ABSTRACT
The present work refers to the design of a Gastronomic Village, located in the Candeias neighborhood, for the city of Vitรณria da Conquista, Bahia. The purpose of the study is to design a Gastronomic Village for the municipality, which offers leisure, culture and entertainment, including restaurants, a cultural patio and a technical teaching module in gastronomy. In its principle, the deductive, comparative and historical method was used to better conduct the research. A study on the evolution of gastronomy throughout human history was carried out, presenting a temporal analysis that starts from the first techniques signaled in the prehistoric period, until the consolidation of gastronomy as an area of knowledge, and can be considered as cultural heritage. In addition, it was measured the relevance of the existing Gastronomic Villages at national and international level, its social and tourist function that are exercised with the purpose of meeting the client's expectations and needs. In this way, the population has its collective interest stimulated and the perceptions regarding the pleasure provided by the art of gastronomy create new scenarios, recognizing the preferences and palates, consequently, attracting clients to the enterprise
