Lunchtime Favourites (Saturdays on BBC Radio Lancashire, 12-2) Maria Felix Vasâ€™ lunchtime favourite Guest last Saturday was Anne Marie Lewis, who lives with her Husband Malcolm in Fleetwood (pic). Anne Marie was a nurse, then trained to be a midwife. She also is a medium, after researching life after death. Both Malcolm and Anne Marie worked for the NHS until they retired recently. They now spend their time travelling when they can, with their favourite place being the Carribean. The recipe below is influenced by one of their favourite places!
Lunchtime Favourite Recipe Antiguan Chicken Ingredients: Serves 4 Juice and zest of 1 lime, 8 chicken pieces, Oil for cooking 2 bay leaves, 1 onion, 1garlic clove; chopped, 1 red chilli (seeds out and chopped), 2 tomatoes chopped, 6 sprigs of thyme Another onion, roughly chopped, 330ml chicken stock, 300g chopped pineapple, 5Tbs raisins, slash of dark rum (optional)

Method: Rub lime juice and zest over chicken and rest for 30 mins Heat oil and brown chicken pieces; lay to one side In the same pan saute onion and garlic till pale gold. Add tomatoes, chilli, onion, thyme, bay leaf and raisins and cook for 5 mins Return chicken to pan. Add enough stock to cover and bring to boil. then simmer for 35 mins or until chicken cooked Add pineapple and cook gently till a little mushy ( 10 mins ). ( serve with rice )
