Local Historian Marion Coupe (pictured) was Maria’s Lunchtime Favourites guest on Saturday. Chairman of the Lytham St.Anne’s Civic Society, over the years, Marion has helped preserve and save a number of historical buildings in the area, including Lytham Hall and Lytham Green. A retired history teacher, originally from Wiltshire, she made Lancashire her home when she got a teaching job in Lytham and the rest, as they say is history….
LUNCHTIME FAVOURITES RECIPE Marion’s Historical Quaker recipe for “Chocolate Yoghurt Ambrosia”
INGREDIENTS: Depending on how many people you are making this for, you need equal measurements of cream and yoghurt….for a large bowl serving 6 people, about half a pint of each works well….. 1. Pot of whipping cream 2. Pot of natural yoghurt 3. Bar of dark chocolate 4. Soft brown sugar (6-8 teaspoons)
METHOD: 1. whip together the yoghurt and cream. 2. Grate half the bar of chocolate, and add that to the mix, by stirring in gently. 3. Put in a bowl, or in separate glass dishes. 4. Sprinkle the brown sugar over the top and set in the fridge overnight or for several hours (the sugar will dissolve to give a crème brulee appearance)
(Maria’s verdict……delicious! The yoghurt, takes the edge of what would be a truly indulgent sweet pudding!)
