LUXURY OLD FASHIONED DOUBLE DOSE

When a leaky cask forced Kentucky Peerless Distilling Company to transfer the bourbon to another charred oak barrel, the end result was an especially complex whiskey. That discovery has since prompted the launch of the brand’s Double Oak Bourbon, which yields notes of spicy oak, cinnamon, honey, and leather. SRP: $84.99 per 750ml bottle

The classic Old Fashioned is taken to new heights in the Gold Fashioned, the ready-to-drink concoction from Sunday’s Finest. Created by bartender and spirits producer Robert Haynes, the global-inspired recipe melds a base of 8-year straight Kentucky bourbon and 5-year Indiana straight rye whiskey with a bitters blend comprising Herat saffron from Afghanistan, Tahitian vanilla bean, single-origin Ecuadorian cacao, Seville orange peel, and gentian root harvested in the French Alps. The cocktail is rounded out with Malawi demerara sugar. SRP: $150 per 750ml bottle

After maturing in American oak barrels for 18 months, Tanteo Tequila’s seasonal, limited-edition Tanteo Navidad expression is infused with a warming medley of pequin chile, nutmeg, clove, cinnamon, ginger, and cocoa bean. In the spirit of the holidays, 10 percent of all profits from the sales of these bottles will be donated to Un Salto Con Destino, a charity providing health services to underprivileged members of Mexico’s El Salto and Juanacatlan communities. SAVORY SELTZER

To make its Roots of Ruin Harvest Seasonal Gin, Kentucky distillery Castle & Key embraced the same production methods as it does for its rye whiskey. Rather than placing the distillate in a barrel, however, it’s redistilled into vodka and steeped with sumac, then distilled again. A verdant label designed by Stranger & Stranger hints at the botanicals of juniper, coriander, Angelica root, star anise, cedar leaf, fennel, and bay leaf within. SRP: $36.99 per 750ml bottle

Texas brewery Shiner is as well-regarded for its hard seltzers as it is its beers. One intriguing addition to the category is the Juicy Dill Pickle Straight Shooter. Made with real sweet and sour dill pickles based on a deli-style recipe from brewmaster Jimmy Mauric’s family, the bracing 4.5% ABV seltzer is laden with dill, coriander, and spices. Waterford Whisky is known for its Single Farm Origin releases. Taking cues from the châteaux of Bordeaux, The Cuvée is even more complex, composed of 25 disparate whiskies, each one sourced from a single Irish farm’s single barley harvest and deftly stitched together by head distiller Ned Gahan. The Cuvée, Waterford Whisky’s flagship Irish single malt, expresses notes of lemon zest, dark chocolate, and marmalade.

2. ROOSTER ROJO SMOKED PINEAPPLE TEQUILA

To create Amber Beverage Group’s Rooster Rojo Smoked Pineapple Tequila, classic Rooster Rojo Añejo, aged for at least one year in former bourbon casks, is invigorated by a tropical infusion of roasted Red Spanish pineapples. Using only 100 percent Blue Weber agave, the tequila is blended with water that is filtered through Mexican silver.

5. FUJI WHISKIES

Japan’s Mt. Fuji Distillery now has a presence stateside via Distinguished Vineyards & Wine Partners and Winebow. The distillery, located just a few miles from its namesake mountain, is one of the few to use snowmelt in its whisky production. In addition to the FUJI Single Grain Whiskey, a blend of three different grain whiskies (American, Canadian, and Scotch) there is the complex FUJI Whisky, which unites three Japanese and Scotch varieties.

3. DRINK RAMONA’S AMARINO SPRITZ

The dry, orange-hued Amarino Spritz is the newest addition to the Drink RAMONA line-up of flavors. Jordan Salcito, founder of the 3E Certified Sustainable winery, spent two years developing the recipe for this low-alcohol (5% ABV), 90-calorie canned aperitivo, which melds organic grapes harvested from vineyards in Sicily and the Veneto with bitter oranges and herbs.

Cleverly encased in a tin oil can, EnGINe Gin plays on founder Paolo Dalla Mora’s passion for motorcycles and classic cars. 7. MIKKELLER’S GAME OF THRONESINSPIRED BEER

Danish brewery Mikkeller and Warner Bros. Consumer Products, collaborators on last spring’s rollout of the Iron Anniversary IPA commemorating 10 years of Game of Thrones, have teamed up again. This time it’s for a trio of wintry beers that pay tribute to the HBO series: the fruit-forward Night King Double IPA ($13.99 per four-pack of 16 oz. cans), easy-drinking Ghost Visions Lager ($20 per four-pack of 16 oz. cans), and bourbon barrel-aged Castle Black Stout ($22 per 500ml bottle.)

10. THE MACALLAN HARMONY COLLECTION RICH CACAO

For the Macallan Harmony Collection Rich Cacao, the first limited-edition whisky in a series of single malts highlighting innovative sustainable packaging, the Macallan whisky maker Polly Logan headed to Girona, Spain, and took a deep dive into chocolate with celebrated pastry chef Jordi Roca and chocolatier Damian Allsop. Housed in a recyclable and biodegradable box made with natural by-products from the chocolate-making process, the whisky fittingly culminates in a rich chocolate finish.

8. PATRÓN SHERRY CASK AGED AÑEJO TEQUILA

Former master distiller Francisco Alcaraz hatched the idea for Patrón Sherry Cask Aged Añejo, the brand’s first release in two years. The tequila, which rests in Spanish oak barrels that once held Oloroso sherry for over two years, is blended from different casks by current master distiller David Rodriguez to elicit a spirit that is rife with caramel, toasted walnuts, and coconut.

Smirnoff ’s seltzer line expands with a Poco Pico pack of four bold varieties: Mango Chili, Pineapple Jalapeño, Spicy Tamarind, and Spicy Margarita are served in colorful cans reminiscent of Día de los Muertos. 2019 was the last year that Michter’s released its 20 year Kentucky Straight Bourbon. Now there’s a 2021 rendition of this limited bottling culled from barrels selected by master distiller Dan McKee. ANNIVERSARY RELEASE

To celebrate 10 years in business, and the 125th anniversary of the Bottled in Bond Act in 2022, Illinois distillery FEW Spirits has launched the 100-proof FEW Bottled in Bond Bourbon Whiskey. The four-year-old whiskey has a mashbill of 70 percent corn, 20 percent rye, and 10 percent malted barley and was aged in Minnesota oak barrels. SRP: $50 per 750ml bottle

BURST OF SMOKE

Graced by a Stranger & Strangerdesigned label, the 97.8-proof No Name No. 3, the final release in Compass Box’s heavily-peated No Name series, stars malt whisky from Laphroaig Distillery that is aged in re-charred hogsheads. It is bolstered by malt whisky from Bowmore Distillery as well as Compass Box’s own Highland Malt Blend, resulting in smokiness rounded out with hints of baked pear and pineapple. A NEW ERA FOR AMERICAN SPARKLING WINE As emerging and legacy domestic sparkling wine producers alike invest in quality and ageability, the U.S. market is ready to embrace a wider array of home-grown bubbly

merican sparkling wine has been a serious category since Jack and Jamie Davies brought Calistoga’s old Schramsberg estate back to life in the mid-1960s. But in recent years, increasing attention to quality and versatility within the category has breathed new energy into American sparkling wine.

At the same time, changing consumer mindsets and Champagne supply shortages have allowed American sparklers to penetrate parts of the market that had primarily been occupied by their French counterparts. Producers have taken notice, resulting in an uptick in the number of winemakers crafting sparkling wine, the range of styles they’re crafting, and the quality and ageability of the wines themselves.

“The market was dominated by a handful of domestic brands for years, but the entire category is expanding these days,” says Ryan Davis, estates division regional manager in New York, New Jersey, and Pennsylvania for Jackson Family Wines, whose Gran Moraine and La Crema wineries produce sparkling wine. American sparkling wine is reaching an inflection point—and it’s time to pay attention. INCREASING QUALITY AND EXPANDING VARIETY

This evolution of American sparkling wine makes sense, points out Remi Cohen, CEO of Domaine Carneros—after all, the category is still relatively young. “There has definitely been an increase in quality in American sparkling wine, and there are also more producers who are willing to dedicate the time, capital, and patience required to make sparkling wine,” she notes. Classics like Roederer Estate, J Vineyards, Domaine Carneros, and Schramsberg Vineyards largely built their reputations on ex-

REGION FOCUS

At the same time, the market has become more receptive—and favorable—to American sparkling wines. First, consumer perceptions of sparkling wine in general have shifted from a category solely reserved for special occasions to one embraced for everyday consumption. “Dismantling preconceptions over how and when sparkling wine can be consumed has been an important driver of engagement with new consumers,” says Dan Mettyear, research director for IWSR Drinks Market Analysis. “For years, sparkling wine consumption has been anchored on special occasions and the endof-year season. The broadening into more casual, summertime-oriented consumption has been at the core of the category’s steady expansion in recent years.” While much of that shift was spurred by affordable sparklers like Prosecco, it has trickled up to higher-quality sparkling wines, too—including domestic ones. Market factors have also conspired to make top-quality American sparkling wine more appealing. Though consumer purchases of sparkling wine—specifically Champagne—plummeted in the early days of pandemic lockdowns, demand rebounded and combined with supply chain disruptions to create Champagne shortages ahead of the 2020 and 2021 holiday seasons.

“There was already an increase in demand and awareness for California sparkling wine that began before the recent Champagne supply issues,” explains Cohen. “There may be an even more dramatic bump in sales for American sparkling wine these holidays with the shortages of Champagne, but I think both categories will remain in a strong position when Champagne supply issues are overcome.” It may be several years before those supply issues are overcome, though, thanks to smaller vintages in both 2020 (due to yield restrictions from the Comité Champagne) and 2021 (due to extreme weather), creating a continued gap that American sparkling is ready to fill. Champagne prices have also increased in recent years amidst rising demand and competition among buyers. “As restaurants move through their stores of Champagne and begin to buy new vintages and bottles … we are no longer able to sell these bottles at the prices we had pre-pandemic,” says Jill Zankowski, the beverage manager for St. Anselm in Washington, D.C. Though she has seen a huge push in Champagne sales as consumers return to restaurants, “the initial push has waned, and people are reminded of the price tag of Champagne more often than not. The higher these prices go, the more likely folks will be to purchase the alternative, and American producers will inevitably benefit.”

Though buyers are looking for better-priced alternatives, it may take time before consumers readily reach for American sparkling (though prestigious domestic sparklers can climb well north of $100 per bottle at retail, many quality options can be found for under $40). “Thus far, I have not necessarily seen American bubbles as an easy alternative for Champagne, but I think that is simply a matter of time and availability,” says Zankowski. And with the renewed focus on quality, variety, and terroir-expressiveness in American sparkling wine, there’s no reason why U.S. consumers shouldn’t consider these sparklers excellent alternatives to their French favorites. “What we’re producing is just as outstanding and every bit as delicious as French Champagne,” says Davies. “Champagne producers themselves recognized this back in the ’70s and ’80s when they first came to California and began producing sparkling wine stateside as well.” But even more than that, it’s time to recognize everything that American sparkling wine has to offer in its own right—without comparison to Champagne. “With the right bottles, it’s not like there is a qualitative difference, but the two will never be congruent,” says Moore. “[That’s] the beauty of terroir.” n

AGAVE, DISTILLERY STANDARDS, BRANDS AND FLAVOR PROFILES From a distance the blue gray agave fields of Amatitán look like a vast lake, a shimmering mirage, an illusion created by light heat and altitude. But the history of tequila in Amatitán is no mirage. The roots of tequila production in the community dates back to the 16th century when agave was used to make fermented drinks and cloth. Agave, called maguey, has been cultivated in and around Amatitán since the times of the Aztecs. The unique soils, climate and elevation all contribute to the high quality of the Blue Weber Agave harvested by jimadores who are highly skilled in identifying ripe agave, which ripens in between 5 and 12 years. Tequila Selectos de Amatitán owns and maintains 4 hectares with 18 million agaves of different ages planted primarily of the strain Blue Tequilana Weber Agave.


The agave in the Amatitán area of El Valle is grown in fertile dark brown earth, and produces spicy, earthy and herbaceous agaves, rich in volcanic mineral. The soil is abundant with minerals such as copper, iron, potassium and silica. Much like wine, Agave acquires different profiles and flavors depending on the topography, soil, and climate that they are grown in. The location and topography of Amatitán is ideal for the cultivation of agave. “The climate is perfect for growing agaves, warm and dry, it doesn’t get cold at all, plus the ground is full of unique minerals, the altitude and our water high minerality content,” notes Real. Tequila Selectos de Amatitán adheres to strict agricultural practices to ensure the long-term sustainability of the agave fields. Support from the government guarantees the planting of agaves, with farming objectives in place to re-plant within weeks after clearing a lot. Young agaves are not pulled allowing them to reach the proper maturity point for the creation of good tequila. Additional subsidies for machinery and more help the distillery meet production demands and preserve long-term contracts. Tequila Selectos de Amatitán operates under high standards of quality production and complies with all government mandate and regulations. The distillery holds Kosher certification and is C-TPAT ready and approved.

Master Distiller Luis Trejo, a professional in the tequila industry for over 30 years, oversees the distillation process at Tequila Selectos de Amatitán. Maestro Luis Trejo brings the same level of attention and detail to the production of partner brands as he does for the Tequila Dinastía Real brand. Today under the leadership of Roberto Real who has been managing the Tequilera since 2018, the company has double its Tequila production, increased their maturation areas (rested tequila), and created and implemented an exclusive all “Artisanal” area for the creation of all ceramics bottles. Tequilas Selectos de Amatitán has created over 500 new jobs between the agave fields and the Tequilera to support the economy in Amatitán. CREATING WELCOMING AND FLEXIBLE SPACES

A properly designed entrance allows the guest to immediately ascertain whether there is a host or they should seat themselves, and whether there is table service or they should order at the bar, among other practical concerns. It’s also important for the overall room or space to have flexibility. “How do you make a room that’s large feel intimate?” muses John Dye, formerly an architect and now the owner of several prominent and historic Milwaukee bars, including Bryant’s Cocktail Lounge and At Random. Many bars make 40 percent or more of

gross revenues on weekend nights, but a space that accommodates 125 revelers on a Friday also needs to feel comfortable on a Tuesday with just a handful of guests unwinding after work. When referring to the layout of a room, owners often use the term “energy centers.” The main energy center of any bar is the physical bar itself, but a lounge or parlor seating area, large piece of artwork, or predetermined traffic pattern can also delineate an energy center. Astutely designed rooms will balance the energy centers and types of seating, avoiding a lopsided feel or having any dead areas (a spot that is usually the guest’s last choice). WHAT TO HIDE

tional lighting for the bartender is also critical, yet should not impact main bar space. Everything needs to be on a dimmer switch. And of course, there’s always the capacity for human error. “Even when the lighting is designed correctly, it can be ruined by staff leaving the dimmer switches too high,” laments Josh Harris, an owner of Trick Dog in San Francisco. Additional switches and circuitry (meaning that more than one fixture isn’t tied to the same switch and dimmer) are worth every penny. The ideal Kelvin rating (a scale of brightness in light bulbs) for most bar usage is 2200. But this is a mere sample of the many intricacies of great lighting design. “Lighting is the great meeting of form and function. If you can accomplish both you’re either really good or lucky,” says Harris.

WHEN INCHES SAVE DOLLARS

Let’s say you’re ordering a Manhattan in a professionally designed, high-volume cocktail bar. The quick arrival of that drink typically connotes a plethora of infrastructural details, painstakingly designed and implemented, often at great cost. The bartender reached for bourbon and vermouth, and likely did so within an 18-inch radius of their positioning. Functional lighting (even with the room properly dimmed) allowed them to see the many bottles in the well. After stirring, the mixing glass may have been cleaned on a star rinser to save a few seconds of using a sink. The used strainer was rinsed by a small foot-pedal-operated faucet, thus leaving the bartender’s other hand free to start on the next drink. “I watch how many movements it takes to make a drink or a round. If it takes a long time to make

a three-ingredient drink it’s probably not going to be a profitable bar,” says Joaquin Simo, the proprietor of New York City’s Pouring Ribbons and Alchemy Consulting. Even the body angle of the bartender requires consideration. Simo notes that if the rail where drinks are built is even a few inches too far away from the bartender it can lead to lower back issues, elbow problems, or plantar fasciitis. On the other side of the bar, there are a multitude of angles, measurements, and placements that all must align to create a comfortable visit for the guest. “People usually go to a bar to talk to someone, so the seating needs to make that easy,” says Robson. “For instance, a pair of lounge chairs together should be at a 120° angle.” The ideal height distance between a seat and table or counter surface is one foot. A bar foot rail should be six inches tall. Forty-two inches is the perfect bar height. Bar owners use these and other measurement standards (of which there are many) to attempt to create an ideal guest experience. DESIGN CONSIDERATIONS FOR NEW BAR REALITIES

Bars have been an integral part of society for several millennia, and that certainly won’t change. Bars have weathered plagues, wars, and everything in between. But with each cataclysmic societal shift, businesses grow and adapt. “You would be an irresponsible operator if you didn’t take [the pandemic] into account,” says Simo.

While none of the previously mentioned design fundamentals were altered by COVID-19, it added a host of other variables to consider. In considering real estate, many owners will be less favorable toward a location that doesn’t have the possibility of outdoor seating. “Businesses, cities, and local governments have realized that people love to drink outside— it would be foolish for regulations not to move forward [with that],” says Castro. While in the past a host stand may have only needed to house a few menus and a notebook or iPad, now there may be numerous additional requirements: sanitizer, an infrared thermometer, masks, and other safety items. Guests are also more aware of safety and cleanliness now, which entails more attentiveness from the staff. Designers and bars are already integrating pandemic-related safety concerns into their operations. In time it will be just another of the myriad details that go into opening a bar and creating the right experience for a customer. In the end, what exactly makes the difference between a great and memorable experience and a lackluster one? many involving equipment that should, by necessity, be hidden from the guest. “How, why, and where the cleaning supplies are kept is key,” says Harris. The point of sale (POS) machine is another example of something that must be accommodated in each design. “You want to make it as invisible as possible,” says John Bencich, an architect who founded Atlanta’s Square Feet Design with his wife Vivian and has designed Atlanta area hospitality spaces like Kimball House and Halfway Crooks. The “often utilized but best neither seen nor heard” category also includes such concerns as refrigeration equipment, ice machines, air tanks for beer taps and soda guns, prep areas, dump sinks, trash, recycling, and perhaps even grease trap emptying. Ideally, these tasks are all accomplished while the guest retains the tacit illusion that everything within the bar happens with the same fastidiousness they see exhibited in their fancy drink and the shiny bartop it rests upon.

espite lingering pandemic concerns, persistent staff shortages, and supply chain woes, retailers are looking forward to a holiday season that could almost feel normal—at least compared to last year. We spoke with retailers across the country to get their top tips for ensuring the season goes as smoothly—and profitably—as possible.

A HEAD START WITH YOUR 01 | GET CORPORATE CLIENTS When it comes to assisting clients with their gift lists, there’s no such thing as too early. “This year, we were very proactive,” says Jeffrey Wolfe, owner of Wolfe’s Wine Shoppe in Florida. “For the first time, I mailed an actual letter to former, current, and potential clients focused on tips for stress-free holiday personal and corporate gift-giving. I laid out the required timing, the info I need, and what I can do in terms of selection, gift notes, and delivery.” “We contact our clients in October letting them know that gifting early is the

new late,” explains Karen Williams, proprietor of ACME Fine Wines in Napa Valley. She also lets them know that they’ll need to use the ACME company spreadsheet. “We have a proprietary format that speeds up the gifting process so that unnecessary, precious, unavailable time isn’t spent deciphering or reconfiguring hundreds of business and personal spreadsheets. It has allowed us a streamlined holiday bliss of our own.” And don’t forget the virtual get-together. “People are still working remotely and companies are finding unique ways to keep the team together,” says Sunshine Foss, the owner of Brooklyn’s Happy Cork.

“You definitely want to take advantage of this.” Check in with existing clients to see if there’s interest in offering a virtual tasting to their team or their own clients. This can be as simple as conducting a Zoom tasting focused on the wine your client is already gifting, or as complex as working with a food purveyor to do a combined tasting. While it may be too late to schedule something for the holidays, you can also lay the groundwork for events in the new year.

SUPPLY CHAIN ISSUES IN 02 | CONSIDER YOUR BUYING DECISIONS Supply chain disruptions have made stocking up on core items a challenge for over a year—and the holidays will only put more pressure on this stressed pipeline. It will be particularly problematic for key categories like Champagne. “We are locking in Champagne buys much earlier than we might otherwise,” explains Jill Bernheimer, owner of Domaine LA. She ordered Champagne for her December wine club in September. “I can’t risk not being able to get product which is exactly what might happen if I hesitate even a few days.” This year it will be critical to have a list of backup options—the more, the better. “This year, we are moving a bit beyond the well known names of Champagne and trying to find more delicious sparkling wines from around the world,” says Cara Patricia, cofounder of DECANTsf. “We are bringing in a greater variety of SKUs from the smaller growers whom we've built relationships with over the years.”

DEEP ( AND FAMILIAR) TO KEEP 0 3 | BUY MARGINS HEALTHY ‘Tis the season to buy deeper on key items. Analyze past sales history and “for fastmoving wine, if you don't always buy the deep deals, Q4 is the time to do it,” says JT Robertson, general manager at Le Du Wines in Manhattan. “There is often an opportunity to save five to 10 percent on the bottle cost at larger quantities. This might not make sense during slower quarters, but in Q4, a dollar here, a dollar there adds up very quickly.” “Consider strategically overbuying,” suggests Erin Bender, general manager at Irving Bottle in Brooklyn. “We’ll stock up on higher-end items to take advantage of seasonal deals, knowing we’ll sell some

during the holidays and the rest throughout the next year.” This does tie up cash, but if the discounts are deep enough, the positive margin impact can be worth it. This is also the time to focus on the classics. ”We always increase our collection of cru Beaujolais, Napa Valley Cabernet Sauvignon, Bordeaux, Barolo, and Brunello beginning in October,” says Patricia. “The meals prepared in the fall and winter just seem to love those wines.” Customers gravitate to these familiar regions as well, which makes life easy. Once the holidays are over, and customers and shop staff have more time, retailers can return to hand-selling their shop’s quirkier wines.

Marissa Ocasio, wine consultant at Center Wine & Spirits in Glastonbury, Connecticut, suggests displaying cocktail ingredients together; for example, group a popular gin, Campari, and vermouth together for shoppers to make Negronis, and consider including accessories such as large ice cube trays. At Copake Wine Works, we keep a table full of small-format bottles available as stocking stuffers. David Ucci, head of sales at Vino di Vino in the Boston area, recommends a “good, better, best” approach, showcasing wines from three different price points within a category. “This could be variety, region, country of origin, or producer,” he explains. “Then I can easily point to something that’s understandable for the customer.” This allows the customer to choose the price point that’s right for them, which may be higher than you think. Remember, this is the time of year to “sell fearlessly,” Ucci adds. “The last thing you want to do is undersell your customer and not give them the option to give the perfect gift that they want to give.”

FORGET THE 0 5 | DON'T GO-TO GIFT CARD Gift cards are a holiday staple, so make sure you offer them in some form. While virtual certificates that can be used both online or in-store are the holy grail, oldschool paper cards tracked on a spreadsheet can also work. No matter what format you use, be sure to clearly communicate the expiration date. “Make sure you train your staff on how to sell them, how to redeem them, and where you store

them—before the season kicks into gear,” stresses Irving Bottle’s Bender.

touch but require longer lead times to order and involve higher costs. “We use gift bags instead of traditional wrapping to keep things moving,” suggests Ocasio, “and we pre-curl the ribbon.” TJ Douglas, who owns Urban Grape in Boston with his wife Hadley, invests in a more elaborate gifting set up and then brings in additional staff to manage it. “We make sure that only a few people are doing gift wrapping and that they are trained the same way so that every single package comes out looking beautiful,” he shares. For shops that have the necessary space, Allegra Angelo at Vinya Wines in Miami suggests “making a boxing station that is grand and over-the-top. Make it an experience. Have a pitcher of homemade drinks, one alcoholic and one non-alcoholic. For example, we’re serving a twist on Coquito, a creamy, rum-spiked Puerto Rican drink.” This sort of display can highlight your gift wrapping offerings and entertain your customers while they wait.

UPS and FedEx aren’t guaranteeing arrival dates for many of their services, so retailers shouldn’t either. “It is always better to be upfront with a customer about limitations and possible delays,” says Le Du’s Robertson. “Even if it means you lose the sale because you're telling someone the truth about what could happen, it’s always better than failing their request because of reasons beyond your control.” While ground shipping is more economical, be sure to offer expedited shipping for reasons of weather and timing. “We let guests know that if they're worried about the extra bucks it costs for expedited shipping, we recommend that they call up a wine shop more local to their recipient and place an order with them,” says DECANTsf’s Patricia. “We're always happy to recommend shops that carry comparable wines.”

SURE ALL STAFF MEMBERS 0 8 | MAKE STAY HAPPY AND HEALTHY Even for shops that have the relative luxury of being fully staffed, it’s still going to be a wild ride. “The temptation is to go full throttle from morning until night,” says

Ucci. “But it’s really important to build in down time for your teams so that everybody can maintain a high level of reserves. They need to have something at the end, because that’s when it’s the hardest.” At my shop, Copake Wine Works in upstate New York, we kick off the season with an all-hands-on-deck training session to review store procedure and holiday-specific processes—as well as eat pastries and drink the first of many coffees. At ACME Fine Wines, “We’ll have pizza and Champagne gifting parties if we go late into the after-hours work day,” says Williams, “It keeps morale high.” Whatever you’re pouring, make sure to include everyone—salespeople, cashiers, delivery teams, stock people, and gift wrappers— because nothing makes the holiday season go more smoothly than a well-trained— and well-fed—team. n

When negotiating agreements with B2C marketplaces, suppliers should make sure to retain access to data and sales results: this is a must when calculating return on investment. A multi-faceted approach is a must in order to meet your customers where they are, and that includes trade buyers. On wholesale B2B aggregated marketplaces like SevenFifty (parent company of SevenFifty Daily) suppliers can promote and advertise their products, reaching restaurant and retail buyers when they are searching for new items and placing orders to distributor reps. Another opportunity for improving marketing effectiveness lies with consumer-facing technology solutions (Thirstie and MikMak for example) which offer suppliers greater access to data and control of the path to purchase, thus reducing potential friction, while maintaining threetier compliance. Like in-store execution, the last step is reserved for continuous improvement and creative, small-scale pilots. Most recently, we have been working with one

of our supplier partners on a digital version of a mail-in rebate program. We are constantly trying to inspire creative discussions about online opportunities in an effort to redefine the standards for digital merchandising. Through omnichannel digital activation and local market collaboration with distribution partners, suppliers can optimize and build lasting brand equity in the digital ecosystem. HOW WHOLESALERS CAN DRIVE MERCHANDISING ONLINE

At Empire Merchants, our sales teams are experts when it comes to traditional merchandising and we are working to empower them to take the core, traditional principles and apply them to digital storefronts. Consumers shop differently online, so we need to look past the “four walls” of a liquor store and begin to bring brands to life in the digital space with the same initiative and creativity we do for the inperson shopping experience. From a general Google search, distributor sales teams can determine if an account has a website, participates with any marketplaces, or maintains a social media presence; this is where we suggest a retail survey begin.

through market specific e-activation. One effective way to do this is through digital activations with high-volume and influential accounts. Like traditional merchandising efforts, local market relationships are a critical element of online foundations and eventual success. When working with top retailers, suppliers can request they feature the brands they represent in an email blast, banner advertisement, or perhaps even by hosting a virtual tasting. We’ve seen how effective these merchandising activations can be: One Prosecco rosé brand we represent grew their business 26 percent over a four week pilot period through a mix of banner ads and local market activation. Another avenue of success can come from supplier activation with B2C retail ecommerce providers that include CityHive, WineFetch, and BottleCaps. Though each company specializes in a unique aspect of direct ecommerce, these types of providers can typically break down the barriers small retailers often face when trying to achieve digital equity and highquality representation without the time or cost investment a custom solution would require. With the flip of a switch, web development groups (B2C focus) can unlock market-specific digital activations across thousands of retailers. Suppliers have also seen positive results with activations through third-party aggregated marketplaces (Drizly, MiniBar, ReserveBar, Vivino among others) which are overwhelmingly popular with consumers and have extensive reach. When conducting promotions, such as banners, targeted emails, or category take-overs, through a consumer-facing marketplace, we recommend that our suppliers consider the potential impact to the account fulfilling the order. It is also important that the distance between the retailer and the ultimate consumer does not increase to the point of store anonymity. Consum-

HOW RETAILERS CAN IMPROVE ONLINE SALES AND USER EXPERIENCE

The more control retailers have over their domain (both literally and figuratively), the better success they will have building a virtual trademark and extending their merchandising reach in the hypercompetitive online retail space. Product content on a retailer’s website is the first thing that consumers see and interact with before purchase. It is critical that retailers work to close con-

tent gaps and ensure that their brands are represented by high-quality and accurate digital assets. According to research conducted by Salesforce, 87 percent of shoppers engage with digital content before making a purchase either online or in store. The digital shelf is different and it must be activated to capture all of the online sales opportunities. We encourage retailers to ask their salespeople for modern merchandising content that can help bring brands to life. Think of digital activation like offering 50ml bottles at the counter—successful exposure will increase exploration, trial, and incremental sales. By creating a strong digital presence, retailers can take control of the online sales experience including added space for supplier digital activations and more access to sales data. This data can be shared with their wholesaler and supplier partners to enhance product offerings, promotions and subsequently customer relationships. Additionally, by thinking creatively and offering store controlled delivery options and programs, retailers can protect their franchise and prevent further marketplace consolidation. It’s also important for retailers to increase delivery efficiencies and clearly communicate expected delivery times, as we all suffer from the Amazon Prime expectations of one or two day shipping. While digital activation has grown exponentially, it is by no means replacing the paramount in-store experience.

Thus, when creating a digital strategy, retailers must keep in mind that consumers often shop (and research) online before making in-store purchases. Keeping the online and in-store message consistent encourages a frictionless interaction between the in-person experience and online sales. Online activation has become a critical component of the omnichannel retail framework and will continue to increase in influence. To successfully compete by reaching the final consumer in a meaningful way, all three tiers need to adapt to an enhanced digital environment and provide a smoother path to purchase. The next step in the survey process would be to evaluate the retailer's website. By assessing banner advertisements, homepage placements, product adjacency, and pricing and sizes available for represented brands, wholesalers can gain critical information and establish a baseline for future activations. For ease of analysis, we encourage our salesforce to break down digital surveying into it’s analogous in-store equivalents. For example, banner advertisements on a webpage can be thought of like a traditional floor display. Banner advertisements can occupy a third or even half of a webpage before “the fold,” taking up more proportional digital space then a traditional product floor display would in a retail store. Other analogous components to the brick and mortar store include cold box placements, prioritized search and window displays, and strategic homepage placements. Once the sales teams are comfortable with the transferability of these concepts, we encourage our teams to speak with retailers and push for them to showcase supplier assets in these customizable sections on their websites. Well-executed ecommerce can create a more connected distribution with a closer connection to the final consumer through access to data and a thoughtful feedback loop with retailers.
