Menus of Change (MOC) was created in partnership by The Culinary Institute of America and Harvard T.H. Chan School of Public Heath, integrating cutting-edge information from nutritional and environmental science into recommendations for foodservice professionals to serve healthier, more sustainable food. Compass Group is proud to be a founding member of the Sustainable Business Leadership Council, which helps inform on key health and sustainability issues. As a sponsor since its inception, Compass Group was well represented at the 2017 Menus of Change conference in Hyde Park, New York. The agenda focused on consumer insights, scientific studies and examples of how to incorporate more plant-based ingredients into menus. As a panelist during the breakout session Make It Work, which required participants to submit plant-forward menu ideas for their CEOs, Julia Jordan praised attendees for leading with flavor first. “Consumers are looking for dishes that are better for their bodies and the planet, but first and foremost the food has to taste good. Leading with flavor first is how we are going to entice more people to move meat away from the center of their plate.” In 2015, Compass Group committed to adopting some of the key MOC principles to get more plant-based ingredients on consumer plates. Compass Group recently reported positive results:
