Beverage Briefs CAPI TAL O F C RAFT IPA: The San Diego Brewers Guild is busy planning for this year’s Beer Week (November 1 – 10) and a group of brewers are collaborating on the official beer: Capital of Craft IPA. Reps from 3 Punk Ales Brewing Co., Amplified Ale Works, Bagby Beer Co., Burgeon Beer Co., Gravity Heights, Nickel Beer Co., and North Park Beer Co. gathered at Second Chance to brainstorm. And despite the popularity of hazy IPAs, this one will not be hazy. Tickets are already on sale for the Guild Fest on November 2.

NEW S ATELLI T E OP ERATIONS: The neighborhoods of Del Mar, Oceanside, Mission Hills, and Bankers Hill all saw the opening of a San Diego brewery tasting room recently. Kilowatt’s Ocean Beach location was named “Best Tasting Room in San Diego” by WC readers in 2018, and they hope to continue that success in Oceanside. Meanwhile, Thorn Brewing, already with breweries in North Park and Barrio Logan, debuted its first non-brewery location in Mission Hills on Hawk Street. In Del Mar Heights, Harland Beer opened late July in the One Paseo shopping complex, adjacent to Shake Shack and Urbn Pizza. And in Bankers Hill, Pure Project just christened their tasting room “Pure at the Park.” Pictured below is the bartop at that location.

S ERPENTI NE CIDER PL ANS CANS: Coming up in September, Serpentine Cider will release its first cans. The canned cider will be one part in a series of releases during the fall season. The cidery also is expanding production in its current location. Part of the Miralani Makers District, the cidery shares space with both Good Seed Food Company and Lost Cause Meadery. S AV E THE DAT E: COL D B REW: Cold Brew City is back for its fourth iteration on November 9, this time showcasing cold brew from makers in Southern California and Baja California, plus various other vendors per usual. KVEIK: THE GREATEST BREWING SECRET NO ONE WAS HIDING

T

here is a concept in the business world of the “disruptive technology.” This can either refer to innovations that upend the way entire industries function, or robots that are programmed to issue blood-curdling screams at random intervals. It’s more commonly the former. Such technologies are understandably rare, but when they appear, early adoption can mean the difference between existence and extinction.

temperature occur, the allegorical equivalent of failing to remove brown M&Ms from the backstage candy bowl, tantrums will ensue. This usually takes the shape of unpleasant solvent-y notes and unexpected fruity flavors that fundamentally alter the brew. Comparatively, kveik is a hungry up-and-coming band, eager to please its burgeoning fanbase at any cost. No matter what you throw at it, it just works harder.

The beer industry is long overdue for such a disruption. Similarly, as a modern “journalist,” I am likewise overdue to misidentify and needlessly hype one. So when tales of a new and exotic Scandinavian yeast with mystical properties recently came to my attention, I knew what I needed to do.

To detail the benefits of kveik without further leveraging rockumentary tropes, I spoke with Joe Kurowski, technical brewing manager for White Labs San Diego. Over the last few months Kurowski has been working with different isolated kveik strains to build a more complete understanding of its behavior. He has witnessed how exposure to elevated fermentation temperatures that would make most brewer’s yeasts squeal allow kveik yeasts to fully attenuate (read: convert all fermentable sugars to alcohol) days quicker than other S. cerevisiae strains, without introducing any off flavors. “It very much acts like California Ale Yeast, just much faster,” he shared.

The first thing I learned about “kveik” (which means “yeast” in one Norwegian dialect) was that it is neither new nor exotic, so admittedly this exposé is off to a pretty rocky start. There’s been a surge of attention on kveik among beer academics and the homebrewing community of late, but this blend of related yeasts has been a mainstay of Norwegian farmhouse brewing for generations. Studies have identified kveik “yeast logs” (a dried lump of previously pitched yeast) dating back to 1621, indicating their use must predate even that timestamp. Furthermore, kveik has been genetically confirmed as only containing Saccharomyces cerevisiae yeast strains, which is the same taxonomic designation as most common brewer's yeasts. Kveik may not represent some bizarre cryptozoological discovery, but it turns out the moniker of “mystical” still applies. Despite its ubiquity in Norwegian brewing tradition, kveik’s unique capabilities are only now coming into broader recognition. To appreciate kveik’s mutant powers, we must first understand how its peers operate. Think of most ale yeasts as an entitled platinum rock band. They will show up and play all the hits to the delight of their fans, so long as all the terms in their contract rider are met. Should a deviation in something like peak fermentation

This time delta is not necessarily a game-changer, since the duration required on the back end to dry hop and condition the beer hasn’t been brought in, but it’s not insignificant either. In a consumer ecosystem that is constantly demanding the newest of the new, a theoretical 15 percent bump in fermentation capacity turnover certainly couldn’t hurt. Further, if wort doesn’t necessitate chilling below 90°F before pitching yeast, there’s some potential energy savings to consider as well. There are other dimensions of kveik that make it an alluring option. A particularly striking one is its low production of diacetyl, a fermentation by-product recognized by its “movie popcorn” aroma and flavor. Most yeasts will break it down given a sufficient rest time, but that isn’t a requirement with kveik. “The flavor threshold for diacetyl is somewhere between 80 and 100 [parts per million], so if we’re down at 30 at peak, you basically never need to worry about it,” Kurowski noted.

Even if those characteristics of kveik yeasts don’t turn the industry on its ear, there’s simply no denying they are pure beastmode in the brewhouse. Kveik yeasts generally show great tolerance of high alcohol levels, and rather than needing to be stored in liquid form like most pitches, kveik can be skimmed off the foam of a fermenting beer, dried, and stored in bricks for later use. There are multiple anecdotal reports that IPAs brewed with kveik strains maintain freshness months after typically fermented ones start to fall off. It can't be bargained with. It can't be reasoned with. It doesn't feel pity, or remorse, or fear. And it absolutely will not stop, ever, until you are dead. (Okay, that last bit was actually a quote from The Terminator, but it’s pretty apt here, right?) It should be noted that kveik’s association with “farmhouse” brewing is strictly colloquial. Kveik doesn’t generate the peppery/ spicy phenolic compounds associated with farmhouse saison styles. It does contribute some slightly fruity and tropical ester

compounds, but their intensity nests quite comfortably into the standards of many modern IPA and British styles. More importantly, kveik is fully domesticated, so there’s none of the potential for contamination that accompanies a wild yeast. Today, the most reliable way to experience what different kveik strains conjure are the “Kveik IPA” variants in White Labs’ tasting room. However, newly kveik-woke consumers like yourself will no doubt start to notice more options about town as brewers experiment with them. Mikkeller San Diego has already brewed three different kveik beers (two IPAs and one strong ale) and Modern Times Beer included it in two different recent hazy IPA collaborations. Kveik yeasts may not pan out to be the disruptive influence on brewing I was banking on, but if Modern Times Beer Commissioner of Flavor (a.k.a. brewer) Andrew Schwartz’s experience is echoed elsewhere, we can expect to see kveik making more of a splash soon. “It's a super unique yeast with many possibilities still yet to be explored,” he said. ∆

Making History with Stephanie Eppig BY BETH DEMMON

There’s no escaping fate. Dr. Frederick Frankenstein (played by Gene Wilder) famously screamed about “destiny!” in the 1974 comedic classic Young Frankenstein, but when it comes to family legacies, Stephanie Eppig was as fated to open a brewery as Wilder’s character was to reanimate dead tissue. Like Wilder’s Frankenstein, Stephanie also brought something back to life—her family’s brewing legacy. She’s the great granddaughter

of Henry Joseph Eppig, who was part of the dynastic Brooklyn beer family in the late 19th and early 20th centuries. She wasn’t raised in the beer industry; her mother worked as a Navy nurse in San Diego before the family relocated to Annapolis, Maryland for the rest of Stephanie’s childhood. From there, Stephanie bounced around to New York City, back to San Diego, a (very) brief stint in New Zealand, and Los Angeles, before finally settling down in San Diego when Eppig Brewing became a reality.

Her road to opening Eppig in North Park in 2016 was filled with twists which, upon reflection, seem to be kismet. Stephanie laughs easily as she recounts the mix of major life choices and happenstance that led her to where she is today: co-founder of Eppig Brewing and head of marketing. After college and a few years of churningand-burning in a high-stress consulting job, Stephanie quit the rat race with a plan to complete Ironman New Zealand and then hop around the South Island for a bit to recenter herself. “We get there, we’re ready to race, and what they call a ‘weather bomb’ came in. It’s basically a big cyclone, and the race got cancelled.” She shakes her head and chuckles. “I was like, now what am I going to do with my life?” She cut her trip short and found herself back in the States, where she was “jobless and homeless”—but a first date with Todd [Warsaw, now-husband and co-founder of Eppig] changed the course of her life once again. It still took a few years for them to coordinate their lives and futures together. Stephanie ended up working for Toyota as part of their strategic insights group for their luxury Lexus brand, and surprised herself by loving it. (“I didn’t know I was a car girl!”) She commuted between Los Angeles—for work—and San Diego—for Todd—until Toyota announced a company-wide relocation to Texas. She brought Todd to Texas to see if a move was in the cards. “I always thought I was going to be a career-long Toyota girl,” she says, but within 30 minutes she knew a relocation wasn’t her destiny. Back in California, she described their “what now?” conversation over cocktails that would lay the foundation for Eppig Brewing. “I asked Todd ‘what do you want to do?'” Stephanie explained, because by then Todd was equally burnt out from his career. He turned to her and said “I want to open a brewery.”

Todd had no idea about Stephanie’s family history in beer—fate once more. By the next week, Todd had brought Clayton LeBlanc, Eppig’s future brewer and third co-founder, into the fold. By the next year, Eppig Brewing had opened its doors. Despite the whirlwind of opening a brewery, Stephanie held fast to one principle: if they were going to put the

Eppig name on a brewery, the beer quality had to be something she could “stand behind and be really proud of.” “It’s indescribable,” she replies when I ask her how it feels to resurrect her family legacy. She shows me some of her prized historical collection from the original Eppig breweries in New York: old bottles, original caps, beer ledgers, et

cetera. It’s allowed her to connect with family she didn’t even know she had; relatives from all over have reached out with stories, antique photographs of the Eppig ancestors, letters, and a few even showing up at the brewery doorstep hoping for a tour. (So far, Stephanie has always obliged.) Family as much as fate has driven Eppig’s vision as a brewery, as well as Stephanie’s move from a traditional fast-paced career to the beer world. “When my mom was diagnosed with leukemia, that was the moment for me where [I realized] work doesn't come first. Living your life and creating those moments comes first, being able to spend

the time and cherish the time with your friends and your family.” With over a century of history behind the Eppig Brewing name to preserve, there’s no chance Stephanie’s slowing down. Eppig opened their Waterfront Biergarten in early 2018 and plans to be out of their original North Park location by September of this year. (“Just in time for Oktoberfest!” she hopes.) Their forthcoming home base in Vista wasn’t easy to find. After two years of searching, the Eppig team finally discovered the perfect place to move. (Dare I say it was… fate?) A 30-barrel system will triple their capacity on day one, and Stephanie gets visibly excited describing the authentic German touches

they’ll implement; she redesigned the original mezzanine tasting room concept in favor of a Bavarian-inspired beer hall with grand ceilings. That’ll come later, but an outdoor space and preliminary tasting room will be ready for their autumn soft opening. In the meantime, Stephanie plans to stay true to her roots while finding innovative ways to participate in the local beer scene. “For me, one of the coolest things is to be able to tell and bring back the story of a brand that was lost,” she says. So, you’re a member of numerous high-volume beer clubs, have bottles and cans tucked away in every fairly temperature-constant crevice of your home, and have no hope of ever polishing off all those oh-so-fine gems. What is an overstocked beer nut to do? Have a bottle share, of course. But let’s face it, one beery blowout isn’t going to move the needle. It was this realization that led to the biweekly meeting of an assemblage of San Diego beer buds who share a lot more than just ales and lagers. They share a passion, a thirst for sensory experimentation, and an unquenchable hunger for beer-and-foodpairing revelations, all of which was sparked by local educational events like White Labs’ Fermented Pairings Series and professional

sensory guru Gwen Conley’s myriad foodand-beverage workshops. The origins of this epicurean ensemble trace back to Jerry Shiller, the proud owner of a three-panel, liquor store cooler that’s stocked to the gills. Years ago, after attending several impressive beer pairing dinners, he bandied about the idea of marrying beer and food from the comfort of his own home and inviting friends to take part. One of those early participants was a beer fan he knew through work with the Boy Scouts of America, Bob Parks. But it wasn’t until Park’s son, Sean, came into the fold, that things really went to the next level. One of the most fervent fans of craft beer in San Diego, Sean’s living quarters are stuffed


to the gills with bottles, cans, and even crowlers of beers from around the county and nearby regions. But that’s not enough. He rents a temperature-controlled storage unit that’s even more densely-packed with beers. With his and Jerry’s enthusiasm and beer collections overflowing, they decided to up beer pairing sessions to twice a week, holding them Sundays and Thursdays, alternating between residences. I have been honored to attend two of them and have been blown away each time. The first rule of beer club is not don’t talk about beer club. Instead, Jerry and Sean ask that nobody bring beer. I have gone against the request each time, but it was unnecessary. There was plenty of beer each time, ditto food. Each time there was a veritable smorgasbord of varied items—meats, cheeses, fruits, vegetables, nuts, confections, crackers, dips, condiments and more—all up for grabs at any point during the nearly fourhour sessions. Yes, four hours. Why so long? One reason is the sheer volume and alcoholic content of the beers, which lean largely to high-ABV/ageable styles such as imperial stouts, Scotch ales, barley wines, and various other strong ales. Group members learned early on how much flavor fluctuation occurs as a beer warms up, so they decant everything at once in order to taste throughout the evening; the way beers (and their interplay with edible items) change over multiple hours is something to behold. What might be a so-so pairing at the start may blow minds an hour later. Such revelatory moments happen frequently every time they meet up. The following are some of the best pairings discovered the last time I was invited to partake: Barrel-Aged Belgian Quad with Mole Salami: The spiciness of the salami balanced the sweetness of the beer. Barrel-Aged Peach Sour with Blue Cheese: The funk of the cheese brought even more funky depth to the sour. Charcuterie for pairing

Barrel-Aged Tangerine, Lime, and White Wine Grape Sour with Pork, Kumquat, and Pineapple Lettuce Wraps: Fruit skin pithiness from kumquats upped real fruit flavor of the sour. Barrel-Aged Macadamia and Coconut Imperial Stout with Semi-Hard Sheep’s Milk Cheese: The cheese’s lactic spike amplified the beer’s bourbon character. Barrel-Aged Imperial Stout with ChocolateCovered Pecan: The confection brought out otherwise absent orange notes. Chocolate-Orange Imperial Stout with Soppressata and Blue Cheese: The salami spice and cheese’s creaminess mellowed the beer’s sweetness. I even notched my first successful pairing, matching a single hop lager brewed with Zuper Saazer hops with a combination of mole sausage, turkey, guacamole, and a cherry tomato on a gorgonzola cracker. Some of the beer’s hop-borne bite was balanced by the sweetness and acidity of the cherry and the citrus-tinged avocado. I could easily see myself getting used to indulging twice a week like this, but my biggest takeaway wasn’t that events need to be as grandiose as this group’s. They can be scaled down and simple while still providing the same pairing-inspired fun and excitement of this toplevel squad. All it takes is a beer or two and some things you like to eat—or maybe some you haven’t even tried before. The world is your oyster... oh, oysters, that’d be fun! •
