A Cool Recipe for a Hot July By Shelly Hill

I love eating fresh fruit and I love it even more when I can use the fruit to make a delicious dessert. A few years ago my aunt gave me her recipe for this fruit cream cheese pie which is really easy to make. If you prefer graham cracker crusts over baked pastry can certainly substitute your crust to what your family prefers. Cream Cheese Pie Recipe 1 baked pie shell (9 or 10�) 1 pkg. cream cheese, softened 1 (14 oz.) can Sweetened Condensed Milk 1/3 cup Lemon Juice 1 teaspoon vanilla extract Blueberries and Strawberries Bake your pie shell and let cool. In a large bowl, beat the cream cheese until fluffy. Gradually beat in the can of sweetened condensed milk until smooth. Stir in the lemon juice and vanilla extract. Pour mixture into your prepared pie shell. Chill for 2-3 hours or until it has set. Remove from refrigerator and arrange fresh fruit on top. Cover and store in refrigerator until you are ready to serve.

Balance In the Summer Heat With days on end of summer heat, have you felt stymied trying to get much done - outside or inside? Yes, this weather and all the fun that summer traditionally brings may make you realize you are falling into situational disorganization. This, as opposed to chronic disorganization, is when you just can’t seem to get a thing done for a time. Heat or cold; life’s events happy or sad; looking for permanent vs. temporary fixes - situational disorganization comes and goes.

Are you up at the crack of dawn just to get walks in or to garden before the temp rises to 90 degrees? Do you work long into the evenings, with a lot of ‘dead time’ in the middle of the day? The desire to just go-go-go has sort of gone recently. So, be kind to yourself and be present, be mindful, be grateful. Sound a bit woo-woo to you? Don’t worry - your get-up-and-go will return as we put away the iced teas and jump into fall, which is just around the corner. In the meantime, please remember that there is no such thing as perfection, so aim for good enough to get the most mundane tasks done. I’m talking about the laundry, ironing (what’s that, Millenials might ask?), housekeeping, shopping and cooking keep it easy and just ‘git ‘er done! Salads are a great main fare.

They are not only healthy but less expensive than many food options, so all’s well. Looking for the ‘easy way out’ always works, and fits right into the ‘good enough’ philosophy. That said, remember that ‘good enough’ isn’t to be equated with being sloppy or slovenly - just cut yourself a break on any and all ‘rules’ you may have been raised with or concocted over the years. Be easy on yourself and enjoy summer. Yoga and Pilates make a great exercise routie; lawn care can be hired out; reading can take on a new importance; gardening becomes just what must be done - watering and deadheading, early in the day. There’s nothing wrong with wanting to slow down and move more slowly through these heated days. So, there! Don’t feel guilty about your lack of progress on that To-Do List. Aim for 2-3 items per week, maybe, instead of 2-3 per day - the Completion Police are on vacation, too! Handle The Musts and then enjoy the rest of your day. She forgets to feed her dog some days and overfeeds him others. She can’t remember when she last took him to the vet. His nails are getting way too long. She’s letting him roam the neighborhood because she can’t remember there are leash laws. When a dog’s safety is affected by your mom’s health issues, it’s tough. On the one hand, you don’t want to take away her companion. On the other hand, you don’t want that dog to get injured, lost, or impounded for attacking another person. Before you make a rushed decision, try these suggestions. Can Your Mom Complete a Daily Checklist? You might be able to set up a checklist on a dry erase board for your mom to go through each day. When she’s completed a task, she checks it off. For tasks, put things like feed the dog in the morning, feed the dog at night, change the dog’s water, and walk the dog. At the end of the day, she erases her checks and repeats the process when she wakes up.

Control Summer Cooling Costs

(BPT) - As you gear up for sun, surf, barbecues and all the other fun activities that represent summer, are you also concerned with how to keep yourself and your home comfortably cool this season? Of course, another basic is controlling costs in hot weather. The average homeowner spends nearly half of their yearly utility bills - an average of $900 - on heating and cooling, according to the U.S. Environmental Protection Agency.

Fortunately, we can all take steps to save energy and protect our environment, while still maintaining comfortable temperatures this summer. Think about which of the following tips might help in your home. Brilliant breezes: Ceiling fans create a breeze effect that makes air seem cooler than it really is, allowing you to set your thermostat slightly higher without discomfort. On hotter days, raising the thermostat by only two degrees and using a ceiling fan can reduce air conditioning costs by up to 14 percent. Get with the program: Tune up your heating and cooling system annually and change filters every three months. A dirty filter can increase energy costs and damage your equipment. If your home has uneven temperatures between rooms, consider adding insulation to your attic. That can help you maintain a more comfortable, even temperature and reduce energy bills.

It’s curtains for you: When you’re away from home or simply don’t need full sunlight, use double- or triple-layered heavy curtains backed with insulated material to keep the sun from unnecessarily heating your rooms, especially those with windows facing west. You can always switch them out for lighter-weight versions to take better advantage of sunlight when winter comes. Thoughts on your thermostat: Optimize your heating and air conditioning use by installing a Wi-Fi enabled ENERGY STAR certified smart thermostat. They’re independently certified to deliver reliable performance and energy savings, and let you use your computer or smartphone to remotely adjust your home’s temperature on demand, schedule automatic temperature changes based on your lifestyle and receive important feedback on energy use. Become a microwave master: You can use up to 80 percent less energy when you cook via microwave oven instead of traditional oven or stove, and because a microwave generates less heat, your home stays cooler so you can also save on air conditioning. Ultimately, switching to microwave cooking for just one meal daily could prevent up to 922 pounds of greenhouse gases per year.
