaking down the cell walls.

Campden sulphite Powder. Contains potassium metabisulphite. It is used to prevent the oxidation of juice/wine/ beer, to kill wild yeasts on fruit and to stop a fermentation process.

Wyeast wine yeast

The unique ‘smack pack’ makes it very easy to set up a sterile yeast culture in 12-24 hours (start yeast = squeeze/smack the pack and allow to swell). Every pack is sufficient to startup maximum 20 litres of must. A yeast starter can be made for larger quantities. Thanks to the smack pack, yeast can be stored in the refrigerator for a long period: 6-12 months from date of manufacture.

Wyeast 4244 Chianti

For big, rich red wines with a fruity character, well-rounded and with a dry aftertaste. Highly suitable for Italian grape varieties: Barolo, Barbera, Barbaresco, Nebbiolo, Chianti, Valpolicella, Sangiovese, etc. Temperature range: 12-25°C. Residual sugar: 0-0,75 %.

Pairing beer with cheese

While matching wine and cheese can be dificult, selecting a beer to pair with cheese is a friendlier affair. As beer is carbonated, it cleanses the palate effectively. Beer has a broad range of flavors, running the gamut from fruity ales to hoppy IPA’s, creating a long roster of potential pairs. As with wines, there are some general suggestions you should keep in mind when planning a spread. • Fresh cheeses pair well with mellow beers, such as American wheat beers, American lagers and German lagers. • Soft-ripened cow’s-milk cheeses, such as Neufchâtel, Brie and Camembert, are excellent companions for pilsners, porters and pale ales. • Washed-rind cheeses, such as Muenster, are complements to English brown, amber and Belgian pale ales. • Semihard cheeses, such as Cheddar, Edam and Gouda, as well as the cookedcurd cheeses, such as Emmentaler and Gruyère go well with pilsners, IPA’s, double bocks and Belgian ales. • Parmesans and Romanos need a heavier beer as a partner; try a strong ale, stout or porter. • Because of their intense flavor, blue-vein cheeses require a beer that can hold its own. Try stronger porters, stouts and heavier dark beers, such as barley wine. • Goat cheeses are usually a bit more flavorful, so consider pairing them with IPA’s, ESB’s, brown ales and porters. • Pasta filata, particularly Provolone, are well matched with Bavarian whites and heavier Bavarian wheat beers (doppelweizen).
