Founded in 1994, and opening their first store in Walnut Creek, California, as Beverages & More!, the company rebranded as BevMo! in January 2001, and expanded their footprint beyond California to include Arizona and Washington. Within this edition, BIN Magazine pays tribute to BevMo!, in honor of their Silver Anniversary! In closing, it is with great honor that we present Tanduay Rum from the Philippines, as the main cover feature for this issue. However, unfortunately as this edition of BIN Magazine went to press, we are very sorry to report that Lucio “Bong” Tan Jr., Director and President of Tanduay Distillers Inc., Eton Properties Philippines Inc., and Director and Vice President of Fortune Tobacco Corp., has tragically passed away after suffering a sudden brain herniation at the age of 53. It was during his tenure at the helm that Tanduay became the world’s number one rum, beating out Puerto Rican brand Bacardi for two years running. At the time of his death, he was also a Director in several Tan-owned Companies. These include AlliedBankers Insurance Corp., Philippine Airlines Inc., Philippine National Bank (PNB), MacroAsia Corp., Victoria's Milling Co. Inc., PMFTC Inc., Lucky Travel Corp., Air Philippines Corp., Absolut Distillers Inc., Asia Brewery Inc., Foremost Farms Inc., Himmel Industries Inc., Progressive Farms Inc., and The Charter House Inc. “His untimely passing leaves a big void in our hearts and our group’s management team which would be very hard to fill,” said his sister Vivienne, who is also a member of the board of Philippine Airlines (PAL). She adds, “Bong was a son, husband, father, friend, and most importantly, our elder brother whom we all relied on for advice, counsel and leadership.” All of us at Beverage Industry News express our deepest condolences to the Tan Family and everyone at Tanduay, and his various business associates.

THE FIND TEQUILA CONTINUES APACE Amid growing concern over agave sustainability, suppliers are taking a page from whiskey, extending portfolios with clear premiumization and specialization. With an emphasis on fair labor practices and supporting local women, the Tanteo Tequila distillery is credited with revitalizing the small town of Juanacatlán where it is located.
■ Tanteo Tequila, the only distillery owned by its cooperative of agave farmers, is releasing Tanteo Blanco Tequila. The blanco is bottled at 85 proof, and it is being released after the brand’s trio of infused Jalapeño, Chipotle and Habanero expressions. “To make our spicy infusions, we start by producing a higher proof blanco,” says CEO and Master Blender Neil Grosscup, adding Tanteo Blanco is designed “to improve a traditional margarita, with its higher proof and perfect balance of floral, sweet agave and mineral notes.” 85 proof; $39.99.
BOOTLEG BONUS FOR DYLAN (WHISKEY) FANS ■ El Tesoro Tequila and Master Distiller Carlos Camarena have introduced El Tesoro Extra Añejo as a permanent addition. A true pioneer in tequila maturation, El Tesoro released their first extra añejo, Paradiso, in 1994, before the Consejo Regulador officially established an “extra-añejo” classification. Harvested by hand, cooked in hornos (ovens) for three days, then crushed solely using the two-ton volcanic rock tahona stone, this tequila is double-distilled to proof before resting in ex-bourbon barrels for four to five years. Though El Tesoro Extra Añejo is just coming to market, it has already won awards including a Chairman’s Trophy at Ultimate Spirits Challenge 2019; and Double Gold at the International Spirits Challenge 2019. 80 proof; $99. ■ Riazul Extra Añejo starts with High 100% blue agave whose high-elevation terroir yields higher sugar content. The is aged for fours years—American Oak for three, then finished for an additional year in Oloroso Sherry casks. Vanilla aromas lead into sweet agave flavors and ripe fruit and spice on the finish. THE CASE FOR JOLLY GOOD BUBBLES TERLATO & PIPER-HEIDSIECK IN SYNCH
When Champagne Piper-Heidsieck joined Terlato Wines in 2015, it began a very productive relationship. The brand’s U.S. volume has grown by about more than 50% over a three-year span. A more modernized rebranding helped; an Oscars partnership strengthened brand awareness and attracted new consumers; and President and CEO Bill Terlato also said a focus on Millennial consumers has paid off. The brand is projected to reach about 80,000 cases in the U.S. in 2019. Terlato has also emancipated Piper-Heidsieck’s tête-de-cuvée, Rare, from the portfolio—not unlike Cristal and Dom Pérignon were split off from their parent houses. Rare is outpacing the $100+ Champagne category, growing at a 37% rate. Current vintages are 2006 for Rare Brut ($175), 2008 for Rare Rosé ($450).
IS IT CAVA TIME YET?
Spain’s sparkling wine, Cava, is undergoing some soul-searching. The Cava Regulatory Council has enlisted the help of six savvy wine professionals to examine Cava’s segmentation and zoning. The aim of the D.O. Project is to highlight the quality, differentiation, origin and prestige of Cava in the wake of flat sales. Meanwhile, Juvé & Camps has just announced that the winery's flagship Gran Juvé & Camps, after nearly 50 harvests, is being reborn as certified organic in the 2015 vintage. This Gran Reserva Brut Cava rests on its lees for a total of 42 months, which far exceeds the required minimum.

Nyetimber, the English sparkling wine producer using 100% estate-grown grapes and traditional méthode champenoise for more than 30 years, has blossomed into a critical success. Head Winemaker Cherie Spriggs was the first person outside of Champagne and the first woman to be named Sparkling Winemaker of the Year at the 2018 International Wine Challenge. Is it her attention to detail? Is it climate change? Sounds like grounds for a friendly debate over a flute or two.
LUXURY LIVES LARGE IN CHAMPAGNE
Luxury, anyone? Champagne is more than willing to fill the bill, especially via micro releases of vintage wines. ■ Champagne Palmer & Co recently introduced their Grands Terroirs 2003, from vineyards in the Montagne de Reims and bottled exclusively in magnum at $400 retail. The blend of 54% Pinot Noir and 46% Chardonnay spent 12 years of aging on the lees. Each of the 1,703 magnums is individually numbered and housed in a wood box with a map of the Montagne de Reims region. ■ Champagne Henriot, while known for its signature Chardonnay-driven style and high proportion of Grand Cru and Premier Cru wines, has announced the once-a-decade U.S. release of Champagne Henriot Rosé 2012. Prior to this 2012 (attractively priced at $125), the last Henriot vintage rosé available in the U.S. was the 2008, and before that, 1990. ■ Champagne Krug dug deep to assemble “Les Créations de 2006.” This extremely limited selection (100 pieces available) celebrates the copacetic circumstances of 2006, featuring three bottles each of Krug 2006 and Krug Grande Cuvée 162nd Edition.

Cape Classics is introducing two new items to the Domaine Paul Buisse line: Crémant de Loire Rosé and Chinon. These wines are linepriced with the existing portfolio—Crémant Rosé with the Crémant at $14.99 suggested retail, and the Chinon with the Touraine Sauvignon at $12.99 suggested retail. The Sauvignon (Blanc), launched in the U.S. in 2013, has seen double-digit growth; Crémant de Loire joined the portfolio in 2017 and was similarly embraced.

The Jamieson Ranch Vineyard’s tier of Whiplash Wines is debuting a new label along with the addition of three new wines. Whiplash Cabernet Sauvignon, Pinot Noir and Chardonnay join Whiplash Red Blend, Zinfandel and Malbec. The package update reflects the brand’s inspiration: the unbridled spirt of the West and the horses that helped establish California. Sourced from California wine-growing regions, Whiplash wines aim to express true varietal character.

As gin continues to show robust growth, Prairie Organic is adding a Navy Strength Gin. This is the brand’s first small batch collection release and the first U.S. organic navy strength gin. With 57% ABV, the bold gin includes lemon zest, floral notes of angelica root and proprietary spices with a peppery finish. Baileys Irish Cream Liqueur is rolling out the red carpet for a limited-edition collaboration the “cupcake queens” of Georgetown Cupcake, sisters Katherine Berman and Sophie LaMontagne. Baileys Red Velvet features the flavor of the shop’s number one selling cupcake (think fresh chocolate cake, topped with a dollop of cream cheese frosting and just a hint of cocoa powder). Georgetown Cupcake will also be serving up non-alcoholic Baileys Red Velvet cupcakes at locations nationwide.

Boissiere Vermouth is rolling out new packaging, retaining its central elements while modernizing with softer lines and high-shouldered dark glass. The updated look includes the signature crest, denoting the bi-cultural French and Italian heritage; and the “Perfect Recipe” is still guarded by angelic cherubs. With roots on both sides of Mount Blanc, Boissiere uses a 150-year-old recipe for a wine-based distillate infused with select herbs and florals. Extra Dry and Sweet are both 18% ABV.

Purple Wine + Spirits announced the launch of their Benham’s Vodka label, joining a pair of gins. Head distiller Jeff Duckhorn sought to produce “a vodka with complexity” in the growing category of domestic artisan $20-$30. Benham’s Vodka starts with California wine grapes, crushed and separated from the skin, stems, and seeds to remove any bitterness. From there, both grapes and grains are individually distilled and blended before being charcoal-filtered.

Handpicked Wines’ portfolio is like a lesson in Down Under wine, with each bottle emblematic of a grape variety grown in its ideal setting. New Zealand producers—historic leaders when it came to screwcaps—are taking to aluminum now as well, led by Sauv Blanc all-star Kim Crawford. With the introduction of the 2019 vintage this fall, Kim Crawford is also debuting a slim can (250ml) format. Sold in a stylish two-pack, the Kim Crawford cans are arriving in limited quantity now, with plans to expand in January 2020.

There’s a new bitter bottle for the bar in town. And it hails from Latvia. By Francine Cohen
Riga Black Balsam, created in 1752, may be the first Latvian spirit most of us ever experience. But while spirits from this region may not be very familiar to American consumers, Riga Black Balsam offers a unique taste of Baltic heritage and culture, with a deep, noble flavor that will resonate with modern consumers; particularly those who relish the role of pioneer. Kunze, a Riga pharmacist, actually pioneered the recipe in 1737 and refined his formula over time, finding the perfect combination by 1752. He perfected his Riga Black Balsam recipe based on a tradition of craftsmanship that stretches back to the 13th century when the balsams (herbal extracts) of the Hanseatic Trade League first became known across Europe and Russia thanks to traveling European merchants. In Riga the first balsam recipes date back to the 16th century and in 1752, when Kunze introduced his 24-ingredient liquid to a wider audience Riga Black Balsam was embraced swiftly and fully. This centuries old liqueur, in its traditional clay bottle, comes straight from, Riga, the capital city of this Baltic nation, and has been a perennial – and ubiquitous - national favorite since it was introduced to the nation. And no wonder, as it delivers the magnificent power of nature; just as you’d expect from a bitter liqueur created near the Baltic Sea. From the moment Kunze 12 BIN 2019
sold his first bottle of this perfect liquid Riga Black Balsam was deemed a classic, and the bracing tonic has spent centuries enjoyed simply by Latvians everywhere they drink, dine and entertain. Now it is time for the Americans to enjoy it too.But we almost didn’t get the chance. The recipe was suddenly lost in 1939 when the ethnic German population quickly left Latvia before the impending Soviet occupation. And it wasn’t until five years after WWII that the shredded original paper recipe was accidentally discovered and subsequentally carefully restored by the efforts of loyal former employees. After centuries of being enjoyed mostly in the Baltic region an introduction here in the US brings new opportunities for Riga Black Balsam to buck tradition, to encourage discovery and exploration. As with many tonics that began as a simple sipper after dinner or as the key element of a hot toddy designed to cure whatever ails you, once it landed on our shores Riga Black Balsam went from simple digestif/cureall to embracing its new role as integral cocktail ingredient. It is dark and complex when taken neat, but stunningly versatile when paired with different mixers. And no wonder. It takes 24 natural ingredients to go into the development of Riga Black Balsam. Ingredients such as
common herbs, roots, buds and Valerian, Wormwood, Black Pepper, Ginger, Melissa, Linden Blossom, rare ingredients such as Gentian, Peruvian Balsamic Oil, plus natural fruit juices, French brandy, sugar syrup, grain spirit, artesian water, burnt sugar* are no secret but only two people in the world – Riga’s master distiller and his assistant – know the details to complete the renowned single-barrel crafting process. All that is known about the magic of production is that the botanicals are infused in a spirit-water mix to derive the so called “Riga Black Balsam essence” – the basis for the final product, and then the essence is blended with the rest of the ingredients, and allowed to marry in a natural clay bottle, thus retaining and preserving the qualities of the liqueur. In America the original, Riga Black Balsam coming in at 45% alcohol reigns as the brand’s standard bearer, while the newest line extensions introduced within the last two years – cherry and currant – come in at 30% ABV. Making them easy to mix and a great aperitif. In addition, an Espresso version will be launched into the US later in 2020. Embarking on a global spirits exploration now means a trip to the Baltic region…a few ounces at a time.

2 oz Casamigos Reposado Tequila ½ oz Agave Nectar ¼ oz Almond Liqueur 4-6 oz Hot Chocolate from Mix Pinch of Cinnamon (prepared with hot water) Method: Combine Casamigos, agave nectar, almond liqueur and cinnamon into mug. Top with hot chocolate and stir. Garnish with 2 large roasted marshmallows and graham cracker square.

½ oz Rosemary Syrup Ginger Beer to fill
Method: Add all ingredients except for ginger beer into a Collins glass. Add ice and stir. Top with a charge of ginger beer to fill and garnish with a sprig of rosemary.

Method: Combine the vodka, elderflower liqueur, cranberry juice and simple syrup in a shaker filled with ice. Shake and strain over fresh ice in a rocks glass. Garnish with fresh cranberries and a mint leaf.

Method: Combine Bumbu, pineapple and orange juice into a shaker with ice. Shake then strain into a glass with ice. Top with club soda and garnish with a mint sprig.
*Syrup: Simmer 1 can Pumpkin, 1 can coconut milk, 1/2 cup brown sugar, 3/4 oz of Pimento Dram Liqueur for 10 minutes; cool and strain through cheesecloth. † Whipped Cream: Put 1/2 pint heavy cream + 1 oz Branca Menta Amaro + 2 oz simple syrup into iSi whipper; charge and store in refrigerator until ready for use.

HOW TANDUAY FROM THE PHILIPPINES BECAME THE WORLD'S NUMBER ONE RUM BRAND By Amanda Schuster
When we think of rum, we tend to think of a sugarcane spirit produced in the Caribbean. Or perhaps some would remember that rum is also known as one of the original spirits of colonial America, and rejoice in its recent resurgence with the craft movement of the late 20th century. However, it might come as a surprise to know that the brand recently identified as the Number One most popular rum in the world, according to a recent report by global spirits market think tank Drinks International, is not produced in any of those places, but in the Philippines. rum is Tanduay, and it’s not a new rum brand, but one that’s been kept a secret in the tropical islands for 160 years. “This is a milestone not just for Tanduay, but for the Philippines as well. This shows that Filipino craftsmanship is truly world-class,” said the late Lucio ‘Bong’ Tan, Jr., president and chief operating officer, Tanduay Distillers, Inc. The Drinks International report goes on to say, “The two horse-race between Bacardí and Tanduay seems to be a thing of the past, with the latter boasting an additional 3M cases in 2019.”

How did Tanduay reach the number one spot over what seems like a ubiquitous brand? Of course it takes hard work and aggressive brand presence, but it also has to be a good product that employs a precise marketing strategy and connects consumers to value driven experiences.
A BRIEF HISTORY OF RUM IN THE PHILIPPINES AND THE ORIGINS OF TANDUAY That entrepreneurial spirits dates all the way back to Manila in 1854. Being inherently tied to Spain, the Philippines had been kept under staunch European trade restrictions throughout the 18th century, but in the 1830s, most of those restrictions had been lifted thanks to various trade negotiations, and Manila’s ports were once again opened to western trade. One of the country’s prime exports became the high quality sugar derived from local sugar cane—which is of course the key ingredient to rum making. Historians would note that the Spanish government still held the monopoly on manufacturing spirits from sugar during that decade, but those remaining restrictions were also eventually lifted. According to Tanduay documents, prominent sugar planters such as Domingo Roxas and José Manuel Gruet lobbied to open up rum production in the country. By 1834, the doors were blown open to produce and export rum in the Philippines.
One of the most prominent families in the country were the de Ynchaustis. Head of the family business, José Joaquín de Ynchausti, saw an opportunity to partner with distillery owner Valentin Teus and businessman Joaquín Elizalde to produce a rum brand. By 1854, the first batches of rum (referred to as “alakan”, meaning, “a place where alcohol is made”), from what was known as the Ynchausti y Cia company arrived in the marketplace. Demand for the rum became such that the company had to move to a much larger facility in Quiapo, Manila, where its products are still produced in signature long neck bottles with the name Tanduay.

The rums are distributed in California, New York, Florida, Michigan, and Illinois, with tropical Boracay flavored rum available in coconut or cappuccino in select markets.
BUILDING 21ST CENTURY SUCCESS According to Paul Lim, Tanduay’s SVP of marketing, “Nielsen’s Retail Audit in 2017 showed the Filipino liquor market grew at 4%, with Mindanao posting the highest growth rate at 10%, followed by North Luzon at 5%. Rum consumption, in particular, grew by 8%. Due to the strong performance of rum in Mindanao, Tanduay’s market share increased by 25% in 2017. The following year, it continued to improve to 27% as Visayas-Mindanao market share grew to 67%.” Starting in that same year, the company expanded its market presence in the US, as well as Europe, the Middle East and Singapore in Asia, which enjoys a thriving bar and cocktail scene.

TANDUAY IS A SLAM DUNK If beer goes with football, then rum deserves its own share of the sports arena too, and Tanduay’s partnership with NBA basketball teams proved to be no airball. They became the official rum of the Golden State Warriors, and now maintain the naming rights to the Tanduay Club inside the Chase Center. Out east, Tanduay is also the official rum of the Brooklyn Nets at Barclays Center. “The company has seen the potential of the young budding team of Brooklyn and now that they've acquired big names like Kyrie Irving and Kevin Durant,” comments Sumang. He jokes that, “The only risk that we've bet on [in terms of] the team, is having high hopes in this coming season.” Joking aside, he points out the benefits of setting the brand’s sights on Barclays Center. Located in New York City in downtown Brooklyn just minutes from Manhattan, the new-ish stadium was built on a convenient concrete estuary that sits on a major, multi-line subway hub for easy accessibility, as well as the Long Island Railroad. Sumang says Barclays has the possibility to become a prime location in the US for entertainment and sports. “We see a good potential for advertising in the arena, as we see that we're targeting a good demographic in the heart of Brooklyn,” 20 BIN 2019
says Sumang. The area is also known for the dozens of well regarded shops, bars and restaurants within walking distance of the arena. The location has attracted its fair share of celebrity clientele to the arena and surrounding venues as well. In line with this, Sumang says Tanduay has branded one of the prime arena locations, the 40/40 Club, which was owned by neighborhood local, recording artist Jay-Z. In addition to the sports partnerships, Tanduay has also been a sponsor of the Daytime Emmy awards, hosted a dinner at the prestigious James Beard House in New York City, and hosted a private party for international superstar musician Cardi B. If it seems as though an Asian rum brand might be focusing too heavily on western cultural ideals, Sumang points out, “With Tanduay being the first Filipino company to tie-up with an international sports team, it increases the brand’s leverage not only in the US, but also resonates with the Filipinos based in the Philippines.” He says that after all, the Philippines is itself has a robust basketball culture, with increasing international presence. In early November of 2019, the country was named as one of the 20 nations that will compete in the 2020 FIBA 3X3 Men's Olympic Qualifying Tournament, which will take place in India in March of 2020.
ADDING VALUE PRODUCTS TO THE CORE RANGE In addition to the success of its silver and gold expressions, the Tanduay rum portfolio has expanded into producing more high end products, such as age statement releases of 16 and five years. These rums, crafted to be enjoyed neat or on the rocks, join a premium non age statement barrel select variant. Says Sumang of these innovations, “This allowed the company to create a bigger portfolio and show that the company is capable of doing good high-end quality rums.” However, unlike many of these sorts of products from other companies, these rums are positioned as perennial releases that are always available, not limited additions that fans have to hunt for, and possibly obtain on the secondary market. “The company also becomes loyal to its loyal consumers by making sure that the product is easily accessible to its patrons,” says Sumang.
RUM IS GAINING MARKET TRACTION Becoming a successful rum brand requires having a keen understanding of drinking trends in target markets, and acting on them. Though rum is currently not leading category sales numbers, it is gaining
momentum, particularly in cocktail and tiki cocktail culture where so many recipes rely on rum as a single base spirit. In fact, many popular recipes, especially in tiki culture, call for multiple styles of rum to add layers of flavor nuances that only sugarcane spirits can provide. This technique might remind drinkers of another category of spirit. “The trend right now is gin and most of the people within the spirits industry sees rum as the next big thing after gin,” notes Sumang. Of course, making a proper introduction to consumer culture starts with creating brand awareness, both digitally and in tangible experiences direct to customers. “I think it's all about perception and proper drink education,” remarks Sumang. “As technology is continuously progressing in the US and the rest of the world, people are becoming more aware of their choices. With rum being a flexible spirit, it only goes to show that consumers/drinkers wanted something that they can drink based on their serving preference (i.e. on the rocks, or in a cocktail) and rum is a perfect fit for many of those ways of drinking.” Sumang also refers to what he describes as a “Rum Premiumization movement”, meaning that as the category gains traction, an increasing number of consumers are understanding that rum can be valued as a premium spirit. With that comes more potential to position rum in the marketplace as one would a sipping spirit the way cognac, whisky and some tequilas are perceived. According to the Distilled Spirits Council of the US, the super premium category of rum jumped 26.8% (sales by 9 Liter cases) in 2018. In fact, that same category of gin, the category Sumang previously identified as the one to beat, only rose 14.7% in the same year. 22 BIN 2019
Still, it comes down to the proper hand sell. “Brand Education is really number one,” says Sumang. “You want your retailers and consumers to know the brand first, since we just launched in the US a few years ago. We want for people to believe in the product first so when they get a taste of it, they'll know the credibility and potential of the product for it to grow big in the US. The other priorities comes second because marketing spirits is really a tough field, but once you get people to believe in your product, that's when we talk business.” In April 2018, the San Francisco World Spirits Competition named Tanduay Silver Rum as “Best White Rum” and awarded it a double gold medal. This was followed by gold and silver awards by Chicago-based Beverage Testing Institute (tastings.com), which gave Tanduay Rum Gold an “exceptional” rating. At the World Rum Awards, it was a category winner for Column Still Rum of the World. Tanduay Double Rum, a blend of 16 and 5 year old rums aged two or more years, received a gold medal at the Wine and Spirits Wholesalers of America (WSWA) conference. It also won silver medals the San Francisco World Spirits Competition and the 2018 NY International Spirits Competition, which is judged solely by trade buyers. “In giving brand education about Tanduay, it only goes to show the credibility of the quality that we're portraying. The accolades and medals we received gives proof about the superior quality of the liquid that we have,” says Sumang. With a brand like Tanduay enjoying so much success through a number of pipelines, this is good news for Asian rum, and the rum category as a whole. That calls for a Mai Tai!
MR. LUCIO "BONG" TAN JR. We are very sorry to report that Lucio “Bong” Tan Jr., Director and President of Tanduay Distillers Inc., Eton Properties Philippines Inc., and Director and Vice President of Fortune Tobacco Corp., has tragically passed away after suffering a sudden brain herniation at the age of 53. It was during his tenure at the helm that Tanduay became the world’s number one rum, beating out Puerto Rican brand Bacardi for two years running. At the time of his death, he was also a Director in several Tan-owned Companies. These include AlliedBankers Insurance Corp., Philippine Airlines Inc., Philippine National Bank (PNB), MacroAsia Corp., Victoria's Milling Co. Inc., PMFTC Inc., Lucky Travel Corp., Air Philippines Corp., Absolut Distillers Inc., Asia Brewery Inc., Foremost Farms Inc., Himmel Industries Inc., Progressive Farms Inc., and The Charter House Inc. “His untimely passing leaves a big void in our hearts and our group’s management team which would be very hard to fill,” said his sister Vivienne, who is also a member of the board of Philippine Airlines (PAL). She adds, “Bong was a son, husband, father, friend, and most importantly, our elder brother whom we all relied on for advice, counsel and leadership.” All of us at Beverage Industry News express our deepest condolences to the Tan Family and everyone at Tanduay, and his various business associates.
SIGNS POINTING NORTH AMID A HOT BROWN-SPIRITS MARKET, CANADIAN WHISKY IS TRANSITIONING AND DIVERSIFYING BY JACK ROBERTIELLO
N
obody could ever call Canadian whisky “under the radar.” Up through 2010—less than a decade ago—it was the best-selling brown spirit in America. Now it is second to bourbon here, but Canada is still home to several huge brands (Crown Royal, Canadian Club), and the U.S. happily receives about two-thirds of all their whisky. (Yes, Canadians, like the Scottish, leave out the “e”.) But around the proverbial whiskey cooler, when “Canadian” comes up, it seems everyone has long gone back to work. Bourbon and rye—even Japanese whiskey—are generating more buzz. Still, there is now some quiet but solid evidence that Americans are finally starting to appreciate the whisky from their northern 24 BIN 2019
neighbor. While the soft and easy brands still represent the major share of the Canadian whisky imported here, last year the two lower price tiers as defined by the Distilled Spirits Council of the U.S. were down, while the super-premium end grew at a healthy 3%. It’s there where fullbodied ryes, barrel finishes and new mash bills are thriving. In many ways, the Canadian whisky industry has mirrored that of America, with a distilleries ranging widely in size, and a flourish of experimentation. Dr. Don Livermore, Master Blender for Hiram Walker & Sons, is often called the mad scientist of Canadian whisky in Canada. When it comes to innovation, he is as quick to credit consumer feedback as he
is the more technical aspects of his craft. Livermore occasionally hosts classes to which he brings up to 70 (yes, 70) of the whiskies he makes, and lets participants blend away. “It’s a good opportunity to gauge consumer reaction to what we’re doing,” he says. “Some of our releases have been based on inspiration from what these folks come up with, actually. I love the wisdom of the crowd.” While flavored iterations, like Crown Royal’s seasonal Peach and Canadian Club’s 2018 Apple are seen as the major driver of growth and new consumers, innovation has also become key, says Abby Wise, Innovation Director at Diageo for category leader Crown Royal. “I’ve been working for almost a decade on Canadian whisky and we’ve seen a hugely positive response to innovation not only for the brand but across the category from consumers and the trade in that time. If anything, it has gotten more positive as time has gone on, becoming more dynamic, exciting and broad,” she says. According to Sean Yelle, Category Market Director, Dark Spirits, Campari, who

oversees Forty Creek, Canadian whisky’s current dual personality has benefits for retailers. “From a consumer perspective, you are finding a smaller, but valuable cohort of consumers who are hunting down higher-end marques as suppliers are putting out brilliant expressions of higherend Canadian whisky. However, a good portion of total growth is coming from flavor extensions, which address specific occasion solutions for a wider range of consumers. Retailers naturally want two things—increased velocity or higher ring— which the category is delivering,” he says.
CANADIAN WHISKY SELLING POINTS Something for everyone: For a “beginner,” big-volume Canadian brands are reliably approachable and mixable; for the seasoned aficionado, the super-premium tier delivers many options that show best chilled neat or on the rocks. Mixability matters: Canadian whisky belongs in every home bar; its greatest cocktail hits include the Whisky Sour, variations on Highballs (whisky plus tonic, club soda or ginger ale); and Hot Toddies (no surprise there, right?). Rye is the word: While it is true that labeling laws differ in Canada, the use of rye in blends is on the rise, responding to demand, giving rise to more rye-forward flavor profiles.

Forty Creek has created a number of expressions testing the category limits— Barrel Select, Double Barrel, Copper Pot, Confederation Oak and is about to launch the limited release Forty Creek “Victory,” a commemorative iteration finished with what the company calls “high vanilla” wood staves. TAPPING AUTHENTIC CANADA Rashidi Hodari, VP Marketing Beam Suntory, in charge of Canadian Club, expects premiumization of the category to continue: “As a brown spirit, we are reaping the benefits of the significant growth of whisky and namely bourbon. We are seeing consumers who are more knowledgeable and more willing to try different categories and brands.” Canadian Club, too, is exploring both arenas: flavors; and, with “CC Chronicles,” innovation. The just-released second edition of
the Chronicles series featuring aged whisky expressions is Canadian Club 42 Year Old, “The Dockman.” Wise believes the many international whisky trends are merging: “For the consumer it’s not about where it’s from but about good liquid and great experiences.” It makes total sense that Canadians are ahead of the curve in terms of applying a touch of maple to their spirits. Tap 357 Maple Rye, featuring a dollop of Québec maple syrup blended into 3-, 5- and 7-year-old whiskies was named “Flavored Whiskey of the Year” at both the 2012 and 2014 Canadian Whisky Awards. Another approach to imbuing whisky with maple involves finishing the spirit in toasted maple-wood barrels. This method does not impart as much flavor, but as maple has very little tannic acid, the barrels reduce harshness. Of course, even before maple, the one thing most people asso-

‘OH, CANADA!’ DID YOU KNOW?… Unlike in America, Canadian distillers have no mash bill mandates. In the U.S., bourbon must be 51% or more corn, and rye at least 51% rye. Not so in Canada. In fact, “Canadian” whisky may include spirits from beyond its borders (namely America); it can be called Canadian whisky after it has been aged for at least three years in barrels within Canadian borders. Another key difference between Canadian and other whiskies: how they handle the mash bill. In most other whiskey-making countries, the grains in a mash bill are mixed together and then fermented and distilled. In Canada, each grain is distilled separately and then blended. For this reason, the Master Blender is considered a more important title than Master Distiller in Canada. Some trace Canadian whisky’s popularity here back to Prohibition, but it actually began during the Civil War, when many distilleries in the South shut down. w Beyond maple, flavors finding their way into Canadian whiskies include apple, vanilla, peach, blackberry, cinnamon and spice.

The stock they carried in that inaugural store along with the additional six they opened in the San Francisco Bay area, including the 163 stores that opened subsequently throughout California, Arizona, in 2007, and Washington, in 2013, all had signage outside in front that signaled a retailer intent on breaking the mold of the traditional liquor and wine shop. While inside, they decided to eschew stagnant shelving techniques for displaying their wares. Instead, BevMo! founders were inspired to present their retail space as a liquid emporium and adult playground, and their plan worked! WITH CHOPIN VODKA, VODKA IS NOT JUST VODKA Written by Allison Levine Not all vodkas are the same. This is a notion rejected by Chopin Vodka, Poland’s premier spirit brand. The world’s first luxury vodka brand, Chopin is a product of Poland that represents a place, a time and the people. And, in today’s world where we care about quality and we make informed decisions on what we put into our bodies, Chopin Vodka is a perfect choice. The distillery has always made vodka but never had a brand until Tadeusz “Tad” Dorda, the Chairman and CEO of Polmas, created Chopin Vodka. A local idea made by local people and launched in 1992, Chopin Vodka offered something no one had done before. By creating a super-premium vodka, they changed the industry. But they did not stop there. In addition to the creating the patented frosted bottle with a clear window, Chopin also set out to prove that vodka is not a flavorless, odorless, colorless neutral spirit. Every wine grape has different characteristics and will produce a different wine. The same can be said for vodka. Every vodka has a different characteristic, it was made in a different region, made by different people and made out of different ingredients. In Poland, the birthplace of vodka, vodka has been made from three traditional ingredients: potatoes, rye and wheat. At Chopin, all three ingredients are used to produce three single-ingredient vodkas: one is made with potato; one is made with rye; one is made with wheat. They do not mix the three ingredients, nor do they add artificial flavorings to the vodkas. The ingredients are allowed to speak for themselves, showcasing the uniqueness of each ingredient with regards to taste and texture. The ingredients all come from the village of Krzesk in eastern Poland. The Chopin estate, which dates back to the 18th century, is situated on 17 acres where they grow the ingredients. They also work with 70 local farmers within 18 miles of the distillery who have been working the lands for generations. Chopin always uses the
freshest seasonal ingredients and distill in a way that leaves the flavors and notes of the raw ingredient. Everything is done by hand at Chopin, allowing them to maintain the highest quality and control throughout the process. For example, the potatoes are washed and cooked unpeeled. Yeast is added and they sit for three days. Then it is distilled in small batches using the distillery’s original copper column still. The resulting Chopin Potato Vodka is creamy, earthy and viscous and can be enjoyed alone or in a martini. The Chopin Rye Vodka is spicy and vibrant with a short, crisp finish and works well in a bloody mary or alone. The Chopin Wheat Vodka is light, mild and sweet with floral aromas. “At Chopin, we don’t comprise on quality. VERMOUTH GOES VROOM EXOTIC BY NATURE AND SWEPT ALONG IN A BITTER WAVE, VERMOUTH IS GAINING TRACTION BY JACK ROBERTIELLO
I
t is not unusual to find a fine-dining Italian restaurant, especially in one of the half-dozen Eatalys in the U.S., with an extensive wine list. But it’s a sign of current restaurant trends that almost an entire page of the menu at NYC’s Manzo is given over to a detailed list of almost 40 vermouths and bitter amaros. Vermouths, once the neglected orphan in the bar well, have made a major comeback, at least at the premium end, as classic cocktails like the Manhattan and the Negroni calling for various types of the fortified wine have been dusted off and brought back to popularity. That cocktail renaissance has not only resurrected vermouths that have subsisted on small but loyal consumer bases, but has also opened space for a broader flavor 44 BIN 2019
spectrum crafted by domestic and international producers. It’s also created a larger market for amaros with a broad variety of flavor profiles. As many long-standing, mostly Italian brands continue to find their way here, American-made versions of amaro are blazing a path as well. Behind the bar, vermouths and amaros have benefited mightily from the Spritz, which has proved a windfall for Campari and Aperol while pushing open the door to bitterness that Americans can wrap their palate around. Broadly speaking, it’s a sweet time to be bitter. “Nobody could deny that cocktails are the driver of the growth of vermouth and amaro here, but they are both consumed so much differently in Europe that there is still room for them to grow even more,”
says Joe Swanson, National Brand Director for Vision Wine and Spirits, which imports Del Professore, a brand of vermouths and bitters resulting from a collaboration between the Jerry Thomas Project cocktail bar in Rome and the Antica Distilleria Quaglia in Piedmont. “Cocktail renaissance meets aperitivo hour is what’s happening today,” he says. The attitude of importer Oliver McCrum has paralleled that of the wine and spirits business in general in the U.S., and he has gone from a skeptic to fan. McCrum, whose eponymous company now imports Italian Bordiga and Macchia vermouths and an amaro from Sicily called Amara, compares the change in quality and attitude to that which evolved in coffee— from mass-market coffee evolved more intensely characterful brands like Starbucks and Peet’s, and now cities typically have numerous artisanal roasters catering to the java-driven. “These vermouths are like that—more distinctive, not industrial and made in small quantities and much more interesting drinking. Seems to me there’s now a huge difference in quality and intensity of flavor in many of these.”

RE-EDUCATION SITUATION Daniel Warrilow, Brand Ambassador for Cinzano 1757 Torino, the producer’s new premium vermouth, says there is still a disconnect for many bartenders understanding vermouth as an ingredient: “I spend a lot of time doing educational seminars and when I explain to bartenders it is a wine, so many say, ‘We had no idea, we just kept it on the back bar like anything else.’” The need for education is amplified by the organic blossoming of the vermouth market. Now, classic brands are joined behind the bar by French Dolin, Italian Cocchi, and newcomers like the Gallo-owned Lo-Fi range. NYC
already has a crafty contender in Atsby; on the West Coast, Quady Winery’s Vya has gone nationwide. Perhaps most telling is how Europe’s most established brands have expanded their expressions. For Noilly Prat, their Extra Dry, Original Dry, Rouge and Ambré are now sold in the U.S. Martini & Rossi now offers, in addition to the classic Bianco and Rosso, the higher-end Gran Lusso as well as two new styles of Vermouth di Torino: Riserva Speciale Ambrato and Rubino. Like the Martini & Rossi additions, Cinzano’s 1757 expressions—Rosso and Extra Dry, released in 2018—are part of the recent movement to certify Vermouth di Torino. AMARO…TODAY As how and what Americans drink changes, so too have many of the products, and the latest wave of vermouths as well as amaros have fed that. There are few if any rules with amaro, which traditionally have medicinal

Among the new, American-made amaros are the bracingly bitter Amaro Tonico Ferro-Kina from Don Ciccio et Figli in Washington, DC; the light and grassy California Fernet made by Northern California’s Geijer Glogg; and lighter styles like the just-released La Boîte Amaro from a partnership between Bloomington, INbased Cardinal Spirits and New York City’s La Boîte spicery owner Lior Lev Sercarz. Their idea was to craft an amaro that resembled a Barolo Chinato, says Cardinal co-founder Adam Quirk: “Something lighter and drinkable that could be paired with food at dinner.” Sercarz chose a blend of 15 botanicals, featuring star anise, licorice, orange and green cardamom. And unusually, the marketing target is sommeliers and fine dining operations, although inevitably bartenders will find a way to include it in drinks. The same of course is occurring with vermouths, especially those with interesting flavor profiles, like the new rosé Span-

Four years ago, we decided to bring this tradition back and resurrect old recipes and botanical infusion techniques to produce a brand new red vermouth,” explains Myrna Santos Mayor, Director, North America House of Lustau. Now with red and white in the portfolio, Lustau went for pink. Lustau Rosé Vermut is a blend of Fino sherry, sweet Moscatel and Tintilla de Rota; it gets its tang from a mix of wormwood, cardamom, chamomile, vanilla and nutmeg. Another important vermouth revival from Spain is Gonzalez Byass’s La Copa, based on recipes and label designs recovered from the firm’s historical archives. The Extra Seco is based on Fino Sherry, and is aged an average three years in a solera system. Red fruits were added to the Extra Dry to enhance the balsamic notes and lengthen the finish. The sweeter and more intense La Copa Rojo is based on Oloroso and Pedro Ximenez soleras that are more than eight years old. AUTHENTIC + LIGHTER = POPULAR Not to be minimized in the conversation about vermouth is its exotic flavor
profile—the use of botanicals makes vermouth malleable by nature. And while specific ingredients vary, these aromatized and fortified wines pack a wallop of flavor—a slightly funky but bright collision of herbal and fruity and bitter and sweet—and all at ABV less than half that of most spirits and not much higher than today’s stronger red wines. In turn, vermouths and amaros offer great appeal to mixologists, both to tweak their Manhattans, Negronis and Boulevardiers and to create new flavorful drinks in the trendy lower-alcohol vein. Swanson contrasts the trend for cask-strength and whiskies higher than 40% ABV with the surge among these lower-alcohol items: “It’s ironic but in both cases people are looking for super authentic products, and actually the more the first drink is strong, the more the second and third need to be lower in alcohol.” Whenever the time of day, those lighter drinks with robust herbal and spice flavors are certainly gaining favor says McCrum: “It’s not something people did in the past but it seems to me to be that is changing. People are drinking things like white vermouth with sparkling water before dinner and enjoying it hugely.” ■

Historic Highland distiller The GlenDronach is releasing two highly-anticipated bottlings which speak to the distillery’s mastery of Sherry cask maturation. The GlenDronach Cask Strength Batch 8 is aged for 10 years and bottled at 122 proof, with SRP of $95; and The GlenDronach Master Vintage 1993 is from casks laid down in 1993 and bottled at 96.4 proof with a SRP of $350. Both were created by Master Blender Rachel Barrie, a recent inductee into the exclusive Scotch society Keeper of the Quaich, who hand-selects the Pedro Ximénez and Oloroso sherry casks for these bottlings. As with all GlenDronach expressions, these two are non-chill filtered and absorb color naturally over time from aging in Spanish oak.
