ORANGE ICED ROCKY ROAD Ingredients 5th Avenue® Dark Chocolate Icing 5th Avenue® Orange Icing Digestive Biscuits Mini Marshmallows

Heat 5th Avenue® Icing, add in broken biscuits. Stir until fully covered then add in marshmallows. Press into a 12" x 7" foil traybake. Place in the fridge for 2 hours to set. Heat 5th Avenue® Orange Icing to 45ºC and flood over the top. HALLOWEEN WHOOPIE Cake Base: Chocolate Mississippi Mix Water Vegetable Oil

Add the liquids to the Macphie Chocolate Mississippi Muffin/Cake Mix in a machine bowl and, using a beater, mix on slow speed for 1 minute. Beat for approximately 6 minutes on middle speed. Deposit 35g batter onto a flat baking sheet Bake for approx. 15 min at 180ºC (360ºF). Beat 5th Avenue® Orange Icing and margarine to desired consistency. Once whoopies are cool, sandwich together with the orange buttercream. PUMPKIN CUPCAKES Cake Base: Chocolate Mississippi Mix Water Vegetable Oil

Add the liquids to the Macphie Chocolate Mississippi Muffin/Cake Mix in a machine bowl and, using a beater, mix on slow speed for 1 minute. Beat for approximately 6 minutes on middle speed. Deposit approx. 36g into paper cases. Bake for approx. 25 minutes at 180ºC (360ºF). Beat 5th Avenue® Orange Icing and margarine to desired consistency. Once cupcakes are cool, pipe buttercream in strips across the top, finish with a small bulb of green buttercream on top. PUMPKIN CAKE POPS Ingredients: Plain Cake Crumb 5th Avenue® Orange Icing

Place cake crumbs into a small Hobart mixer. Heat 5th Avenue® Icing to 45ºC and add to the crumbs. Mix on slow until ingredients have been thoroughly blended. Scale off 45g pieces and ball up. Place a stick into the top of each pop. Place in the fridge for 2 hours to set. Heat 5th Avenue® Orange Icing to 45ºC and dip the pop. Once set, finish by drawing a face using black food colouring. CHOCOLATE ORANGE ECLAIRS Ingredients: Choutex Cold Water

Place ingredients into a mixing bowl. Beat for 2 minutes on 1st speed. Scrape Down. Beat for 6 minutes on 2nd speed. Transfer into a piping bag and pipe 4 rows of 4 eclairs, approx. 5" long and 3/4" wide onto silicone lined baking sheet. Leave for 1 hour prior to baking. Bake for 35 minutes at 220°C (425ºF), open damper after 25 minutes. Once cool, heat 5th Avenue® Orange Icing and 5th Avenue® Dark Chocolate Icing to 45ºC. Dip top of éclair into 5th Avenue® Orange. Using a piping bag with a fine tube, pipe the 5th Avenue® Dark Chocolate in a zig-zag pattern on top of the 5th Avenue® Orange and feather.
