Grappling with Barriers to Agricultural Water Conservation on Colorado's West Slope
The Upper Colorado River Commission identifies voluntary and compensated reductions in consumptive water use as an important tool for managing Colorado River water supplies in the face of a drying climate and falling water levels in Lake Powell. Water leasing programs are also an important tool for watershed groups like the Roaring Fork Conservancy working to meet local environmental flow targets. However, participation rates in water conservation programs remain low locally and regionally. Seth Mason will share insights from research activities conducted in the Roaring Fork Watershed and across Colorado's West Slope that probe the factors that limit water conservation program participation rates and attempt to identify opportunities for increasing the appeal and effectiveness of future water conservation programs. This is a Roaring Fork Conservancy Program as part of the Brooksher Watershed Institute. Registration is required as seating is limited. Writing
Memoir Writing for Older Adults
Everyone has a story. Everyone is a memoir. Taught by Jessica Amber Barnum, this workshop series will facilitate thoughtful discussions about “being a writer” and the art of writing, provide space to practice mindfulness for awakening our Writer Muses, expand our memoir writing with wordplay and figurative language, read sections of published memoirs for inspiration, and dive into prompts to recall and ignite the stories inside of us. We'll jump “write” in to write and inspire each other!

DELICIOUS HOLIDAY RECIPES
By Amy Schuster Holidays.
Whether you love or loathe them, you can’t deny that food around this time of year is pretty satisfying. There is truly nothing better than waking up on either Christmas or Thanksgiving morning to the smell of food. I always look forward to helping my mom out around the kitchen and being her sous chef, generally while there is a football game on in the background. If Christmas songs only had more lyrics about stuffing your face or food comas, it would definitely
boost my ‘holiday spirit’ and make me want to sing along (off key of course). Just thinking about food you eat over the holidays makes my mouth water. Here are some of my favorite Christmas and Thanksgiving foods below! They are suitable for all holiday festivities and occasions.
Escalloped Corn (aka Corn Casserole)
This delicious recipe came from my grandma, Lucille Wallace, who passed it down to other generations. This is my family’s version of a classic dish. This
comfort food is perfect for any occasion and is very easy to prepare! You will need:
• One egg
• 1 cup of sour cream
• ½ cup of melted oleo
• ¼ tsp. of butter flavoring
• 1 can of whole corn, undrained
• 1 can of cream style corn
• 1 small package of Jiffy cornbread mix
Mix all ingredients together. Put into well-oiled heating dish.
Bake at 350 degrees for 45 minutes. Serves 6-8.
Frozen Cranberry Salad
This yummy side dish was introduced to our family by my mom’s old roommate, Christa Mossman. It is perfect for Christmas and Thanksgiving dinner or for a Friendsgiving potluck. This recipe calls for:
• 1 14 oz can of Eagle Brand Sweetened Milk
• ¼ cup of real lemon juice
• 1 16 oz can of whole berry cranberry sauce
• 1 20 oz can of crushed pineapple (drained)
• ½ cup of chopped nuts (walnuts)
• 1 9 oz container whipped cream (thawed)
• Lettuce leaves
In a large bowl, combine milk and lemon juice. Stir in cranberry sauce and nuts.
Fold in whipped topping. Spread in a 13” x 9” dish.
Freeze till firm. Remove from the freezer 10 minutes before cutting. Serve on lettuce.
Note: Return any leftovers to the freezer.
Pumpkin Pie
You didn’t think I would forget the dessert did you? I’m going to conclude this on a sweet note (pun intended) with this favorite of mine: the glorious pumpkin pie. This recipe is taken from the cookbook, “Simply Delicious Desserts” published by Borden Inc.
• 1 (9-inch) unbaked pastry shell
• 1 (16-ounce) can pumpkin (2 cups)
• 1 (14-ounce) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
• 2 eggs
• 1 teaspoon ground cinnamon
• ½ teaspoon of ground ginger
• ½ teaspoon of ground nutmeg
• ½ teaspoon of salt
Preheat the oven to 425 degrees. In a large mixer bowl, combine all ingredients except the pastry shell; mix well.
Pour into the pastry shell. Bake for 15 minutes.
Reduce oven temperature to 350 degrees; bake 35 to 40 minutes longer or until knife inserted 1 inch from the edge comes out clean. Enjoy!
