Dear Premier Club Members, September may mark the end of summer, but it always means a new beginning for the Club! We are excited to embark on our latest new season, and hope you are too. First, let me point out a few “pre-season” improvement projects. In August, we completed a renovation of the locker rooms at the Resort Golf Clubhouse and the Health Club and repainted the Golf Clubhouse exterior. We also began planning a revitalization of the Yacht Club that, once completed, will make it truly best in class. There were smaller-scale improvements across the resort as well, including as a floor enhancement project at Bar Luna. We also developed an exciting new Premier Club website and app that will launch this fall. This new service will enable you to make reservations across the Club and get information on Club activities. You’ll also be able to use it to connect with fellow Members – e.g. to find a playdate for your child, a new tennis partner, or another Member couple with whom to attend a social event. You’ll soon receive a link to log on to the new website, instructions for downloading the app, and an invitation to sign up for email or text notifications so we can send you up-to-the minute information on Club events. As to the upcoming season itself, we’re anticipating our best year of programming yet! We’re bringing back many of our most popular programs and testing out new ideas, all with the objective of appealing to the diverse interests of our Members. We’ll have a new roster of Artists in Residence, new seasons of our Jazziz and Corks & Conversations series, boutique vintners for the popular Tasting Room at Monkey Bar, renowned yoga and zumba instructors, top of the line pop-up trunk shows, performances by Christopher Cross, Jon Secada, and HBO-caliber comedians, plus all the perennial holiday favorites – and much, much more. Finally, if you would like to have a voice in Club program planning, why not attend a meeting of one of our Advisory Social Committees? These committees brainstorm ideas and discuss ways to get even more value out of Club membership. KIMBERLY WALKDEN Kimberly Walkden brings quite a number of qualifications to her new position as member services manager. She studied hospitality management at the University of Central Florida. She has more than six years with the Resort & Club under her belt, including stints on the front desk at the Resort and Beach Club. And, on top of all that, Kimberly has a smile that is downright contagious. Kimberly is excited about the opportunity to work more closely with Members in her new role. “My office is always accessible,” she says. “I want Members to know that they can count on our team, because we’re here to serve.”

MORIMOTO RUNS HOT & COLD From Takao: Morimoto spicy crab appetizer. It has lump snow crab meat with minced pickled ginger and shallots and it’s been roasted with Morimoto’s own spicy mayo and tobiko (flying fish roe) and garnished with chives and cilantro. “The heat of this dish goes well with the selection of craft beer at Morimoto,” Chef Takao Soejima says. “My favorites are Morimoto Soba Ale and Echigo Beer Pub.” The first, a light and refreshing ale, is one of three beers that bear the Morimoto name produced by Rouge Ales of Newport, Oregon. Echigo Beer Pub is a premium red ale from Uehara Shuzou Co. Ltd. of Niigata, Japan.

SQUASH RISOTTO WITH CARAMELIZED APPLES, SAGE AND BROWN BUTTER HAZELNUTS INGREDIENTS 1 medium butternut squash, halved lengthwise 8 Tbsps. unsalted butter 2-3 sprigs of thyme 2 cloves of garlic, crushed

4 cups chicken stock 1/2 onion, minced 1 cup Carnaroli or Vialone Nano rice 1 cup white wine 1 cup Parmigiano, grated 1/2 cup hazelnuts 1 bunch sage leaves, picked Extra virgin olive oil Sea salt (SERVES 4)

Using Carnaroli or Vialone Nano rice instead of Arborio gives this risotto a lush, velvety texture.

DIRECTIONS Pre-heat oven to 400F. Place each squash half on a sheet tray, dot each piece with 1 tablespoon of butter. Chop thyme and crush garlic, place in cavity and drizzle with olive oil and sea salt. Cover with aluminum foil and place in oven; roast until tender (60 – 75 minutes). Cool. When squash is cool enough to handle, scoop out flesh and push through sieve to remove any fiber. While squash is roasting, pre-heat large sauté pan and warm up 2 tablespoons of butter. Add apples and cook until apples are slightly soft and browned. Remove from heat and reserve. In small sauce pan, heat 3 tablespoons of butter over medium heat. Add in hazelnuts and cook until butter begins to brown and the aroma is nutty. Remove from heat; drain hazelnuts from the butter but reserve butter. Toss hazelnuts with sea salt and cool. Once cool, crush hazelnuts with the flat side of a chef’s knife or the bottom of a pan. Heat stock in a saucepan and keep warm. In a large sauté pan over medium heat, heat 2 tablespoons of the brown butter. Add the onion, a few leaves of torn sage and thyme and sauté until soft but not colored (2 – 3 minutes). Add the rice and stir to coat, keep stirring until rice is completely coated and increasingly harder to stir. Add the wine and cook, stirring, until the wine is absorbed by the rice (5 – 6 minutes). Add a pinch of salt. Add 1 cup of stock. Cook, stirring occasionally, until stock is absorbed. Add another cup of stock, stirring until absorbed (5 – 6 minutes). Add the squash and apples and stir to incorporate; then add another cup of stock. When this stock is absorbed, taste the rice. It should still have some chew but be tender enough to bite. If necessary, add the last cup of stock in stages until the rice reaches the desired consistency. Remove from heat. Add cheese and remaining butter; taste and season if necessary. Divide among 4 plates and garnish with chopped hazelnuts, freshly grated Parmigiano and sage.

top talent in the hospitality industry would lead him to the beach, but that’s where he’s spending most of his time these days, as the new general manager of SeaGrille. Mitchell’s career began in Orlando, following his graduation from the University of Central Florida with a Bachelor’s of Science in hospitality management. Since then, he’s racked up eight years’ experience in the hospitality industry, including his most recent stint as food & beverage manager at the Ritz-Carlton New York, overseeing six outlets. There are things about the Big Apple that Mitchell says he will miss, but he’s happy to be back in Florida. “The Boca Raton Resort & Club has such a storied history,” he says. “I am proud to be part of the wonderful traditions established here and I’m excited about getting to know the Club Members, these are people who appreciate what the Resort & Club stands for.”

CHRISTOPHER CROSS IS THE FIRST – AND SO FAR,THE ONLY—RECORDING ARTIST TO WIN ALL OF WHAT ARE KNOWN AS THE “BIG FOUR” GRAMMY AWARDS IN A SINGLE YEAR.

I

IT WAS 1981 when an increasingly dazed Cross heard his name called again and again as the winners were announced for Record of the Year (for the single “Sailing”), Album of the Year (for his self-titled debut, “Christopher Cross”), Song of the Year (also for “Sailing”), and Best New Artist. That year, he also took home the Grammy for Best Arrangement Accompanying Vocalist(s) – again for “Sailing,” a song he never dreamed would be a commercial success. It’s not that he didn’t think it was good; he’s proud of the song and has often said it’s his best. Unlike “Ride Like The Wind” – the upbeat single from the debut album that first put Cross on the charts, “[‘Sailing’] is very dark and introspective,” the Texas native explains. It was Warner Brothers Chairman Michael Ostin who believed in the song and made sure it was released as a single. And the rest, as they say, is history. In addition to his five Grammys, Cross went on to earn both an Oscar and a Golden Globe Award for “Arthur’s Theme (The Best That You Can Do),” which was co-written with Burt Bacharach and Carole Bayer Sager. Overall, he’s composed and recorded some 90 songs, including four #1 singles and 9 Top 20 hits.

“Think of Laura,” his last song to crack the Top 10, came out in 1983. As loyal fans know, though, Cross has kept busy since then, writing, recording and touring. “I’m on the road about 100 days a year,” he told BCL before heading out on a tour that would take him to South America, New Zealand and Australia before bringing him to the Resort & Club on Friday, October 6. Cross has written and released a string of albums since stepping out of the spotlight – but not off the stage. In concert, he may perform songs that pay homage to Joni Mitchell, songs that deal with what Cross calls “mature subjects,” maybe even a song that celebrates his children. But always there will be the hits. “The 1981 Grammys were all about Christopher Cross,” Andy Greene, a writer for Rolling Stone. com, said. “He does remain a popular live act and his performance of “Ride Like the [sic] Wind” with the Roots on Late Night with Jimmy Fallon a couple of years back was one of the great moments in the show’s history. The dude is a sick guitarist. Seriously.” At the urging of fans, Cross has been recording a largely instrumental album that will showcase his guitar prowess. It will be the 14th album to appear on his website and, he says, “It will probably be my last. I’ve been blessed; I’ve had an amazing career.”
