TEAMTALK

THE END OF A JOURNEY ‘Om Swastiastu...’ It has been 20 years since Bali & Beyond magazine was first published as a tabloid before it was finally transformed into the magazine that we know today. However, change is inevitable. It is with heavy hearts, we have to announce that the journey of Bali & Beyond print magazine has come to an end. Ironically, our last and final edition is also our 20th anniversary issue. Yet, sometimes reality can be bittersweet, and we have no choice to but to face it with our heads held high. Therefore, we have compiled special stories not to only commemorate our birthday, but also to become a token of memory for you to keep. And of course, we have prepared reviews and articles for you to have an unforgettable summer experience in Bali in the months of July and August. First and foremost, take your family for an adventurous day out to Aqualand

in Bali Wake Park. The new addition to the island’s water attractions will certainly bring your group together in such a fun activity – read our ‘ACTION & ATTRACTION’ for more details. Then, take your loved ones to enjoy some Mauritian flavors at Ti Moris Bali or indulge in selections of modern Japanese cuisine at Sake no Hana. Flip through our ‘DINE & DELIGHTS’ to reveal our dining experience at each restaurant. For the ladies, get ready to enter this summer with style! Before going to numerous parties, make sure that you have a dress that is fashionable and comfortable at the same time. For some inspiration, take a look at our ‘FASHION FOLIO’ where we feature the latest collections of four fashion houses in Bali. After attending all those parties, it is only right to get pampered with a relaxing spa treatment. Mandapa Spa at Mandapa, a Ritz-Carlton Reserve and Padma Spa at Plataran Menjangan Resort & Spa have everything you need for undisturbed “me” time. Find out more about each spa in our ‘INVITE & INDULGE’. Last but not least, we would like to thank you, our avid readers, for your continuous support. We certainly wouldn’t have reached 20 years without your love. So for one last time, we wish you happy flipping through our pages. ‘Om Shanti Shanti Shanti Om…’ The Team

about to embark on a life changing weekend.

I ďŹ nally arrived at the room where the meditation class took place, just in time before the lesson started. Guided by a professional meditator, this class taught me and other participants to simply sit still and focus on our inner-selves. It was not easy, but I felt better already just by trying to meditate. I suddenly realized how long it has been since I last spent time for myself and looked deep into my mind and heart. For the past couple of months, I have

At the end of the class, our guru shared how significantly amazing his life has been since he dedicated his life to meditation. The kitchen team needs to understand why and how to use this knife,” he explained. “With the right technique, this knife produces a very fine cut that influences the texture and taste.” Of course, the surprise doesn’t stop there. Not long after, a number of dishes were served on our table, each one proved just how outstanding Chef Hideki and his team are in combining local produce and modern touches to create authentic Japanese flavors.

TRUE FLAVORS Our culinary journey began with several excellent appetizers, starting with the Lobster Wa Salad. It consists of blue lobster sourced from Jimbaran, this dish has a perfect balance of freshness with green salad and yuzu sauce, and a crunchy texture from the crispy

meal time with family and friends. Once I sat at my table together with my little family, one of the staff handed us the menu and helped us choose our dishes. For our starter, we opted for the Gato Pima, which is known as a classic Mauritian chili bite. This dish got my attention as it “introduced” me to yellow split peas, which I first mistook for corn. and sautéed greens for side dishes. For the carnivores, the Beef Salmi is definitely a must-try. Marinated with red wine, the beef cut is cooked slowly with a blend of Mauritian exotic spices and herbs that not only elevates the meat flavor but also makes it tender as well. Another meaty dish that I personally recommend is the La Daube, a slowcooked lamb dish with rich stew that is just hard to resist.

Smoked Rosemary Old Fashioned.

SWEET STUFF The Ananas Flambé is the highlight of the dessert menu. Even before it was served on my table, this dish already caught my attention. Ti Moris is set with an open-style kitchen, giving me the opportunity to see how this dish was prepared – it involves an attractive flambé as the heart of the dish is a flamed pineapple. The flambé was a show on its own, indeed! The night was still young and I thought it was time to end my Mauritian dining experience with

MYSTIC MEDEWI

BALI&BEYOND.CO.ID/JUL

“Build your happiness,” he told me with a sly smile. We were perched on two small wooden stools outside his tiny hut by the river, watching fishing boats returning home from a night’s journey. Moments earlier, I had been stepping on stones softened by the caress of Medewi waves, ambling with a heavy heart from the dawn’s alarming news; my father’s health had deteriorated again. I had spotted a group of local fishermen untangling their nets and collecting their catch. I approached with a gentle curiosity, assuming a smile as our shared language. A tall middle-aged man emerged, looking youthful in a grey beanie hat. I was taken aback by his English and direct manner of speaking on philosophical topics, such as the self and God. He seemed to be intrigued by the peculiar girl who had befriended his village and invited me for lunch with his wife. I then continued my stroll, but on my way back, the gentleman found me in silent tears – I could no longer contain my grief from that morning’s weight. Rather than cringe, he offered coffee and conversation. I felt solace in his calm and encouraging demeanor. He told me stories of his travels, anecdotes of people he met along the way, and how life seemed to fall into place at the right moment. He believed human beings were united in their universal desire for satisfaction. More importantly, he spoke of the unquestionable freedom in the simple acceptance of everything, good or ill. “We must force ourselves to surpass and continue to build upwards,” he explained. I flew home a week later, putting an end to two beautiful months on this island. Shortly thereafter, on the hazy morning of May 17th, my father passed away. In the days that followed, I sought for a way to honor his transition. I had witnessed Balinese spirituality first-hand and felt an impetus to adopt and adapt their tradition of canang (daily offerings). Together with my family, I created personalized flowered baskets, adorned with fine sand and shells from my father’s favorite beach, bits of his favorite Belgian chocolate, topped with Balinese incense and sprinkled with Massachusetts seawater, all in an effort to guide his spirit safely back to the home and family that still longed for him. At times, I transport myself back to that fateful Bali morning, where a complete stranger had opened his heart, providing me with consolation and perspective when I had felt lost. His honest character and raw emotion had been profound and refreshing. He had challenged me with the thought-provoking choice of happiness as an unwavering decision. Now, in this present moment in the face of adversity, I see overwhelming value in this man’s message. I feel more empowered to choose positivity. I will follow the path of conscious happiness, always treasure that simple moment in the midday sun, gazing out at the river flowing into the boundless sea, finding peace in acceptance. in Glodok, it was only right that we ended this program with a lunch at Gloria Alley. Indulging in some delicious local food, I felt I had more knowledge about the local community, the cultural sites, and the hidden gems of Jakarta – I felt satisfied with the walking tour as I got to know the city I was born and raised in a little bit more. Jakarta Good Guide doesn’t put any price on their tours, which makes it even more interesting. By the end of the tour, Farid gave a small bag to each participant. We only needed to put as much money as we wish into that bag. Meaning, participants can contribute as much as they want to give, depending how much they think the tour is worth. „ By Edna Tarigan

HEALTH&MEDICAL Call an ambulance by dialing 118, but it is a lot more practical and quicker to hire a taxi. Most hotels have on-call doctors on standby. For “Bali Belly”, Lomotil and Imodium eliminate symptoms, but not gastro-related infections. A fever along with symptoms requires doctor-prescribed antibiotics. Drink as much liquid as possible. Isotonic drinks under various brand names are widely available and are known to replenish body hydration and replace fluids. For discomfort, diarrhea and cramping, drink strong, hot tea; avoid fruits and spicy foods. Some day-biting mosquitoes carry dengue fever, but this is not a problem in tourist areas. Bali is non-malarial and prophylaxis is not required. Mosquito bites, cuts or abrasions easily become infected in the tropics. Treat them immediately. Drink only bottled or boiled water. Peel fruit before eating; avoid raw vegetables except at reputable restaurants. Ice in restaurants is safe. Protect yourself from the intense equatorial sun. Use high SPF sunblock and a hat. AIDS and sexually transmitted diseases are increasing in Indonesia. Local sex workers have multiple partners from around the world. They are not checked for sexually transmitted diseases. Act responsibly and use condoms, available over the counter at pharmacies.
