package (%Vz tablespoons) quick-rise active dry yeast Vz tablespoon sugar % cup warm water (105째-115째F) l /2 teaspoon salt IVfc to 2 cups all-purpose flour 1 tablespoon olive oil In a large mixing bowl, dissolve the yeast and the sugar in the warm water. Let it stand for 5 minutes, or until the mixture foams. Stir in the salt, P/2 cups of the flour, and the olive oil, mixing until smooth. Turn the dough out onto a work surface and knead, adding more flour as necessary, until the dough is smooth and satiny. The kneading may also be done in a food processor using the dough hook. Let the dough rise until puffy, about 30 minutes.
