There are no concrete rules to follow when pairing cocktails with your menu - you just have to let your taste buds guide you through the process. A couple of tips to help you along the journey: Identifying a dish’s biggest flavour allows you to base the cocktail around it, contrasting this flavour. Remember the key word is ‘pairing’, the food and drink have to work well together not overpower or clash. Avoid pairing a sweet dessert with a sweet cocktail. Instead, target a specific flavour in the dessert to highlight. Temperature plays a simple yet important role. A drink that cools the palate pairs perfectly with a hot, spicy meal. Considering the weight and texture of the drink is critical. Be mindful not to pair a light, refreshing cocktail with a heavy steak nor a powerfully alcoholic cocktail with a light meal. Advertise your chosen pairs on the menu, you have designed them to go together so they should be sold together.
