Comfort food is all about slowing down. This dish would really hit home for a touring crew. Serves 4 Instruments • 2 cups plain flour • Salt and pepper, to taste • 2 teaspoons dried oregano powder • 8 small lamb shanks • 300ml olive oil • 2 carrots, finely diced • 3 sticks celery, finely diced • 6 cloved garlic, thinly sliced • 2 fresh bay leaves • 1 bunch fresh thyme, finely chopped • 1 large brown onion, finely diced • 2 litres Napolitana sauce • 200ml beef stock • 200ml red wine Rhythm Pre-heat oven to moderately low, 160°C.
