stick to your roots. “The bear represents California and our roots are in home brewing,” he said. “We are fortunate to be able to connect with our community through our small business and continue to invest in the people around us.” Currently, Bear Roots is brewing on their one barrel system with five two-barrel fermenters, but they are already planning to expand. “A seven or ten barrel system is next,” smiled Terry. “Our beers are designed to satisfy a broad range of palates and we need to satisfy that thirst. We are brewing every day to keep up with demand.” Once that new system is in, the old system will be dedicated to the Brew Experience concept. Of the beers on tap, Chocolate Peanut Butter Milk Stout (5.8% ABV/30 IBU), is one that is always in demand. Also known as “The Bear Cookie,” named by Page and Terry’s 3 year old son Luke, it is one of the brewery’s more popular brews. Pitch black in color and opaque, it has a feathery tan head. Its aroma is delicate, reminiscent of roasted coffee beans, chocolate, and root beer. Texture is silky smooth, nicely carbonated, and

the flavor profile is complex: mocha, vanilla, peanut butter, chocolate, sweet. It has a clean, crisp, mildly bitter finish. Made with barley, oats, noble hops, raw cocoa nibs, and peanut butter boom, this beer is wellbalanced and delicious. No wonder it is so popular. Rooted In Nelson IPA (6.8% ABV/95 IBU) is also a best seller at Bear Roots. Light yellow gold in color, it is hazy with a frothy white foam head. Aroma is citrusy, piney, and bready. The juicy taste is much like that of its aroma profile, with a hint of tangy tangerine. It is a medium-bodied beer with sparkling carbonation and a crisp, clean finish. Brewed with American 2-row, Maris Otter varietal barley malt and Nelson Sauvin hops, Rooted In Nelson is representative of a true American IPA, albeit with New Zealand influence.

During our visit to Bear Roots we also sampled their “Bite The Bulleit” Triple Belgian (12.6% ABV). This beer is gold in color, hazy, with a dense white head. Its aroma and flavors are fruity, spicy, bourbony, and sweet. It has a light body and clean, bitter finish. We like to drink Belgian Abbeystyle Tripels, and this is a good one. Like other well-crafted Tripels, Bite The Bulleit hides its high alcohol characteristic, so we suggest sipping it.

o local restaurant is doing a better job on a more consistent basis with beer-pairing dinners than The Cork and Craft. It’s a bold statement, but one I’m

willing to make. I’ve been to many a multi-course beer-and-food hook-up in my day, but after attending several at this Rancho Bernardo brewpub, I’m certain that theirs are the most heightened to be had on a monthly basis. There are a number of factors that help separate C&C from the pack. First off, there is the use of the Abnormal Beer Company ales that are brewed inhouse. As much as I appreciated the tasting room topology, there were a couple of design decisions that totally baffled me. For example, the Helix Brewing Co. bar took great pains to present their available beers with all the accompanying metadata (style, ABV, tasting notes, etc.) that a discerning consumer could possibly desire...and then obscured it by draping an array of edison bulbs in front. A simple read-through required a magnitude of neck-serpentining and swaying best performed by a “Welcome to the Jungle”-era Axl Rose. Bolt Brewing committed a lesser sin in employing bottomless flightcarriers. While those are not unilaterally terrible, pairing them with the uneven slats of a picnic table was definitely inviting chaos. Any slight adjustment to the position of the board was met with some random glass tilting or snagging a rogue edge, potentially jeopardizing the whole flight. That may seem overly dramatic, but I take the safety of my beers very seriously. Speaking of which, it’s time to get into the beverages. Both breweries offered in excess of 10 beers in a broad variety of styles, which I really appreciate. Unfortunately, I wasn’t finding much in any style to get particularly excited about. The beers at Helix Brewing Co weren’t so much “hit and miss” as “meh and meh”. Most featured flavors that were in the right ballpark, but generally fell short of home runs. For example, the King Rufus Porter brought satisfying notes of chocolate in the aroma and flavor, but finished with a vague fruitiness that didn’t do much for me. It reminded me of biting into a See’s Chocolate confection unaware of the unwelcomed cherry center lurking within. Their DIPA, Double Helix, offered a bold palate with equal parts citrus rind, agave syrup, and pine, yet finished with a whimper. In fact, most of the beers veered toward being thin-bodied and slight in the finish. Even my favorite, Galaxy Rye, felt a bit lean despite delivering a punchy orange and pepper up front. The selections at Bolt Brewing were, sadly, a bit more problematic. The Bolt Blonde (or, as I’ve redubbed it, “Bolt 45”) had an aroma best compared to a dicey malt liquor. The unpleasant solvent-y nose segued into flavors of overripe fruit and a musty, grassy finish. The Hard Pressed Orange Ale, presumably a fruited beer, certainly produced vibrant notes of orange juice, but countered them with the merest of seltzer-like finishes. Bolt Brewing found some reprieve in the Donator Dopplebock (though I found its bitterness excessive relative to style guidelines) and their undeniably chocolatey Porter, but ultimately there wasn’t much I’d want to revisit. While I was not blown away with the brews at either establishment in the La Mesa beer nexus, it is important to validate what they’ve done right. Both possess outstanding spaces for embracing a San Diego tasting room experience. Both were inviting and well appointed. Helix Brewing Co. was particularly adept at bolstering that experience with loads of variety in seating options and warm customer service. Even with my lukewarm regard for the beers, I would be tempted to return there. Bolt Brewing, however, would need to revisit the current state of their offerings to get a similar endorsement. •

The program’s wild popularity reflects the explosive growth of the craft beer industry in San Diego, the current Craft Beer Capital of the U.S. At the time of this writing, there are more than 120 breweries in San Diego County, with another 30 in planning.

A double IPA paired with carrot cake. When I suggest it, people tend to look at me funny but once they try it they are instantly hooked. It’s all about the “Oh wow” moment when the beer and food are both elevated in the pairing that I love. Hmmm, favorite off-flavor. I like the effect that oxidation has on the 3 percent of craft beers that can be cellared for up to 10 years, but for the other 97 percent, oxidation is bad. Let’s call it a love/hate relationship.

Do you anticipate that Craft Beer Camp will afford the same networking opportunities as the regular program? Yes I do. Our relationships with members of the craft beer scene throughout San Diego will continue to create a fast track for our graduates to enter the industry both locally and abroad.

Did you love your first sip of beer ever or was it an acquired taste? I did but that is a long story. Not everyone does. I’ve introduced tens of thousands of people to craft beer and it’s all about finding that gateway or transitional beer to hook them in. Once they have found that beer, all bets are off.
