SD WINE REPORT: $23.8M IN 2016 SALES

$30.4M in regional impact from 165 wineries and vineyards

By Ryan Lamb A new report released in November, underwritten in part by the San Diego County Vintners Association, shows a local industry that has undergone significant growth since 2010. Here are some key takeaways:

SMALL BIZ IS BIG

According to the accumulated data, San Diego’s wine industry generated a regional impact of $30.4 million in 2016. Conservative estimates of gross sales from local wineries amounted to $23,873,100, with 27% of that attributed to tourism. More than $2 million in sales and property tax were generated from 2016 sales. #SDWine supports a total of 697 jobs, including direct (519), indirect (84), and induced (94) employment.

San Diego wineries are mostly small: 57% of survey respondents said they produced fewer than 1,000 cases in 2016. By comparison to the market just north of us, only 8% of wineries in Temecula Valley produced under 1,000 cases (in 2015). Fewer than 10% of SD wineries surveyed made more than 5,000 cases in 2016; 62% of Temecula Valley wineries reported packaging at least 5,000 cases.

A GROWING INDUSTRY As of June 2017, San Diego County was home to approximately 116 active wineries. Including independent vineyards, the number of ABC Type 2 licenses currently stands at 165. Following the 2010 passage of the tiered winery ordinance, which eliminated the need for most wineries to obtain a major use permit, the industry really started to climb: 120+ licenses have been issued since, harvest yield has more than doubled (from 447 acres to 945 acres), and crop value has more than quadrupled (from $785,000 to $4.2 million). 30% of survey respondents* indicated operating “urban wineries” that have no on-site vineyard. 4

VARIED VARIETALS Vintners utilized an average of more than eight varietals in 2016. In terms of varietals grown, cultivated and/or sold in 2016, both Cabernet Sauvignon and Syrah were mentioned by 59% of wine makers. Sangiovese (46%), Merlot (38%), Cabernet Franc (32%), Zinfandel (32%), Viognier (30%), Malbec (27%), Petite Sirah (24%), Sauvignon Blanc (24%) round out the top 10. In total, respondents worked with more than 45 varietals.


A BLEND OF EXPERIENCE 27% of survey respondents have been making wine for more than 11 years. 38% answered six to 10 years, and 35% said one to five years. 8% hold a graduate degree in oenology, viticulture, or wine studies; meanwhile, 54% said they had at least enrolled in or attained an industry-related certificate program. Local education programs are available from San Diego State University, CSU San Marcos, and Cuyamaca College.

RELATIVELY LOW WAGES Compared with California’s other wine regions, San Diego’s industry worker wages were the lowest in both 2014 and 2015, before jumping above Riverside in 2016. Vince Vasquez, an independent economic data analyst who authored the report, attributed this to a number of factors: 1. “Most local wineries are boutique, family-owned, and small.” 2. “Of those that do hire outside help, it is mostly for part-time work in the tasting room.” 3. “Wage levels are also reflective of the relative year established and scale of vineyard and winery operations – Northern California and the Central Coast have been home to large scale production wineries, exporting globally for decades, and require a great array of skilled, experienced workers, which command higher salaries.” NOTES: *32% of the San Diego’s wineries contacted filled out the 18-question survey. Vasquez told SDBT that “the survey response rate was higher than what’s considered adequate for social science purposes (generally 30%+)” and noted in the report that “this response rate is within the range of prior rates generated from our research into the Southern California craft beer industry.” San Diego is the home of California wine. Spanish missionary Junípero Serra planted wine grapes shortly after founding La Misión San Diego de Alcalá in 1769. Permitting and local regulation ranked as the top answer regarding perceived impediments to industry growth, followed by labor costs. Water rates and supply ranked last; however, 76% of respondents were somewhat concerned about the future impact of the state drought and water policy. Local coffee roasters Mostra and Dark Horse are working on a cold brew collaboration, with details still sparse at time of print; we’ll post updates on SDBevTimes.com. Meanwhile, Mostra is on the cusp of opening a new satellite cafe in Carmel Mountain Ranch. In other coffee news, Seven Seas Roasting Co. is building out a storefront location in South Park which they are hoping to open in April. Also, be sure to check out the Caffeine Crawl on January 26 - 28; nine distinct routes cover more than 25 county coffee spots, each offering a presentation or hands-on activity.

Moonglade Ginger Beer, profiled in the last issue of this magazine, has pivoted their name to Moonglade Brews, as they now also offer root beer consistently at their Oceanside nanobrewery and tasting room, as well as a few farmers markets.

Setting Sun Sake Brewing Co., part of the Miralani Makers District, has recently been involved in multiple collaborations with local beverage businesses, including two beers made at fellow Makers District member Thunderhawk Alements, both featuring sake yeast. November’s collab with Abnormal Beer Company and Karl Strauss Brewing, Omakase IPA, was one of the most popular beers at the Los Angeles Extreme Beer Fest. And back on home turf, Setting Sun is aging their Ronin Clear Sake in rum barrels from Seven Caves, a distillery located just a mile down the road. Setting Sun is now the county’s only sake maker, as San Marcos’ Kuracali closed in December.

The fourth annual San Diego Fermentation Festival returns to Encinitas on February 11. In addition to demos and workshops, a DIY sauerkraut station, live music, yoga classes, acupuncture, and massage, the Makers Marketplace and Ambrosia Garden will feature local beer, cider, mead, wine, and spirits. In Navy parlance a “Liberty Call” is an invitation to step away from daily duties and seek amusements off ship for a few precious hours. Were I in the military that would represent an opportunity to cut loose and do some big-time antiquing, but for most it signals the arrival of something a tad more frenzied. And what embodies the potential for concentrated merriment better than hard liquor? It was exactly that sentiment that gave Liberty Call Distilling its name.

tun. It’s a snug operation, but Liberty Call Distilling is nothing if not practical. At present, nearly 50-percent of their business is derived from contract distilling for other private labels. This provides a considerable cash infusion beyond their own sales, relieving much of the pressure to prematurely mobilize their own products out of barrels or release spirits whose recipe may still be in flux. In either scenario, it’s a system that helps favor quality over quantity.

Though Liberty Call Distilling products first found their way to the public in 2015, it was essentially born two years prior over a couple of glasses of moonshine between now Head Distiller Steve Grella and President Bill Rogers. Sipping on the spirit handcrafted by Grella’s grandfather fostered conversation on shifting liquor laws and the still nascent spirits scene in San Diego. It is unclear if the inspiration to open their own concern was driven by a recognition of an emergent market or the moonshine making everything seem like a kick-ass idea, but proceed they did. Shortly thereafter they secured licensing, a capable Head Brewer in Addison Poth, a production space in Spring Valley, and Roger’s mantra to guide their efforts.

The square footage for their tasting room is similarly concentrated. Given that they are constrained to serve no more than 1.5 ounces of alcohol per person (as legally stipulated for all distillery tasting rooms in California), it’s not as if patrons would opt to carouse there all afternoon anyway, but it wouldn’t take more than a few bodies to make the space feel cramped.

“We make what we like to drink and then we hope other people like it as well,” said Rogers. Today that vision is made manifest by a 105-gallon reflux column still that serves double-duty as a mash 8

The tasting room may not be party bus-capable so to speak, but Liberty Call Distilling has aspirations beyond its confines. Expansion plans are already in the works, not only for distilling capacity, but their business model in general. While the lease was still being finalized at print time, they project a new Liberty Call Distilling facility will be open in the Barrio Logan Mercado by mid-2018. The new space will include a kitchen featuring a cocktail-focused menu along with a full bar. And in order to deliver on the promises inherent in a full bar, they will also be introducing their first vodka, mezcal, and agave spirit to the market.

This is important not only from a sales perspective, but for consumer education. It turns out that San Diego’s well established love affair with craft beer hasn’t carried over to the world of craft spirits as much as one might expect. “If you put this on the bar and don’t promote it, it’s not going to sell,” said Rogers.

COLD BREW CITY FEST 2017: RECAP Bird Rock and Steady State brew up winners

What made 2017 different was that the competition was blind; experienced judges awarded points to the Original contestants, while all festival attendees were given the opportunity to taste Signature cold brews and choose their favorite.

Photo by Kelly Suan In mid-December, the second annual Cold Brew City Fest welcomed 350 attendees at BRICK in Liberty Station. Like last year, the competition portion was broken down into two categories: Original Cold Brew (coffee and water only), and Signature Cold Brew (any ingredient besides alcohol allowed). 10

In the end, Bird Rock won for Original Cold Brew, with Modern Times placing second and Cafe Moto coming in third. In the Signature category, Carlsbad’s Steady State Roasting earned 43 votes, 24 more than the second place finisher, Por Vida. For third place there was a tie between Nitro Monkey Coffee and Mostra Coffee. Bird Rock’s Michael Vasquez described the unique, “wine-processed” coffee: “The cold brew that won comes from the Panama Duncan Estate, and while there is no actual vino involved, the coffee is fermented much like wine. The coffee cherries are allowed to over-ripen on the shrub, and they are harvested as opposed to being picked at their peak of ripeness.” Bird Rock then brewed the coffee on a Kyoto-style slow drip tower,


on two separate settings, which were then blended to create a well-rounded cup that highlighted the coffee’s distinct characteristics. Steady State’s Elliot Reinecke worked directly with the producer and importer to help people realize that the Kambata region of Ethiopia is a coffee-producing area. “We ground it and worked with Campfire restaurant’s Chef Andrew Bachelier and Bar Manager Leigh Russ who cold smoked the coffee with cherry wood.” After that process, the grounds were cold brewed via full immersion, before a dosing of cold-pressed ginger juice, chai mixture, and a splash of almond milk. The event’s director, Pablo Lara, is already looking for ways to improve the experience. “For next year, we’re considering separate categories for nitro coffee, flash brewing, and presentation,” he told SDBT while catching up at his day job — building relationships with green coffee producers for Sorrento Valley importer Global Coffee Trading. “We really want to continue pushing the scene forward, and having more categories will help us do just that.”

A December report from the nonprofit trade organization California Craft Brewers Association (CCBA) showed the state’s 900+ craft breweries create an economic impact of more than $7.3 billion. California is home to more craft breweries than any state in the nation, with nearly 92 percent of the state’s 39.5 million residents living within 10 miles of a brewery. The number of beer makers has tripled over the last five years, up from 300 breweries in 2012. More key points: • Craft breweries in California supported nearly 50,000 full time jobs with an average wage of $55,000 a year. • These businesses paid $1.49 billion in taxes in 2016, including $868 million in state and local taxes and $617 million in federal taxes. • California’s craft breweries produced 3,295,221 barrels of beer in 2016 and exported 1.17 million barrels, which is greater than the total craft production of all but five states in the nation. • The number of licensed breweries grew by more than 100 in the last year – more than any state in the country, and an increase that was greater than the total licensed number of breweries in 34 states. San Diego is currently home to 156 breweries. “11% of craft brewing’s total $67.8 billion economic impact comes from California. These data highlight the powerful economic impact craft brewers have in California and across the nation.” — Bart Watson, Brewers Association Chief Economist
