where beer and wine are the only alcoholic beverages that are available to complement your meal. The rising trend of craft and boutique spirits, coupled with a more liquor-sophisticated clientele, has evolved the dining experience to allow cocktails to be an equal hero in a meal and not the forgotten sidekick. Red meat no longer has to be accompanied with red wine nor seafood with white wine, what about pairing a Whiskey Old Fashioned with your steak or a classic Gin Sidecar with your grilled prawns dish?! There are no concrete rules to follow when pairing cocktails with your menu - you just have to let your taste buds guide you through the process. A couple of tips to help you along the journey: Identifying a dish’s biggest flavour allows you to base the cocktail around it, contrasting this flavour. Remember the key word is ‘pairing’, the food and drink have to work well together not overpower or clash. Avoid pairing a sweet dessert with a sweet cocktail. Instead, target a specific flavour in the dessert to highlight. Temperature plays a simple yet important role. A drink that cools the palate pairs perfectly with a hot, spicy meal. Considering the weight and texture of the drink is critical. Be mindful not to pair a light, refreshing cocktail with a heavy steak nor a powerfully alcoholic cocktail with a light meal. Advertise your chosen pairs on the menu, you have designed them to go together so they should be sold together.

Sour pairs well with sweet and bitter but not with salty. Sweet pairs well with bitter and sour but not with salty. Bitter pairs well with salty, sweet and sour. Salty pairs well with bitter but not with sour or sweet.
