The key distinction: finishing in Pedro Ximenez (PX) sherry barrels, using a traditional solar system, resulting in degree of extra maturity in each level of tequila. In their second collaboration, Tequila Ocho founders Carlos Camarena and Tomas Estes join Alexandre Gabriel of Maison Ferrand of France to create three distinct blends of añejo: Tropical is rounded by aging Ocho in rum casks from Fiji, Trinidad, and Panama; Continental is aged exclusively in casks previously containing Cognac Ferrand Ambré; and Transatlantic combines casks previously used for both rum and Cognac.
