I have consumed beer just about every way possible: out of a Coors Party Ball back in the ‘90s while that was somehow a thing, from a can floating in the tepid water of an ice bucket (in spite of the hangover inflicted by its comrades the previous evening), and I've even had it served from a brite tank’s pigtail valve mere hours before the brew touched its first glass in the tasting room. So imagine my surprise when an all-new modality was presented to me. When you get right down to it, most of the precursors to beer (namely grain, water, and yeast) are basically a whiskey in training. After all that ferments you’re only one distillation away from turning that malty booze smoothie into crystal-clear moonshine. Then, a few slumbers within a barrel later, you have whiskey. Granted, this explanation conspicuously overlooks hops, the unmistakable soul of beer, as a key differentiator. But what if it wasn’t? The Germans call it bierschnaps. Most stories point to the practice of distilling beer being popularized in Bavaria, though its true origins are murky. Evidently, the sorts of individuals that focus on squeezing every last bit of alcohol out of their beer aren’t necessarily the most diligent historians. Regardless of its genesis, it’s a tradition that’s finding fresh footing in San Diego. San Diego took early strides in merging the worlds of craft brewing and craft distilling with Ballast Point Spirits. They notably leveraged the same mash and yeast for many of their beers that found its way into their proto-whiskey. Today, San Diego Distillery is extending that idea even further in collaborating with local breweries to distill and package their finished beers.

While this is still a somewhat novel approach to producing spirits, it’s hardly a surprising move for the San Diego Distillery brand. Company president and distiller Trent Tilton was himself an avid homebrewer for years and uses that experience to inform his spirit recipes. For example, his popular American single malt whiskey is built upon a Russian imperial stout base. And while that combination does sound borderline treasonous, its deliciously pronounced notes of dark chocolate and espresso are enough to forgive such transgressions. One of the best selling examples of San Diego Distillery's collaborative spirit is Caffeinator, a collaboration with Home Brewing Company. The bottle specifies its contents as “spirits distilled from grain with natural flavors finished in oak barrels.” That’s hardly the sexiest of descriptions, but it’s a necessary one; federal guidelines demand that anything designated as a "whiskey" must be 100% grain-based, so a coffee-infused doppelbock definitely shatters the categorical mold. Coincidentally, the original beer was already a double collaboration unto itself before San Diego Distillery entered the picture. Home Brewing Company owner George Thornton developed the base recipe with Modern Times Beer, which was further blended with seasonal Modern Times Coffee. It was successful enough to warrant making a second batch, this time experimenting with a different seasonal coffee offering. Per Thornton, this small change in flavor was sufficient to tilt the doppelbock off its intended axis, deviating from the “original concept” of that brew. Undeterred, he had a new avenue to explore. “We took that opportunity to see what Trent could do with it,” said Thornton.


The resultant inebriation innovation noses a little fruity with notes of cascara, vanilla, and coffee. Those aren’t alien smells to the world of whiskey, but in Caffeinator they ramp with greater urgency and shine with higher fidelity than you might expect. It feels akin to a coffee liqueur without the accompanying sweetness. Despite its intensity as a cask-strength pour, the character of the respectively tranquil doppelbock still surprisingly emerges. This example marks a curious dimension of this process: a “perfect” beer isn't necessary to make a compelling beer spirit. Even a soured or out-of-code beer can enjoy a new life post-distillation, because no matter what goes into the still, a relatively narrow band of chemicals emerges on the other side. Ethanol, being the diva it is, typically steals the spotlight, but it is accompanied by all manner of other compounds known as congeners. Those congeners (including things like esters, fatty acids, and less egotistical alcohols) add complex flavors and aromas to the spirit, doubly so after prolonged exposure to the unique chemistry resident in a charred oak barrel. In some cases, Tilton will even expose a totally palatable beer to conditions that will cause it to become funkier, concentrating the antecedents of more congeners. Creating flavor is the name of the game. Despite all the chemical manhandling that distillation imposes on the beer, I’ve yet to encounter one that lost sight of its roots entirely. I tasted a very young Coronado Brewing Orange Avenue Wit spirit and detected all of its familiar nuances, albeit crazily amplified after just six months. The aroma popped with orange peel and flowery coriander, while the light citrus and peppery aspects of the beer bloomed into cinnamon and red bell pepper, with light honey in the background. Despite a hint of astringency, it was already tasting like a fitting tribute to the brew that birthed it.

As intriguing as those beer spirits were, I wasn’t exactly floored that maltier fare managed to translate well from the source material. To me, the real test would be showing how more hop-forward styles would fare. San Diego Distillery rose to that challenge with Faust, the distillate of a hazy IPA from Electric Brewing Company in Temecula. Tilton’s description of Faust as “polarizing” was entirely apt. It’s a collision of massive green pine tones and the rich caramel of a dulce de leche. The closest analog I can draw upon would be something neighboring a digestif, but this is definitely its own animal. I found that as I returned to it over and again, my experience mirrored early experimentation with aggressively hoppy beers — a flavor explosion that simultaneously confounded and tantalized my palate. There’s no denying it grew on me. A quick visual inventory of the barrel racks at San Diego Distillery indicates that I am not alone in my intrigue. Thorn Brewing has a few barrels of their distilled Mystic Gnome IPA loitering about, which are presumably getting more mystical by the day. Resilience Butte County Proud IPA, the Sierra Nevada collaborative charity beer, has likewise been distilled (courtesy of kegs gifted by Mike Hess Brewing and Thorn) to curry donations down the road. In short, if you’ve been yearning for an evolution in IPAs that doesn’t involve lactose (because nah, right?!), it’s on the way soon. It goes without saying that someone like myself with a matching admiration for both whiskey and beer would tend to view these options favorably, but how will the general public regard them? That’s difficult to say. Still, it’s a bet that Tilton is willing to take. “I consider this an evolution of whiskey... we’re making spirits that do not exist and I pride myself on that,” he said. ‡

T

hroughout college, Megan Bulsara assumed she’d become a lawyer. “Luckily, I worked in a law firm and realized they were all miserable,” she says with a sigh of relief. After earning her bachelor’s degree in political science, she transitioned away from law and into the music industry doing marketing and event coordination. At the time, beer was just a (delicious) hobby. “Had I known this was a career path, I might have chosen it a little bit earlier,” says Bulsara. As the Director of Operations at Fall Brewing Company, Bulsara is basically the attending surgeon of the enterprise—the person responsible for keeping everything running and making adjustments as she goes. Her days start long before she enters the brewery; priority number one is getting her child to school, then heading to the brewery for a few productive hours before the thirsty crowds descend. Her to-do list is never-ending: check timecards, update inventory, respond to emails, schedule deliveries, pull permits for upcoming events, filing, and so on. That’s not even mentioning bigger initiatives like developing employee morale programs, remembering birthdays, planning the future release calendar, or handling human resources.

focus so much on making sure you’re approaching someone in the right way, and your patience is tested to the limit.” Additional skills like efficiency, adaptability, multitasking, and proactivity—skills valued in her previous career that small breweries sometimes lack—were exactly what Fall was looking for when they brought her on board just over two years ago. She’s well-suited for the role, describing herself as “very detail-oriented” when it comes to the behind-the-scenes details that most consumers never even stop to consider. “On my business card, in addition to Director of Operations, it says ‘Cat Herder’, which is how I feel some of the time,” laughs Bulsara. While women are filling more and more positions in the beer industry, it seems many of those roles are low- to mid-level, front-facing jobs, such as beertending or public relations. It’s still comparatively uncommon for women to get to a director level. That’s not relegated to the beer industry; in 2017, the ratio of female CEOs of Fortune 500 companies reached an all-time high of 6.4%. (It’s since dropped to 4.8% according to the 2018 Pew Research Center fact sheet “The Data on Women Leaders”.)

Bulsara explains her role as “always being prepared, or trying your best to be prepared and adjusting as soon as things change… being able to see the big picture, backing it out into all the little steps that need to happen before that, and figuring out what you need from each person and when you need it.”

Bulsara hopes that more women realize there are more opportunities at the top of brewery hierarchies. “I would love to see more women at higher levels… I definitely think women, we tend to underestimate ourselves. So, always go forward and be confident in the skill set that you’re bringing. We can get into all these industries if we believe in ourselves.”

Once Fall opens at 11 a.m., her day can descend into chaos if she isn’t careful. With fewer than two dozen employees, everyone tends to wear a lot of hats (Bulsara included). In fact, when I get to the brewery for this interview, she’s behind the bar pouring pints so that the beertender on duty can take a break.

Until women manage to successfully dominate the upper echelons of the craft beer industry (fingers crossed!), Bulsara can most likely be found enjoying a good barleywine with friends. “The [local beer] community is great,” she says. “The people are amazing. The people have always been amazing.”

She credits motherhood with teaching her some of the most valuable skill sets of the job, like empathy and time management. “I think as a mom, you

Pure Project teams with local cheese monger and Vermont creamery on fromage collaboration Three-years-young Pure Project Brewing has a lot going on. In addition to frequent can releases and expansion at its Miramar Brewery Igniter facility, its green team is working to open satellite tasting rooms in Bankers Hill and Carlsbad. Even with all those irons in the fire, they stoked that blaze with a new poker last month, releasing a first-of-its-kind collaboration for the constantly colluding interest, a beerinfused cow’s milk cheese. The origins of this collab trace to San Francisco’s Fancy Food Show. While attending the event, Robert Graff, cheese monger and “professor of cheese” for San Diego’s Venissimo Cheese, ran into Leigh Harding, the national accounts manager for Vermont’s famed Jasper Hill Creamery. Graff invited Harding and her colleagues to come to San Diego for a cheese expo, which took place in May, that included a beer pairing component. Aware of Jasper Hill’s stellar reputation, and wanting to make sure they were teamed with a top-notch beer partner, Graff asked an associate at local bottle shop Bottlecraft for a recommendation on an “exciting brewery.” Pure Project was his answer.

After some quick introductions, creatives from Pure Project and Jasper Hill got to work deciding the best way to bring their individual expertise and offerings together. In the end, the

During conceptual discussions, the collaborators determined they wanted to use a fruited sour beer. Head brewer Winslow Sawyer and his crew landed on Everything Gold May Stay, an exotic take on a Flanders-style sour ale. Typically red or brown in color, this version is “golden,” made from Pilsner malt, unmalted wheat and oats, and fermented with mixed culture blends from Pure Project as well as collaborating Watsonville, California startup Fruition Brewing. Aging in oak barrels with three types of raspberries (red, gold and double gold) gives it a lovely magenta color.

It was very tart and effervescent, which I imagined would be a nice complement to a rich, gooey, savory cheese like Willoughby,” says Zoe Brickley, director of development, sales and marketing for Jasper Farm. “Barrel-aged notes often find interesting aromatic affinity with the buttery, creamy aromas in cheese. As it ripens, a subtle earthiness becomes more pronounced and a savory, porcinimushroom and leek character develops.” The thought was to introduce contrasting flavors, but there was no way to tell exactly how the finished cheese would come out. “Really, you don’t know exactly what will happen. The process is just that…a process. It’s about experimentation, trial and error.” That process saw the cheese get brushed with Everything Gold May Stay nine times within a two-week time period. So how did it turn out? While descriptors vary from person to person, all involved are very pleased with the finished product. Graff Says he gets notes of onion, beer broth and grass, while Jasper Hill’s sensory team picked up notes of peanuts to go with Willoughby’s traditional peat, roast beef and onion aromas. Then there’s the detailed account from Pure Project beertender Chris Legiuzamon, turned in shortly after tasting Everything Gold May Stay and Willoughby together. “Separate, these two are incredible, yet when paired with each other, they truly complete one another,” says Legiuzamon. “The umami rich aroma of the cheese lends notes of truffles, wet hay and freshly-cut herbs, and the gooey, semisweet interior is begging to be balanced. The beer’s bright acidity not only cuts the fat, but the freshlypicked raspberry flavors and cracker-like malt backbone of the golden Flanders-style ale brings you back to summer bliss memories of cheese and berries in the backyard.” He wasn’t the only member of the Pure Project team who loved the cheese. It has one of the business’ founders enthusiastic to spin the wheel of cheese a second time. “We would love to work with Jasper Hill and create some different variations with some of their other amazing cheeses. Maybe make it an annual thing if they are into it,” said Pure Project co-founder Mat Robar shortly before heading to the cheese expo that birthed Willoughby. “That said, I love cheese from all over the world: Holland, France, Switzerland, England and more. So I’m excited to meet people from some other creameries, in person.” ‖
