QUAFF Wins Big, Again

Local club QUAFF, the focus of our June cover story, took home the Homebrew Club of the Year award at the A ​ merican ​Homebrewers Association's 2017 National Homebrew Competition. This is QUAFF's second straight year winning the coveted title, and the seventh in 20 years. Helping them to the summit were a number of category medalists, including these final round winners:

Brewer’s Landing Planned As College Area’s First Brewery

It’s getting harder to find San Diego communities without breweries. Given San Diego State students’ notoriety for keggers and beer consumption, it’s ironic the College Area is one of them, but that will change if entrepreneur

Robert Morey has his way. He is currently securing financial backers to move forward on Brewer’s Landing, a brewpub project that would give the College Area its first-ever locally produced suds. Last year, an associate of his asked for input on a property he was looking to gain possession of—a former nightclub off El Cajon Boulevard—stating he wanted to install something for the community; a space for local meetings, events and showing off artwork from local artists. Morey has witnessed the rise of the craft-beer culture and number of operating breweries in San Diego County, and suggested a multi-faceted brewery and restaurant as the ideal concept for accomplishing all his colleague wanted and more, especially given the fact there isn’t a brewery to be found within a five-mile radius of the project site. That space is 8,500 square feet with 2,125 square feet planned for brewing operations. According to Morey, the landlord for the industrial park the project would be located in has embraced beer-production and is open to housing several brewery operations down the road. For Brewer’s Landing, Morey envisions it as a business that mirrors downtown’s The Local Eatery and Watering Hole and its sister-business Resident Brewing, where there are two operations working together but separately under one roof. On the beer front, Morey wants to provide their eventual brewer to control vision and direction, though he understands the necessity for a quality IPA. Food-wise, comfort will be the name of the game, but exactly what form that takes has yet to be fully determined. Other amenities he hopes to include are a large stage for live entertainment, a selection of cigars, TVs to air sporting events, a pool table

Coronado Brewing Building Kitchen In Bay Park

Drink beer and eat food…a perfect pairing. Such is the equation for ideal connoisseurship outlined by Coronado Brewing Company COO Kasey Chapman. It’s proven successful at the company’s original island brewpub and Imperial Beach satellite bar-and-restaurant, and soon will be called into service at its headquarters on Knoxville Street in Bay Park. CBC is in the process of installing a kitchen to service the tasting room at that production facility, the largest of its properties. While mobile food vendors have done a good job for CBC, they are looking forward to providing a consistent food option for tasting room patrons. They believe being able to rely on that constant amenity will encourage customers to stick around longer rather than leave in search of edible sustenance. The kitchen will be 1,000 square feet and outfitted with countertop cooking equipment as well as a double-decker pizza oven. Those mechanisms will be used to produce casual fare that will include, pizzas, calzones, panini sandwiches, wraps, salads and an assortment of appetizers. Beer will be incorporated into select dishes, but that will not be a focus of the menu. The project has taken longer than expected, but is expected to be completed by August. Next up for the Bay Park tasting room will be installing additional seating. Even after that, it will retain its identity as a sampling space rather than take on a restaurant feel. Counter service and delivery care of food runners will make up day-to-day operations, and CBC is looking forward to holding special events such as beer brunches and barbecues.

CA State Fair Awards

102 certified beer judges sampled 1,488 beer entries from more than 400 California breweries to decide winners for the California State Fair Beer Competition in mid-June. Per usual, San Diegans fared well:

Smoking Cannon Brewery Opens In Ramona

A craft beer desert received its first rainfall of local ales and lagers when ChuckAlek Independent Brewers opened in Ramona in 2014. Local thirst in that small unincorporated northeast town was enough for that business to spawn a satellite tasting room and beer garden in San Diego proper’s North Park community. And in the minds of Mike Nelson and Natallie Phillips, Ramona is at the point in its sudsy development where it was ready for a second fermentation interest. They delivered that in May when they opened the doors to their Smoking Cannon Brewery at 780 Main Street, Suite I. That couple has been together for 20 years—12 of which Nelson has spent homebrewing and winning awards. (Phillips claims only three out of more than 100 recipes have failed to take honors at one competition or another.) They’ve spent the better part of the past year burning the midnight hours beyond their day-job regimens to get Smoking Cannon ready for business. Part of that process was building a three-barrel electric brewhouse to feed a pair each of three- and six-barrel fermenters, and developing recipes for beer as well as home-made ginger soda and root beer. Non-sarsaparilla brews are largely English and American-inspired. The latter include an India pale ale, cream ale, stout, rye ale and chili pale ale, while British influence comes via a brown mild, pale ale, extra special bitter and various porters. Belgium is also represented, with a strong ale and a pumpkin-infused saison in the works. Sours and holiday-inspired seasonals will eventually figure into the equation, but for now it’s more about introducing more everyday beers. •

Q: HOW LARGE IS THE HOP FARM NOW? A: Between all the fields we have three acres here in Ramona. The most abundant varieties are Cascade and Nugget, then Crystal, and then Chinook. I’m not sure how much we'll get from the new stuff this season, but we are planning for the future! It can take up to three years for mature productive plants, but they could always surprise us.

Q: WHEN IS HARVEST? A: We always have hops in August, but may get some early, in July. Varieties mature at slightly different times, so we have different things available throughout the five or six week harvest period.

Q: WHO ARE YOU WORKING WITH THIS YEAR? A: So far, we know that Tom Nickel at Nickel Beer Co. is going to continue brewing a bunch of beers with local hops, and he might even install a new fermenter specifically for these batches. He’s also got some killer collaborations in the works. Burning Beard has also pre-ordered for a batch.

Tom Ham’s Lighthouse presents:

Lickable Staves is an American Sour Red Ale that we aged in Cabernet Sauvignon barrels with generous amounts of Michigan Balaton cherries. The name was inspired by Willy Wonka's Chocolate Factory where there is "lickable wallpaper." Even though we have been doing sour beers since before we opened, we just recently created the Magic Factory brand under Council Brewing to help differentiate between the two things we do best: Sour beers and "clean" beers (most notably our IPA's). Lickable Staves was the first beer released under the Magic Factory branding with Broken Wand and Woofle Dust following closely after. When we first used Balaton cherries in our Beatitude Tart Saison we knew we had to brew a barrel aged beer to showcase this amazing fruit. We developed a recipe specifically to highlight both the intense tart cherry pie notes and nuanced baking spice (cinnamon, nutmeg, clove, allspice) flavors that only Balaton cherries possess. The malt bill builds off of our 2nd Anniversary Flanders Red by creating a rich and complex mix of Munich, Vienna, Special B, Caramalt, Aromatic and Flaked barley. This strong malt backbone is important as it provides flavors that match the Balaton cherries and give the fruit flavor more depth. It also helps make the beverage taste like beer instead of adult fruit juice. The barrels were sourced from Napa, California and previously held Cabernet Sauvignon wine. Cabernet Sauvignon is known for it's bold flavor, full body and jam like notes. This varietal was selected to build on the Balaton cherries. Due to the simple sugars in the cherries it's possible for the beer to taste thin as it dries out. One way to combat this is to increase the body using tannins both from the residual wine as well as from the oak barrels. All those oak tannins were extracted by allowing the beer to age for close to a year. The jam notes from the Cabernet also help with the impression of our targeted profile of freshly baked cherry pie.

The beer was fermented with a blend of microbes that we have selected especially for malt-forward sour beers. The blend consisted of a major portion of California Ale yeast to ferment the bulk of the sugars and leave a relativity clean profile that would let the Balaton cherry flavor shine. The rest of the blend had strains of Brettanomyces and Lactobacillus that we have used in beer's with similar flavors. This particular blend has some strong acid producers (Lactobacillus and Pediocacus) that lowered the pH into the low 3's. The Brettanomyces strains we used are more on the mild side, so that the sometimes strong funky/ farmyard aromas wouldn't interfere with the crisp, slightly spicy flavor of the Balaton cherry. All these elements came together to make a beer with lush notes of tart cherry pie. There is a firm acidity that matches the natural acidity of a cherry. As the beer warms, the soft vanilla notes become present from the red wine barrels. Subtle baking spice flavor also shows up to complete the profile of freshly baked cherry pie with vanilla ice cream. Lickable Staves was first released in early March, and we brewed another batch of it into those same barrels, adding Montmorency Cherries to it to create an equally delicious but slightly different beer. Hopefully it will be ready by spring of 2018. As for what we'll brew into our trophy, which is a fully-functioning 2-gallon fermenter, we haven't quite decided, but we are currently involving our fan base and taking suggestions. We will probably decide in the next couple of weeks. I'm assuming it will be some sort of sour beer since there is no temperature control and I have some microbes that like this San Diego heat.

W

hen I first met Alex Van Horne he was looking to install a sci-fi-themed brewery in Poway. The plot reminded me of that of Jim Crute, who installed his science-themed Lightning Brewery in Poway a half-decade or so before. Crute sold his manufacturing assets to Orange Countybased Cismontane Brewing Company earlier this month after failing to find a buyer for his struggling operation. Though Van Horne eventually opened his Intergalactic Brewing Company in the Miramar community, his plot-line remains similar to Crute’s. Today, the business-owner and brewmaster announced that he is beginning the process of “exploring all options” for the future of his brewery, “including, but not limited to, putting the business assets up for sale.” Van Horne says he opened his business with insufficient capital; a mere $25,000. In spite of this, Intergalactic earned a strong cult following, enough that the award-winning brewery was able to take over a larger suite in Intergalactic’s business-park home and convert it to a tasting room, in turn expanding brewing operations at the original location. Still, Van Horne says that over the past year “it has become increasingly obvious that the brewery in its current formulation is not able to provide a stable economic foundation [for him and his wife] to begin the next chapters of [their] lives.” Van Horne has sought out investors, but did not secure enough money to sufficiently modernize his brewery. So the bootstrapping continued, and it went rather well, but this may be the end for Intergalactic in its current form. He will be fielding inquiries from interested parties and, with any luck, the brand will survive, but Intergalactic may go the way of Lightning, and Van Horne may bow out of the brewing industry altogether. But for now, the business remains open. Van Horne hopes to see long-time fans in the coming months, so they—and he—can enjoy the brewery in its current form. Van Horne says he is “infinitely grateful” for the help and support he has received from his contemporaries in the craft-beer industry. He is keen to stay aboard for his brewery’s next chapter, but will be alright even if that’s not in the cards. “At the end of the day, it’s a business,” he says. “I’ll still have my friends, colleagues and many customers supporting me wherever I go or whatever I do. That’s the most rewarding part.” •

O

ne of the great mysteries in biology is what compelled life to make the leap from unicellular to multicellular form. Somewhere and somehow there had to be a driver that nudged autonomous microbes to cluster, communicate, and adopt specific roles for their mutual advantage. Scientists believe that if we can unearth the conditions that gave rise to this evolutionary paradigm shift, we will finally understand how in the world Miralani Drive got so many damn breweries. “Beeramar” has long been touted for its unique density of breweries. Every weekend it becomes a hive populated with singularly unproductive worker bees, flitting from one nectar fix to the next. Miralani Drive represented an epicenter of sorts for this experience. Even when Pacific Brewing bit the dust last year, Miralani Drive residents 2Kids Brewing Company, Thunderhawk Alements, and Setting Sun Sake Brewing Co. offered a brewery tour guaranteed, if nothing else, to provide the least satisfying fares for Uber drivers. Miralani Drive’s ambition has not waned in the least since then. No fermentable sugar is being left unturned. Two new wineries (India Street Winery and Charlie & Echo) have appeared and the arrival of Serpentine Cider is imminent. That’s an insane density of ethanol purveyors and it gets crazier still. An additional two breweries, Align Brewing Company and Protector Brewery have likewise joined the mix. Align Brewing Company arose from the grave of Pacific Brewing Company through the sheer will of one of its original two stakeholders. The new branding embraces a more geometric aesthetic, a fitting compliment to the Fibonacci sequence-inspired logo for neighbor Setting Sun Sake Brewing Co. Align's space feels a bit sterile since much of the artwork is still forthcoming, but it’s a pretty exploitable motif so I see a lot of potential there. Even if they don’t have it fully conceptualized, they could crowdsource the design by setting set patrons loose with a permanent marker and a spirograph. It would make for one really fun afternoon, at least. I’ve visited a Align Brewing Company two times since its soft opening.

The options have grown from two selections to five, so they are clearly still ramping up. That would be fine if the limited selections were beyond reproach, but my samples suggested their processes are still developing. For example, the Almost 7 IPA had a pleasant pine and fruity tonality to it, but the light touch with its carbonation left it tasting a little flabby. The diminished carbonation likewise afflicted the Align Pale, a style that couldn’t compensate for the absent effervescence. On the upside, I really enjoyed the Black and Brown Mild, whose name largely tells the story of the unusual brew. It offers more roast character than a brown, a thinner mouth presence than a stout, yet somehow scratches both itches in a compact 3.5% ABV package. The Off Batch Stout likewise shows promise, especially when granted extra complexity from aging on oak and vanilla. The earlier zombie analogy for Align Brewing Company is strangely apt. I’m excited to have another incarnation of Pacific Brewing (home to some of the better IPAs in the area) available, but this new form lumbers about in an unfamiliar way. That said, the beertender was transparent that they were still tinkering with elements like their carbonation, so I have little doubt the Align Brewing Company experience is only going to improve. By contrast, Protector Brewery is an entirely fresh face to the Miralani Drive booze consortium, residing at the vertex between Align Brewing Company and 2Kids Brewing Company. It’s important to reinforce that this location is indeed a brewery, because at first glance you could easily mistake it for a CrossFit gym. It has all the customary CrossFit trappings: gladiator- and Spartan-themed artwork, stenciled slogans on the walls, and exposed piping to be repurposed for kipping pull-ups. You’d think the presence of fermentation vessels would clarify things, but for all I know CrossFitters are flipping those like truck tires too. Rest assured, the theme is strictly a reflection of their allegiance to Mother Earth, not rhabdomyolysis. All the beers at Protector Brewery are organic. As you might imagine this necessarily raises the complexity of sourcing their ingredients and increases the cost of the same, ultimately resulting in a slightly pricier flight for the consumer. That doesn’t bother me because I figure all the good karma in the beer will nullify the toxic effects of the alcohol, making it more than worth the price. Seriously though, it is reassuring to see craft brew maturing to the point that these sorts of options are available for those less self-absorbed than myself. Per their Facebook page, Protector Brewery is presently in the midst of “the softest of openings.” That innuendo-laden phrasing is meant

to indicate they are only serving beers on Fridays and Saturdays. Their official grand opening will be on July 15th with expanded hours to follow. The first offerings from Protector Brewery are a set of four beers designated only by their style. I was a little disappointed in that. With all the bravado and machismo of the Protector moniker, I was secretly hoping for a Tricep Triple or even a Broadsword Bock. That minor oversight aside, the beers really were rock solid for initial offerings. The Hoppy Pale was a favorite. Its boisterous peach and mango aromatics were inviting, but the balance of biscuity malt to sharp lemon rind and pine notes carried the day. Their Session Hef was a surprise hit, with its banana bread nose and distinctive yeasty, malt-o-meal flavors. The Traditional IPA slow plays the palate with soft nectar sweetness that fades into orange and the merest pepper notes. It’s a kinder, gentler IPA that didn’t floor me, but had plenty of devotees in the establishment. Finally the West Coast IPA opened with the all too familiar pine and citrus deluge, with a moderate oily persistence to the finish. It was hardly the most aggressive take on the style, but undeniably gives it its due. Miralani Drive is officially its own ecosystem, as biodiverse as any rainforest and twice as fun to drink in. Regardless of whether you favor wine, cider, beer or sake (or, more likely, some combination of all of the above), Miralani Drive can readily assist you in ushering in the world’s gnarliest hangover. (Remember: Biologists all agree that drinking and driving greatly reduces the fitness of our species. Embrace symbiosis and use a designated driver!) •

The Pink Boots Society, a nonprofit organization dedicated to advancing women's careers in the brewing industry, hosted a conference and festival in early June to coincide with the group's tenth anniversary. Sponsors included Stone Brewing, Ballast Point Brewing & Spirits, PicoBrew, Great Western Malt, The Country Malt Group, Brewcraft USA, White Labs, Grandstand Glassware & Apparel, Portland State University, Craft Beer Attorney, Four Peaks Brewing, Giga Yeast, Laughing Monk Brewing, and Western Square Industries. The conference portion dedicated seminars to sensory evaluation, fermentation and yeast troubleshooting, tap room management, social media marketing, hops and malt, public relations, distribution, and more. The keynote speaker was Megan Parisi, who runs Samuel Adams' nano-brewery. At the festival, more than 30 breweries came to pour at Ingram Plaza in Liberty Station.

D

anielle Byers is the sales and marketing coordinator for Berkeley's The Rare Barrel. She is the most recent recipient of a scholarship from the Pink Boots Society (PBS ), and was just in San Diego for the PBS conference and festival.

What were you hoping to take away from the conference? I wanted to get a little more information on the sales and distribution side of the business. Currently we don't distribute much — we just set up a direct-to-retail program six months ago — and we're slowly distributing in California right now. We only have about 70 accounts or so, and that's something we want to build on.

What did you learn from the conference? I took a lot of information from the retail-specific seminar, where they talked mostly about types of brands that are brought into the bar, and how they set up to educate their staff to communicate with the customer base. I learned a lot of great information about direct-to-consumer branding. In my role, I don't have a lot of face-to-face customer interaction outside of festivals and larger events. But because my job is very dependent on developing brand loyalty and creating an image for us, I knew I needed to learn more about the retail side.

What advice do you have for women who want to advance in the beer industry?

My advice is to get a seat at the table, be present, ask questions, and form opinions for yourself. Also, continue to further your own education so that you can constantly be engaged.

Can you tell us about the Pink Boots collaboration released in March? Sure. Something I really enjoy about The Rare Barrel is that we have a democratic process in creating beers. It's not just our production team that tastes through our barrels and creates new blends; we have daily tastings that everyone is encouraged to taste through and give input on. This increases everyone's beer knowledge and improves their palates. I wanted to bring that to the women of Pink Boots, so we brought in 24 women to taste through the blends, and we voted for which we liked the best. Something I've noticed in previous collaborations is that we usually all join in on a brew day, but this time I wanted to make working together as a group the focus.

What events does The Rare Barrel have coming up? We recently had a draft release at Toronado San Francisco; we collaborated to produce one of their 30th anniversary beers, and the big party will be in mid-August. We're also starting to plan for our anniversary, which is in October, and we have a couple Ambassador-related parties that we're gearing up for and planning for. During those events we have special offerings like sours from past years, or sneak peeks of beers coming in the future. •

KOMBUCHA IS ALIVE AND WELL

I

n a corner of San Diego Brewing Company’s new brewhouse in North Park, with its tall stainless steel tanks and network of pipes, hoses, and pumps, I quietly brew kombucha. The fermenters I use may not be big and shiny like the ones that produce our beers, but they work just as hard. After all, there are a lot of similarities between brewing kombucha and beer, like fermenting sugar into alcohol and carbon dioxide. The few differences are in the details of the brewing process. Kombucha has been brewed and consumed as a health elixir for over 2,000 years. Some historians think the drink originated in China, while others believe it came from Russia. In any case, it was brought to Japan in 415 CE by a Korean physician, Kombu, who successfully treated Emperor Inkyo with “cha” which means tea. I became interested in kombucha six years ago and started brewing it in my kitchen. I was a personal trainer and nutrition consultant at the time, and I stumbled across an article about kombucha on a health website I followed. The article had a basic recipe for brewing a one-quart batch, and I found I liked making it and drinking it, right away. It was like a healthy soft drink, and

I thought it would be a great addition to my regimen and those of my friends and clients. My lifestyle has been extremely healthy through the years. I’m continually researching and educating myself, focusing on nutrition and health and how to live the healthiest way possible. I believe in “moderation without deprivation.” Life is a balance of many things. I love to cook, and I keep everything organic, fresh, and unprocessed. Brewing kombucha fit right in with my lifestyle. Experimenting, working with different flavors, and just the whole process of brewing it is fun and a passion of mine. When I brew, I use organic black teas, organic cane sugar, and ROpurified water. I prefer using all organic materials in producing what I do. Kombucha is a living beverage with numerous nutritional benefits. It’s a great addition to anyone’s daily regimen. Kombucha contains organic acids, active enzymes, probiotics, and polyphenol antioxidants which lead to improved gut health, digestion, detoxification, improved energy, and immune support.

Right now, I’m doing my own thing when I brew, and like other brewers, I have my secrets. Kombucha is low in carbohydrates, with very little residual sugars leftover after fermentation. Plus, it’s lower in caffeine compared to regular coffee and tea. Brewing kombucha started out as a hobby for me, but after three years I decided to go pro. The onequart mason jar I started with multiplied quickly. At one point I had so many quart jars, I thought I had to go bigger. One-quart jars went to half-gallon jars, half-gallons went to gallons, and so on. Then I found big mouth bubblers—5 gallon and 6.5 gallon—thereby increasing production just before San Diego Brewing Company put my kombuchas on tap in 2014. The very first kombucha I brewed there was made for San Diego Beer Week’s Beer Garden and Chef Celebration at The Lodge at Torrey Pines. That five-gallon batch was a blueberrypomegranate variety, and it was gone in two hours. Right after San Diego Beer Week, my kombuchas went on tap at San Diego Brewing and have been on ever since. At that time I believe we were one of the few places serving kombucha on tap. Demand for my kombuchas increased and in 2015 I switched out the bubblers to a 120-liter fermenter. I added a second 120-liter fermenter in 2016 as more and more people started drinking kombucha at the restaurant, and a third when we moved to North Park. Over the past three years I have developed about 42 different flavors. With three fermenters up and running I am now producing three times as much as I was before. I prefer to have plenty of supply on hand because a keg can go pretty quick—usually in three to seven days. I’m making so much now I don’t have to worry about running out or getting behind with what I produce. I stay ahead of the game. To brew this much kombucha, I put in about three to six hours a day, depending on what needs to be done. Right now I’m brewing three times a month, with three brews coming from each fermenter.

work together. The bacterial component of kombucha is what consumes the alcohol, keeping it low.

THE FIVE INGREDIENTS OF KOMBUCHA ARE SIMPLE: WATER, TEA, SUGAR, STARTER TEA (KOMBUCHA FROM A PREVIOUS BATCH), AND SCOBY. Primary fermentation takes about 10 to 14 days before going into secondary (another 2 to 7 days) with fruit, juices, and tisanes (infusions made with dried herbs, fruits, and spices). When they are ready, kombuchas are kegged and stored in the cold room to lager for two to four weeks before going on tap. What I brew at San Diego Brewing is traditional kombucha, which is naturally low in alcohol— less than one percent ABV. Kombucha is alive. It continues to ferment and produce alcohol if it is not controlled. Refrigerating kombucha slows down the fermentation process, but it still continues. I stop the fermentation in primary by smell, taste, and pH, but mostly on taste. Kombucha has to be balanced, meaning it has a touch of sweetness with a tangy, sour flavor. When it is balanced, it is ready. With tea you can get the characteristic notes like you do with hops, like citrus, fruity, floral, earthy, and grassy, to name a few. To me, black tea works the best, which is why I use it. I brew my kombucha with black tea from Cafe Moto and source the other ingredients locally. The alcohol stays low because the yeast and bacteria

I don’t think anyone else is doing what I’m doing, or how I’m doing it—especially how I do secondary fermentations. I have my own methods that are different from others. When I brew my kombuchas I don’t just throw stuff in and say it’s done. I don’t just throw it in a bucket and keg it. I test and check my batches every day, in both primaries and secondaries. I’m constantly tasting, checking pH, and until I like how it tastes, it’s not done. Triple Berry on nitro is a good example. I love how it tastes. It has a hint of vinegar, a little sweetness, and it’s a little tart. It has a nice fruit aroma, and you can taste the organic berries I make it with: blackberry, blueberry, strawberry. My kombuchas are very seasonal and I plan ahead for when they are released. Right now I have 25 favorites, including Caramel Apple kombucha I made last year for Halloween, Apple Pie I made for Thanksgiving, and Pumpkin Pie I made for Christmas and the holidays. I really have fun with recipes. In the spring I introduced two new seasonal flavors, Mango Tango, and Spring Freesias. Both kombuchas are a hit and went away quickly.

By the way, I drink two to four ounces of my kombucha throughout the day, every day. Although it is not a cure-all, it does bring the body back into balance so it can heal itself as nature intended. Perhaps this is why kombucha is still around after 2,000 years. •

POLYPHENOL ANTIOXIDANTS: Naturally occurring compounds found in food that are thought to offer protection against cancers, cardiovascular diseases, diabetes, osteoporosis, and neurodegenerative diseases.

Year round I rotate in other favorite blends such as Lemon Lavender, Lemon Ginger, Raspberry Ginger, Blood Orange, and Straight Up, an unflavored kombucha with wonderful characteristics it gets from the tea I use.

For my summer kombuchas I will be brewing Summer Bricolage, Coconut Mango, Pineapple Coconut, and Tropical, which is brewed with dried fruit and passion fruit.

ast month, news broke that all manufacturing assets of Poway’s Lightning Brewery had been purchased by Santa Ana interest Cismontane Brewing. Lightning owner Jim Crute put his 10-yearold business up for sale last December and had hoped to hand it over to someone who would carry it forward, turnkey style, under its existing identity. After months of meeting with interested parties, he came to the realization that he’d need to go another route. Under the deal, Cismontane gains ownership of brewing and cellaring equipment (the tasting room and brand remain with Crute). A portion of those mechanisms will be installed as part of its new 10,000-square-foot production facility, which is currently under construction in Santa Ana. Cismontane will sell the remaining equipment, and will be holding open-house-style sessions for interested buyers to inspect that equipment on June 9 and 10 at Lightning. On June 17, Crute will host a cellar beer release and tasting featuring tastersized pours of legacy beers, including Old Tempest Ale, Black Lightning Porter, Ionizer Lager and Electrostatic Ale. We consulted Crute directly for his thoughts on this major development.

What led you to sell Lightning to Cismontane?

Is this the end of your brewing career?

I have searched for a partner or outright purchaser of the brewery since December of last year. After seeing many looky-loos and folks that were still “just looking,” I had yet to identify any purchasers. Cismontane is building a new brewery in Santa Ana and needs some equipment to make that happen. Their plan is to resell the [equipment they do not need to earn enough money to] make the overall deal work.

During this transition, I am thinking strongly about nano-brewing and selling 100% direct to retail from our location. Of course, I may still be employable in the biotech field or within the broader brewing trade in San Diego.

Why was a sale to Cismontane attractive to you and what other types of suitors were interested in Lightning? We had done some contract brewing for Cismontane last year, so when they came to us about an asset sale [I had already had positive dealings with them]. We have had folks stop by Lightning that run the gambit from brothers looking to get into the beer trade (that did not think through their business needs), to experienced brewers that simply did not have the cash nor the creativity necessary to make something work. In the end, it all came down to cash, and in the beer trade cash is essential.

How satisfied are you with this outcome? There are pluses and minuses associated with this outcome. We erase our debt, but it’s a shame we have been unable to identify a partner to make the business work as a business. Do you have any advice for entrepreneurs looking to enter the industry in the midst of its current climate? I would not open a brewery in San Diego if you are planning on packaging in six-packs or other formats and expect to sell enough beer to make it work. The [retail] space is very crowded, which means it will cost much, much more to have enough volume to be revenue-positive. By much, much more, I would say $5-10 million over a period of several years will be the cost of becoming a new regional brewery. •
