On April 18, the winners of this year’s Los Angeles International Beer Competition, a professional brewing contest, were announced. Gold, silver and bronze medals were awarded in 100 style categories, and San Diego County breweries won an astounding 69 medals—26 golds, 23 silvers and 20 bronzes—representing nearly a third of all winners (three medals were not awarded in every category, and cider had its own category). Additionally, Stone Liberty Station and Rouleur received honorable mentions.

The most-awarded San Diego operations were Bay Park’s Deft Brewing (six medals including three golds), Pizza Port’s Carlsbad brewpub (six medals including three golds) and Carlsbad Brewery Igniter tenant Papa Marce’s Cerveceria (six medals). San Marcos’ Rip Current Brewing also managed a goldmedal trifecta, while Carlsbad’s Burgeon Beer, North Park-based Eppig Brewing, Pizza Port’s Ocean Beach brewpub, South Park Brewing, and Stone Brewing World Bistro & Gardens – Liberty Station each earned two golds.

MI K E HES S AN D G UADALUP E ADD SATEL LI T E TASTI NG R O OMS: In late March, North Park-based Mike Hess Brewing (MHB) hosted a grand opening for their new Imperial Beach tasting room (805 Ocean Lane) just a block or so from the water. Including a 6,500 square-foot yard and a kitchen managed by City Tacos, the space will eventually undergo a full outdoor build-out with shipping containers, fire pits, and an elevated, covered deck with ocean views. This fifth MHB location in California is more than two years in the making. “We love doing beach locations,” said Mike Hess. “My wife Lynda and I met and married on dog beach in Coronado and our kids have attended YMCA Camp Surf for many years. We love the IB vibe and the fact that it’s a destination beach and not just the next beach down.

Imperial Beach has a great local community and we found a perfect location 100 feet from the sand.” Up in Vista, Carlsbad-based Guadalupe Brewery now has a spot to serve full pints to its customers (631 South Santa Fe Avenue). After two years of work, owners Raul and Lisa Deju soft opened their tasting room on April 20. The Dejus originally sought space for their satellite operation in Carlsbad, but the Vista residents ended up stumbling across their 1930s-era, 1,200-square-foot space. “Our theme is Mexican wine country, which is to say mixed materials with some rustic elements along with some modern accents as well as furniture custom-made in Rosarito,” said Lisa. “We have salvaged the majority of the old hardwood flooring and floor joints, and have used those to create architectural accents, using all the joints to frame our windows and doors. The former flooring has been used in all sorts of places such as counter facing and the front window. We even made or own office door.” The Dejus also remodeled the front of the building, installing a 16-foot roll-up window with a deep window sill to facilitate people-watching. The City of Vista is currently beautifying Santa Fe from Main Street to Civic Center Drive, aiming to give it a “main street” character courtesy of wide sidewalks, green landscaping and a variety of parking options. and executive chairman Greg Koch announced they'd be transferring ownership of the facility, situated on 43,000 square feet in total, to Scotland-based BrewDog, by May 1. BrewDog plans to temporarily close the brewery and restaurant before reopening later this year. The project by Stone was in planning since 2014, and the grand opening was held in September of 2016. ABNO RMAL BEER ONE OF AMERICA’S FAST EST GR OWI NG BREWERIES: The Brewers Association (BA) — the not-for-profit trade group representing small and independent craft brewers — released its second annual list of the 50 fastest growing small and independent craft brewing companies of 2018. Rancho Bernardo’s Abnormal Beer Co. came in at number 21. “We grew nearly 300% last year, from 1000 barrels to 2770 barrels,” said head brewer Nyle Molina. The Brewers Association’s press release included further details: “Representing 27 states across the U.S., these small and independent breweries experienced a median growth of 163 percent with the median size being 1,350 barrels of in-house production in 2018. Breweries on the list range from 50 barrels to more than 40,000, and grew from less than 70,000 barrels collectively in 2017 to more than 170,000 barrels in 2018. As a group, these brewing companies represent approximately 10 percent of total craft growth by volume for the year, and include 13 brewpubs, 35 microbreweries, and two regional craft breweries.” “Even as market competition continues to increase, these small and independent breweries and brewpubs demonstrate there are still growth opportunities across a diverse set of regions and business models,” said Bart Watson, chief economist, Brewers Association. Last year, Novo Brazil and Bay City made the inaugural “fastest growing” list, in eighth and twenty-eighth places, respectively. CR AFT BEER STAT IST ICS IN CAL IFORNIA: A recent press release from the California Craft Brewers Association revealed that as of last month, more than 980 breweries are operating in California (an amount greater than there were in the entire country in 1995). Additionally, 95 percent of this state’s residents live within 10 miles of at least one craft brewery. More stats: 2012’s CA brewery count was fewer than 300; in 2017, more than 54,000 full time jobs were supported with an average annual salary of $56,839 ($3.1 billion in labor income); craft breweries paid $1.6 billion in taxes in 2017; and these breweries produced 3.3 million barrels of beer in 2017. California craft’s total economic impact that year: $8.2 billion. THE BO U NTI FUL B AG : Local upcyclers The Bountiful Bag celebrated one year of repurposing used grain bags into functional lifestyle products with an event at Wild Barrel Brewing in San Marcos, featuring other green local businesses, an art show, raffles, an educational booth by fundraising partner I Love A Clean San Diego, a photo booth, and a “grazing table.” MO R E THAN A DOZ EN B EVERAG E B USINES S ES

B UR G LA R I ZE D: A cash box bandit has been targeting local beverage businesses in recent weeks, smashing windows and quickly snatching cash drawers. Based on online video, business owners speculate it’s the same person. In the caption from their footage, here’s Black Plague’s description: “The assailant was driving a 2015 (ish) white Jeep Patriot (or similar). He was wearing Black hooded sweatshirt, blue jeans, DC shoes (possibly pure model), stands roughly 6’ tall, fairly slim build…” Thorn Brewing compiled a list of businesses hit in the last few weeks (below), and Longship Brewery owner Dan Jachimowicz recently spoke with NBC 7. Additionally, at least four breweries in the Temecula and Murrieta areas fell prey to a similar M.O. Local businesses burglarized in Vista: Iron Fist, Prohibition, Barrel Harbor, Booze Brothers, and Bittners Restaurant Equipment; in Ranch Bernardo: Brothers Provisions; in Oceanside: Golden Coast Mead and Black Plague Brewing; in Mira Mesa: Longship Brewery and Lost Cause Meadery; in Carlsbad: Papa Marce’s Cerveceria; in San Marcos: La Fleur’s Winery, Double Peak Brewing, and Rip Current Brewing; and in Scripps Ranch: Newtopia Cyder. MODE R N T I M ES C OM P LE T ES C A P I TA L R A IS E OF MOR E T HAN $ 1 M I LLI ON : Fans of Modern Times Beer were recently given the opportunity to invest in the Point Loma-based brewery, and they jumped at it; more than 75% of the “fan equity” was reserved before their WeFunder page went live on April 22. More than 1,700 investors contributed $1,069,832 to Modern Times’ expansion, with the company valuing itself at $264 million. The company is 30% employeeowned through an employee stock ownership plan (ESOP). M US E UM OF B E E R P LOT T I N G OP E N I N G IN T H E E A ST V I LLAG E : Entrepreneurs Anthony and Molly Ridenhour, Mike and Christine Kociela, and Bruce Glassman aim to build a brick-and-mortar locale to visitors to get a primer for our local beer scene, and they're calling it the Museum of Beer. The quintet is considering several potential locations in the East Village neighborhood. In addition to being near many hotels and lodgings, plus attractions such as the San Diego Convention Center and Petco Park, the founders say that, while the critical mass of businesses and entertainment venues is coming together, East Village still offers some of the greatest potential for unique new concepts in San Diego proper. Regardless of where they negotiate a lease, the Museum of Beer is projected to come in at more than 12,000 square feet. “San Diego has done a terrific job getting the word out about what a great beer city we are, but we still lack a central beer-information-and-experience hub in our downtown. Museum of Beer wants to address that need. We want to be San Diego’s beer welcome center, if you will,’” said Glassman, an author and writer who has reported on the local brewing scene for the better part of a decade. “It’s going to be that jumping-off place where everyone can come to begin their personal craft beer journey. It will seek to inspire hardcore beer fans and also educate those new to craft beer who have a thirst to learn more.” The project team intends to service both the aforementioned factions


by equipping the museum with an array of high-tech, hands-on exhibits providing insight on beer history, the brewing process and, of course, beer itself. Those exhibits will be split among an octet of categories: oo Science of Beer: A nano-sized brewing system will guide visitors through the beer-making process. oo Beer Universe: Info about beer styles and their appearance, aromas and flavors. oo America’s Hoppiest City: A historic journey through local beer history explaining why San Diego is so special. It will spotlight local organizations such as standout homebrew club QUAFF. oo Be the Brewer: A virtual-reality experience where guests see a brew day up close and personal. oo Getting Beer to You: Looking at canning, bottling, storage, proper glassware and the perfect pour. oo From the Canvas: Shining a light on the art gracing craft beer packaging.

Perks associated with the campaign will include branded merchandise, special events, the chance to brew a beer at Stone Brewing World Bistro & Gardens – Liberty Station, and more. C ON ST E LLAT I ON S HUT T E R S B ALLAST PO IN T ’ S T R A DE ST R E E T, T E M EC ULA OP E R AT I O N S : Ballast Point’s parent company, Constellation Brands, decided to shut down the Trade Street barrel-aging facility (which wasn't open to the public) as well as the brand's Temecula brewpub; the brewpub closed on April 16, while employees from Trade Street will "transition over the coming months," according to reporting by Brewbound. That outlet also described a decision by Constellation to record a $108 million impairment charge to Ballast Point's trademarks, "essentially admitting it overpaid when it bought the business for $1 billion in 2015. Constellation previously recorded an $87 million impairment charge to the Ballast Point trademarks in June 2017." Additionally, Constellation has decided against moving forward with a planned brewpub in San Francisco.

oo Sun, Surf & Beer: Video and drone footage will give newbies a look at beer festivals, tasting rooms and more. oo The 91X Film Set: A studio will be built for 91X to record and broadcast its Beer for Breakfast programming.

The brewing system in the Science of Beer exhibit won’t just be for show. It is envisioned as a mechanism for local brewers to produce beers to tap at the museum’s tasting room, where more than 65 taps of draft ales and lagers, plus bottled beers from San Diego breweries, will be available for more “immersive” education. Food will also be available from an on-site pizza kitchen run by Firecracker Pizza’s Chip Schloss. He’s not the only founder with Missouri ties. Mike Kociela founded St. Louis’ National Blues Museum. Additionally, Anthony Ridenhour is executive director for the San Diego Model Railroad Museum. It’s a large-scale project that is projected to open in 2020. Before that can happen, the Museum of Beer team will seek crowdfunding via the online platform

set aside 330 square feet of its facility for installation of a kitchen. “We are looking for a food tenant that would be responsible for the kitchen buildout and half the rent per month,” says co-owner and head brewer Will Fox. “They would keep all the sales from the food side. We feel like we can make our place a destination people will want to spend time at while substantially increasing beer sales.” While the financial terms are set, Fox and his colleagues are rather flexible. They say the square footage allotted for the project can be adjusted if necessary. Fox would prefer for a high-quality pizza vendor to take the space, but also sees great potential for barbecue. ES CO ND I DO B REWING ’ S IPA WINS AT BREW DOW N: Escondido Brewing head brewer Ketchen Smith has been winning awards with his IPA for years. Even though that recipe garnered him a National Homebrewers Conference medal, the first-place finish it earned last weekend might just be its most meaningful accomplishment to-date. That win came at Green Flash Brewing’s first annual Brew Down Beer Festival. The event, which was held at Green Flash’s Mira Mesa headquarters and benefited the San Diego Brewers Guild, included a competition aspect where attendees sampled beers from 22 breweries and cast votes for their favorites. In the end, there was no need for intense tabulating; Escondido Brewing’s Hopcondido IPA won by a landslide. But there was more to the victory than bragging rights, and that’s what has Smith so amped. “This was the first beer festival we ever participated in, and we chose it because it was for a good cause. The winning brewery received $5,000 toward the charity of their choice, which is awesome and not common for festivals,” says Smith. Escondido Brewing selected Wounded Warrior Homes as its beneficiary, and will be presenting the organization with a check on live TV in the near future. PA C I F I C I S L A N D E R B E E R C O . B R E W E R S A S S O C I AT I O N RELEASES ANNUAL G R O W T H R E P O R T: The Brewers Association (BA)—the trade association representing small and independent American craft brewers— released annual growth figures for the U.S. craft brewing industry. In 2018, small and independent brewers collectively produced 25.9 million barrels and realized 4 percent total growth, increasing craft’s overall beer market share by volume to 13.2 percent. Retail dollar value was estimated at $27.6 billion, representing 24.1 percent market share and 7 percent growth over 2017. Growth for small and independent brewers occurred in an overall down beer market, which dropped 1 percent by volume in 2018. The 50 fastest growing breweries delivered 10 percent of craft brewer growth. Craft brewers provided more than 150,000 jobs, an increase of 11 percent over 2017. “Craft maintained a fairly stable growth rate in 2018 and continued to gain share in the beer market,” said Bart Watson, chief economist, Brewers Association. “Small and independent brewers continue to serve as job creators, strong economic contributors, and community beacons.” There were 7,346 craft breweries operating in 2018, including 4,521 microbreweries, 2,594 brewpubs, and 231 regional craft breweries. Throughout the year, there were 1,049 new brewery openings and 219 closings—a closing rate of 3 percent. “The beer landscape is facing new realities with category competition, societal shifts, and other variables in play. There are still pockets of opportunity both in terms of geography and business model, but brewers need to be vigilant about quality, differentiation, and customer service,” added Watson. •

JUSTICE IS BLIND ( AND SO ARE THE TASTINGS) IN THE

W

alking onto the Del Mar Fairgrounds in mid-April feels pretty peculiar if you’ve only experienced it during the San Diego County Fair. The thoroughfares, once stuffed with greasy foods and even greasier tourists, are largely idle. On this particular day, the only outward indications of life are a series of signs for a beer judging event and a lot attendant giving frustratingly vague instructions on where to park. Why are you directing me to a lot on the right when the event is half a mile to the left, Parking Saboteur? If I replaced you with nothing I’d be closer right now! Despite the parking disinformation campaign (no doubt funded by the Macrobrewing Deep State), moments later I find myself in a hall among the Glitterati of San Diego beer. It’s stuffed to the gills with professional brewers, local homebrewing heroes, venerable BJCP judges, and one beer writer of note (if you sort the list of available options alphabetically by last

name*). For the next six to eight hours we’ll endeavor to evaluate hundreds of submissions to the San Diego International Beer Competition (SDIBC). That judging throughput is considerable, but it doesn't fully represent the scope of the competition. More than 1,500 beers are ultimately under consideration, which requires two full days to process. It is, no doubt, a logistical nightmare. However, given that this is the competition arm to the equally gargantuan San Diego International Beer Festival (June 14-16), there's clearly no lack of ambition to make it happen. After checking my table assignment (and verifying that I’m not paired off with any brewer that I previously excoriated in print), I grab my seat. Each table is outfitted with a standard issue beer tasting utility pack: stacks of blank score sheets, beer style reference materials, bottled water, and mounds of the world’s most oxymoronic

snack — saltless saltines. It’s a pretty drab canvas, save for the few yellow No. 2 pencils scattered about. But that’s about to change. Every pair is assigned a specific beer style and bestowed a set of eight to 15 anonymous samples, transforming the judging real estate into a beer-hued superbloom. It's imperative at this point to organize the cups and forms into some semblance of production flow, which has the unfortunate side effect of making the tabletop resemble an overburdened urinalysis lab (with some tragically unhealthy patients, I might add). Though the endgame of this lengthy appraisal will be a series of awards recognizing the top three Best of Show for every beer style, the primary output of the beer judge is the score sheet. The content of these forms can vary from event to event, but for this competition the focus is on evaluating the aromas, flavors, balance, finish, and other

BEER CONSUMER SD INTERNATIONAL BEER COMPETITION notable dimensions of a beer with brief exposition. An appropriately detailed score sheet should always provide sufficient information to demonstrate why a beer did or did not advance further in the competition. Needless to say, hand cramping abounds. Producing miniature sonnets to beer admittedly starts to feel like busywork after the first few samples, but it’s important to remember that content is arguably more valuable than the awards they’ll inform. These notes represent a direct line to the brewer, allowing them to see how closely their vision manifested in the glass. Crowdsourcing this information provides some additional assurance that the brewer isn’t at odds with one tainted palate or some rando who laments “it wasn’t beery enough.” Any brewer willing to expose their work to such intense scrutiny really deserves the benefit of thoughtful analysis, despite my impulse

to scrawl “Shame. Shame. Shame.” for the occasional turd. SDIBC judging may read as a largely introverted and academic affair, but that’s only because you’ve yet to encounter its second phase. Once initial assessments are complete, the two judges must gird themselves to enter the arena. Don’t worry, it’s only a metaphor — the incidence of violent beer judge on beer judge crime in San Diego is barely double that of the national average. Each judge, armed with little more than their perceptive prowess and pedantic persistence, must make the case for which brews in the group best represented the style at hand. Once in a blue moon, the two judges find themselves in full agreement and there’s little else to do but let the awkward high fives fly, but more often a spirited discussion is needed to achieve resolution. I choose the descriptor “spirited” very specifically here, since it

tends to be applied to everything from a sassy toddler to a mustang that lives solely to brain passerby with its rear hooves; the intensity of the decisionmaking process can vary widely. That’s not actually all that surprising when you consider that beer judging, on top of being a somewhat subjective enterprise, is a hobby often borne of superfandom. Is choosing the ideal Belgian tripel really that much less nuanced than weighing in on Kirk versus Picard? Sadly, there is seldom time for revelry once the votes are cast. One circuit leads to another, eventually graduating to medaling rounds that play out much the same. It can feel like a Sisyphean task at times. Of course, if Sisyphus was charged by the gods to just drink his way up a hill, he probably wouldn’t have minded the backsliding so much. *Curse you, Ian Anderson and your frustratingly alphabetical last name! THE MODERN TIMES ARE A-CHANGIN’ Elizabeth Mandala’s educational initiatives are helping shape the future of the maturing brewery I’m

an aggressively punctual person. So when I was running 10 minutes late to interview Elizabeth Mandala over coffee at Young Hickory in North Park, my anxiety alternated between reasonable (“maybe if I buy her a scone, she’ll forgive me”) and the unhinged (furiously refreshing my browser to get ComicCon tickets-level stress). But when I rushed in with profuse apologies, Mandala waved them away. She’s used to rolling with the punches. As one of the first employees of Modern Times Beer (by her best guess, she’s number

16 out of currently 247 and climbing), she’s seen the challenges that inevitably plague booming businesses and is pretty skilled at navigating them. Case in point: partway through the interview, she asks me if I’m familiar with the concept of emotional intelligence. I have a vague notion, but ask for elaboration. “I always thought emotional intelligence was your ability to read other people and to be empathetic and things like that. It’s equally, and probably even more so, about regulating your output, so making sure that what you give out is what you intend to give out and recognizing your impact in a room,” she tells me.

industry for over a decade, starting out as a waitress and eventually manager at Cambridge Brewing Company in Massachusetts. From there, she hopped around at spots like Lord Hobo, the Craft Beer Cellar, had a brief stint at Long Trail Brewing in Vermont, an even briefer stint in hair school (“I thought maybe beer wouldn’t be a real career?” she laughs), and finally made her way to San Diego in 2014. “I came here with a bunch of letters of recommendation from people who knew people — I was going to get in everywhere!” Mandala reminisces, and then chuckles. “It did not work out that way.” She eventually accepted a hostessing job at the revered Churchill's Pub & Grille in San Marcos, a position that both she and her employers agreed she was overqualified for. But as luck would have it, a brand new brewery was looking for beertenders for its tasting room in an industrial corner of Point Loma: Modern Times Beer.

If you’ve ever met Mandala, this concept makes perfect sense. It explains her ability to remain tough as nails while simultaneously cultivating an infectiously congenial attitude (as well as her saint-like ability to overlook my tardiness). As the Education Coordinator at Modern Times, she’s responsible for an avalanche of initiatives that range from new hire orientations (“I’ve met probably all but 10 employees”) to implementing front-of-house training programs to ensure all customerfacing employees are up-to-date with Modern Times’ often dizzying beer release schedule. This range of responsibilities means that she’s often the face of Modern Times to new employees and customers alike — a role that she admits can be taxing.

There were three beers on draft at the time, a far cry from the behemoth portfolio of beers that Modern Times pumps out today. But we all know the end of the story: the initially scrappy brewery with unusually svelte branding exploded, with Mandala along for the ride.

“I always have to be in a good mood,” she sighs. “But it’s not true! I’m not always in a good mood.”

As Education Coordinator, Mandala is part head of orientation training, part beer styles teacher, part brand manager, part Human Resources, with a dash of culture building and a drizzle of leadership development. Not every brewery has the financial capability to support such grandiose endeavors; indeed, I’ve never met another brewery Education Coordinator (although I’m sure they exist). But with the beer industry noticeably emphasizing educational initiatives

She explains: “I kind of created this description not necessarily with myself in mind, but recognizing that as we open new locations, there’s going to be a need for a very organized training program, which we did not have.”

in recent days — especially in San Diego — I’m willing to bet more aspirational brewery employees manage to craft a new position for themselves as well. “I think that breweries have been doing this [focusing on education] for years, and the breweries that have been successful are the ones that have put a premium on this,” says Mandala. “I think that we’re just recognizing that it’s becoming more and more competitive. You can’t just rely on flashy artwork or even necessarily great product. You need everything — you need the full package. Sales folks have always needed to know their product. It’s the same thing. You’re a brand ambassador when you’re behind the bar, 100%. Even more in a city like San Diego, when your bartenders are going out to other bars and people find out you work at Modern Times, you want to feel that pride. That pride happens when you’re supported, and that support is education.” Mandala has her hands full for the time being, but she’s not slowing down. When I inquire about her future professional goals, she’s ready with an answer. “Continuing to push continuity of the brand across the entire growing team and implementing education coordinators in every team,” she promises. She has more loose, but lofty goals for the company as well. At a recent conference in San Francisco, she was inspired by a session discussing ways to prove to C-level executives that “there is a value, a financial value, in investing in their employees in a way that seems intangible.” “It’s not about perks, it’s not about giving them [employees] snacks,” Mandala claims. “It’s about providing them opportunities for breaks and for mental health.” She uses phrases like “recognizing empathy," “leadership development," and “breaking down barriers” — heady ideas for any business. But she thinks that it’s the future, at least at Modern Times, and (hopefully) more San Diego craft breweries. Know someone who deserves to be featured in an upcoming column? BEERTAILS. It’s a term that typically triggers a quizzical tilt of the head or a grimacing recoil. Most people haven’t heard of beer-infused cocktails, and many who have tried them have been subjected to subpar forms of this booze hybrid, which has struggled to gain traction in an adult beverage scene thirsty for both craft beer and cocktails. Given those bents, one would think beertails a slam dunk, but marrying beer and spirits is more complicated than it seems. Just ask Rob McShea, bar director at WhipHand American Brasserie and Beer Bank, a recently opened spot in downtown’s East Village where the beertails are a cut above and capable of converting sudsspirits skeptics. “We wanted to create something unique for beer drinkers that wasn’t your garden variety beer cocktail. This is to say, not just shaking something up and pouring beer on top of it. Frankly, those cocktails are never very good,” says McShea, who says that errant technique leads to the beer quickly overdiluting the cocktail. “I wanted to take the natural flavors within the beers and layer them with profiles that created a cohesive cocktail.”

The pair of beertails on WhipHand’s current menu, the recipes for which McShea has included for our readers, use small amounts of boldly flavored ales to impart beery character, as well as spirits that have been aged in barrels used to age beer. The first, the Fightin’ Irish, marries Mikkeller’s Beer Geek Brunch coffee-infused stout with the stout edition of Jameson’s Caskmates barrel-aged Irish whiskey. Coffee and chocolate-like roastiness provide a flavor nexus. Cali Love employs an extra step to concentrate the flavor of North Park Beer Co.’s Hop Fu! IPA before introducing it to the drink. McShea whisks Demerara sugar (tan, large-grain raw sugar lightly coated in molasses) into the beer and boils it into a syrup. The evaporation process intensifies the beer’s hop-borne fruitiness and bitterness. Those characteristics help achieve something very important. “The most important thing is achieving balance,” says McShea. “No one who creates cocktails wants to fall victim to the ever-present danger of the ‘too sweet police.’” In general, McShea says most ales lend themselves to cocktails, while lagers do not. For him, they are too simplistic to lend much to a mixed drink. When looking for beers to work with, he usually looks to his beer vendors and brewery pals to provide him with inspiration. That said, his palate has been known to create “light-bulb moments” when he tastes a beer, setting him down a creative road. His taste buds have also led to his discovery of some nice beer and food pairings at his stomping grounds. McShea likes pairing the Fightin’ Irish with WhipHand’s dry-aged, smoked cheddar burger, and downing a Cali Love in tandem with a “high stacked” pastrami sandwich or vegan “dblcheeseburger” wrap. Try them out at the source or pour a tall ‘tail in the comfort of your home bar.

FIGHTIN’ IRISH Yield: 1 cocktail • 2 ounces Jameson’s Caskmates Stout Edition Stout Barrel-aged Whiskey • ½ ounce Amaro Nonino Quintessentia • ¼ ounce Mikkeller Beer Geek Breakfast Coffee Stout • dash walnut bitters • orange peel, for garnish Place all of the ingredients except the orange peel in a shaker glass. Top with ice and stir until diluted, about 30 seconds rotations. Strain the mixture into a rocks glass and add a large ice cube or several standard-sized ice cubes. Garnish with orange peel and serve immediately.

CALI LOVE Yield: 1 cocktail • 1½ ounces Jameson Caskmates IPA Edition IPA barrel-aged whiskey • ½ ounce Demerara IPA Reduction (recipe follows) • ½ ounce honey • ½ ounce Cali Citrus (equal parts grapefruit and lemon juice) • dash cardamom bitters • grapefruit peel, for garnish Place all of the ingredients except the grapefruit peel in a shaker glass. Top with ice and shake for 30 seconds. Strain into a Collins glass. Top with fresh ice, garnish with grapefruit peel and serve immediately.

DEMERARA IPA REDUCTION • 1 liter North Park Beer Co. Hop Fu! IPA • 1 cup Demerara Sugar Whisk the beer and sugar together in a saucepan over high heat. Bring the mixture to a boil, being careful that it does not boil over. Continue to boil until the mixture reduces by a third. Remove from heat and let cool to room temperature. Use and store refrigerated in an airtight container.

Checking In: Mother Earth’s Idaho Operation By Ryan Lamb Photos by Kristina Yamamoto It’s been nearly three years since Dan Love and his family-run company opened their Nampa, Idaho brewery to the public in October 2016. Since then, they produced roughly 8,500 barrels in 2017, 12,000 in 2018, and the pace for 2019 is 17,000 barrels. Depending on how much beer Payette Brewing or Sockeye Brewing make, Mother Earth Brew Co. (MEBC) could be Idaho’s largest brewery very soon. Fittingly, the MEBC facility recently hosted the official closing event of Idaho Craft Beer Month. All in all, Love, the vice president of the state’s brewers guild — Idaho Brewers United (IBU) — is happy with his new digs, located about a half-hour drive

from the state capital of Boise. Raised in Newport Beach, Love was ready for a change of pace and scenery, and the landlocked city offered him more perks than other locales; he secured tax-free status on all equipment and raw goods for the life of the business, for starters. Love can also sell guest beer, wine, and cider in the tasting room, which isn't possible in California without a restaurant component. Additionally, licensing for on-site events like the IBU festival is generally hassle free, and the price of real estate was enticing as well: "I think I'm paying 42 cents per square foot here, and I started at 32,” Love says. “In three years I had a little escalation, but still, I pay less for 42,000 square feet up here than for 22,000 down there [in San Diego]." Not everything is less expensive, though. "We got hit with a $200,000 wastewater bill — $225,000 to be exact,” Love recounts. “They're very stringent here compared to California. In California, it all goes down the drain. Here, it doesn't go down the drain until it gets processed." Despite that, Love stays upbeat, since it works with the company name and ethos. "It's good for us as a neighbor."

Speaking of water, Love is looking forward to his team making all the company's IPAs in Nampa. "The water here is hard water from the well, we don't treat it at all, and the English strain of yeast we use just loves it." In Idaho, Boo Koo IPA is the top seller; in California, it's Cali Creamin' cream ale (which will get the nitro can treatment in the future). To check in on the Vista operation, which celebrates nine years in business on May 4, Love makes the 16-hour trek every six weeks or so, departing at 4 a.m. to arrive in the evening. MEBC’s Vista brewery makes all the beer for distribution in Southern California and Hawaii via Stone Distributing. In total, MEBC distributes to nearly 20 states, and in October they won the Bronze Brewer Partner of the Year award at the National Beer Wholesalers Association convention held in San Diego. As the company has grown, they've installed extensive laboratories at each brewery, and routine sensory panels help ensure the quality of the beer. "I don't brew anymore, so I don't have happy accidents like I used to.” ■
