On Saturday, Maria Felix Vas chatted to artist and Sculptor, Jenny Eaton about her work, her life and her favourite tunes. Originally from Wales, Jenny has made the Ribble Valley her home now. Winning the Ribble valley Prize for her work this year, with the Platform Gallery in Clitheroe, she next has an exhibition there next Spring. Lunchtime Favourite RECIPE After having spent many years in Greece, this is one of Jenny Eaton’s Favourite easy cook recipes…. Keftedes - Greek meatballs
Alternatively, you can cook them by frying them in a little olive for approximately 10 12 minutes, turning several times whilst cooking. Serve with wedges of lemon to squeeze over, A tomato, lettuce and onion salad sprinkled with chopped mint and coriander or whatever combination of herbs you want. The meatballs are also very good served with a simple rich tomato sauce, and rice or finely cut home-made chips, or pasta is another option……..ENJOY!
INGREDIENTS: *1lb good quality finely minced lamb, * 1 or 2 cloves garlic crushed, *Half a small onion , finely chopped, *Large handful of parsley. * Two sprigs chopped thyme. Finely chopped. * Zest of half a lemon. Salt and pepper and pinch of cinnamon. * Half a beaten egg. * 2handsfull of fine breadcrumbs. METHOD: Mix all ingredients thoroughly together with hands or wooden spoon. Then form into small oval shaped golf ball sized meatballs, squeeze the mixture firmly together , You can squeeze them round barbecue skewers and cook them 4 at a time on a barbecue or under a hot grill.
