HERBED LEEK AND CHEVRE TART Makes 6 servings If I can get goat cheese, or chevre, in Duluth, Minnesota, you can probably find it where you live. If not, you can substitute almost any white cheese when making this tart. It won't taste the same, but it will be good. Vfe 10 6

recipe Lemon Pastry (page 94) tablespoons (11A sticks) butter medium leeks, white part and 2 inches of green, cleaned and sliced 2 tablespoons white wine vinegar Vz teaspoon salt /2 teaspoon freshly ground black pepper Va cup heavy cream 7 ounces goat cheese (chevre) 2 tablespoons minced fresh chives 1/2 cup fresh bread crumbs 2 tablespoons minced fresh chervil or parsley
