Sizzled Sprouts with Pistachios & Pomegranate www.bbcgoodfood.com/recipes/collection/vegan-christmas INGREDIENTS • 3 tbsp olive oil • 500g Brussels sprouts, halved • 50g pistachios, roughly chopped • 100g pomegranate seeds • pomegranate molasses, to drizzle (optional) INSTRUCTIONS 1. Heat the oil in a large frying pan over a medium-high heat.

Put the sprouts in the pan, cut-side down, and leave them to fry for 10-15 mins, tossing occasionally. If they’re just lightly brown, carry on cooking for a further 5 mins until blistered.

2. Scatter over the pistachios and stir-fry until toasted.

Remove from the heat and stir through the pomegranate seeds. Season with salt and tip into a serving dish.

Drizzle with a little pomegranate molasses, if you like.

INSTRUCTIONS

MASHED POTATO TOPPING: • 1.5lb bag of The Little Potatoes Fingerling Potatoes (or Baby Boomers)

1. In a large pot, cover Creamer potatoes with a generous amount of cold water and bring to a boil. Boil for 15 minutes (or until tender.)

• 1/3 cup unsweetened soy or almond milk

2. Preheat oven to 375F.

• 1/2 tbsp Earth Balance

3. While the potatoes are boiling, heat olive oil in a large skillet over medium-high heat. Add the onion, celery, carrots, garlic, and kale. Sauté for 2 minutes. Add the mushrooms and thyme.

Continue sautéing until the vegetables are nearly tender.

• 1/4–1/2 tsp salt FILLING: • 1 1/2 tbsp olive oil • 1/2 cup carrots, chopped • 1/2 cup celery, chopped

4. Evenly sprinkle the flour over the vegetables and stir to coat. Cook for 1 minute. Gradually 3–4 cloves garlic, minced and in small amounts, add the veggie broth to the vegetables using a whisk to incorporate 1/2 cup kale, de-stemmed and finely chopped the broth. Keep adding more broth until the 2 cup mushrooms, sliced consistency is a thin gravy. Add the corn, 1/4 tsp thyme peas, and lentils. Simmer for 5 minutes (add 2 tbsp unbleached all purpose flour more water if needed.) Pour veggie mixture 1 1/2 – 2 cups veggie broth into a large casserole dish. Spoon or pipe 1/2 cup frozen corn mashed potatoes evenly on top. Cover the casserole dish with a lid or foil and bake for 1/2 cup frozen peas 25 minutes. Remove the lid and broil for 2-5 1 1/2 cups cooked green lentils minute until browned to your liking. (cooking instructions in notes)
