LUNCHTIME FAVOURITES with Maria Felix Vas, Saturdays from 12 - 2 Maria’s Lunchtime Favourite’s guest on BBC Radio Lancashire last Saturday was Michael Johnson, the manager and projectionist at the Palace Cinema in Longridge. Michaels love of Cinema took him to Dorothy and John’s cinema when he was just 14 years old… he’s been showing films there ever since. If you’ve never been there to see a film, try to, it’s like stepping back in time. It was beautifully refurbished 11 years ago, and has regular screenings of current films.

MICHAELS APPLE SPONGE 2oz Sugar 2oz Margarine 4oz flour 1 large egg 1 Bramley apple

Pre heat the oven to 180C (gas mark 4) Peel and core the apple and cut into ¼” pieces Cream the sugar and margarine Add a dessert spoon of the flour to the mix Add the beaten egg and mix well Fold in the rest of the flour Stir in the chopped apple Spoon the mixture into an 8” greased pie dish Sprinkle with sugar Cook for approx. 25 mins until golden brown Delicious Hot or cold, as keeps it’s moisture.
