As autumn draws in, the leaves begin to fall and summer salads are replaced with homely comfort food, and our wardrobes gradually move closer and closer to winter. This is the perfect time of year to curl up on the sofa or laze in the early autumn sun, while enjoying the latest issue of Beautiful South magazine…

This month we were honoured to be able to interview a fantastic local photographer – Sarah Sheldrake. We discuss her career, her education and what advice she has for aspiring photographers – an inspirational lady no matter where your interests lie.

The apps that make a difference Nowadays we have an app for everything, and health and fitness is no different. Whether you are trying to keep on top of your calorie intake, walk more steps each day, or even just drink more water, there is an app for it all. Due to the personal and convenient nature of them, they can be a massive help when you’re trying to make positive changes on a busy schedule, or even just if you struggle to stick to the goals you set. Having your phone notify you every 5 minutes that you need to go for a run today is quite convincing believe me!

MyFitnessPal If you are watching your weight, MyFitnessPal is one of the best apps to help you stay in control. Launched in 2005, the app has had plenty of time to work out any problems, unlike a lot of other, more recent apps. This has led to it being one of the smoothest and easiest to use apps on the marketplace. MyFitnessPal combines intelligent calorie-counting and food-logging with exercise tracking, providing you with an all-in-one platform to help you track your progress.

Quaint tea rooms, cobbled streets and traditional pubs … Old Portsmouth is full of beautiful - and delicious - things to be discovered.

Old Portsmouth was once a busy and bustling district due to its location near the dockyard, however much has changed since the old days. Today, it is a wonderfully peaceful corner of Portsmouth, featuring delightful cobbled streets lined with historic homes, old-fashioned pubs and gorgeous classic tea rooms. So far from being chaotic, it is a great place for couples and families to visit, no matter what time of year. With plenty to see, we recommend taking a leisurely walk around the area in order to ensure you see all of the sights. Begin your walk at the Royal Garrison church – or the Domus Dei, its Latin name - which was founded in 1212 initially as a hospice, by the Bishop of Winchester. Take a look inside at the fantastic interiors, featuring spectacular stained glass windows and incredible arching ceilings… a sight to see no matter where your interests lie. The church is an English Heritage property, and therefore has plenty of fascinating historic significance, including the story as to how it lost its roof…

A waterfront deck creates an exceptional dining experience, allowing you to feel almost within touching distance of the sparkling water… or dine inside and enjoy the rustic décor and beautiful architecture, reminding you of the incredible history behind the building.

If you’re in the mood for some more traditional pub grub, head to The Dolphin, located opposite Portsmouth Cathedral. Established in 1716, this is Portsmouth’s oldest pub, and a great place to unwind in comfortable surroundings whilst enjoying a range of local and international beers, wines and cocktails. The menu openly boasts time-honoured pub classics such as Sausage & Mash and Ham, Egg & Chips, as well as a selection of brilliant burgers and lighter sandwiches, including the Chargrilled Halloumi and Roasted Vegetable Wrap. As you’re so close to the sea, it would be a shame not to try what the coast does best – fresh fish. The Still & West is located right on the harbour front and features a massive courtyard for drinking and dining, making it a fantastic place to finish off your day by catching the late afternoon and early evening sun. Their menu reads proudly that they are ‘Famous for Fish’, and the divine dishes they serve don’t leave you questioning this whatsoever. Whether you go for a classic such as Fish & Chips, or something more titillating – for instance the Pan-Fried Sea Trout with radish and crab potato salad – you will be pleasantly surprised by the freshness and quality of the products used, as well as the overall taste and presentation of each dish. No matter where you choose to eat or when you choose to visit, one thing is guaranteed when making the trip to Old Portsmouth – it will be a superb encounter. Some of the best clubs around include Petersfield, Alresford, Winchester and Portsmouth, and all welcome new players each season. Due to the all-inclusive nature of rugby (there is a position for every single body type), you can’t really say no to joining in this autumn and winter. Petersfield Rugby Club are always looking for new players to join their teams, so if you’re looking to get back on the pitch, call them now on 01730 264588. Back then, performance meant everything for most car manufacturers and for Jaguar, it was reflected in their race-tested and affordable XK series, which took pride of place in their road car catalogue.

Behind the lens... Interview by Poppy Baker


arah Sheldrake is a photographer based in Petersfield, whose natural charm and lust for life shines through in her work, giving her a unique edge. She shoots mainly portraiture, however also works with a small number of brands and companies, always producing stunning images in a beautiful style. With Sarah’s talent for bringing her subjects out of their shells and showing deeper amounts of personality than many portrait photographers, Beautiful South couldn’t wait to sit down one on one and find out more…

When asked what the highlight of her career has been so far, Sarah gave me three which she could not choose between… “shooting the young doctors NHS campaign was absolutely amazing as I got to photograph something so important. Secondly, working for Bedales is brilliant and was a personal ambition of mine.” She goes on to say she loves how creative the environment is at Bedales, and she feels her aesthetic works so well with theirs. “I also love working for Titley & Marr, an international fabric design company.” Sarah enjoys taking the fabrics somewhere and photographing them in different, more creative settings – using props, locations to stylise and add something We start by simply discussing her career, which Sarah speaks about different to the images. Introducing HAMPSHIRE CHEESES Nestled in the gorgeous green valleys of the Hampshire countryside sits Hampshire Cheeses - artisan cheese-makers who have won numerous awards for their traditionally made products… specifically their British Camembert, which has been said to be ‘good enough to make a Frenchman weep’! Stacey Hedges is a cheese-obsessed Australian, who travelled the world exploring her love of dairy, before making her home in the heart of Hampshire. She began making cheese in her kitchen, using buckets of milk collected from local farmers, before her husband eventually told her to get out of the kitchen and do it properly. This led to the company’s creation in 2005, in a very small creamery in Herriard, Hampshire.

We really take so much care of every cheese that leaves our creamery – to make sure it lands on your plate in perfect condition every time.

Stacey speaks to us about why she chose to settle in Hampshire, saying “It was an area my husband had spent time in when he was young and we had friends in the area… it’s also not too far from The Big Smoke - I am a city girl from Sydney so need to get my fix of city life every so often!”

Following the decision to start the company, Stacey took off to visit cheesemongers from across the land, asking ‘what is the British cheese market missing?’ The answers showed clearly what she needed to make… an English Camembert. Although there were others on the market, none were even close to rivalling the French cheeses. She visited many French Camembert dairies, tinkered with different recipes, and met with Ivan Larcher, the French cheese consultant who is considered to be the master of such cheese related matters. Soon after, Tunworth was born – the Camembert style cheese which everyone loves. Specifically developed to have a thinner, more wrinkly rind, the Tunworth has a distinctively more flavoursome taste to it. Charlotte Spruce joined the company a short while after its creation, Hampshire born and bred and with a passion for field to fork food production. Co-running the business together, the two have come far, with even Raymond Blanc describing their Tunworth cheese to be ‘the best Camembert in the world.’ Initially, Stacey was making only 30 cheeses a week, but now the company has continuously expanded to the point where they are making roughly 800 a day… a massive increase which has led to the company employing 8 staff, something Stacey is very proud of. She says the best thing about her career is that “the cheese world is a really fun and

The working day starts at 6am, when the milk gets delivered to the creamery. The team then begins setting the curd, cutting and ladling by hand, turning the cheeses in the ripening room, and wrapping and packing the finished product… along with many other tasks. They once experimented with using machinery to complete some of the more labour-intensive tasks, but soon gave up on the idea as it slightly changed the taste of the cheese! Stacey speaks of their success, and what she thinks sets them apart, saying “We really take so much care of every cheese that leaves our creamery – to make sure it lands on your plate in perfect condition every time.” She continues to say “We have won lots of awards over the years which has been amazing and makes all the hard work worthwhile. The thing that makes me really happy is seeing my team enjoy their work and be so proud of what we make. That is worth everything.”

The Maas Method In biblical times, food was raw and natural, there were no chemicals or toxins. It was a diet that was in full balance with nature and the seasons. Nothing was force ripened, genetically modified or sprayed with pesticide. It really was the original organic lifestyle. Today, our world is full of biochemical agents, pathogens, and fungi that drastically impact negatively on our health. Almost nothing escapes environmental assaults. Knowing how to combat this is a minefield, as there is so much misinformation; well-meaning bloggers whose hearts are pure, but who don’t have the training to back up the science; propaganda in the media and fake news all combine to create much confusion. The safest way to navigate, is to apply ‘The Five Laws of Perfect Health,’ or what we refer to as ‘The Maas Method,’ which simply put are the five molecules of health: sugars, proteins, fats, minerals, and electricity. It is the balance of these five molecules that exist within us all that ultimately determines the overall health of the individual.

The first law is to go anti-fungal. Fundamentally, our wheat, yeast, sugar based diet is making us sick and is the cause of many of our modern day ailments. By reducing the fungal and toxic load in your diet and controlling sugar and carbohydrate intake, by using a low GI diet, you can reboot the nervous system as a means to holistic recovery. The second law is to eat the correct proteins, it is important to match these to your genetic and metabolic type. Likewise, for the third law, it is equally important to achieve the correct balance of healthy fats. Over the years, fat has been vilified, but the good ones are essential to our wellbeing and adrenal and thyroid health. The fourth law is to ensure the correct pH balance as disease cannot live in an alkaline state. It is crucial to correctly balance acid and alkaline foods as the pH in our body has an enormous impact on our energy and our ability to fight disease.

The fifth and final law is a little more complex, it is effectively our bioelectricity, which is the electric energy associated with all living organisms. The human body has organs which are dedicated to sensing electromagnetic impulses, both inside and outside the human body. For example, the pineal gland is the evolutionary descendant of our ancestors’ ability to perceive light, which regulates the circadian rhythms of the body - our biological rhythms that are attuned to the daynight cycle and our sleep patterns. The Maas Method, when practiced as a way of life, will ensure a healthy body and mind, optimum energy and provide the essential toolkit needed to help fight modern disease.

...the festive fracas with a short break this Christmas The Christmas season in Britain gets longer every year, and seems to begin in September or even August. However, the year is not over yet! Perhaps the best antidote to thoughts of the nights drawing in is a short break to lift the encroaching winter blues – and this can be a wonderful time of year to visit Europe’s great cities. September and October provide ample opportunity for a last minute dose of late summer sunshine – or perhaps a visit to one of the autumn’s new exhibitions or concerts. Or travel in November and December for authentic winter experiences from the Northern Lights in Scandinavia to atmospheric Christmas markets which recreate the festive spirit of years gone by.

Southern Europe offers warm sunshine throughout September and October, and coast and countryside destinations offer excellent value for money ‘shoulder season’ deals. The Mediterranean island of Sicily is at its best in the autumn, when the excessive summer heat has passed, but the climate is still warm enough to enjoy exploring the fascinating ancient temples and ruins in the morning, before a delicious al fresco lunch – perhaps with a glass of the local wine – and a refreshing dip in the sea, or a hotel swimming pool, in the afternoon. The sea itself is at its warmest in September and October, as the summer sunshine has gradually heated the waters over the previous months.

For those in search of a cultural city “ break, look no further than the historic cities of Seville, Cordoba and Granada – each of which combines delicious tapas, striking Moorish architecture, and fascinating history

This is also the perfect time of year to explore the towns and countryside of Andalucia. Whilst the summer months draw crowds to the ‘costas’, the true heart of this region is inland, where traditional white villages – pueblos blancos – remain untouched by tourism, and fields of olives, vines and sunflowers cover the hills. Head to Prague for mediaeval cobbled streets and gifts of Bohemian glass and lace, Vienna for world-class music and opera performances throughout the season, or perhaps the pretty canal city of Bruges – home to Flemish art, chocolates shops and moules frites. Holidays over Christmas itself can also be a wonderful way to enjoy fine wine, delicious cuisine and a comfortable hotel, and all without any of the preparation or the clearing up… But if you still prefer humbugs to humming carols, then why not take the opportunity to escape Christmas entirely – a safari in Southern Africa, as the southern hemisphere rolls from spring into summer – or perhaps a tailor-made itinerary to Sri Lanka, where you will find Buddhist temples, exotic wildlife and glorious palm-fringed beaches? The Hambledon Hilly is a scenic and hilly 10km race on small country lanes and footpaths. There is also 2.5km and 1km mini-hilly race for kids and people with lower fitness levels, so no excuses! The finish line features a beer tent, food stalls and a play park for the children. This is sure to be a great event for the whole family.


The Goodwood Revival is a unique chance to step back in time and revel in the glamour and allure of vintage motor racing. The Revival is one of the world’s most popular historic motor race meetings, and the only event of its kind to be staged entirely in the nostalgic eras of the 1940’s, 50’s and 60’s. The pretty coastal town of Emsworth, with its array of independent shops and restaurants has long been a destination for food lovers, and will once again be participating in British Food Fortnight with over 75 food related activities that both residents and visitors can take part in.

CHEESE AND WINE TASTING AT HAMBLEDON VINEYARD Wander around this beautiful vineyard nestled on the edge of the South Downs, before trying a number of delicious cheeses and wines.

Fifty cask ales from all round the UK, as well as locally produced Ciders and Perries. Some great new beers from all round the UK, as well as many local favourites. This event had been very successful in the last five years, so come along and enjoy live music, food and a great atmosphere, plus raise a bit of money for local and national charities.

Winchester is holding a one-day festival event with workshops, readings, talks and more. This will be a great event to celebrate poetry and literature, and is highly recommended by all who have attended in previous years. All events take place at the Winchester Discovery Centre.

Join Butser Ancient Farm to celebrate the evening of Samhain in the magical surroundings of the Great Roundhouse. Between 7-10pm you will enjoy live music, professional storytelling by Jonathon Huet of Walk with Trees, a bar with local ales and hot refreshments. Samhain is a Gaelic festival marking the end of the harvest season and the beginning of winter, or the ‘darker half ’ of the year. Like Beltain, Samhain was seen as a liminal time when the boundary between this world and the next could be crossed more easily, and this meant the spirits and fairies could more easily come into our world… the perfect early Halloween celebration!

Churchers College will again provide the venue for this popular annual event. Held over two days, there will be a wonderful selection of new stalls offering a wide range of items - jewellery, homeware and decorative items, luxury fashion goods, gifts for men, toys, artwork and many other fabulous items you simply won’t see in the High Street. The fair will be open on Friday, 27th October 10 a.m. - 4 p.m. and Saturday, 28th October 10 a.m. - 4 p.m. Entrance £4 which includes a beautiful hessian bag and a free cup of coffee or tea. There will be free car-parking. Save the Children works in the U.K. and abroad to save children’s lives, battle child poverty, help families in need and delivers educational programmes in homes and schools. Do come along and support this charity and get ahead with your Christmas shopping and perhaps buy something for yourself!

Alresford Rotary and Hampshire Farmers’ Markets are co-hosting this year’s Alresford Apple Day – a day to celebrate the apple. Bring your own apples for crushing and pressing into delicious apple juice. Enjoy lots of local produce including cider, pork & apple sausages and burgers. There’s also live music and entertainment for all the family.

The Season Finale provides one final chance to experience racing at Goodwood in all its glory before the winter break. Particular to this fixture is the Alderbrook Stakes, where we welcome leading Jump jockeys to contest their racing skills on the Flat. The Season Finale has a relaxed, laidback feel with the atmosphere of a countrystyle meeting. Sample many different real ales direct from the barrel, as well as excellent craft beer including award-winning Goodwood ales. A fiddle-band plays merry tunes against

International Stars share the stage with Local Stars of Future English Youth Ballet is making its eagerly anticipated return to the Kings Theatre Portsmouth this October. The awardwinning company will be presenting the charming story ballet - Coppélia Dreamy Franz falls in love with a beautiful, life-like doll. The doll – Coppélia was created by the eccentric Dr Coppelius. Franz’s jealous fiancé – Swanhilda takes her friends on an adventure into the spooky house of the mad inventor to confront her rival. When the truth is uncovered, the whole town joins the most extravagant wedding celebrations of Franz and Swanhilda. Audiences in Portsmouth will be treated to performances by 6 international principal dancers and 100 local young dancers (ages 8 – 18). The young dancers were selected in a highly competitive audition at the Kings Theatre in June. Leila Critchett (pictured) is 14 years old and lives in Hilsea. The talented young dancer – who trains at the Southsea School of Dancing was awarded the Full Scholarship Prize at the audition. Leila said “this is my 4th audition now for EYB. I feel I have gained in confidence each time I have auditioned. I am most looking forward to seeing how the principal dancers work and dancing alongside them and learning from their expertise.” EYB’s large cast ensures the ballets are performed with the scale and grandeur which was originally intended. The company for the production will be made up of 6 professional principals and 100 local dancers (aged 8 – 18) from Hampshire. The young dancers are some of the top talents from the local area. There are now ex-EYB young performers in some of the world’s best companies – including the Royal Ballet.
