All of our caviar is hand packed fresh from original tins for each specific order. We work with the caviar farms to source the finest fish roe and caviars. Each product is 100% traceable and marked with a code referring to the original CITES (Convention on International Trade in Endangered Species and Fauna) permit for the lot. Caviars are available as semi-wild and farmed.
Our dedication to supplying the highest quality caviar and most consistent ingredients starts in the farms where our caviars are harvested and doesn’t stop until we’ve packed and shipped them to our customers. Importation of our caviar is strictly controlled by US Fish & Wildlife. Our state-of-the-art fully equipped laboratories and their hygienic ambient conditions are necessary to package top quality caviar products. Farm raised caviar producers are selected within the best in the world. FOIE GRAS French for fat liver, this food product derives from specially fattened duck liver. The fattening is typically achieved through the ‘gavage’ method according to French law. Though outside of France it is occasionally produced using natural feeding. Our Foie products are mainly produced from duck liver from the Moulard breed, a hybrid variety of domestic duck produced by crossing a female Pekin with a male Barbarie. A migratory bird that tends to live close to water, moulard ducks have a natural capacity to accumulate fat in their liver in order for their body to consume the fat during thousands of miles they fly without feeding. The increase in size of their liver can reach 5 times its original size.

Moulard ducks are a cross breed of Muscovy and Pekin, and are often considered the most flavorful breed among all domesticated varieties. Morel mushrooms have a wonderful buttery, woodsy fl avor that is delicious with beef, game, poultry and seafood.
Porcinis are delicious in soups, sauces, stuffi ng and stews. Dried Porcini can be substituted for any mushroom in any recipe.
This blend of boletus, oyster, porcini, shiitake, and woodear mushrooms is a well-balanced mixture of flavors, colors, and textures.
They have a mild fl avor and a meaty texture. They get their name for the way they appear: Creamy white inside and lobster-red outside.
The dried shiitake mushroom is proof that the aging process can improve a food’s flavor. The color of the shiitake’s cap deepens to a near black, a precursor to the flavor profile.
Dried chanterelles maintain a firm texture when reconstituted. The cap is wavy and curled, due to the drying process.
The French nickname for Cepes is Bouchon, meaning cork. These are small Porcinis (or Cepes) and have a more delicate flavor. Flash frozen to keep all the flavor. Come whole or cubed.
When cooked, the mushroom develops a light and delicate fl avor, Oyster mushrooms are excellent with sea food or in dishes with any kind of meat (chicken, beef, pork).
