Matching wines with foods for Spring 2008 By John J. Mahoney Ph.D., CWE
s Chaucer stated in his Canterbury Tales centuries ago, spring is the time when people long to get out, make journeys and want to savor new and more interesting meals. In the 1200s, it was Bordeaux that most English-speaking people drank to enhance all their meals. Today, we have thousands of wines to make our spring dining adventures even more enjoyable. The southern New Jersey area, in and around Atlantic City, has many quality restaurants that can fulfill our culinary desires. But if you think it’s a complex study of matching wines with food, relax, it’s not! You need to learn only one basic Mahoneyism: match the weight of the wine to the weight of the main ingredient of each course. A wine’s body is how the wine feels in your mouth, or

its weight. Is it light or heavy? Forget about white wines with fish and reds with meat. That was a simple sales pitch made decades ago to people who knew nothing about wine or food. However, it will work many times if you see many white wines as light and many reds as heavier wines, but forget it as a rule that must be followed. Instead, simply remember to match light foods, take shellfish or tilapia for instance, with a light white wine like a Greek Moschofiliero, a high quality Italian Pinot Grigio or Vernaccia, a New Zealand Sauvignon Blanc or a white wine from Spain made from the Verdelho grape. feature Continued from page 12 ter fish, you need more body, so match it with a light red wine that has an equal body like a Rioja from Spain or a lower-priced Californian Pinot Noir. Lighter food, lighter wines: red or white. Prime rib and potatoes will simply overpower a light white or red and demands to be paired with a wine that has a similar body. Dry Rosé, which has now come back into fashion, is perfect for any matching problem in the lighter to midweight food categories. Many of the finest chefs I know suggest that their best creations be paired with dry pink wines so you don’t miss a hidden subtlety they’ve interjected into a garnish item on the plate. Heavy steaks overwhelm a Pinot Grigio or a Fumé Blanc. All mouth-filling heavier meals demand bigger masculine wines. A few big white Burgundies can work with some meat dishes, but Malbecs, Cabernet Sauvignon and Zinfandels along with Syrah have the power to cleanse the palate and help to make the next forkful taste just as good as the first one. Still confused a bit about a wine’s body? Well, think of milk. Skim milk represents light wines. Two-percent fat-content milks are like Viogniers, or white Rhones, maybe oakless Chardonnays or Gavi. Then whole milk

would equate to bigger reds like expensive Merlots and Cabernets along with Brunello di Montalcino, massive Zinfandels, Bordeaux and bigger Spanish Tempranillo from Ribera del Duero or even a Greek Agiorghitko. Heavy cream would represent really masculine or fullbodied wines like Cream Sherries and Ports that slurp
