W

ow – I can’t believe I’m here. This is my first letter as your new editor and it’s really a dream come true. Writing is something I truly love – but there is something I might love more…the holidays. For as long as I can remember, my heart has been drawn to the holidays. Maybe it’s the memory of dragging my toboggan down a snowy sidewalk with my dad and brother. Or the Christmas mornings I watched my mum make a delicious, fresh batch of pierogi with a side of borscht. Or, maybe, it’s the magic of bouncy tunes and sparkling lights. Christmas has and will forever make my heart sing. Being a mother myself, the duty falls on me to pass down all traditions and guide my children to understand the true magic of the holidays: love, family, and gratitude. Speaking of magic, there’s something magical about the day at a spa or salon – especially ones that serve drinks and give you a full-out experience. Get pampered by our Health & Wellness feature. Are you ready to transform your home into a winter wonderland? This year, we’re decorating with the colour of the year. Explore current trends and how to incorporate those family heirlooms in our Home and Garden Feature. While we’re at it – are you team real tree or fake? To experience a Griswold-worthy Christmas, we pulled together a list of tree farms for those true do-it-yourselfers. How do you celebrate Christmas morning? For my husband and I, we suck back cups of coffee while our three kids rip into their gifts. But one day, I’d love to have a brunch like the one we share in our Food feature. hen the temperatures drop and your favourite local coffee shop breaks out the festive takeout cups, it can only mean one thing: it’s time to decorate your home for the holidays. It’s not just about hanging a wreath or trimming a tree, though— holiday decorating can include your whole home from the front porch to mantle and tabletops. This year, many families took decor inspiration from one of Pantone’s colours of the year, Ultimate Gray, or Benjamin Moore’s 2021 colour of the year, Aegean Teal. If you painted a room in one of these colours, it’s a great opportunity to get creative and add complementary holiday decor accents. No matter what colours are featured in your home, here are a few tips to get you started.

TRADITION WITH A TWIST Red and green are a classic holiday colour combination that looks good year after year. Decorative pieces in these traditional colours work well with a neutral paint colour like Ultimate Gray or a soft, creamy white. Want to

modernize this colour scheme? Forgo brighter hues in favour of deep, elegant forest green and cranberry red. Consider adding candles of varying heights and vases in modern, abstract shapes (ivory and metallics will play well with those darker tones). Next, add texture with throw blankets and accent pillows in materials like faux fur, velvet, or cable-knit wool that’s as cozy as your favourite sweater. A

s a mom of three kids under five, I have a special duty when the holiday’s roll around. The tree, the gifts, the meals – I plan every single detail, trying to check every magical box. There isn’t a mother who wouldn’t try to do the same. Thanks to movies, commercials, and advertising, Christmas has become a season of the wow factor. And parents who provide their children with material luxuries and dazzling experiences, do so from privilege. According to the Simcoe Muskoka District Health Unit, there are 61,100 residents of Simcoe Muskoka living in poverty. Many without the opportunity to experience the magic of Christmas – but as a community, we can change that. While gifts are certainly something to be admired, I know my favourite holiday memories are the time I’ve spent around the table with loved ones. Entering its 47th year, Christmas Cheer Barrie is run by a group of socially-minded volunteers who work to give back to the less fortunate in Innisfil, Angus, Barrie, Springwater, and Oro-Medonte. The Sharing Place Food Centre is a community-based not-for-profit organization dedicated to helping Orillia area residents living with food insecurity. The Sharing Place will also be running Meals-4-Change, which is a program that produces healthy, ready-to-eat meals utilizing food recovered through their Food Recovery Program. The program allows them to produce meals at a fraction of the cost of store-bought dinners. They use kitchens in Orillia to cook more than 400 nutritious meals a week and have prepared more than 20,000 meals in the last year. The meals are distributed to their members and to local agencies. Community support is key to the success of these programs. hen it comes to beer making, the recipe seems fairly simple. Add malt, yeast, hops, and water. Then, let it ferment. But the truth is, each ingredient plays a specific role in the brewing journey through a complex and interesting biochemical process. Without digging too much into the science, brewers can choose from many different malt-based ingredients to suit specific flavour profiles. For instance, summer beers are light and refreshing, winter beers are dark and complex, while fall and spring beers are somewhere in between. Seasonal beers will often incorporate holiday-specific flavours or be designed to pair well with seasonal foods. Most seasonal brews are driven by seasonal ingredients that typically become available during different times of the year. What does this mean for the holidays? Stout When the temperatures begin to drop, beer drinkers turn away from light and fruity blends and head for something darker and heavier. Rich, hibernation-friendly stouts become a go-to. While in the summer hops are king, in the winter malt takes precedence. Stouts are made from dark malts, which give them their classic black, or near-black colour and two most popular varieties are milk and dry. Milk stouts are sweetened with lactose (aka milk) to give the beer a sweeter, fuller flavour, while a dry stout is unsweetened. Brewers are pushing the limits of stout and other varieties include oatmeal, oyster, chocolate, and imperial to name a few.

For something savory, a simple breakfast casserole will do the trick. Add all the best breakfast goodies in one dish: sausage, eggs, milk, cheddar cheese, bread, and a little mustard, all baked in the oven to make this the perfect comfort food breakfast. Add bacon and onions as a variation.

Brunch on Poached Eggs Shakshouka is a favourite in my family. A recipe that hails from North Africa and consists of eggs poached in a sauce of tomatoes, peppers, onion, garlic, and it is often spiced with cayenne pepper, cumin, or paprika. Bacon, ham, or chorizo could also be added to the mix for variation. The tomato sauce can be prepared in advance and then simply break the eggs into the heated sauce. Brunch on Crepes Much lighter than American-style pancakes, crepes have many interesting options available and can be filled with anything sweet or savory. The batter can be made the night before, or you can even cook the crepes and store them in the fridge (they keep for a day or two). Some classic Parisian fillings would be crepe au chocolat (filled with chocolate spread), crepe au fromage (with melted Gruyere cheese), or simply sprinkled with granulated sugar and a squeeze of fresh lemon juice.

Don’t forget the mimosa! ∙ 1/4 cup walnut pieces ∙ 1/2 cup all-purpose flour ∙ 2 tbsp granulated sugar ∙ 2 tbsp light brown sugar ∙ 1/4 tsp baking powder ∙ Pinch of salt ∙ 2 1/2 tbsp unsalted butter, melted

∙ 2 cups all-purpose flour ∙ 1/2 cup plus 1 1/2 tbsp granulated sugar ∙ 2 tsp baking powder ∙ 1/2 tsp baking soda ∙ Pinch of salt ∙ 1 cup plain low-fat yogurt ∙ 1 large egg, lightly beaten ∙ ½ cup unsalted butter, melted and cooled ∙ 1 1/2 cups fresh or frozen cranberries

∙ 1 cup icing sugar ∙ 1 1/2 tbs water METHOD 1

Preheat the oven to 425°. Line or grease muffin tins.

(TOPPING) 2 Toast the walnuts for 5 minutes, or until browned and fragrant; cool. In a large bowl, mix the flour with the granulated and light brown sugars, baking powder and salt. Stir in the butter, then add the walnuts and pinch the topping mixture into clumps.

(MUFFIN) 3 In a medium bowl, mix the flour with 1/2 cup of sugar, baking powder, baking soda and salt. In another bowl, mix the yogurt with the egg and butter; stir in the dry ingredients. Toss the cranberries with the remaining 1 1/2 tablespoons of sugar and fold into the muffin batter. 4 Spoon the batter into the muffin cups and cover with the crumb topping. Gently press the topping onto the muffins so it adheres. Bake for 20 minutes, or until the muffins are golden and a toothpick inserted in the center comes out clean. Let the muffins cool in the pan for 5 minutes, then transfer to a rack set over a baking sheet. 4 In a medium bowl, mix the icing sugar with the water until smooth and barely runny. Drizzle the glaze over the warm muffins and let it set. Serve the muffins warm or at looklocalmagazine.com room temperature.

Holiday Cheese Ball With the holidays approaching it's nice to have a make ahead treat to serve to family and friends. This cheese ball is a unique blend of sweet and savory that pairs beautifully with a holiday cider or a nice glass of wine.

∙ 1 cup shredded old cheddar ∙ 1 cup shredded Asiago ∙ 1 cup garlic & herb cream cheese ∙ ½ tsp cracked black pepper ∙ 1 tbsp honey ∙ ¼ tsp Dijon mustard ∙ ½ cup dried cranberries ∙ 1 cup cashews METHOD

In a glass bowl combine all ingredients except cashews and blend well with a wooden spoon.

Form into a ball and put ball in the fridge.

3

In food processor or blender buzz cashews into a chunky powder.

4

Pour into a bowl and grab cheese ball from the fridge.

5

Roll cheese ball in the cashew mixture pressing to make sure it is fully covered.

6

Wrap cashew covered ball tightly in plastic wrap and place back in fridge.

7

Let set at least 4 hours and enjoy with those you love.

Serve with a variety of crackers, breads or chips.
