The Budapest Advent and Christmas Fair, with over 800,000 visitors, has become well-known as one the most beautiful European Christmas Fairs over the years, and also appears to have become one of the trademark destinations contributing to Budapest’s international tourism success. This year, new programs have been added to ensure continued success in the event, including an array of thematically exhibited culinary and gastronomical foods through gastro-themed weeks and open kitchens, awaiting you. Culinary demonstrations and tastings will be held here in the heart of Budapest, from 10th

November to 31st December, where you can become familiar with Hungary’s food and wine regions – all in one place! Our gastro-hackers and chefs will guide you through the basics of traditional Christmas ingredients and festive meal preparation. You are welcome to taste it all! The tasting also includes drinks! You can select a wine of your choice from any of the Hungarian wine regions. The authenticity and accessibility of Hungarian wines can ensure a genuine experience for foreign and native guests alike while visiting the Hungarian regional winemakers here at Vörösmarty square! HÜTTE BISTRO The aim of the Hütte Bistro is to provide a taste of thematically exhibited culinary and gastronomical foods from the Carpathian basin, made from local ingredients by uncompromising chefs, sommeliers, wine barons, chocolate and tea experts, pálinka masters, beer makers, baristas and coffee roasters.

The Hütte Bistro is the representative catering venue for the entire Budapest Advent and Christmas Fair. It functions as an open kitchen that introduces various themed gastronomical items from week to week to the fair’s guests as a revival of the square.

TAMÁS CZINEGE He has run several large and significant coffee houses, but his workmanship has always centered around showmanship. He has created a unique genre of gastro show with his affinity for performance through an emphasis on entertainment, which occurs verbally as well as through scents and tastes, whether in front of a few or several hundred guests, in an open kitchen or at a food festival, at a wine terrace or between rows of grapes in a vineyard. He has been able to establish good relationships with many different local wine, cheese and ham producers, authentic bakers, various premium merchants, coffee roasters, baristas, sommeliers and many other key players in the restaurant business. He considers promoting Hungarian gastronomy as well as quality local food and drink to be his calling. in Vörösmarty square, equipped with an open kitchen, which will also function as a gastronomical workshop every day, includes a professional coordinator, a cheese specialist from the Gastro-Hack Team, partially owned by Tamás Czinege, Richárd Németh (wine writer) and Árpád Pintér (gastro photographer). the Aichelberghof Restaurant in Austria, lead the Káli-Kapocs Restaurant upon his return and then later returned abroad, where he travelled all the way to Iran later to run the Kris Kringle Restaurant. His work can be considered more than a calling, it is a way of life.

November 10th-19th: SAINT MARTIN’S WEEK GOOSE DISHES & NEW WINES

Saint Martin’s Day, the last celebration to take place 40 days before Christmas and prior to the fasting period (Advent), was always celebrated with feasts, balls and fairs. Large festive feasts were organized at this time of year in order to ensure the following year would be a bountiful one. Saint Martin’s Day is typically centered on eating goose dishes, since fattened geese were ready to be consumed by November. Such dishes included smoked-goose soup, roasted goose served with braised red cabbage and bread or potato dumplings, as the following saying suggests: “One who does not eat goose on Saint Martin’s day will remain hungry throughout the following year.” Another custom includes raising glasses of new wine after the November Saint Martin’s Day feast.

November 20th-26th: WEEK OF THE WILD WILD GAME DISHES & WINES FROM THE NORTHERN HUNGARIAN REGION

There has always been plenty of wildlife in the forests of the Carpathian basin, and therefore many wild game dishes have become a part of the ancient Hungarian cuisine. Venison, wild boar and rabbit are some of the more popular regional offerings. Medium- to heavier-bodied red wines suit such dishes best, while the full-bodied ones, especially from our own local wines, like the Blue Frankish and Bull’s Blood, as well as the even heavier Cabernet types from the Eger region.

The products of our kitchen culture are the results developed from more than a thousand years of history in which cabbage dishes have also become a highlighted part of the cuisine. Stuffed cabbage can be consumed at any time of the year, but is usually an integral part of the Advent period or the Christmas feast itself. Wines from our smallest wine area, the Somló region, best suit cabbage dishes. Primarily, these include the Juhfark (sheep’s tail), Hárslevelű and Tramini types. But lest we forget, the red and rosé wines from the Somló region, due to their character, could harmonize equally well with any cabbage and meat dish.

Christmas preparations begin with a short fasting period. The Christmas fasting period, or Advent, begins on Saint Andrew’s Day, November 30th.

The fast is a blissful challenge, since the Advent period usually consists of abstinence from meat on Wednesdays and Fridays and includes not just vegetables, but fish as well. Gastronomically, white wines pair well with fish dishes and there are plenty of suitable varieties in the Carpathian region. Furmint, Riesling, Leányka as well as Kéknyelű wines can all be considered prime varieties for fish dishes.

One of the most well-known Hanukkah traditions includes consuming deep-fried foods – Doughnuts, lángos (deep fried dough), sweet or salty scones and latkes (potato pancakes). A lesser-known tradition includes consuming dishes made of dairy products during the celebration. Throughout the world over the centuries, the scattered Jewish people of the diaspora have found various ways to combine deep-fried and dairy foods, incorporating them into their Hannukah feasts. Chicken or goose fat was used in baking in many areas where olive oil was not readily available, therefore also using dairy products to enrich them was not an option. Latkes made of potatoes and eggs, apple pie and other dishes that were prepared without dairy products in these regions and have since become some of the most popular Hanukkah dishes.

In Hungary, most families celebrate Christmas Eve together on December 24th, while others in Western Europe usually celebrate on the 25th. Christmas foods are usually consumed by the family and relatives on this day in Hungary, including the traditional fish soup, stuffed cabbage and stuffed meat dishes, all topped off with a Gerbeaud pastry. Kadarka wine, which suits the fish soup as well as the pastries, may appear at this time, but the Ice wine or the Aszú varieties may also play an important role at the table.

It is important to prepare foods that according to tradition bring good luck at New Year’s, as well as to avoid certain dishes on New Year’s Day. For example, you cannot consume poultry because the birds will “scratch away your good luck”, while eating fish is equally bad, since “your fortune may swim away”. It is better to be safe than sorry, and therefore you should consume some roasted pork since it brings good luck, especially to those who get its tail. Legumes are a symbol of wealth, while lentils and beans are also symbols of prosperity. Beer and sparkling wine both suit roasted pork equally well.

Regular Christmas fare: stuffed cabbage, homemade kolbász sausages, hurka sausages, goulash soup and the highly popular foie gras and Mangalica pork burgers. V2 Piknik Centrum: Among its range of seasonal delicacies one will come across such gourmet Hungarian specialities as cab­bage stuffed with goose, the Hun-dog made from a crispy baguette, Vecsés pickled vegetables and fried sausage, Székely cabbage in a rye loaf, plus every gourmet’s favourite, duck confit steeped in pálinka fruit brandy. The Piknik Centrum stand fashioned from original peasant furniture welcomes guests with an authentic presence and attractive lighting. V3 Alem Duna: Alem Duna grill house welcomes its guests with an easy-to-access, charming seasonal stand serving traditional artisan gastronomy perfect for the winter celebrations and homemade typical dishes of the Carpathian Basin. V4 Anonymus Bar&More: All the dishes of the Christmas Menu of the restaurant represent the the most favoured native dishes. The chef of Anonymus Bar&More pays special attention to use Hungarian and most of all authentic materials. They create a unique mixture of

rich, Hungarian relish and new gastronomic trends which gives a particular culinary experience. Besides the rich menu special hot beverages – like hot lemonade with ginger and lavender, made out of home made syrup, cranberry mulled wine from Transylvania or the queen of all mulled wines, the hot Tokaji Édes (sweet wine) - are offered to our guests. V5 Katlan Tóni’s Kitchen: Christmas bar with hot handmade cherry beer, and ‘krampampuli’, a sweet spicy punch. Take a tour with Katlan Tóni through the gastronomy of rural turn-of-the-century Hungary. Special stews and other tra­ ditional Hungarian dishes. V6 Éléskamra Gastro: Thanks to our permanent smallholder suppliers we serve all the best local dishes such as knuckle of pork baker style, mangalica pork sausage with mashed potatoes and onions and locally baked bread, as well as cabbage stuffed with mangalica pork. Our professional and attentive staff will always be ready to help guests make the right choice. V7 Grillkirály: We welcome guests with our hand-crafted ‘sparhelten’ flatbread. Everyone will find their favourite from the nine different flavourings on offer. Try our flatbread stuffed with breast of chicken or knuckle of pork, or maybe our fish or even vegetarian flatbread!

V12 Roasted chestnuts and hot drinks: Fragrant cinnamon-mulled prune juice, spiced apple juice, lemon flavored tea, coffee, hot chocolate as well as another vital part of the Advent season – roasted chestnuts! ARTISAN CHRISTMAS The Budapest Advent and Christmas Fair will feature more than 100 artisans and their beautiful crafts at Vörösmárty and Fővám squares. In order to partake in such a largescale event, artisans are carefully handpicked and must adhere to the strict rules and regulations of the fair by exhibiting handmade items of the highest quality. More than half of the vendors are members of the Hungarian Artisan Association. Close to 20 professions can be found at the fair, including guests from here at home and bordering countries, which is a clear expression of the diversity and high quality of the artisans present at the event. Colossal Advent Wreath: The members of the Artisan Association are prepared to surprise you again this year with their lavish array. The Advent wreath will be on display at the busiest square in Budapest and was made by Kata Horváth, a professional basket weaver from Zöld Fűz spinning mill. The wreath is more than 3 meters wide and 1 meter thick, and is the most beautiful decorative piece at the square as well as an important part of the atmosphere and a symbol of tradition. The base of the wreath consists of 2 tons of natural

willow wicker and is covered with 4 bundles of Norman pine branches, quilted together and decorated with 5-6 kilograms of rosehip. The wreath, modern yet authentic, can become an Advent decoration for all in the heart of the city. Stage: The stage will get a new robe this year as an innovation on behalf of an idea drawn up by the artisans. Ten angels, more than a meter tall, will come to life as a part of the set. Zsolt Ambrus (Jeweler and goldsmith), Szilvi Bozsik (Textile and industrial designer) and Csaba Pankotai (Leather artisan) are responsible for the special work and elements of scenery. The angel puppets will be seen holding a trombone in their hands, symbolizing art and craftsmanship, on the sideboards. Their frames were made of welded netting and their limbs have been covered in a geotextile, moss. Close to 2000 Christmas lights adorn the angels, which will provide beautiful bright lighting during the evening shows. Their wings and halos are made of foil sheets. Seven of the ten angels will be dancing on the top of the stage, while three of them will be within.

Light-painting on the Gerbeaud’s walls: Enjoy a warm drink or some delicious food while admiring the light-painting of the Advent calendar on the Gerbeaud’s walls. The light-painting can be seen every day after 5 p.m. till closing.

Playhouse Arts and crafts for the smallest ones in a heated house. Children can bake and glaze gingerbread, and prepare gifts for underprivileged children, with the help of a supervising teacher. Free sessions between 2 and 6 pm on week­days, and on week­ ends from 10 am to 1 pm, and between 4 and 7 pm.

Visit by the real Santa Claus 6th December 4-5 pm Have you met the real one yet? If you haven’t, this may be a good occasion to whisper your wishes. Children and adults alike can visit Joulupukki from Finland in the Vörösmarty square.

Lighting the Advent candles Each of the four candles of the vast Advent wreath in the Square on the sundays of Advent, at 4 pm will be lit in a small ceremony.

Luca Day Customs at the Tradition Hütte on 13th December We await guests who are interested in getting to know ancient customs at the Open Workshop on 13th December, Luca Day. Lajos Viha will be carving Luca’s chair while Ildikó Dezső will create little witches and other surprising specialties before of the audience.

Advent Calendar Charity 1st December, 2017 The Hungarian Artisan Committee would like to donate more than fifty gifts as a charitable deed in order to help those in need during the season of giving. The donated items, which will be on display through 24 glass windows of an advent cal-

endar near the Hütte (in front of the Gerbeaud), will be sold at an auction at the Budapest Festival and Tourism Centre. Any person, company, or corporation may take part in the initiative. The total amount earned at the auction will be given to the civil service or charity chosen for that given day.
