2010 Cab Mac Barossa winemaker Wayne Dutschke has reincarnated a landmark wine he played a part in developing 25 years ago, Cab Mac. An abbreviation for ‘carbonic maceration’, Cab Mac was created in 1983 by the late Stephen Hickinbotham. It struck a chord for its finesse, and being a red wine anyone could drink. Dutschke’s 2010 Cab Mac Barossa Valley Shiraz follows, this time, with old vine Shiraz grown on the family block at Lyndoch. The carbonic maceration process softens and fills the palate to a young early drinking red. The quality of the fruit comes to the fore, with no intervention from oak. $20.

The Vine Inn's new menu is set to be a winner this season for both locals and visitors. Manager of the Nuriootpa business, Chris Linden, has made sure there's a dish to suit everyone's tastes. His chefs, which include a team of eight, are the ones bringing a culinary change to the venue. The Vine Inn’s chefs also bring knowledge and skills of cultural dishes such as curries and stir-fries.

In addition to the meals served at the Vine Inn restaurant, the Sport's Bar now serves up four Chinese dishes and four Indian dishes, either eat in or takeaway on Wednesdays. "We realised a need for the people of the Barossa to have a variety of options," Chris said. The Vine, located on Murray Street, Nuriootpa, is open seven-days-a-week. Schild Estate 10th ANNIVERSARY CELEBRATION

he Schild family’s association with the Barossa dates back almost 60 years. In 1952 Ben Schild bought the Three Springs Farm in Rowland Flat and began growing grapes. After Ben passed away in 1956, his son Ed took over the family business at the age of just 16. The young entrepreneur worked hard to grow the business and today, more than 50 years later, Ed is one of the largest independent premium grape growers in the Barossa, with more than 400 acres of vineyard. Schild Estate Wines general manager John Retsas said Schild wines offer outstanding quality and value. “We make wines that express a sense of place,” he said. Schild Estate boasts some of the oldest vineyards in the country. Its Moorooroo vineyard at Jacob’s Creek was planted by William and John Jacob in 1847.

Schild Estate 10th ANNIVERSARY CELEBRATION

child Estate Wines’ new winery has officially been opened. The grand opening of the $4million Valley of Hope winery took place on July 24. South Australian Liberal Party leader Isobel Redmond officially declared the facility open on the day. Schild Estate Wines general manager John Retsas said the company’s new winemaker Scott Hazeldine worked closely with architects to design the facility. “This was a major investment for Schild, both in our own infrastructure and in the Barossa Valley as a whole so it’s extremely rewarding to see this project come to fruition,” he said. “The new design features all the latest winemaking technology, which will allow us to maximise the quality of the wines and also improve our efficiencies - for example, the new winery will capture half a million litres of water for us to re-use and recycle.” Mr Retsas also said cuttings from the 160-year old Shiraz vines at Schild Estate Wines’ Moorooroo vineyard have been replanted at the site. The Valley of Hope Winery is located on Barossa Valley Way just outside of Lyndoch.

erkshire pigs are one of the oldest breeds of pigs in the world.Known for their black hair, slow growth rates and high fat content, the popularity of the pig has decreased over the years. Despite this, Berkshires remain a premium meat-producing breed. Its pork can be compared to Wagyu beef, with its extra marbeling throughout helping to add flavour and retain moisture. Freeling business SchuAm Free Range Pork has been revolutionising the breed over the years - with award-winning results. Four years ago the piggery introduced Berkshire into its operation, and so began the task of breeding out the negatives and breeding in extra positives. SchuAm’s Daniel Schuster explained. “What we do is we cross them back into our blood lines, like our bores are white bores so we’ll mate them back to that and then farrow them out and grow them out,” he said. “They’re called silvers when they’re a white and a black and then we come back again later with another black and mate it back to that and that way you have the genes from the two sides.” Daniel said such a breeding program requires patience. “It’s a very slow process, like we keep on selecting out traits that we like and then we’ll mate those specifically to a pig that we want the trait from,” he said. But the family owned and operated business is certainly doing something right. As reported in the Herald last month, SchuAm Free Range Pork was named a medallist in the ‘from the paddock’ category at the prestigious delicious 2010 Produce Awards.
